1 ½ pounds sweet potatoes

1 pound frozen lima beans

1 ½ teaspoons vegetable oil

1 teaspoon black mustard seeds

1 teaspoon cumin seeds

1 dried whole red chili

1 onion, chopped

2 cloves garlic, sliced

1 tablespoon minced fresh ginge

r

Salt

2 tablespoons fresh-squeezed

lemon or lime juice

½ cup fresh chopped cilantro

Boil sweet potatoes, in enough

water to just cover them, until tender, a

bout 25 minutes. At the

same time, in another saucepan, boil the

lima beans in just enough water to

cover them, about

15-20 minutes. Peel and dice the potatoe

s once they are cool enough to

touch. Drain the lima beans.

In a frying pan, heat the oil

over medium heat. Add the mustard seeds; w

hen they pop and

start to crackle out of the pa

n, add the cumin, red chili, on

ion, garlic and ginger. Stir well and

mix. Let the onion turn golden b

rown; then add the reserved li

ma beans and stir. Add the swe

potatoes. Mix all the ingredient

s well, sauté for just a few m

inutes more to mingle tastes evenly.

Salt to taste. Add lemon juice and st

ir. Garnish by sprinkling cilantro

over the top. Serve warm.

Lidia’s Sweet Potatoes and Lima Beans

1 cup orange segments2/3 cup tangerine segments1 cup pink grapefruit segments1 cup freshly grated coconut2/3 cup pomegranate seeds2/3 cup toasted pine nuts

For the Dressing:1/3 cup sour cream1/4 cup coco lopez1/3 cup lemon juice1 teaspoon salt1/3 teaspoon cayenne

Make the Dressing: In a medium bowl, whisk together all the ingredients and chill until you’re

ready to use. Make the Salad: In a medium bowl, combine the citrus, coconut and the dressing. Take care

to stir it gently, as you don’t want fruit that looks ragged. Transfer the

salad to the refrigerator until you’re ready to serve it. Just before serving,

cover the top with pomegranate seeds and toasted pine nuts. Serve chilled.

HUGS & KNISHES: A CELEBRATION OF OUR JEWISH FOODS AND TRADITIONSMONDAY, DECEMBER 19 AT 10 P.M. ON WXXI-TVSnippets of home life, holiday gatherings, humor and history come together like the ingredients of a favorite grandmother’s Shabbat chicken soup.

2 pounds chicken scraps (or packaged wings)

4 bay leaves

1 head garlic, peeled

1 tablespoon black peppercorns

1/2 lb peeled carrots (about 2 cups chunked)

1 bunch parsley, washed

3 large onions

1/2lb peeled parsnips (about 2 cups chunked)

1 pound celery (about 4 cups chunked)

1 1/2 tablespoons sea salt or regular salt

1/4 cup chicken soup mix (optional-increase

salt to 1/3 cup if omitted)

Real Jewish Chicken Soup

Rinse the chicken scraps and place in a very large

pot, at least an 11 Quart Stockpot. Wash

celery stalks and chunk. Add to stockpot. Peel the

parsnips, trim ends and cut into chunks. Rinse

and add to stockpot. Peel carrots. Trim the ends, chunk and rins

onions. Cut into quarters and add to stockpot. Pee

l garlic cloves and add to stock pot. Add

everything to the pot and fill with water to 1” w

ithin the top. Bring to a boil. Stir. Turn down

the heat and simmer the soup, covered, for 2 1/2 hours. Stir the once or twice but

don’t really

disturb everything too much. It isn’t necessary and it’ll just cloud your sto

ck with veggie bits, etc.

When soup is done, remove from heat. Let cool 15 minutes. Discard cooked vegetables and chicken

scraps. I use cheesecloth in the strainer for a fina

l strain. Immediately compost the soup scraps

or take the garbage out. The finished stock is gold

en and flavorful.

DEAR FRIENDS,I hope you were among the more than three-and-a-half million viewers who tuned in last month to watch Hamilton’s America. The Great Performances special shared the fascinating story of Lin-Manuel Miranda’s creative process for this groundbreaking production in American musical theater – and it was a perfect way to launch our PBS Arts Fall Festival. If you missed Hamilton’s America – or wish somebody you know could have seen it – I have good news for you. WXXI-TV will be rebroadcasting the program on December 1st at 9 p.m and December 4th at 7 p.m.

It was a year of great programming from PBS and NPR (especially political coverage in an election year like no other in recent memory), but we’re also very proud of our accomplishments at WXXI in 2016. Here are just a few of the highlights:

WX XI’s Golden Anniversary: September marked WXXI’s 50th anniversary and we’ve been celebrating ever since. We kicked off our celebration on September 6 (the exact day Channel 21 turned on its transmitter in 1966) with a Founders’ Breakfast for original members. There are still 165 people in the area who have been members of WXXI from day one, and it was incredible to spend the morning with many of them. Other festivities included: our Mister Rogers’ Sweater Drive, our Open House in September (with nearly 5,000 attending), the Wait Wait… Don’t Tell Me! taping at the Auditorium Theatre in October, and “An Evening with Caroll Spinney,” who has played both “Big Bird” and “Oscar the Grouch” on Sesame Street, in November.

