What a fun summer we have had at Comanche Trace! The Texas Hill Country Tour of Homes was a tremendous success. One thousand plus people attended our six-day event, and many people have remarked how much they loved the diversity and craftsmanship of the houses.

The home selected as winner of People’s Choice was 3325 Arrowhead Drive built by Mike Stavinoha. Mike has been building custom homes in Comanche Trace for 10 years.He focuses on his client’s lifestyle, and is especially mindful of orientation of a home to take advantage of views and layout to maximize the client’s needs.

In May, we hosted The Senior Club Championship. This tournament was played over two days with round one on Valley-Hills and round two Hills-Creeks. Coming right out of the gates was B. K. Cody

shooting an opening round of 68 on day one. Mike Lewis shot a 71 and defending Senior Club Champion, Matt Griffin, shot a 73. In round two, the players were chasing the leader, and Matt Griffin shot a 69, but B. K. Cody shot a 73 to win by one over. B. K. finished with a total of 141 and Griffin with a 142. Great playing B. K. Cody and congratulations for winning the 2014 Senior Club championship! In the first flight, Doug Matey won first with a net 72 on day one and a net 69 on day two for a total of 141. Jude Dunfee finished second in that flight with a net 69 on day one and net 74 on day two for a total of 143.

The 2014 Ladies Club Championship was held in June over the two course rotations with round one on Hills/Creeks and round two, Valley/

Hills. The Championship flight played gross score for both rounds and the First Flight played net score for both rounds. After round one Cheryl Wood shot an 86 and lead the field by 4 shots with Trish Butler, Anne Hearn, and Michelle Tomlinson tied for second with scores of 90. In the First Flight, Joan Spear lead with a net 76 followed closely by Nancy McKeen with 77 and Margaret Wheless with 78. Cheryl Wood won the Ladies Club Championship with a final round of 85, winning by 4 shots! Michelle Tomlinson finished second and one shot behind, finishing third, was Anne Hearn. In the First Flight, Joan Spear shot a net 74 in the final round to win by two shots over Nancy McKeen. Great playing and congratulations to Cheryl Wood and Joan Spear for winning their flights.

Right around the corner is this year’s 2014 Men’s member guest, The Futurity, on September 25th, 26th & 27th. The all-inclusive,

three-day event will showcase our beautiful golf course, immaculate greens, and our outstanding food and hospitality. This year’s event will be lined up with a full schedule, which will include practice rounds on Thursday followed by competitive golf on Friday and Saturday.

Breakfast and lunch will be served on Friday and Saturday. Practice rounds will be included on Thursday for your guest and spouses. On Friday night we have a fabulous dinner lined up for you and your guests in the Vista Room, along with complimentary drinks, and spouses are welcome to attend dinner on Friday evening. Following the men’s starting times on Friday we will have a ladies day golf tournament beginning at 10:30 a.m. with a fun format and lunch following play. Thursday’s registration will include a gift for each player, and equipment as well as soft goods will be available from vendors such as Titleist, FootJoy, TaylorMade and Callaway. My staff and I are looking forward to making this year’s event a great success and a memorable one for you and your guests. Often times people come to the conclusion that they want to improve their scores with more practice. The mistake most people make is that they practice their game without knowing what aspects would help them improve the most. An example would be hitting drivers on the range for an hour after hitting 10 of 12 fairways. Obviously if a player is hitting 10 of 12 fairways (which is the average of the best driver on the PGA Tour) it would not make sense to work on your driver. What would make more sense is to work on an aspect where you are weakest.

A great way to figure out what you need to work on is by keeping your stats for each round you play. Key stats would be fairways hit, greens in regulation, scrambling (how many times you got up and down when you missed a green), total putts, and sand saves. Keep regular track of those stats and compare them to the PGA Tour’s best by going to pgatour.com and seeing what the best pros average in each of those respective areas.

We’re more than halfway through the year already, and if you’ve been diligent in your fitness quest for 2014 you may be running into the boredom syndrome. No matter how effective your routine is, doing the same thing day after day can take its toll, both on your mind and on your body.

If you have consistently worked on your aerobic conditioning for at least 6 months, you may have noticed that the differences you saw initially, such as:

• Easier breathing• More energy• Weight loss

are not as noticeable anymore. You still feel good, but the improvements have slowed down. Maybe it’s time to “add a few hills”. What do I mean by that? When exercise routines remain constant, the rate of change decreases. By adding new things or changing the intensity of your current routine, more physical changes will be gained. One way to accomplish that needed change – interval training.

What Is Interval Training?

First of all, let’s define traditional aerobic training. • Repeated, rhythmic motions of your large muscle groups

over time. Examples – outside walking, treadmill walking, elliptical machine, stationary bike• Aerobic, which means it uses oxygen. • Speed and intensity remain constant.

