So the heatwave has gone and the colder temperatures are moving in and with that in mind the Buzz has teamed up with Weight Watchers to bring you two recipes to bring you back into your happy place.

Thai Green Chicken CurryBring some Thai cuisine into your kitchen with this delicious green curry. It cooks in just 30 minutes, and is mild enough for the whole family to enjoy.

Prep time: 15 min Cook time: 30 min Other time: 0 min Serves: 4

Ingredients5 sprays calorie controlled cooking spray6 medium shallots, peeled and sliced2 cloves crushed garlic500g chicken breast5 lemon grass stems, finely chopped2 teaspoons grated ginger root400ml amoy reduced fat coconut milk1 vegetable stock cube, dissolved in 150ml water4 teaspoons mild, thai green curry paste2 tablespoons thai fish sauce2 tablespoons fresh coriander1 teaspoon salt1 teaspoon black pepper1 sprig fresh coriander1 teaspoon olive oil

1. Heat a wok or large frying pan and mist with low fat cooking spray. Add the shallots, garlic and chicken and cook over a medium-high heat for 4 - 5 minutes, or until the chicken is sealed and browned.

2. Add the lemongrass, ginger, coconut milk, chicken stock and curry paste. Stir in the fish sauce or soy sauce and coriander. Simmer for 20 - 25 minutes, until the chicken is cooked and the sauce has reduced a little.

3. Season with salt and pepper, if needed. Serve with cooked rice or noodles (remembering to add the extra ProPoints values). Garnish with coriander sprigs.

Ingredients200g plain, white, wheat flour2 level teaspoons baking powder100g muscovado sugar75g mars maltesrs pouch1 whole medium egg1 level teaspoon vanilla extract50g low fat, melted spread100ml skimmed milk1 medium banana, mashedTo make the topping:100g soft, medium fat cheese1 teaspoon muscovado sugar

1. Preheat the oven to gas mark 6/200°C/400°F/fan oven 180°C. Place 8 paper muffin cases into a muffin tray, or line with squares of greaseproof paper.

2. Sift the flour and baking powder into a mixing bowl, then stir in the muscovado sugar. Reserve 8 Maltesers for decoration and cut the rest in half, then add these to the mixing bowl.

3. n a jug, beat together the egg, vanilla essence, melted low fat spread and milk. Stir into the dry ingredients with the mashed banana until just combined. Do not overmix.

4. Spoon into the paper cases and transfer to the oven. Bake for 20-25 minutes until risen and golden. Cool.

5. Mix together the low fat soft cheese and muscovado sugar, allowing a couple of minutes for the sugar to dissolve. Swirl an equal amount onto each muffin, then place a Malteser on top.

Karen Atkinson was awarded 3 x Honorable Mentions in the 2013 International Photography Awards Competition.

Much of K’s work rises from the fickle play of nature, its crashing waves, its quiet beauty of water swirling and foaming along shorelines littered with rocks, its sweeping landscapes subject to the wrinkles of erosion, its lonely trees left to contemplate alone in pastures littered with grasses and stones, its twilights and dawns expressed in glorious Technicolor. Indeed, K catches the hush of a silence that one can only hear within the roar of waves and winds and the indifference of time sculpting the landscape with reckless abandon. Whether she is using digital or film, working with colour or monochrome, crafting artworks from a macro lens and beautiful flowers, pressing the shutter in real time or stretching out time through a long exposure, K always finds the perfect balance between light and shadow, a balance filled with a moody silence that reminds us of the sense of wonder that comes from letting all of life’s trappings melt away so that we can engage all that unfolds around us. Hive art studios is a new development which has recently opened its doors to seven local artists. One of those artists Mark Gibson has spent the last six months (with the help of Stephen Pratt, Stephanie Hunter and others) physically preparing and creating the studio ready to accept six local artists to use as a base for creative activity, professional development, and new and innovative engagement with Bede’s World museum and their visiting public. The artists at Hive are Stephen Pratt (Jarrow artist/musician), Karen Atkinson (Jarrow

photographer/artist/musician), Zoe Corr (Hebburn artist), Jacky Payton (South Shields artist), Juli Watson (Sunderland artist/poet) and Kimberley Emeny (Sunderland artist/performer).

The studios named HIVE to tie in with the already established Hive Community Radio Station led by Dr Kathy Cremin based at Bede’s World was born out of a conversation between local artist Mark Gibson and Bede’s World director Mike Benson late last year when discussing what is missing in South Tyneside that local artists really need. The obvious answer being the lack of studio space pretty much anywhere along the South side of the river Tyne.

In less than three short months the Hive artists have filled the studios with new works of art, ran art classes, trialled Team Building exercises, held creative networking events, invited visiting artists to exhibit inside Bede’s World, worked in partnership with other organisations creating an installation, invited numerous musicians to play at the venue, created an external exhibition at System Gallery Newcastle, and have plans for so much more! This is a new and exciting chapter of creative endeavour for Bede’s World, Jarrow, and local artists who will continue to make productive use of what was a redundant unused part of the museum site. The hope is to build a beneficial partnership that can help leave a

real and lasting creative legacy in Jarrow.

If you’d like to view the work produced from HIVE Studios all seven artists are currently exhibiting work along with work from guest artist Stephanie Hunter at System Gallery, 2nd floor 22 Leazes Park Road, Newcastle. The gallery is open to the public Tuesday to Thursday 3pm – 6pm, Friday and Saturday 12 – 6pm.

Hive Art Studios

On 28th January 2013 Lorna Windham a Hive listener and local South Tyneside writer contacted Hive Radio a Community Radio Station based at Bede’s World in Jarrow. To appeal for help identifying men from a photo of the Boldon Colliery AFC team 1915.

Lorna has since uncovered her own grandfather’s history, and family history researcher Margaret McDonald has conducted over 800 hours of research into the lives and stories of the photo and the communities connected to our locality.

With the skills and help and of the Bede’s World curatorial team, the objects and stories from this research will become an exhibition curated and researched by local history researchers and local families as part of Bede’s World WW1 commemoration. Re-enactors, local writers, Hive artists and musicians will be finding new ways to tell these stories and bring them to life. Our partners Veterans at Ease and their beneficiaries will be helping interpret the lives of families and soldiers then and now.

On 10th September Hive (supported by Arts Council England) hosted an event in Jarrow Hall, Bede’s World Museum where the Windham family presented a gift of a framed photo of the 1915 Boldon Colliery AFC team to the current members of Boldon Colliery club.

We are now looking for information about the men in this photograph, or any other

information you have about your family and the First World War. Do you have Photographs, Artifacts, Letters or even recordings of your family’s stories that you would be interested in sharing with us?
