    For over one hundred years, the rustic farm at 44 Main Street in Pittsfordhas provided one of lifes most wholesome necessities to the community pure, creamy milk.

N w the dair sells h memadeice cream, ba ed g ds, farm-fresh cheeses, freshl ba edbread, l call r asted c ee and m re.

    It g es bac t ab ut 1888, when the rst had c wshere and s ld mil at this pr pert , sa s Charles B. C rb ,

    wner. In the earl 1900s the delivered mil t h uses inthe village with h rse-drawn vehicles. It was and still is realqualit mil .

    The riginal wners raised dair c ws n site, pr ducingand delivering mil . Eventuall the pened a small st re

    n the pr pert . Sh rtl after W rld War II, C rb s father-in-law, al ng with his grandfather-in-law purchased thefarm, and began t m dernize the business.

    Pittsf rd Farms Dair receives raw mil a few times a wee , which ismeasured in p unds, n t in quarts. The pr cess all the mil int b thwh le and l w-fat varieties.     2 1/2 cups sugar 1 tablespoon sea salt

    2/3 cup water

    1 - 4x12 (approximately) foam cone,covered in gold foil

    1For the sugar syrup: In a 3 quart saucepan c mbinesugar and salt. Add 2/3 cup water t m isten thesugar. C ver and b il f r 5-7 minutes. Rem ve the lidand c , stirring ccasi nall , until the caramel is lightg lden. Immediatel put the b tt m f the p t in theb wl f ice water t st p the c ing. Rem ve the p tfr m the water.

    2 Ta e each individual cream puff and first dip the t pint the sugar s rup and set n parchment paper t
