LETTER From The EDITOR

If there’s anything “It’s a Wonderful Life Taught Us,” it’s that life is not made up by what we get

out of it, but what we give to it. All the riches in the world cannot compare to the love of family

and warmth of community.

As the cooler temperatures come to the coast and the valleys, San Diego is preparing for the

busy holiday season, which kicks off with a Thanksgiving feast and doesn’t stop until the ball

drops into the New Year. So before we leap in to this joyous time of year, FINE Magazine decided

to set aside this issue to celebrate a season of giving.

This month, we unveil Leonard Simpson’s “Best Dressed”—some of the most generous and

inspirational philanthropists in the county—and we give a nod to prostate cancer awareness by

wishing our readers a Happy “Movember.” We also offer floral and decorating guides to set the

best table in town, and reveal the secret to keeping your kitchen sparkling clean. (Psst—it involves

letting someone else prepare the gourmet feast.)

So before the hectic holiday schedule sets in—and before we see James Stewart too many times

to learn anything from him—let’s remember what really matters this time of year. As Arthur

Ashe said: “From what we get, we can make a living; what we give, however, makes a life.”

Cheers,Jeanette Calo

San Diego is a city of abundance. There is a material abundance, which manifests in an average household income that ranks fifth of all U.S. cities. There is a

cultural abundance, with world famous zoos, aquatic parks

and beaches dotting the landscape. There are an abundance

of days where the weather never drops below 70 degrees. And

there is an abundant supply of technicians willing and ready to

install entertainment systems into your house for less than the

industry standard.

Since choosing from the plethora of options can be daunting,

we here at FINE Magazine have done our best to narrow

down the selection process to a few of the very best in the area.

Kiwi Audio Visual

Kiwi Audio Visual (kiwiav.com) is the crème de la crème.

They have made their reputation on service, and it has brought

them success. In the words of founder and CEO Brian Bass:

“We look after our customers and systems at a level that others

are unwilling to provide.”

Kiwi also places special emphasis on custom installations.

“It all starts with our client,” Bass said. “Our sales and design

specialists carefully document the client’s needs and desires.”

After the project is designed, the customer is able to

communicate directly with the operations manager to provide

a “seamlessly integrated” system, according to Bass.

Kiwi also prides itself on its sustainability practices. “We believe

in saving costs,” Bass said, “both for our clients and for the

environment.” Using remote monitoring systems that update,

reset and perform service-related tasks straight from the office

saves a great deal on fuel consumption and keeps customers’

electronic equipment from being damaged. And old electronics

end up in recycling facilities all around the world.

HOME SWEET HOMESan Diego companies share the latest in home entertainment systems.

Kiwi is also at the cutting edge of technological advancements

in the field. “We find it exciting to work with computer-based

home entertainments systems—everything from Apple TVs

and iPads to Dell Zinos,” Bass explained.

With its superlative customer service and vast expertise, Kiwi

never garners a poor review or an unhappy customer.

Beyond Audio and Video

Another company at the forefront of customizable

installation services in San Diego, Beyond Audio and Video

(beyondaudiovideo.com) is one of the few that offers fully

customizable home theaters, as well as one-touch, all-home

automation. Its other services range from security cameras to

lighting control to computers networks—and the list goes on.

Beyond’s slogan—“From simple to sinfully over the top”—

sums it up perfectly. It carries products from the largest and

most reliable names in the industry, including Artcoustic,

AMX, Audioquest, Denon, Fujitsu and Home Logic. For the

quality and service of products Beyond provides, its $90/hr

setup rate is more than fair.

HD Hookups

The services and installations at HD Hookups (hdhookups.

com) are even better than the discrete innuendo embedded in

the company name. It is one of the few local theater installation

companies that advertises itself as a provider of corporate and

home installations.

