Clay and sand. Grapes are hand picked and transported in small baskets. They are then chilled to 7-8C in cold storage, followed by pneumatic pressing and classic white vinification. Fermentation takes place at controlled temperatures of 16-17C. Blending traditional values with the latest advances in viticulture, the winery uses a gravity-fed process that takes full advantage of the sloping terrain. From pressing to barreling and on to bottling, the entire process relies on the force of gravity rather than on damaging mechanical methods. Accompanies shellfish, fish, pasta with seafood, sushi and sashimi, poultry and white meat. Best served at a temperature of 9-10C. Moschofilero first week of October. Sauvignon Blanc late Aug / Early Sept. Harsh winters and cool summer nights due to the high altitude, allowing the grapes to ripen slowly and perfect maturation to be reached as well as maximum flavor and aroma.