Interval Training:

• Alternating short, high intensity bursts of speed with slower, recovery phases in a single workout. • During the intense phases, it is anaerobic, which means it uses energy stored in the muscles (glycogen) instead of oxygen. As a result, lactic acid is generated from the muscles and you enter what is called “oxygen debt”. During the recovery phase, the heart and lungs work together to break down the lactic acid and convert it into energy. • Just as athletes benefit by being able to work at a higher intensity without fatigue or pain, you also will benefit by gaining a new energy threshold.

What Are The Benefits For Me?

WORKOUT IN LESS TIMEOne of the biggest benefits to interval training is shorter

workouts. There are actually more cardio benefits to a 30 minute interval workout than an hour long walk.

SLOW THE AGING PROCESSOur muscles need oxygen for fuel. As we age, however, our

hearts beat slower and pump less blood to those muscles, and our lung capacity also decreases. What happens? We grow weaker and lose our stamina. Research has shown, though, that regular aerobic exercise can decrease biological age by 10 years or more.

(Shephard 2008) When we increase the cell production in the blood, more energy is produced.

Interval training is one of the most effective ways to exercise at a high enough intensity to significantly increase oxygen demands and thus slow the aging process. (Wright &Perricelli 2008) As opposed to exercising at a constant pace, interval training, with its brief periods of high intensity, forces the body to adapt in ways that slow aging. Just as REST is important for the body to adapt, INTENSITY is the key ingredient to cause change. Both rest and intensity are the keys to interval training.

BURN MORE CALORIESHigher intensity exercise causes the body’s metabolism to increase,

thus causing it to burn calories at an increased rate even after the exercise session is completed.

THE SPECIFICS

SHOULD I DO HIGH INTENSITY EVERY TIME I EXERCISE?No. At the most, do a high intensity routine 2 – 3 times a week. The

other days, follow your regular aerobic routine.

WHAT WOULD BE A GOOD INTERVAL PROGRAM FOR ME?Choose your favorite aerobic activity and introduce intervals into it.

Walking: Walk at a normal pace for a 10 minute warm up. Then, using a watch, pick up the pace and walk as fast as you can for 30 seconds to one minute. Cool down for the same amount of time at your normal pace. Repeat that sequence for at least 5 minutes. End with a 5 minute cool down at your normal pace.

FITNESS

Prefer the elliptical machine or a stationary bike? Warm up for 10 minutes at an easy resistance level. Then, increase the level by at least 3 for 30 seconds, followed by another increase of 3 for 30 seconds. Revert back to the second level for 30 seconds followed by another 30 seconds at the difficult level. Do this for at least 5 minutes. Always finish any workout by cooling down at an easy pace for at least 5 minutes.

HOW DO I FIND MY PROPER HEART RATE ZONE?Use the Rate of Perceived Exertion (RPE). On a scale of 1 through 10,

1 is how you feel sitting still while 10 is how you feel doing an activity that’s sustainable for only a few seconds. With interval training, your RPE during the difficult periods should vary from 6 to 8.

I’M NEW TO EXERCISING. IS INTERVAL TRAINING FOR ME?Probably not. You need to establish an aerobic base before you add

intensity. Make sure you have been doing aerobic exercise for at least 6 months before you undertake interval training.

If you have diagnosed heart problems, diabetes or obesity, check with your physician first.

With your physician’s okay, let a certified fitness professional design a safe program for you, one that can start where you are now and take you to that next, healthy level.

AND WHERE DO THE HILLS COME IN???As a cyclist in the Texas Hill Country, riding on the hills is a given.

As difficult as it is to climb those seemingly impossible hills, the good news is that there is always a downhill on the other side! So what do I call that? Of course, it’s interval training!I can attest that I’m in better

cardiovascular shape than I’ve ever been since I’ve “added a few hills” to my life.

Think about the difficult life situations you have experienced. Whether it was a stressful job situation, an illness of someone close to you (or your own), or perhaps the loss of a loved one, going through it was unpleasant and perhaps life changing. But, you emerged a mentally stronger person as a result of those trials. The same can be said for your physical being after putting your body through momentary stressful workouts. It’s difficult when you’re doing it, but you gain a new sense of accomplishment – both physical and mental – when it’s over.

Get out of your comfort zone and experience the benefits!

It is that time of the year when a spicy chili, creamy chowder or hearty stew just doesn’t appeal because of the hot sunny days and warm starlit nights of the Texas Hill Country summer. So with the blessed rain this year and now that your garden is producing abundantly, or you just went to a farmer’s market, put those fresh vegetables to good use. This month I have three tasty, healthy chilled summer soups that are very easy to make with locally purchased goods. We start with a White Gazpacho made with cucumbers and grapes, then a Rustic Red Gazpacho made from tomatoes and garden vegetables, and we finish up with a Crème of Guacamole topped with the original Shigefumi Tachibe’s Tuna Tartare.

These are quick, easy to make, good looking delights that please almost everybody, once they taste them. Some chefs refer to them as Liquid Salads. Served with a glass of chilled Sauvignon Blanc or a dry Riesling, a sweet mint tea or even a gin and Fever Tree tonic over cracked clear ice, they will make a summer meal a truly refreshing experience.