HD Hookups’ website façade is impressive, and the layout

and photos do a grand job of speaking for themselves. If a

picture is worth a thousand words, then the preponderance

of high-def, gauzy-looking photographs should be enough to

make heads spin with anticipation. HD Hookups’ services run

KIWI AUDIO VIDEO

Page 22: FINE magazine Vol6 Iss11

the whole gamut of electrical and entertainment installation pieces. Not only does it offer home theater installation, it also specializes in security cameras, universal remote systems and “whole house music” systems. Home automation is perhaps the most fascinating feature,

as it allows you to seamlessly integrate the function of lights, shutters, video and sound systems into one button on a remote control. But what speaks loudest of all though, as always, is the sterling Yelp reviews, which rank this business as high as any can be ranked in terms of customer service, price-to-service ratio and overall product quality. It’s a solid choice for anyone looking for the latest in home theaters.

VisolutionVisolution (visolutiontv.com) is a paragon of professionalism

within the local industry. You will be hard-pressed to discover a single negative review of its services. Visolution’s installations are quick, its prices are fair and its employees even clean up after themselves—the most universally underappreciated

virtue for all handymen everywhere. Its two-year warranty on all its workmanship is also extraordinary.

Keith’s SoCal Home TheaterKeith’s SoCal Home Theater (socalhometheater.com) is

and has been a major player in the region for 11 years. What differentiates this business from hordes of competitors is a commitment to customer education. The pedagogues of product maintenance and upkeep, Keith’s will tell you how to avoid costly repairs and how to keep your equipment at optimum functional capacity—all with grace and easy smiles. And Keith’s covers a very wide area of service between San Diego and Los Angeles, so chances are it will be able to make it out to you.

With great abundance at every turn, it should be no great surprise to find so many viable options for home electronics installation in San Diego. The greatest problem with such abundance, of course, is the burden of choice. We’ve narrowed it down, but will have to leave the rest up to your discretion.

Health spa Cal-a-Vie is one of the county’s best-kept secrets.

Perched among whispering canyons and voluptuous vistas unfurling themselves as far as the eye can see is the best-kept secret in North County. The Spa-Havens,

otherwise known as Cal-a-Vie, is a Vista area resort and retreat

spread over 220 acres of luscious vegetation and undulating

hills. This health spa extraordinaire awaits three-, four- and

seven-night guests, all arriving to reinvigorate mind, body and

soul. The beauty of the place is nearly heart-stopping, except

that, in a flash, it is compelled to beat again—and regularly,

as guests sign up for regimens that will transform their being.

“It is all about the program, to unleash the passion of

exercise,” quipped marketing director Lin Alvarez. For more

than 26 years, the program has been perfected to include an

ideal combination of workout and exercise offerings, along

with both conventional and exotic treatments.

“Guests fill out a questionnaire about goals and desires for

their stay upon arrival. Typically, there is a fitness evaluation,

weigh-in and blood tests, if guests choose, to identify any

sensitivities or allergies,” Alvarez said. Then, they receive a

specially designed program for their visit here.”

Guests begin their day in The Forum, a focal-point for

meetings, classes, workouts and the Great Room, an overlarge

room gazing out on tranquil lily pads lit by the sun glistening

off the water. “Each day begins at 6:30 a.m., when guests

receive their program for that day,” Alvarez explained. Some

guests may hike the hills on the 23 acres of developed trails

snaking their way through the canyon. Others may start with a

round of golf on neighboring Vista Valley Golf Course.

“We are always adding new classes, looking for cutting-edge

workout styles based on what guests want,” Alvarez continued.

Indeed, mainstay classes include a wide variety of Pilates,

an ample amount of workout equipment—from weights to

bikes to treadmills—or—selecting from numerous Tai Chi

and yoga offerings. Cal-a-Vie has recently even introduced an

underwater spinning class and a hydro-rider class, always with

an eye for the next innovation. In addition, the resort boasts a

clay tennis court and two swimming pools.

“People come with different goals,” Alvarez said. But what

all guests have in common is a desire to restart and rejuvenate

themselves through an intensive workout, treatment and

meditative-style getaway from the grind of daily life. All the

food is organic, with meals consisting of tasty and nutritious

dietary combinations of fresh fruits, vegetables and herbs, lean

meats and fish, all presented with gourmet flair.