WX XI’s “Go Public” Campaign: Thanks to a capstone gift of $2 million from philanthropist B. Thomas Golisano, our “Go Public” Comprehensive Campaign goal was met in July. We raised more than $18 million over the past five years to help secure the future of WXXI and The Little. The funds raised have already paid dividends to the community with investments in new transmitters for AM 1370 and Classical 91.5 FM, improvements in the WXXI television signal, new cameras and editing systems, and support for news programming and documentaries.

Se cond Opinion and Host Dr. Peter Salgo’s Daytime Emmy Nomination: WXXI’s national healthcare series Second Opinion and its host Dr. Peter Salgo were nominated for a Daytime Emmy® Award in the Outstanding Informative Talk Show Host category. The program, now in its 13th season, continues to break ground on healthcare issues and doctor/patient communication.

Ta ilor Made: The Story of Rochester’s Garment Industry: Premiering last February, Tailor Made captured the fascinating story of the local garment industry and the people who contributed to it. It showcased the rich history of Rochester’s clothing industry from Michaels-Stern & Co. to the Button Factory to one of the country’s oldest and most prestigious clothiers – Hickey Freeman. If you didn’t have a chance to see the documentary when it aired on WXXI-TV, you can watch it online at video.wxxi.org.

There will be some changes in 2017, as we bid farewell to a retiring Diane Rehm and welcome new voices to WXXI radio. Also, I know many of you will also miss Washington Week host and PBSNewsHour co-anchor Gwen Ifill, who passed away in November after a long battle with cancer. I knew Gwen for nearly 40 years – we met as young reporters covering Maryland politics in Annapolis. She represented the best in journalism and the best of PBS.

As you prepare to celebrate the holidays, please accept our sincere thanks for helping to make WXXI the home for extraordinary voices like Diane Rehm and Gwen Ifill. They will be our “guiding lights” as we continue to serve our community in the years ahead.

The Strong Museum that opened in 1982 looked very different than it does today. The Strong National Museum of Play is now nearly twice as big, has more whimsical and colorful architecture, and includes more dynamic, hands-on exhibit spaces according to Shane Rhinewald, Senior Director of Public Relations. While encouraging exploration and active play, and housing more than 450,000 artifacts of play (including founder Margaret Woodbury Strong’s original doll collections), it remains an American history and collections-based museum. Rhinewald tells us more.

Q. What is the process for nominations and inductees for the National Toy Hall of Fame? The Strong receives thousands of nominations for the National Toy Hall of Fame from the public year-round. An internal committee of curators, educators, and others, determines

which of the nominated toys best meet the criteria of icon status, longevity, discovery, and innovation. The 12 finalists go to a National Selection Advisory Committee of scholars, historians, educators, and others with knowledge of play and its cultural impact. They help determine the final two to three inductees.

Q. How many butterflies currently reside in the Dancing Wings Butterfly Garden?The Dancing Wings Butterfly Garden typically houses between 800 and 1,000 butterflies. They almost envelop you when you walk into the space. It’s quite magical. It’s also home to Chinese button quail, a green aracari toucon, tortoises, koi fish, and even a chameleon—if you can find it hiding!

Q. What makes play such an integral part of childhood, and how can parents encourage more play at home?

Play supports physical, emotional, cognitive, and social development. Parents can encourage play by simply scheduling unstructured free play time, playing board games as a family, or encouraging outdoor activities.

Q. The benefits of play have been proven at all stages of life. Are there any exhibits or activities geared towards adults?

The museum provides an all-ages and intergenerational experience, and many of the museum’s exhibits (like the Toy Hall of Fame) offer a nostalgic trip down memory lane. There are also many opportunities for adults to be hands-on, such as the popular eGameRevolution, which explores the history of video games. www.museumofplay.org

Mary and Paul share their favorite recipes for Christmas classics like stollen, mincemeat streusel, and a gingerbread house, and some lesser-known bakes: Scottish black bun, Tunis cake, and Boxing Day pie — the perfect way to use trimmings from the day before. Tune in on Saturday, December 17 starting at 12 p.m. on WXXI-TV.