White Gazpacho

White Gazpacho comes originally from the Andalusian area of Spain. It was being made by peasants before Columbus introduced tomatoes to Spain in the late 1400’s. I discovered White Gazpacho when I participated in the first Flavors of the Napa Valley Food Enthusiast course at the Culinary Institute of America in St. Helena, California several years ago. When I saw it on the recipe list I was a bit apprehensive of a cold white soup, until I enjoyed the first spoonful. This is a creamy soup that is not overly rich and contains no cream.

Andalusian White Gazpacho

Yield: 3 to 4 lunch courses or 6 appetizer portions

Ingredients• ½ cup whites of leeks or shallots, sliced thin and washed• 3 slices cubed white sandwich bread, crusts removed• 20 green table grapes, washed• ¼ cup blanched almond slivers (roasted Marcona almonds work, too)• 2 tablespoons sherry vinegar• 2½ cups peeled, split and seeded cucumbers• 1 tablespoon sour cream• ¼ cup good quality EVOO olive oil (if it smells good, it will taste good)

• 2 cups cold water• 1 tablespoon salt

Directions:-Cook leeks (shallots) in a medium-size sauté pan over medium-low heat

until translucent and tender, then chill in refrigerator until you need them.

-Combine all ingredients in a good blender and purée until very smooth. -Season with Kosher salt, adjusting amount to taste. -Serve very cold in chilled bowls. -Top with Chive Oil, slivered blanched or finely chopped almonds and a

few thin grape slices.

Chive OilOne bunch fresh chives blended with 1 cup grapeseed oil and a little salt

(keeps for two weeks in the refrigerator).

Traditional Rustic Gazpacho

• 4 large ripe tomatoes, cut into ½” chunks (Heirlooms are the best if you can find them)

• 1 large English cucumber—peeled, halved and cut into ½” chunks• 1 Green bell pepper, cut into ½” pieces• 1 Yellow bell pepper cut to ½” pieces• 1 Zucchini cut into ½” pieces• 1 cup chopped sweet yellow onion• ¾ cup of celery chopped to ½” dice• 1 garlic clove, smashed• 2 Tablespoons of chopped cilantro (optional)• 3 cups V8 vegetable juice or Zing Zang Regular Bloody Mary Mix

(for the more adventurous)• 1/3 cup extra-virgin olive oil• 2 tablespoons sherry or red wine vinegar• 2 tablespoons fresh lime juice• Salt to taste• Chopped pickled jalapenos for those that want them

Directions:-Place all the ingredients in a large plastic bowl and stir. -Place V8 or Zing Zang Regular Bloody Mary Mix, vinegar, garlic and

lime juice in a food processor and blend until mixed well. -Pour over the vegetables and mix well.

-Optional Step: place four cups of the soup at a time in the food processor and PULSE several times until it is the desired look that you want. Repeat with the balance of the soup.

-Serve in chilled bowls.

-Top with a dollop of sour cream, Crème Fraiche or unflavored yogurt and a bit of cilantro.

-Optional toppings could be seafood ceviche, lump crab meat, lobster claws or cocktail shrimp.

Chilled Guacamole Soup with Tuna Tartare or Small Cocktail Shrimp

Yield: 4 main servings or 6 starter servings

• 2 cups homemade Guacamole (HEB fresh-made is what I use)

• 2 cups buttermilk• 1½ cups clam juice• 1 cup ice water• 2 tablespoons fresh lime juice• Season with kosher salt and

pepper to taste

Puree all ingredients in a blender until smooth and pour into chilled bowls.

Shigefumi Tachibe’s Tuna Tartare (optional)

• 1 pound sushi grade tuna (Ahi if possible) cut into quarter-inch dice (Groomer’s is a good source)

• 2 very fresh or pasteurized egg yolks

• 6 ounces olive oil• 1 tablespoon Dijon mustard• 1 tablespoon finely chopped sweet pickles• 1 tablespoon finely chopped onion• 1 teaspoon finely chopped capers• 1 pinch minced tarragon• 1 tablespoon crushed green or pink peppercorns• 2 tablespoons lemon or lime juice• Lemon zest

Directions:-Slowly whisk olive oil and Dijon mustard into the egg yolks to make a

creamy mayonnaise. -Mix the tarragon and chives with the chopped vegetables and other

seasonings, and then add lemon juice. Sprinkle salt and black pepper on top.

-Pour Guacamole soup in a chilled bowl to a 1”depth. -Gently spoon some of the Tuna Tartare on the soup and then cracked

pepper & lemon zest to taste. -Some dots of the Chive Oil from the first recipe make this an elegant

soup.

You’ve opened that last water bill… Does that green shimmer radiating from your freshly sprinkled expanse of Bermuda suddenly look like disappearing dollars? It is. There is a way to

revamp your landscape to use less water.

Obviously, picking up the phone and calling your favorite landscaper is the easiest approach, especially if your goal is to have the project done in just a few weeks. But there’s a lot to be said for doing at least some of the work yourself.

