Ahh, yes. The warm comforting spring and summer months are something to truly cherish in the Northeast. It is time for winter to release the local farmland from its slumber and allow rejuvenating vegetal growth to once again grace the landscape with vibrant colors and bountiful crops. The spring and summer harvests are full of brightness and fresh, crisp flavors; ready for their farm to fork debut.

We are excited for the bright months ahead and are looking forward to partnering with you on all of your farm to fork culinary endeavors. 2020 was a tough one, but tough times don’t last, tough people do. For many restaurants, partnering with the Big 4: Door Dash, Uber Eats, Grub Hub, and Postmates, within the food delivery space, might not sound so app-etizing at f irst glance, likely due to the fees associated with these apps. But in fact, convenient digital ordering and delivery are now an expectation by restaurant consumers. You can thank Covid-19 for the popularization and expansion of these food delivery apps, but even with that said, weren’t we on the brink of traveling down this road pre-Covid? With Millennials, iGen, and soon Gen Alpha in the driver’s seat of variety and convenience demand, it is essential to now adapt to the evolution of take-out. The interesting thing to note is that as these apps grapple for greater market share, their biggest competitors are not just one another, but restaurants themselves with their own in-house app. So, there are a couple options on the table if you are deciding to adapt to the demand.

Let’s put things into perspective. Door Dash states in its prospectus that it processed 543 million orders in the first 9 months of 2020. Door Dash is the market share leader in the food delivery app space, with about 50% market share obtained, as reported for 2020. That number is triple the Door Dash orders processed in 2019. Covid-19, while being an unprecedented disruption monster within the restaurant industry, gave food delivery apps the opportunity to prove the need and convenience of their service while building service equity during these trying times with their users. Previously there may have been some consumer hesitation to use food delivery apps, where now the hesitation is not so abundant.

We are all familiar with beer and wine flights, a well-presented board of delightful alcoholic indulgence, providing us with an array of tasteful sample-sized choices. Well, get ready for flights to take flight within the food space, the time for its crossover has come. With consumer demands for more variety and shareability and an ever-growing want for a unique “experience” and memorable Instagramable moments while dining, the introduction of specialty flights on your menu couldn’t come at a better time. From bacon flights, French fry flights, breakfast flights, sauce flights, gourmet burger flights, pizza flights, and dessert flights; the flight options are endless. With this creative method, you are offering your consumers an expansive landscape of flavor taste testing while delivering an experience, a moment, where quite possibly in this scenario, the consumer is paying more attention to flavor and detail than when feasting on a standard plated meal. With food flights, you are giving the consumer options, you are giving them an opportunity to judge and decide, which goes a long way for the consumer, in the realm of a positive experience within the science of consumer behavior. Most of all, the numero uno factor is that you are providing them with experiential dining, one that can be enjoyed with their Covid-safe friends and families where conversation about flights and flavors are had, where photos are taken, where for a moment it feels like Covid is not here.

S T A Y I N G C O V I D - C R E A T I V EAs professionals in the restaurant industry, it is important for us all to understand consumer food trends. Keeping our f inger on the pulse of trend allows us to gather validated information to help us make innovative menu and atmosphere decisions. One trend that is underrated and some might even say is not a trend, is creativity. More specifically, the creativity trend is for us restaurant professionals to attract and retain customers. Creativity, you say? Yes 100% creativity and you are seeing it now more than ever, most likely because restaurants to some degree do not have a choice, it is vital right now to stay innovative.

To make your restaurants’ value proposition appetizing in todays Covid and soon to come post-Covid environment, driving continuous creativity is going to separate you from your competitors. You do not want to be just a restaurant, you want to be that unicorn restaurant, the one that stands out with quality, variety, and flavor, the one with all of the word of mouth and awareness. You will need this positioning and excitement to ward off and disrupt the discomfort and uncertainty Covid has created within consumers. In the consumers mind, they have to justify for whatever reason, it is ok to dine in…you know like the good ol’ pre-Covid days.

Here are some questions that need to be asked in this unprecedented environment we have been thrown into:

What am I doing to excite?

What am I doing to create an experience?

What am I doing to comfort?

What am I doing to generate interest?

What am I doing to motivate?

What am I doing create competitive edges?

Now is the time to be dynamic and as creative as possible, to adapt and overcome the obstacles the restaurant industry is facing. Your creativity will shine brightly in this dark time and carry over into the better days we have ahead of us with your customers.

Be a unicorn restaurant, and the creativity you instill today will give you a head start on post-Covid planning.
