Penbode Farm Vets Senior Young Handlers Series 2019

Supporting Tomorrow’s Farmers Today

Incorporating Sheep Only Penbode Farm Vets have always been proud to support the region’s young livestock farmers and sponsors many of the young handlers classes at the local county shows. We are delighted to announce that we are supporting a Senior Young Handlers Series exclusively for young livestock handlers aged 13-18 on 1 January 2019. The Penbode Farm Vets Young Handlers Series will focus on the Sheep Competitions in its first year (2019), with the Cattle Competitions being introduced at a later date. In a similar vein to the established Mole Valley Farmers junior Young Handler Series which supports those aged 12 and under, all young handlers aged between 13 and 18 who enter Young Handler Sheep Classes at the qualifying shows in 2019, will accumulate points – regardless of where they finish! The final classes and overall prize giving will take place at Holsworthy & Stratton Show on August 22nd. Liskeard Show Schedule 2019 39

For the Icing. 50g/2oz butter softened, 245g/8oz icing sugar, grated rind of an orange, 50g/2oz cream cheese (full fat) Method: Preheat oven 180°C, (fan 160°C, gas 4), 350°F. Put the orange in a pan and cover with cold water. Bring to the boil, cover and simmer for 1 hour. Remove orange and cool. Butter and line base of an 8” round deep pan cake tin. Roughly chop the cooked orange discarding any pips. Whizz in a processor until fairly smooth. Whisk eggs until light and fluffy. Sift the flour and ground almonds into the egg mixture and using a large metal spoon fold gently, then add the orange puree and melted butter. Fold gently until just mixed. Pour into the prepared tin and bake for 40-45 minutes until cake is brown and springs back when lightly pressed. Cool in the tin for 5 mins then turn out onto a wire rack to cool completely. Icing. Cream the butter until soft, add the icing sugar and cream cheese then grated orange zest. Mix well and put on the top of the cake in swirls.

Class: 9 Chocolate Fudge Cake

Ingredients: 50g (2oz) sifted cocoa powder, 6tbsp boiling water, 3 large eggs, 50ml (2fl oz) milk, 175g (6oz) SR flour, 1 rounded tsp baking powder, 100g (4oz) softened butter, 275g (10oz) caster sugar. For the icing and filling: 3tbsp apricot jam, 150g(5oz) plain chocolate (39% cocoa), 150 ml(¼ pint) double cream. Method: Preheat the oven to 180°C, (fan160°C, Gas 4), 350°F. Grease two 20cm (8”) deep sandwich tins, line the base of each tin with baking parchment. Blend the cocoa and boiling water in a large bowl, add the remaining cake ingredients and beat until the mixture has become a smooth, thickish batter. Divide the cake mix equally between the prepared tins and level the surface. Bake in the pre heated oven for about 25 to 30 minutes until well risen and the tops of the cakes spring back when lightly pressed with a finger. Leave to cool in the tins for a few minutes then turn out onto a wire cooling tray having peeled off the parchment paper to finish cooling. To make the icing: Warm the apricot jam in a very small pan and then spread a little over the base of one cake and the top of the other. Break the chocolate into pieces and gently heat with the cream in a heat proof bowl set over a pan of simmering water for about 10 minutes or just until the chocolate has melted, stirring occasionally. Remove the bowl from the heat and stir the chocolate mixture to make sure it has completely melted. Leave to cool until it is on the point of setting and then spread on top of the apricot on both cakes. Sandwich the cakes together and use a small palette knife to smooth the icing on top. Keep in a cool place until ready to serve.

Class: 15 Cheese & Chutney Whirls

Ingredients: 125g plain flour, 100g butter (diced and chilled), 100g mature cheddar (or other strong cheese coarsely grated), 1 tablespoon chutney/pickle (finely chopped chutney/pickle for best results), 1 – 2 tablespoons cold water. Method: Preheat the oven 200°C (fan 190°C, Gas 6) 400°F. Line a baking tray with baking parchment. Rub butter into flour until mixture resembles fine breadcrumbs. Stir in cheese and add 1 – 2 tablespoons of cold water. Combine until mixture forms a dough ball. Wrap in cling film and chill in fridge for 20 minutes. Lightly dust a work surface with flour and roll out the pastry into a rough rectangle 20cm x 40 cm, 5mm thick. Using a spatula spread chutney thinly over the pastry. Roll up the pastry starting from the longest edge to form a log. Using a serrated knife slice evenly into discs about 1cm thick and arrange on a baking sheet. Bake for 15-20 minutes until golden brown. Allow to cool slightly and then transfer onto a cooling rack.

Liskeard Show Schedule 2019 40

Class: 18 Sausage Plait

Ingredients: 320g pack of ready rolled puff pastry, 1 1lb sausage meat, 2 teaspoons of finely chopped sage or 1 teaspoon of dried sage, 1 cooking apple peeled, cored and chopped, 1 leek, washed, cut into 4 lengthwise and chopped, salt and pepper to taste, 1 beaten egg for wash. Method: Preheat the oven 200°C (fan 180°C, Gas 6) 400°F. Line a baking sheet with baking parchment. Roll open the sheet. Mix all the ingredients together apart from the egg. Place the mixture down the middle of the long edge of the pastry, then using a sharp knife, cut 2.5 cm strips at a slant towards you. Starting furthest away from you, take one strip of pastry and fold it over the sausage meat. Then, take a strip of pastry from the other side and lay it over, slightly overlapping the first piece. Continue all the way down then tuck the ends of the pastry into the plait. Brush a little beaten egg over the pastry. Bake the plait for twenty minutes then reduce the oven temperature to 170°C (fan 150°C, Gas 4) 350°F and cook for a further twenty minutes until golden brown and risen with the sausage meat cooked through.
