Burgos is a city of northern Spain, at the edge of the central plateau, with about 200,000 inhabitants in the city proper and another 15,000 in its suburbs.

Burgos was founded in 884 as an outpost of this expanding Christian frontier by Diego Porcelos .Already in the 10th century, Burgos turned into the capital of the county, and, later of the kingdom of Castile and Leon (1035).

In the shield of the city of the 14th century, the most typical features are synthesized as " Head of Castile ", " Royal Chamber " and " the first one in the voice and in the loyalty ".

At an elevation of 856m , the city of Burgos and its province have acontinental Mediterranean climate, a variant of the mediterranean climate found in the north meseta of Spain and caused by two principal factors:The distance from the sea and higher altitude

Proceeding from the pork, it consists basically of onion, blood, lard and rice. The oral tradition says that it must be: " tasteless, greasy and picajosa ".

BURGOS´CATHEDRAL

The Burgos Cathedral is a Gothic-style cathedral. It is dedicated to the Virgin Mary and is famous for its vast size and unique architecture. Its construction began in 1221, following French Gothic parameters.

Castle of Burgos: it is located in the hill of its name risen up to 75 m on the level of the city. Raised by the count Diego Porcelos in the times of the Reconquest, in the year 884.

Monastery of Santa Maria la Real de las Huelgas: It is a Cistercian monastery founded in 1189 by the king Alfonso VIII of Castile. It forms a part of the National wealth.

Cartuja de Miraflores: It is a monastic set built to city of Burgos. It was founded in 1441 by the king Juan II