The days are filled with numerous activities. “Actually, people

spend little time in their room. By 3 p.m. the first day, guests

want to know ‘what’s next,’” Alvarez said. “They’ve already

recognized a transformation has taken place.” says Alvarez.

Following morning exercises comes afternoon treatments like

a seaweed wrap, massage or a hot stone foot treatment, then

dinner at 7 p.m., with evenings inviting fireside chats or local

musicians performing in the Great Room.

All of this rejuvenation is not to be eclipsed by Cal-a-Vie’s

physical beauty. Owned and developed by John and Terri

Havens of Houston, Texas, the resort’s design displays an

unmistakable French motif. Terri Havens said she wanted to

recreate as much of the tranquil French countryside feeling

as possible. Indeed, the Forum’s Great Room is constructed

with reclaimed wood, brick and stone and includes gorgeous

tapestries and art throughout. Furnishings are exquisite

with intimate seated groupings designed to draw one into

conversation or solitary reflection.

Guests stay in one of the 32 villas on the property, equally

designed with the same impeccable elegance. Equipped with

a king-sized bed and finely-crafted furnishings, no detail is left

unacknowledged or need unmet. “We even had a 400-year-old

French chapel brought over and reconstructed brick by brick,”

states Alvarez. “Guests can rent out the entire spa for weddings

or any other themed get-together like a family reunion,” she

adds.

An exquisite combination of comfort and style, revitalization

through rest and restorative exercise, Cal-a-Vie truly takes

your breath away.

It’s no surprise that New York is a fashion mecca—and nowhere does this show itself more than in the

autumn. The arrival of stunning fall

foliage heralds highly-anticipated fall

fashion that debuts on the runway and

quickly spreads to the fashionable streets

of Manhattan.

Models, buyers and celebrities from

around the world descend upon the city

Autumn is a marked by its own singular beauty, introducing bright reds, oranges and yellows into nature’s color palette. And when it comes to bringing

these colors into your home, the next best thing to flying in a

New England maple tree is to create floral arrangements that

celebrate the harvest season.

You don’t have to be a pro to create a striking arrangement

to centerpiece this fall. Just look for inspiration in a few places

and follow some easy tips. You’ll be amazed by the beauty you

can easily capture.

Think Outside the VaseBefore automatically picking up your usual glass flower vases,

consider unusual containers you can use for arrangements.

Baskets, metal containers, pottery, old pitchers, a wood box are

great choices. Even beautiful blue and white porcelain shouts

“It’s fall!” when filled with sunflowers.

If your new container is waterproof, arrange the flowers in

flower foam that has been soaked in water for 15 minutes.

However, if your container was not meant to hold water, place

the flowers in a small glass of water inside.

A grouping of three vases of the same color but different

shapes—or of three baskets of different sizes and textures—

creates a lovely arrangement. Arrange the same flower in each

container or fill each with a different flower in autumn hues of

yellow, orange and burgundy. These can be all the same height

or three varied heights, small or very large, depending on the

space you are filling.

Look for loose fall flowers at grocery stores and farmers’ markets,

and combine with dried grasses, wheat and pussy willows

available at craft stores. Sunflowers and chrysanthemums are

fall favorites, and they can look quite different in unusual

containers—especially when mixed with different sizes and

types.

Some of the most beautiful harvest arrangements are elegantly

simple. Begin with a floral frog—a multi-pronged stand that

holds flowers upright—in a shallow bowl. Place three tall flowers,

such as bird of paradise, at different heights. Then arrange one

or two large leaves, perhaps from the flowers themselves or from

your yard, and scatter smooth stones at the base.

Look for Harvest InspirationsFruits and vegetables can also serve as containers or as a

striking element of the arrangement. Now’s the time of year

to pick up pumpkins of all sizes, which look best in groupings.

