    Winemaker´s Notes

The 2015 harvest in Cauquenes was relatively normal in terms of temperatures, although somewhat warmer than the previous year. This vintage allowed to obtain more powerful wines, expressive and with great balance.

The blend consists in 60% Garnacha, 25% Carignan and 15 % Monastrell, expressing all the character of the Cauquenes Region, through the beautiful harmony and synergy of these Mediterra-nean varieties.

Bright ruby red color, good intensity and limpidity. The nose reveals fresh aromas of berries, blues and reds, such as blueber-ries, cherries, plums and raspberries with an elegant touch of spices and fresh herbs, as well as floral and earthy notes. In the palate, it expresses ripe and round tannins with a fruity, broad and unctuous palate. A powerful, fresh, elegant wine with excellent structure and concentration. Very persistent and velvety finish.

    Winemaking

The bunches were collected by hand and deposited in 12 kgs. crates. Each variety was vinified independently. During its recep-tion a strict selection is made, where only ripe and healthy bunch-es are suitable to enter the tank by gravity. After grinding, the grapes are subjected to a pre-fermentation cold maceration for approximately 8-10 days, at temperatures of 6°C - 8°C, to obtain the best color intensity and concentration of aromas.

  • Afterwards, alcoholic fermentation takes place, which is carried out at 26°C - 28°C for 20-25 days with native yeasts, making three “pump overs” daily to obtain the correct level of tannins and colour from the skin. Then, the wine undergoes a post-fermentation maceration, in contact with its marc for another 20-25 days to enhance its structure. Each wine is transferred to 10 french oak barrels of 400 and 500 liters, of second use where malolactic fermentation takes place, to age for 12 months. At the end of the aging process, the blend is made and the wine is racked to a 50 hl fudre, where it ages for an additional 12 months. The total aging time is 24 months, in order to fine-tune the intense tannin structure of each batch.

    Vineyard

Grapes were sourced from Undurraga’s Cauquenes Estate Vineyard, located 20 km south-east of the town of Cauquenes, in the Maule Valley. Garnacha (Grenache), Cariñena (Carignan) and Monastrell (Mouvedre) were grafted onto 70-year-old-dry-farmed “Pais” vines and grown into a Gobelet system, also known as bush shape.

These particular “País” vines were planted in the early 1940`s on very gentle, granitic, south-facing slopes. The soil in these slopes is mainly red clay and quartz, originated from alteration of the quarzic granite rock below it. Roots can be found deep inside the rock down to more than 3 meters deep, been so able to survive the dry and warm conditions during summer.