First, converting a sprinkler system to a drip system is one of today’s best practices in water conservation. And if you really want to keep green in your pocket, reduce your lawn area by expanding — or by adding — new garden beds of native plants. Planning the size, shape, and look of your garden as well as how you will water and maintain are the keys to best results.

De�ne the Beds

This is a fun and easy step. Use a garden hose to draw your outline. Beds are either borders or islands. A depth of 3 to 5 feet is a good rule

of thumb for a border. Often border beds are designed to be one-sided, with the tallest plants in the back descending in size to the front.

An island bed floats in a “sea” of lawn with gentle curves and no sharp corners. It is usually designed to be viewed from all sides, with the tallest plants positioned along the center line of the bed, and the shortest plants around the edges. Island beds look best when they are generous in size — say, 8-by-15 feet — with the tallest plants reaching a height of about five feet.

As you outline your bed, guard against creating tight areas that are difficult to maintain. You might do the outlining, mowing the corners before you finalize the lines. Once you are happy with the outline, you might want to spray paint the grassy line.

Visualize the End Result

Visualize the height, density, and color you want to see in your garden. Do you want the height in the center, cascading down to the edges, or in the back, cascading down to the front? When selecting plants, remember that many plants hold their flowers well above the foliage. This means that when the plant is out of bloom, it may be much shorter than the specified height. A plant’s width, or spread, is just as important as its height. Most of the time, plants are green, and it is their leaf form and foliage texture that are the “color” in your garden. The appearance of a garden or bed depends as much upon the shapes of your plants and how they are arranged, as upon their colors. A garden planted with groupings of five or more plants of the same variety will display drifts of repeating colors and textures. In this type of garden, plants are used primarily as design elements that add up to an integrated visual effect. When your plants are in bloom, do you want all on color, an array of color, or a color scheme? These considerations will drive the list of plants to consider.

When you are ready to look at plants to consider, make a trip to Riverside Nature Center and pick up the plant list published by the Kerrville Chapter of the Native Plant Society of Texas. If you are not familiar with Hill Country natives, you can research online or ask to schedule an appointment with a native plant expert. An expert can help you develop a short list of your preferences, based on the height, width, and colors. As you develop a short list of plants, remember to give consideration to your selections’ likes — amount of water, sun, and soil conditions. (And don’t forget the deer!)

Finalize your planting plan on graph paper. Measure your bed and draw it to scale. Include how you will access

plants to stake, deadhead, or divide. Flat rocks may serve as stepping stones and small river rocks to create a water channel where a gutter drains. Do you want to have a bird bath or other decorative features in your bed? Determine the “hardscape” elements first. When you begin spacing your plants on your plan, note the height and width that you expect each to grow, and then leave them adequate space for growth.

Decide Your Watering Plan

If your future garden is currently sprinkled, changing to a drip system will be a huge savings in your water bill. You must decide if you want to hand water, run a soaker hose through your garden, or replace your sprinklers with drip emitters. Hand watering is low tech and requires no more planning in this step. If you seldom travel and like standing in the yard, go for it. The downside to hand watering is inefficiency. You lose water to evaporation and run off. If you go with drip emitters, have a

professional installer do the conversion for you. You can utilize your current controller and connect into your existing system; it is simply a significant change in how the water is delivered.

A soaker hose, laid just under the mulch, delivers a slow, steady release of water that seeps in sweat-like beads from the hose along its entire length. When watering with a regular hose, supply your new plant with 30-minute supply of water. If you plan to use a soaker hose, incorporate that into your soil preparation plan.

Once you have determined the outline of your beds, decided upon your watering method, and know what you want as an end result, you are ready to start to work (or call in your landscape team).

Remove the Grass

Tilling and turning under the grass will leave you with many more new growing bits of Bermuda grass. Even if you cover it with weed mat and start to plant, you will constantly fight the grass coming up through the openings in the mat. (Trust me. I’m fighting this battle now.) For immediate results, either kill the grass with chemicals or cut it out with a rented sod cutter. Either method allows you to start planting in short order, but neither will totally eliminate the re-emergence of Bermuda. If you have patience, add these two additional steps: apply a layer of 10 – 12 sheets of newspaper and top that with three inches of compost or topsoil and leave it for about four months.

Prepare the Beds

Now it’s time to implement your watering plan. If you are converting to drip, call an expert. If you plan to hand water or use a soaker hose, you are done! Finally, edge your bed. If you don’t mind the maintenance, use a nice sharp edging tool and plan to recut the edge several times during the growing season. Alternatively, sink in stone, pour a concrete edge, or install metal edging.

Improve the Soil

Add a 2-inch to 3-inch layer of compost, decayed leaves, dry grass clippings, or old manure. If you used the newspaper compost approach, you can till the organic matter into the soil. Digging loosens the soil so roots can penetrate more easily. Use a spade or spading fork to gently turn the top 8 to 12 inches of soil, mixing in the organic matter. If you decide to use a weed mat in your bed, put it down next.