Place the flower arrangement inside a hollowed pumpkin and

place two smaller pumpkins beside it. And don’t forget white

pumpkins—they can make a great statement.

After carving a pumpkin, you also can place live potted flowers inside by tilting the lid of the pumpkin on the side. These look beautiful on stairways and outdoor tables. Buy extra pumpkins early in the month and save them for containers for flower arrangements for Thanksgiving. Gourds, pomegranates and apples can also be placed around the base of your arrangement, or even used as candleholders. On a simple walk, you can often glean all you need to inspire

a beautiful fall arrangement. Look for dead branches with interesting form, colored leaves and even dried weeds—but watch out for poison oak! It can be beautiful, but you will regret choosing it for your floral arrangement. You can also collect dried pods and seeds such as acorns

and liquid amber pods to scatter around the base of the arrangement or used as filler in a clear vase with flowers. Try placing a glass filled with water for your flowers within a larger clear vase filled with unshelled walnuts. For this arrangement, golden marigolds or chrysanthemums would be especially pretty, as they would seem to be growing out of a field of walnuts. And don’t always assume that bigger is better. It can be

more charming to separate similar flowers from the typical fall bouquet and place them in separate smaller arrangements around your home.

Master Loose ArrangementsFor a no-fail way to make your arrangement stand out,

follow these simple instructions:

• If you don’t have flower preserver, fill your clean vase with water containing a few drops of bleach and one teaspoon of sugar to make the flowers last longer. Another option is to add a cup of 7Up to the water.

• Strip stems so that no leaves will be covered by water and decompose.

• Cut stems to about twice the height of your vase, leaving several stems an inch or two longer for the center of your bouquet.

• Insert stems of foliage and filler flowers, crisscrossing the stems as you go to create a grid that helps hold the other flowers in place.

• Starting at the rim of your vase and working toward the center, add other flowers, spacing them as if they were points on a triangle. Place the longest stems in the center of your bouquet.

Don’t forget to stand back and review your bouquet, making adjustments as needed.

Page 36: FINE magazine Vol6 Iss11

Follow a Few TipsA couple tips will make sure you enjoy your floral

arrangements:

• Cut an inch off the stems using a sharp knife,

especially if the flowers will sit a while before being

arranged. The fresh cut will help the stems absorb

water better.

• If the stem is woody, pound the end of the stem with

a hammer first so it absorbs water better.

• Store your freshly cut stems a few days before an

event in the refrigerator. (Note: You will probably

have to remove a shelf.) This also keeps roses from

opening before you want them to.

• Use florist’s foam to keep flowers in place and

constantly hydrated so they last longer. Soak the

foam in water for 15 minutes before cutting it to fit

the container, and water it every few days. You can

also use small stones to help stabilize flowers in a

container.

• For a tall arrangement, make your bouquet one-and-

a-half times taller than its container, and balance

the width with the height. For some arrangements,

you may want to drape greenery such as ivy over the

container’s rim.

When crafting your arrangement, remember that fall is

a time for the gathering of family and friends, and time

spent creating beautiful floral collections adds beauty

and warmth to the season’s special moments. Enjoy the

peace and tranquility that comes in capturing autumn’s

matchless beauty.

Erik Skoldberg is painting the town red—and a host of other colors. The San Diego artist’s work is on display at the Merrill Lynch Building downtown, and is also

featured in famed art dealer Alexander Salazar’s La Jolla and downtown galleries.Skoldberg, a San Diego native and University of San Diego

graduate, said his work is heavily influenced by his own experiences. His use of bright colors and broad strokes leave a lasting impression.“I want to build a collection that connects my travels,

experiences and Mother Nature, and take a view into that world of emotional harmony,” he said. Skoldberg’s journey into art began at a young age. His

mother, Gloria Skoldberg, has been teaching art for more than 30 years and operates the Skoldberg Art Academy in San Diego. Erik said he was fascinated by colors, color theory and the impact color can have. His work is typically done in an open-air setting. Using