8oz softened butter

8oz caster sugar

8oz self-raising flour

2½oz ground almonds

4 large free-range eggs

1 large lemon, finely grated zest only

For the topping

10fl oz double cream

14oz plain chocolate, broken into small pieces

7oz natural marzipan

gel food colouring, in red and green

Preheat oven to 350F. Grease & line 8in tin w/pa

rchment. Add butter, sugar, flour, ground almonds,

eggs & lemon zest to the bowl of a mixer. Beat on high speed

for 1 min. Spoon batter into

prepared cake tin and level surface w/spatula. B

ake 45 mins, cover with foil to prevent the top

from browning and cook for another 15 mins. Let cool completely in tin on wire rac

k. For topping,

pour cream into a small pan and bring almost to boil. Remove from heat, add chocolate and stir

until melted. When cool but not setting, pour chocolate mixture evenly overcooled

cake still in tin and

let set. To decorate, color 6oz of marzipan w/ green for th

e holly leaves. Using a holly leaf shaped

cutter, cut 20 leaves. Mark veins w/knife, lay ove

r a rolling pin and leave to dry. Leaves will slight

ly

curl. Color remaining marzipan w/ red food coloring & roll into 30 ‘holly

berry’ size balls. Let dry.

To serve, remove cake from tin and carefully peel off parchment paper so you get a

clean line

between cake & chocolate layer. Arrange holly leav

es & berries in a wreath around edge of the cake.

Frankie and Debbie are joined by Louis J. Papa, MD, Primary Care Physician, Olsan Medical Group and Tiffany Pulcino, MD, MPH, FACP, Assistant Professor of Internal Medicine & Pediatrics, URMC, who explain what Down syndrome is, the different types, and the cause. They also discuss how individuals transition from pediatric care to adult care.

DEGREES OF DIVERSITY Public school teachers in this country are overwhelming white. A WXXI News investigation has found that the disparity is even more severe in the Rochester and Finger Lakes regions. Degrees of Diversity is a weeklong series reporting on the state of diversity among teaching staffs in our area. It kicks off Monday, December 5 with stories airing throughout the week during Morning Edition (6-9am) and All Things Considered (4-6pm) on AM 1370, WRUR-FM 88.5, WEOS-FM 89.5 and online at WXXINews.org.

The Royal Opera’s production of Les Contes d’Hoffmann was created in 1980 by the award-winning director John Schlesinger, best known for his work in film (Midnight Cowboy, Sunday Bloody Sunday) and television (Cold Comfort Farm, An Englishman Abroad). Schlesinger’s production sets Hoffman’s tales in the 19th century, drawing on styles from both Hoffmann and Offenbach’s times.

1 tblsp & 1 1/2 tsp active dry yeast (2 envs)

1/3 cup whole milk, warmed

3 cups unbleached bread flour & more for surface

1/4 cup granulated sugar

4 large eggs, lightly beaten, plus 1 large egg

1 1/2 teaspoons coarse salt

2 1/2 sticks unsalted butter, room temp.

1/2 teaspoon pure almond extract

1/2 teaspoon pure orange extract

1 cup diced candied (glazed) orange peel

1 1/4 cups golden raisins

Vegetable oil, for bowl

Pearl sugar, for sprinkling, optional

1/4 cup & 2 tblsp sliced almonds, for sprinkling

Sprinkle yeast over milk in mixer bowl w/dough-hook attachment. Let stand until foam

y, about 5 mins.

Sprinkle 1/2 cup flour & 1 tblsp gran. sugar over to

p. Cover w/plastic, let stand for 1 hr. Add 12oz flo

ur

& 3 tblsp gran. sugar, beaten eggs & salt. Mix toget

her on med. speed about 5 mins. Add butter, 1 tblsp

at a time (mixing well after each) on med.-high speed for 5 mins. Reduce speed to low &

add extracts,

orange peel & raisins. Mix until combined. Turn out dough &

form into ball. Transfer to lightly oiled bowl.

Cover w/plastic & refrigerate overnight. Bring dough

to room temp & divide in 1/2 Form each 1/2 into

a ball; place each in a 5 1/4-by-3 3/4-inch pap

er panettone mold. Transfer to baking sheet. Cover w/

plastic wrap and let stand 2 hrs. Preheat oven to

350 degrees. Brush egg wash onto dough & sprinkle

w/pearl sugar & almonds. Bake 50 mins. Remove molds from oven & run 2 wooden skewers horizontally

through center of each loaf. Hang loaves upside do

wn on 2 large heavy canisters/cans. Let cool completely.

WXXI’s Indie Lens Pop-Up series presents, The Bad Kids by Lou Pepe and Keith Fulton. This observational documentary chronicles one extraordinary principal’s mission to realize the potential of a group of students whom the system has deemed lost causes. Employing a verité approach during a year at the school, the film follows Principal Vonda Viland as she coaches three at-risk teens— a new father who can’t support his family, a young woman grappling with sexual abuse, and an angry young man from an unstable home––through the traumas and obstacles that rob them of their spirit and threaten their goal of a high school diploma. The film will be followed by a panel discussion.