Buying and Planting.

Many local organizations (including Riverside Nature Center) hold native plant sales, but not all plant retailers buy from local nurseries. When shopping for your plants, ask where the plants they are selling have been grown; the closer to home, the better. Get the largest, most mature plant you can afford. The bigger the plant, the more quickly it will fill out and the sooner it will begin blooming. Once you’ve planted, water each plant slowly with at least a gallon of water. Keep new transplants well watered for the first few weeks.

The Tour is always greatly enhanced by these teams of magicians.We thank them for their efforts and if you are looking for someone to bring your home to life, give them a call. Check them out the next time you are looking for that special piece or need a whole house full. They are all excellent at turning your vision into reality.

The Tour kicked off with an awards presentation and dinner. The judges for these awards consist of 3 professionals including a developer/builder, architect, and interior designer who are not affiliated with Comanche Trace. They do a very thorough job of going through each home and painstakingly filling out their ballots. This year, every builder won at least one award.

In the under 3,000 sq. ft. category, Brad Moore Builders (4073 Comanche Trace Drive) won Best Kitchen, Best Master Suite, Best Outdoor Living Area, Best Floor Plan and Best Interior Design. BMC Homes (German Cottage #10) won Best Landscaping and Best Architectural Design. Arthur Schmidt Construction (2113 Toscano Way and 3592 La Cumbre Drive) won Best Craftsmanship and Best Overall Staging.

In the over 3,000 sq. ft. category, the balloting was very close, with several awards only a point or 2 apart. White Construction (3916 Kite Drive) won Best Master Suite and Best Outdoor Living. Anderson-Jenkins Signature Homes (1009 Club House Road) won Best Landscaping and Best Kitchen. Stavinoha Homes (3325 Arrowhead and 3925 Oak Park Drive) won Best Craftsmanship, Best Floor Plan, Best Overall Staging, Best Interior Design and Best Architectural Design.

Voting for People’s Choice award took place during the Tour. Over 1,000 people toured the homes and 504 of them submitted a ballot indicating their favorite. The winner of this prestigious award was Stavinoha Homes for 3325 Arrowhead Drive. Second place was 3916 Kite Drive built by White Construction. Third place was 3925 Oak Park Drive and fourth place went to 4073 Comanche Trace Drive. A big thank you to all of you who took time to vote!

Comanche Trace is proud of the Tour of Homes 2014. We are especially happy to make a donation to a local beneficiary each time we present a Tour. This year the donation will go to a very worthy recipient –Texas Lions Camp. A Recap of the 2nd Annual Texas Hill Country Wine and Brew Festival Guests steadily arrived,despite the rainy beginnings, making the 2nd Annual Texas Hill Country Wine & Brew Festival a great day of fun for vendors and patrons alike. The festival surrounded Lake Comanche Trace with a great selection of wine and beer, not to mention food, local craftspeople, and live entertainment.

Twelve wineries, from throughout the Hill Country and a bit beyond, attended this year’s festivals. From the nearby area came Kerrville Hills and Singing Waters. From Wine Road 290, Compass Rose Cellars, Hye Meadow Winery, Lewis Wine, and Messina Hof came out. Flat Creek Estate, McReynold’s Winery, Stone House Vineyard, Texas Legato, and Wedding Oak Winery came from the greater Hill Country area. And Dionisio Winery from Houston came west to join the fun. The wineries were spread out to the left and right of the entrance along the lake, with great vendors nestled

between them. Guests could leisurely stroll from one winery to another, enjoying the wine and other great buys to be found.

These wineries provided a great sampling of what Texas wine has to offer. Due to crop-damaging weather last year, there was a limited supply of white wines, but it did include Texas favorites like Viognier and Chenin Blanc. Reds, on the other hand, were abundant and diverse. Guests could choose

from a number of Cabernet Sauvignons, thanks in part to Kerrville Hills Winery. A few wineries brought a variety of Syrahs, from Flat Creek’s rich, dark wine to Compass Rose’s more subtle and complex one. Italian grapes got a lot of attention, with Flat Creek’s Super Texan blend and Hye Meadow’s Dolcetto. Guests could sample a unique native grape, Norton. This rarely used grape from Missouri is grown on Stone House’s estate and is made into their Claros. For those with a sweet tooth, Dionisio’s fruit wines along with a subtly sweet wine from Wedding Oak easily pleased.

The wineries not only delivered great wines but also wine knowledge. Some wineries sent some of their tasting room gurus, such as Brenda Hardy from Kerrville Hills Winery and Kyle Gholson and Jorge Ruelas from Lewis Wines. Best of all, a number of owners and winemakers came out and shared their expertise with guests. The winemakers in attendance included Robert Nida from Compass Rose, Tim Drake from Flat Creek, Jeff Ivy from Hye Meadow, Wayne Milberger from Kerrville Hills, and Penny Adams from Wedding Oak.

