1. Preheat the oven to Gas Mark 7/220°C/fan oven 200°C. Place the onion and potatoes in a shallow roasting tin add the oil and toss to coat. Season with salt and pepper, then roast for 15 minutes.
2. Meanwhile, spray a non-stick frying pan with low fat cooking spray and place over a medium heat. Season the pork, add to the pan and brown for 2 minutes on each side.
3. Lay the pork on top of the onions and potatoes and pour over the white wine and stock. Add the cherry tomato bunches and thyme leaves. Roast for a further 10-15 minutes until the pork is cooked and the vegetables are tender. Serve, scattered with the feta cheese.
Instructions
1. Reserve 4 cherries for decoration, then halve and pit the rest. Put them into a small saucepan with 50ml water and 1 tbsp sweetener. Simmer for 3-4 minutes, until softened. Stir in the blended cornflour and cook, stirring, until thickened. Remove from the heat and allow cooling. Stir occasionally to prevent a skin from forming.
2. Meanwhile, beat the low fat soft cheese, milk, vanilla extract and remaining sweetener together until smooth.
3. Make the chocolate sauce by putting the chocolate, cocoa powder, blended cornflour and syrup into a small saucepan. Heat, stirring constantly until smooth and blended. Allow to cool for a few minutes, stirring to prevent a skin from forming.
4. Spoon the cherries, chocolate sauce and low fat mixture into small serving glasses. Finish off each one with a cherry, and then chill until ready to serve.Bake for 25-30 minutes until firm to the touch. Cool, then cut into 16 squares. Serve, dusted with a little cocoa powder.
