CAPRESE SALAD WITH BURRATA For the dressing: ½ cup cherry tomatoes 4 tbsps extra-virgin olive oil 2 tbsps vinegar (balsamic or sherry) 1 clove garlic, minced 1 tsp Dijon mustard 1 tsp fresh basil Salt & pepper to taste Active time: 20 minutes Cook time: none Yield: 4 servings INGREDIENTS: PREPARATION: 1. Make the dressing. In a food processor, combine the tomatoes, olive oil, vinegar, garlic, Dijon mustard, fresh basil, salt, and pepper. 2. Using a serrated knife, slice the beefsteak tomatoes in rounds and the cherry tomatoes in half. 3. Transfer the tomatoes to a large, wide platter, and drizzle with the dressing. Slice the burrata and place around the tomatoes. Scatter the herbs on top of the tomatoes and burrata. 4. Finish the salad with another drizzle of olive oil and sprinkle of salt. 5. Serve immediately. For the salad: 6 large beefsteak tomatoes 1 cup cherry tomatoes, halved 1 8-oz ball burrata mozzarella, torn into quarters ½ cup loosely packed basil, torn 2 tbsps sliced chives Salt & pepper to taste