For the brew lovers, abundant beer was available. Each distributor came with an average of five beers. Craft beers dominated the

options, and the generous draft pours made a thorough sampling of lesser known beers easy. Brown Distributing brought a few of their Texas craft beers along with the only cider available, the new Stella Artois Cidre. Local food and beverage distributor Ben E. Keith provided a different selection of craft beers, including the well-received Alamo Beer.

The beer tastings were quite popular; even the winery representatives made sure to sample a few brews.

Enjoying several varietals of wine or beer was made even more refreshing by the sounds of the three bands who performed at the festival. Patrons were blown away by the talents of the young opening act from Tulsa, The Dustin Pittsley Band. With their soulful blues and intricate guitar they gained some new fans that day. The next band, Finding Friday, was also well received. With an excellent lead guitarist, and both male and female singers, they had a knack to emulate almost any other band, regardless of its musical style or time period of origin. The final band was Fred Andrews &

Honeybrowne. Known for their deep Texas Country roots, they stayed true to form and did not disappoint.

And for the non-drinkers, a selection of great sodas from Dublin Bottling Works was available. For those unaware, Dublin Bottling Works had been the home of Dr. Pepper. This bottling plant stuck to the original formula and continued adding pure cane sugar instead of high fructose corn syrup. Unfortunately, they lost their Dr. Pepper contract, but that gave them the opportunity to expand their portfolio. At the festival, guests enjoyed a range of these locally made sodas, including Black Cherry, Root Beer, Vanilla Cream, and a number of fruit sodas.

A good drink needs a good pairing, and the festival’s food delivered. In fact, it was so good that it sold out by the afternoon. Each guest, no matter his or her palate, had a diverse selection of food. For those wanting mouth-watering traditional Memorial Day fare, Buzzies BBQ was the truck to visit; the smell of the barbeque filled the air. West End pizza provided simple pizzas, but also brought some more unlikely options, like the Three Meat (pepperoni, bacon, and Canadian bacon). Chef’s Kitchen had an array of food,

including fish tacos and other street fare, while Sunshine Kitchen had great sandwiches. And to make enjoying the food easier, a large communal tent was available. Guests could settle in and eat while being entertained by the great live music or the trick roper, Kevin Fitzpatrick.

Guests could make a short visit to enjoy the wine and beer or make a full day of this festival; shopping, taking a Comanche Trace home tour, dancing to live music, and lounging by the lake provided plenty to do. Even the kids had something special waiting, with unique and fun soda options to taste and bounce houses and playgrounds to while the day away. And after the day was done, proceeds – especially from the fun Chip’n for Charity on Lake Comanche Trace – helped local Schreiner University. This event offers a great way to enjoy the beauty and fun found in Texas Hill Country.

Wyatt is a Standard Schnauzer and is the newest member of the Schuneman family. He joins Jager and Luke who welcomed him with open paws. Lynne has known Wyatt since she helped Pat

Koller, friend and breeder of all 3 of her dogs, deliver the litter of 8. Pat has been breeding and showing Standard Schnauzers for 34 years under her kennel name, Always Standard Schnauzers in Austin. Pat and Lynne have become very good friends going to dog shows together. Lynne acquired

her first Standard Schnauzer in 1990 and immediately fell in love with the breed. She soon started attending dog shows as a spectator and became fascinated with the sport. In 2006, after the Schunemans got their first dog from Always Standard Schnauzers, Lynne began going to shows with Pat where she received an excellent education by getting hands-on experience with bathing, grooming, and everything else it takes to prepare a Standard Schnauzer for the ring. Lynne stepped into the show ring her first time at

the Standard Schnauzer National Specialty in 2010, handling Pat’s champion dog. After that she was hooked on conformation and dreamed of having a show dog of her own one day. That dream was fulfilled in August 2011 when Wyatt joined the family.

Here is how fate determined that Wyatt would become Lynne and Norm’s show dog. Originally Wyatt had been promised to a family as a pet. One of the requirements by his breeder is that a suitable yard and fence be in place for the dog’s safety. A week before he was to go to prospective owners, Pat discovered that they had not fulfilled their promise of putting in a fence. Being the responsible breeder she is, Pat decided that in good conscience she could not send a puppy to this home without a fence. Over the weeks as the puppies were growing and before they were placed with their new homes, Lynne had the opportunity to help evaluate them for show prospects. Although

there were several very nice puppies in the litter, Wyatt always seemed special to Lynne. Something about him just kept catching her eye. Therefore, when he became available, she and Norm couldn’t help but snatch him up, give him a forever home, and campaign him on the show circuit. It was meant to be!

The American Kennel Club has a “standard” for each breed that they register. To be shown in an AKC accredited show, the dogs must be suitable for breeding and improving the breed. The dog is judged by how closely he or she conforms to the AKC breed standard. Wyatt was a winner from the start. At age 6 months, he began his show career and in just over a year he earned his Champion title (January 2013). He then went on to get his Grand Champion title in December of the same year. As of this interview, he now has 44 points toward his Bronze Grand Championship which requires 100 points.