pictures from his travels, Skoldberg will look for color combinations that “most effectively carry out my image and fuse appropriately.“Once my colors are determined, my dance of brush strokes

begins,” he said.If the colors from his work seem familiar, it’s because they

are. Skoldberg said he relies on the icy blues of Alaska, the tropical greens of Fiji and the burning reds of a San Diego sunset.“I am following a road map from my experiences straight to

the canvas, and hope the viewer will interpret it individually,” he said.In the summer of 2011, Skoldberg signed with Alexander

the Saving Station 9 charity event at the La Valencia Hotel in La Jolla. Earlier this year, Skoldberg was showcased in a FedEx marketing campaign for the Professional Convention Management Association. His art is in the corporate office and FedEx store in San Diego. But perhaps Skoldberg’s biggest achievement was his first

solo show at the grand opening of Salazar Contemporary Art Exhibits in La Jolla. “I believe that great artists should also be great individuals,

and Erik Skoldberg is passionate about his art and helping others,” Salazar said. “He has supported many charitable causes throughout his life by donating his beautiful artwork to various causes. I admire his commitment to painting, which is different than committing to art … he paints from the heart and by this, he gives his works a breath and life of their own.”It’s been a busy year for Skoldberg, and it appears things

won’t be slowing down any time soon. His work was featured in the grand opening of the Palomar Hotel, and his unique style seems to fit in San Diego.“I approach each painting with the same technique,”

he said. “My strokes and multiple layers are never the same order, causing new dimensions and new forms of expression. My style will continue with new ideas and new constantly changing results. My painting will always evolve.”

With GPS and Google Maps, getting lost in the city is hard to do these days. But getting lost in a menu of yoga practices can be easy if you’re unfamiliar

with Sanskrit.

The world according to Maharishi Patanjali’s “Yoga

Sutras”—profound Hindu works of philosophy written

about 2,000 years ago—is considered by adept devotees of

traditional yoga meditation to be the map to finding balance.

Focusing on external stretching while detoxifying through

breath rewards a student with clarity and flexibility, which is

both transformative and curative. Consider it an internal GPS

for finding enlightenment and revitalization.

On this map, there are eight limbs or disciplines practiced in

sequential order. As the third limb, Asana postures are most

common focal points in yoga. And the wildly popular practice

of Bikram is comprised of 26 postures with two breathing

exercises specifically guided with a verbal script by a teacher.

The room is then heated to 105 degrees Fahrenheit with

40-percent humidity. Pranayama—mindful breathing—is a

limb practiced in the more traditional shalas or studios.

“Pranayama is my personal favorite and the most powerful

tool to balance our mind, body and spirit,” said Beth Kupanoff,

a Vinyasa yogini.

“Our breath is the bridge from our body to our mind. It

alone is the tool which can bring them together,” Kupanoff

continued, quoting Thich Nhat Hanh, a Vietnamese Buddhist

monk.

From these eight limbs, 44 practices have evolved over time—

and often, when East meets West, offshoots like “Hot Yoga”—

which employs moist heat to work with sports injuries and lack

of flexibility—develop with less strict adherence to precise

asanas, as styles and techniques vary on the individual teacher.

Follow the yellow brick road of yoga to a state-of-the-art,

climate-controlled yoga shala named Yoga Six, the site that

housed Haute Yoga until recently. Owner Bill Koman is a

cancer survivor of two rounds of lymphoma. The St. Louis

native said he found his way to balance with yoga and

meditation seven years ago: “I wanted to branch out a little

and try some different ways to balance my life, says Koman.

“So yoga was one of the things I tried.”

Still continuing with his yoga practice twice a week, Koman

has now turned his passion into an investment, which he is

creating into a chain across the heartland (St. Louis is the site

of the first location) and San Diego. Koman met Haute Yoga

founder, Dino Flacco—who succumbed to prostate cancer in

last year—in St. Louis nearly 20 years ago. Koman admired

Flacco’s studio concepts and became an investor, recently

purchasing the Solana Beach and Carlsbad studios. Adding

these to a Point Loma studio and a 4S Ranch location planned

for 2013, Koman has put his money where his practice is.

