The

he task of foraging the picturesque landscape of the Barossa for

unique wines to complement Saskia Beer’s exciting new food

journey has been a challenging one. The standard of winemaking

in the Barossa is exceptional and we have been somewhat

overwhelmed by choice for wines of distinctive

character and pedigree.

Shiraz from the Barossa Valley already enjoys a reputation for which

we are all proud custodians of and enjoy sharing with visitors

travelling from interstate and overseas. Whether there celebrating old

vine stock centuries old, new oak barrels sourced from one of our

local cooperages or a new young gun ‘knocking off’ the old hand at

the Barossa Wine show.

One thing is for sure that when a glass of Barossa Shiraz is put

in front of you, the depth of character, generosity of flavour and

boldness tells you it’s of Barossa ilk.

The Cellar Kitchen offers a detailed list of Shiraz exploring every

corner of its 8,000 hectares under vine, creating opportunities to

un-earth new discoveries, re-visit icons and learn about the unique

sub-regions of the Barossa.

This carefully considered wine list restrains from being loud and

ostentatious yet delivers the rich tapestry of the Barossa landscape,

a thoughtful selection that pays homage to the spiritual home of the

varietals and above all offers an enhanced dining experience.

CHAMPAGNE

“From the outset, quality was the key watchword for the

partners in this new entity formed in 1827, and it has

remained so for all of their successors. This approach

would be encapsulated in the motto penned by Georges

Hermann Mumm: 'Only the best' ".

SPARKLING SHIRAZ

“Australian sparkling reds combine the best qualities of a good

red: juicy berry flavours and tannins, with bubbles and chill, for

a hot summer’s day; and wonderful start to a decadent dinner.”

RIESLING

“In 1847, Joseph Gilbert built a fine homestead in Eden Valley

and planted the region’s first grapevines. These Riesling

vines can be traced to some of the original vine cuttings

brought to Australia by James Busby.”

PINOT GRIS – PINOT GRIGIO “Pinot Gris and Pinot Grigio are in fact the exact same grape

variety. It is a white grape, with a grayish / pink skin. Gris is ‘gray’

in French which stylistically more full-bodied, richer, spicier, and

gently textured. Whereas Grigio is typically lighter-bodied, crisp,

fresh, with vibrant stone fruit and floral aromas.”

Light white wine attributes - Bone dry, aromatic, vibrant and

refreshing higher natural acidity.

SAUVIGNON BLANC

“The name Sauvignon Blanc means “Wild White” and the grape

is related to Savignin with origins in the South of France.

Sauvignon Blanc is one of the most widely planted wine grapes

in the world and because of this it has a wide range of styles

and flavors, varying in style from deeply herbaceous to sweet

tropical fruited wines.”

SEMILLON "Semillon grapes, underrated in much of the world, can

produce arguably much more interesting, subtle and long-

lived dry white wines and is also single handedly responsible

for the back-bone to Sauternes and Barsac dessert wines,

the longest-living wines in the world.”

CHARDONNAY

"The most famous wine variety of all! So powerful is the C-

word on a wine label that, like Cabernet Sauvignon,

Chardonnay has virtually no synonyms. 'Chardonnay' became

a name more familiar to the world's wine buyers than any of

the geographically-named wines this vine variety had for

centuries produced, such as Chablis,

Corton-Charlemagne, or Montrachet. When the emerging New

World wine industries introduced varietal labelling - calling

wines by the name of their principal grape variety

PINOT NOIR

"Pinot Noir is the most highly prized wine in the world. It’s not as

rich or big as its noble cousins; in fact it’s quite the opposite.

Pinot Noir wines are pale in color, translucent and their flavors

are very subtle. Typical seductive characters include earth, faint

floral smells of roses, violet and fruit that leans towards raw,

freshly picked cherries’. Its perfume, outright silkiness on the

palate with a peacock’s tail finish is what all the aficionados are

searching for, for this character can be elusive. It’s like finding

the ‘Holy Grail’ in a bottle of wine!"

MERLOT

"Merlot, which in French means ‘the little Blackbird‘

produces soft, ripe and elegant wines that are easy

drinking and versatile with many foods."

GRENACHE

"While Grenache has a long history in Australia, famous in

early times for fortified wine production but now receives well

deserved acknowledgement as a stand-alone variety. Again, the

Barossa Valley in believed to have the oldest resource (160

years old) of this versatile grape variety in the world so

celebrate this national treasure for all of its fruitfulness, earthy

spice and food friendliness."

BAROSSA RED BLENDS - GSM

"The ‘GSM’ red blend is made from Grenache, Syrah and

Mourvèdre and it’s a classic from the Côtes du Rhône

region. There are 19 different grapes used in Côtes du

Rhône and Chateauneuf-du-Pape wines. Fortunately, of

the 19 varieties, there are really just 3 varieties that

define the style. These varieties are Grenache, Syrah and

Mourvèdre(Mataro) – they hold the secret to Côtes du Rhône

wine.

Like a highly skilled ‘Mad Scientist’, a GSM blend of the years

harvest is crafted using different percentages of each grape

variety depending on the bounty. Some of the best examples

in the Barossa & Eden Valley are from winemakers who’s

control over the taste profile of a wine shows finesse and

delicacy ."

The great distinction of Cabernet Sauvignon is it produces

a very powerful and recognisable aroma of blackcurrants

wherever it is grown and, if matured in newish oak, can

smell of cedar, cigar boxes and, sometimes, tobacco.

Cabernet Sauvignon is also deep purple in youth colour,

while it is not especially alcoholic, it can be extremely long-

lived. This is because Cabernet Sauvignon's small, thick-

skinned grapes have a very high ratio of solids rich in

colouring matter and tannins to juice. Bordeaux in France

is the spiritual home of this variety with Barossa

possessing similar cool climate aspects in its valleys and

hills.

showcases this monumental grape variety and its diversity

across our fertile backyard. We are active custodians to the

oldest planted Shiraz vineyards in the world so we feel it’s our

SOUTHERN VALLEY

Wine Characteristics – Rich, ripe unctuous wines

maintaining balance and delicacy.

Soil – ironstone, loam and sand over clay.

Wine Characteristics – In the South around Bethany the wines

are perfumed, elegant with hints of meatiness. In Light Pass,

the wines are often more robust with rich fruitcake, hints of

eucalyptus and dark chocolate.

Soil – Deep sand, gravel and clay soils with alluvial biscay soils

running off the hills.

EDEN VALLEY

Wine Characteristics – Generally possess more finesse and

fine boned structure than wines off the valley floor, also have

great perfume blue fruit profiles.

Soil – are very rocky, shaly and lean.

NORTHERN BAROSSA

Wine Characteristics – Some of the longest lived wines of the

Barossa Valley. Famous for it’s big, dark fruited wines with

distinctive earthy, smoke house and bitter chocolate again.