Owner handled the entire way, Lynne is very proud to say she got every point on him herself. In 2013, Wyatt finished as the #9, owner-handled Standard Schnauzer in the country and qualified for the Eukanuba National Owner-Handler Series in Orlando. Just recently, Lynne learned that Wyatt will be recognized as #10 among the top 10 schnauzers when the Standard Schnauzer Club of America honors its 2013 award winners at the National Specialty in Pleasanton, California in October. In addition, Wyatt has already qualified and received his invitation to the Eukanuba National All Breed Show to be held in Orlando, Florida, December 13-14. Congratulations, Lynne and Wyatt, for a huge accomplishment!

Although Wyatt’s winning ways have been an absolute thrill for Lynne, the thing she values most from her dog show experience is the wonderful friends she has made. If not for Wyatt she is sure her path never would have crossed with people she considers among her best friends with whom she shares a very unique and close bond. Lynne’s current plans are to continue to have fun showing Wyatt, but also mentor new Standard Schnauzer exhibitors as a gesture of gratitude to those who were so generous with their advice and assistance when she was just starting in conformation.

While Wyatt is quite the “fab” show dog, he is also a regular dog who loves to run, romp and get dirty in his backyard … he also knows how to strike a pose just when it counts.

The story of the camp begins with a married couple who wanted to provide outdoor experiences for children and families who might otherwise never have the opportunity.

That couple was Mary Holdsworth Butt and her husband, Howard E. Butt. Many will recognize the family name: Howard took his mother’s small grocery store, which she started in 1905

in Kerrville, and through decades of hard work, built a chain of grocery stores across Texas. We know those stores as H-E-B today.

Back in 1954, though, the chain was still comparatively small. Though the stores were definitely successful, the company was nowhere as large as it is today. In the 1950s it was still a regional operation.

In 1954, when the couple purchased the 1900 acre Wolfe Ranch, the land which would become the H. E. Butt Foundation Camps, Howard was 59, and Mary was 51. Both were in that season of life when one wonders what might yet be accomplished in the years to come.

A small portion of Mary’s diary from those days was recently published, which includes these thoughts, from February, 1954:

“Today, I am fifty-one,” Mary Butt wrote. “Howard and I have been wondering what we want most to do with the remaining years of our life. We want to further the cause of the Christian faith; to improve educational opportunities for children; to encourage all character-building activities; to help provide recreational opportunities for children... we want, if possible, to establish a

camp somewhere in the Texas hills where groups of children can go... where a hundred years from now deer, turkey, squirrels, and rabbits can still be seen.”

Over the years since its purchase, five campsites were constructed on the property: Echo Valley, Singing Hills, Linnet’s Wings, Wind Song, and Comanche Outpost (which has been replaced by Headwaters), forming the foundation camps. Two other programs were also established: Laity Lodge, and Laity Lodge Youth Camp.

Laity Lodge hosted its first retreat in June, 1961, when a group of people met on the banks of the Frio River in a newly-constructed hall. The featured speaker was Elton Trueblood, a Quaker philosopher, who emphasized “the ministry of common life.”

Mary and Howard Butt’s eldest son, Howard Butt, Jr., a gifted Christian speaker, encouraged the development of Laity Lodge, and it became a family project. “My mother worked tirelessly,” Howard Butt Jr. wrote recently, “and we spent long hours planning the design of the retreat center, the design of the buildings, the building locations, the interior design, and even the location of the parking lot. She felt compelled to build the camps; building Laity Lodge in particular gave her great satisfaction, and she was pleased

when the buildings were ready for the first retreat.”

Keith Miller served as the first director of Laity Lodge, from 1962 to 1965. He was followed by Bill Cody, who served until 1979. My long-time friend Dr. Howard Hovde served from 1981 until 1999; Eddie Sears, another long-time friend, served during the same time as Associate Director. In 1997 Don Murdock took the executive director’s post, and in 1999 the title of director was held by Dr. David Williamson. The current director, Steven Purcell, was hired in 2006, and the current Director of Operations, the talented Tim Blanks, was hired in 2003.

Mary Butt’s diary from the earliest days of the camps expressed the hope to provide a camping experience for “maybe 100 boys and girls at one time.” A recent newsletter from the foundation estimates since 1954 “one million boys and girls and men and women have benefited from free use of the foundation camps.”

This special place, in a stark canyon overlooking the crystal Frio River, has been an active part of a greater spiritual community for sixty very good years. Laity Lodge and the H. E. Butt Foundation Camps has its beginnings here in Kerrville, starting when a woman of faith prayerfully opened a little grocery store and taught her children (and they their children) the importance of hard work and spiritual values. Those lessons continue to this day at Laity Lodge, Laity Lodge Youth Camp, and the H. E. Butt Foundation Camps.