“The number six (in Yoga Six) refers to the six degrees of

separation or the idea that everyone in the world is separated

from everyone else by only six links. This interconnectedness,

and the role each of us plays in it, is the common thread that

holds infinite possibilities,” said Laurenn Cutshaw, director of

marketing for Yoga Six. “It also represents the six pillars of Y6:

Classes that reflect the new ownership brand include Y6 Barre

and Y6 Sculpt: yoga-inspired fitness classes. Minor exterior

and interior changes have been made, but what remains at

Yoga Six is the highest intention for the good of all concerned.

Continue north on 101 to the Jois Yoga shala in the energy

vortex of Encinitas. Under the photograph of Sri Krishna

Pattabhi Jois’ clear gaze, Ashtanga is practiced in his tradition.

With the scent of sandalwood and free Chai tea, conversation

is encouraged after class. Children’s Ashtanga classes are every

Wednesday and Saturday. A free South-Indian breakfast is

served Friday mornings after the first 6 a.m. class.

When asked her personal motto, Jois CEO Salima Ruffin

said: “I achieve happiness and peace of mind when my life is

balanced.”

Ashtanga has achieved an international reputation with

a devoted celebrity following—although not for the faint of

heart (literally). Jois’ teachers have studied directly with the Jois

family and are certified after a minimum of four visits to the

Sri K Pattabhi Jois Ashtanga Yoga Institute in the India, the

motherland for yoga.

One of the final closing asanas in yoga is padmasana—

the lotus pose, or the pose of serenity. Devotees click their

heels together in the hopes of finding their way ‘om’ to

transcendental self—and peace and balance come in a single

breath.

To anyone who has attended one of his extravagant fashion events or witnessed him host a red carpet gala, Leonard Simpson is, quite simply, larger than

life. Known for founding the trademarked fashion production

company Fashion ForwardTM, Simpson has appeared on

television for the last two decades, etching his moniker on San

Diego’s red carpet as an expert in his industry.

But his close friends and coworkers know his passion for

fashion and eccentric personality are over-shadowed only by

his generous heart and dedication to charitable causes. Despite

his fame, Simpson still finds time every year to focus on

charitable giving. Months before San Diego’s winter traditions

begin, Simpson is busy planning the “10 Best Dressed

Awards,” a celebration of some of San Diego’s most generous

philanthropists. The award honors the winners for being

positive role models in their communities and contributors to

their perspective charities.

“The beauty of giving and fashion go hand-in-hand,”

Simpson said. “Recognizing people who wear gloves of

compassion and a coat of courage to inspire others with style

to serve a greater purpose in their community is what this

event is all about.”

Guests of this annual high-profile event behold Simpson’s

vision come to life through meticulous attention to detail and

keen eye for all things fabulous. This year’s “Style Land” theme,

inspired by international fashions, will tour the world’s fashion

capitals through a show written and produced by Simpson and

Executive Director Joan Jiménez that will be debuting Nov.

30 in the the Sheraton San Diego Hotel & Marina. The fifth

anniversary of Simpson’s labor of love will itself raise funds for

some of San Diego’s most respected charities.

Celebrity Mary Murphy from Fox’s “So You Think You Can

Dance”—honorary chair and one of this year’s winners—will

present with Founding Chairwoman Sally B. Thornton and

Fashion Forward vice president Brittany Noelle Simpson,

Leonard Simpson’s daughter. Twenty honorees—10 men

and 10 women—will be recognized and awarded for their

outstanding contributions to local nonprofit organizations.

Thornton explains the selection process: “Well-rounded

personalities with many interests…a passion for perfection

in business and charity, enable them by virtue of their

accomplishments to become role models.”

Charities benefiting from this year’s event include Home

Start, PAWS San Diego, St. Madeline’s Sophie Center, The

ARC of San Diego and the San Diego Historical Police

Association.

