VINTAGE CONDITIONS

Plentiful winter and early spring rain in 2013 set up the 2014 vintage for a promising start. A dry and windy November with frost in some areas lead to reduced crops throughout the Barossa and marked the beginning of a vintage that would throw up plenty of challenges. What was progressing as a dry, warm summer was interrupted by a deluge of rain in February, followed by a cool and dry finish to the vintage. As always, careful management in the vineyard and well considered picking decisions were crucial in delivering rich, fresh and regionally expressive fruit to the winery.

WINEMAKING

Careful and experienced blending was the key to creating this classic lively Barossa Shiraz Cabernet. Our winemakers selected specific parcels of fruit based on the presence of distinctive regional characters, concentrated varietal flavours, fine tannin structures, and a longstanding track record of outstanding quality and consistency. Vineyards from the valley floor and Eden Valley were used, and regular, systematic inspections of individual vineyards enabled us to pinpoint optimal harvest dates. The selected parcels were gently crushed and de-stemmed into a range of fermenters, including static and open fermenters, then inoculated with a chosen strain of neutral yeast. During fermentation on skins temperatures were carefully controlled at 18-28°C for up to 15 days to ensure optimal colour, tannin and flavour extraction from the skins. The key components were then drained, pressed and aged on a range of carefully selected oak during malolactic fermentation and ongoing maturation for up to 18 months. The blend of Shiraz and Cabernet Sauvignon is an Australian classic and the winemakers are happy to keep the legacy going with the 2014 Jacob’s Creek Barossa Signature wine that shows the lovely depth, layering and complexity that we expect when these two varieties are blended.
