    Entirely sustainable vineyards located onthe 650-750m high altitude slopes of theMantinia Plateau and the Aigialamountains in the Peloponnese.

    Clay and sand.

    Grapes are hand picked and transported insmall baskets. They are then chilled to7-8C in cold storage, followed bypneumatic pressing and classic whitevinification. Fermentation takes place atcontrolled temperatures of 16-17C. Blending traditional values with the latestadvances in viticulture, the winery uses agravity-fed process that takes fulladvantage of the sloping terrain. Frompressing to barreling and on to bottling, theentire process relies on the force of gravityrather than on damaging mechanicalmethods.

    Accompanies shellfish, fish, pasta withseafood, sushi and sashimi, poultry andwhite meat. Best served at a temperatureof 9-10C.

    Harsh winters and cool summer nights dueto the high altitude, allowing the grapes to ripen slowly and perfect maturation to bereached as well as maximum flavor andaroma.