The integrated programs at Home Start have been helping

children living in poverty throughout San Diego since 1977.

and a wide range of treatments for victims of abuse. In

addition to providing counseling or therapy, Home Start also

conducts psychological testing to help children and adults alike

navigate the difficulties of mental or behavioral health needs.

St. Madeline’s Sophie Center has been a place of self-

discovery and empowerment for thousands of adults with

developmental disabilities, nurturing their potential to become

a greater part of society. For more than 45 years, the five-acre

campus in El Cajon has helped students work though the

challenges of their disability by providing programs that assist

in job training and placement. St. Madeline’s Sophie Center is

committed to high standards of excellence recognized by the

businesses to which it provides services. The nonprofit’s highly

regarded reputation is apparent in the pride of its students and

in their accomplishments.

PAWS San Diego is providing services to people in need of

pet assistance, including food, pet supplies, veterinary services

and resources to keep pets healthy and happy. The benefits of

pet ownership promoted by PAWS support physical, emotional

and social well-being to low-income elderly, chronically ill and

thousands of men’s faces in the United States and around the world. these men groom, trim and wax their way into the annals of fine moustachery, raising vital awareness and funds for men’s health issues, specifically prostate and testicular cancer initiatives. the end of the month is reserved for Movember

parties and galas, where both men and women don mustaches, taking the center stage in the fight against cancer. For more information, visit movember.com.

LASIK, short for “laser-assisted in situ keratomileusis,” is the most commonly performed refractive surgery procedure. Why is it so popular? LASIK can change your

life virtually overnight by correcting your need for distance and even reading glasses.FINE magazine sits down with Dr. Motwani to

get the lastest on LASIK surgery.

Can Astigmatism Be Treated?Yes it absolutely can. It’s somehow become a

commonly held myth that a person cannot have laser vision correction if they have astigmatism, when in my opinion the direct opposite is true. I believe laser correction is the best treatment for astigmatism, creating the most stable vision the patient has ever had.

I hate my reading glasses. I’ve been told that I can’t do anything about this- is that true? There are definitely treatments to help minimize

the need for reading glasses, and if done correctly can dramatically reduce and almost eliminate their need for reading glasses. In fact, the majority of my practice historically has been 40-60 year olds, and vast majority of those have treatment for reading. My mother is one of those and doesn’t use reading glasses at all.

I’ve had people tell me that lasik doesn’t last, it needs to be done every 5-10 years. That’s actually not true. If done correctly

and accurately, the vast majority of laser vision correction is permanent. over the past 13 years, only a few percent of my patients see long term change and return for an enhancement.

Manoj Motwani, MD has been practicing Refractive Surgery for 13 years in San Diego. You can reach his center in La Jolla,

Motwani Lasik Institute, at 858-554-0008. Dr. Motwani welcomes all questions. Send to [email protected].

Get tHaNKs, GiVe tHaNKsJoin the trend of ordering your Thanksgiving feast, then sit back and enjoy the day.

W ith Thanksgiving and the holidays fast approaching, family and friends will soon gather to dine on a feast fit for kings. It should

be a wonderful time filled with joy, laughter, love and

thankfulness. But our busy schedules can create a time of

high anxiety and stress, leaving little time for the host to

enjoy the day—let alone be thankful.

More and more people are starting a new tradition for

the holidays, trading in crowded grocery stores and long

hours in the kitchen for a more relaxed, stress-free day.

Culinary professionals are only a phone call away, here

to provide you with a fully prepared holiday meal, while

still allowing you the option—should you choose—to take

the credit.

333 PACIFICA

A Cohn Group Restaurant, 333 Pacifica is just one such

place that can make a special day worth remembering. The

stylish décor and unobstructed views of the Pacific Ocean

and Oceanside Pier provide a backdrop for outstanding

steak, seafood and a popular vodka lounge. Manager

Holly Wickham describes the menu as “seasonally driven”

with “special features daily.”