In 2013, Schreiner University and the Kerrville Folk Festival collaborated to create a concert series quite unique to Kerrville called, Music at the Mansion. Each show features two performing songwriters. Many of these

songwriters have written songs you may know, but you had no idea who the writer was. The intimate concert setting allows the audience to become

acquainted with the writer through his/her songs, stories of inspiration and interesting sidebars the artists inevitably share. Performing a set of his or her own songs is a very personal, revealing way for an artist to share these songs with the audience. Moreover, the audience will be delighted to discover that these songwriters are extremely talented singers and

The city of Kerrville was literally built around the home and businesses of Charles Schreiner. In 1865 Captain Schreiner settled in Kerrville and built a mercantile store, a hotel, a cotton gin, a flour mill, an artesian well, a bank and Kerrville’s first electric light and power plant. And, in 1923 he provided funds to establish a prep school which grew into what is now Schreiner University, a small private university renowned for “Learning by Heart”.

The original Schreiner family home, located on Earl Garrett Street, was where he and his wife raised their eight children. Today it is owned by Schreiner University and is known as the Schreiner Mansion. On the ground floor, the house is furnished with many of the Schreiner family furnishings, and is appointed to show what it was like when the Schreiner family were its residents. The upstairs has an expansive room ideal for intimate special events for up to one hundred attendees.

musicians in their own right. And having this experience in downtown Kerrville at the historic Schreiner Mansion is pretty special.

Tickets to performances are sold a season at a time, through what are called sustaining memberships. The five-performance seasons are defined by the calendar year. Members receive two tickets to each event, which includes two feature artist sets, preceded by a reception – where members can enjoy complimentary wine and hors d’oeuvres, as well as meet and mingle with the performers and other patrons before the show.

Memberships for the first two seasons were sold for $500. In order to keep the experience intimate, only 45 memberships were made available, and by the second season, the memberships sold out. However, members are very good about giving notification if they must miss a concert allowing organizers to give non-members the opportunity to purchase tickets for individual shows. And, the series has been able to accommodate several people who have asked to be placed on a waiting list for sustaining memberships or for individual performances in the event space becomes available.

The membership roster is an impressive endorsement of the quality of the series. Many of the Music at the Mansion members are also members of the Symphony of the Hills. And it would not be surprising to see the Music at the Mansion and Symphony of the Hills spin off another collaborative effort. Not only has the Music at the Mansion series been well received, but it has been financially successful – thanks to two underwriters, Culligan Water and Chartwells Food Service.

“Music at the Mansion is a great example of community partners working together to showcase the history and culture that make the Texas Hill Country special,” said Bill Muse, vice president for administration and finance and one of the organizers of the event. “We are pleased to be collaborating with the Kerrville Folk Festival, which has a 43-year tradition of bringing outstanding musical talent to this community. Hearing original music performed by the songwriters in this beautiful old home of Kerrville’s (and Schreiner’s) founder is a unique and enjoyable experience.”

with appreciation. “The greatest joy in my work is introducing artists to a new audience and watching them fall in love with the songs, just as I did.” Although most Music at the Mansion members have long been residents of Kerrville, some have never attended the Kerrville Folk Festival. However, that is changing now that they have heard many of the main stage performers. “The Kerrville Folk Festival attracts songwriters, musicians, and attendees from across the country and beyond. Music at the Mansion has provided me one of the best ways to connect the local community to why this festival has continued for 43 years,” adds Allen.

For 43 years the Kerrville Folk Festival has brought world renowned songwriters including Peter, Paul and Mary, Willie Nelson, Judy Collins, Lyle Lovett, Mary Chapin Carpenter, Robert Earl Keen, Nanci Griffith, and Guy Clark to perform at Quiet Valley Ranch, 9 miles south of Kerrville. The festival runs each year for eighteen days, drawing around 30,000 people per year. Its mission is to promote emerging artists while giving its audience exposure to both new and recognized, seasoned talent. In short, the Kerrville Folk Festival is the best place in the world to hear some of the best songwriters in the world performing their own work.

Although they do represent the Traditional Bed and Breakfast, guests will find that there is another alternative in a “guest house”

that is now so popular in the Hill Country and offers the privacy many look for. The staff at Gästehaus Schmidt will match guests needs and desires with a property from their extensive and varied inventory. Founded by Loretta Schmidt the company was purchased by the Mittel’s in 1992, which at that time had 60 units. Properties have changed over the years, starting with country antique to the current simple elegance and let’s not forget the more rustic log cabins both in town and in the country. The most important aspect that guests are looking for is cleanliness and this is something Gästehaus Schmidt stays on top of for every guest. The Mittel’s hire an outside individual to do inspections on the properties.

Making reservations is easy by either logging into their website atwww.fbglodging.com or by calling toll free (866) 427-8374 and visiting with one of the very knowledgeable reservationists. While in town they invite you to stop by their office at 231 West Main; they are open seven days a week. There are photos of the homes on their walls that will not only allow shopping but they also invite you to ask any pertinent questions. Need something special added to your reservation? They book winery tours, spa treatments, baskets and flowers. One stop shopping!