Now it can be brought to your home. Brian Hyre, the

executive chef for three years, will use his wealth of

culinary knowledge, life experience and passion to prepare

a holiday meal for you with special order requests. Give

him at least two-weeks notice, describe what you would

like and let him custom-create something special for you.

Simply pick up your meal and enjoy being one of your

own guests. | 760-433-3333, cohnrestaurants.com

PRONTOS

Prontos is a family-owned gourmet market and eatery that

should be given serious consideration. Once the owners of

a landmark Italian restaurant in Toronto, award-winning

chef Gerry Daoussis and his wife Sylvia are now putting

their personal stamp on delicious food in Carlsbad. It truly

is a family affair here. Gerry Daoussis was busy cooking

in the kitchen as his daughter and restaurant manager,

Christina Inman, explained: “My sister, Fabiana Miriac,

is the pastry chef too!”

Each day, special soups, stews, homemade pastas and

more are created. “Thanksgiving is one of our biggest days

of the year,” Inman said. “One of the most popular orders

is a traditional turkey dinner for two, served with a sage

bread stuffing, mashed and sweet potatoes and a cranberry

sauce with Grand Marnier. Our gravy is fantastic. Some

people just order the sides from us.”

A menu and order sheets are available online, and they

have already been coming in since early October. Dinners

are available for pick up between 9 a.m. and noon, “so

people can come pick it up warm and bring it right to their

table,” Inman said. | 760-434-2644, prontosmarket.com

of oven-ready gourmet foods and outstanding pastries,

cookies and signature cakes. Owner Michel Malecot

has created a special party-planning guide to help you

entertain with ease and without the cost of full-service

catering.

Prosciutto-wrapped asparagus, Tourte Milanaise, fillet

of Beef Wellington and party trays are just a few of many

items that can be ordered from a six-page menu. The large

variety will surely please even the most finicky of eaters,

and it is particularly convenient for those who may have

special dietary considerations. Also, an extensive wine list

is available to complement your dining experience. Mr.

Malecot expects to receive over 100 orders this year.

“It’s definitely a growing trend, especially if people want

a really good turkey,” Malecot said. “Ours are free range

and produce up to 40 percent more breast meat. Many

people will have us prepare the whole meal or just the

stuffing with some other dishes.”

Ideally, the French Gourmet would like to have orders

by the beginning of November, but they can usually

accommodate most requests up to three days before,

which is when the majority of people begin coming in

to pick up meals. The French Gourmet can also provide

rentals for china, silverware and tables. | 858-488-1725,

WATERS FINE FOODS AND CATERING

Waters Fine Foods and Catering, and Fibonacci’s Bistro

by Waters, have a sole mission to help you dine and

entertain with grace and ease. They have racked up such

awards as Best Restaurant, Best Caterer and Readers’

Choice Award, just to name a few. Owner Mary Kay

Waters opened the catering business in 1990. Together

with Steve Ferguson, executive chef of 18 years, she

oversees a large staff to fulfill what “has always been

such a huge day for us,” according to Terri Wedell, the

marketing and beverage coordinator.

The entire staff is dedicated to hand-making everything,

from stocks to pastries, and uses hormone-free, organic

ingredients. Dungeness Crab Cakes with Lemon Aïoli, Squash

Maple Pecan Goat Crisps and a New England Cranberry-

Pineapple Relish are just a few of the things you can order to

accompany a Turkey Roulade served with gravy. All the food

is fully seasoned and par-cooked, and will come with simple

re-heating instructions.

Orders can be placed from a special holiday menu up to six

days before Thanksgiving and will be available for pick up the

day before. Also on that day, a certain number of meals will

be prepared and available on a first-come, first-served basis—

just in case someone has last minute plans or an unexpected

emergency in the kitchen. | 619-276-8803, waterscatering.com

Think about making a change this holiday season and join in

a growing trend. Take advantage of the skills and experience

from some of San Diego’s finest chefs, savor the flavors they

create in recipes on which they have built their reputations—

and by all means, relax, enjoy and give thanks.
