from the chairmanAS YOU KNOW, MANY EXCITING INITIATIVES ARE UNDERWAY AT BOCAPointe Country Club. These initiatives will ensure that our Club remains vital and desirableand that all of us continue to enjoy an unsurpassed country club experience in both theshort and long term.

A key initiative - Community Membership - was overwhelmingly approved by a vote of ourmembers last January. Under this plan, only those who have been members of the Club forat least 10 years would be able to resign, unless they moved.

As we continue to move Community Membership forward in anticipation of a final voteearly next season, the Board is listening carefully to all of your input with regard to thisimportant issue.

Even though we have tried to assure all of the members that there would not be any largecapital assessments as a result of Community Membership, many of you have told us thatyou are still concerned on this point and that you are afraid that, under the currentresignation program, you would end up being “locked in” to your membership.

We want you to know that your Board is listening to you. We have heard your concerns and have taken the necessarysteps to eliminate them. That is why I am so happy to bring you wonderful news regarding a vote you will soon betaking, via mail, to change the Club’s current resignation program.

The Club’s intention is that current members will be able to resign at any time. Therefore, upon approval by a voteof our members, the following resignation program will be adopted:

A. Current resident members on the day Community Membership is implemented will have the right to resign at any time, effective at the end of the then-current membership year, regardless of how long they have been members.

B. New resident members who join after the effective implementation date of Community Membership may resign after 10 years of membership, effective at the end of the then-current membership year.

C. All current and new non-resident members may resign at any time, effective at the end of the then-current membership year.

In each instance of resignation, the member’s account must be current and the resignation will end any future years’dues obligations.

You can expect to see a ballot in your mailbox on this issue very soon.

We hope that this new resignation program makes you even more enthusiastic about Community Membership and allof the wonderful effects it will have on Boca Pointe Country Club!

WE HAVE SEVERAL NEW MEMBERSHIP PROGRAMS TO PROVIDE OUR MEMBERS NEW OPPORTUNITIES TO transfer their memberships, add family members to their equity and even make a little money. Through our member referral incentive program, since December 2003 our members and realtors have shared more than $104,950 awarded for new memberreferrals, resulting in over 197 new equity members for our Club. LEGACY PROGRAMAll members are permitted to transfer their equities at no cost to any family member of lineal relations and their spouses (i.e. children, grandchildren, parents and grandparents). All classes of membership are eligible for this program.

ASSOCIATE MEMBERSHIP PROGRAMWho is eligible: Lineal relations of equity members and their spouses (i.e., children, grandchildren, parents and grandparents).Who is ineligible: Any former member who has relinquished their membership or has left the Club not in good standing.Membership category options: Up to and including the membership category of the equity member. Dues requirements: First 2 years – 50% of the elected membership category dues. Second 2 years – 60% of the elected membership category dues. Fifth year – 75% of the elected membership category dues. After Fifth year – 100% of the elected membership category dues. NoCapital Charge – No Assessments. Other fees & obligations: One-time $300 (+ 6% sales tax) Administrative Fee – Yearshipfrom which it was derived. The equity member is not in good standing. The Club reserves the right to terminate the program atany time. Program Cap: Associate Memberships will be included in the total equity membership and golf membership caps.Financial Responsibility: Associate members will receive their own membership account. The equity member will ultimately beresponsible to the Club for the financial obligations of the Associate member.

MEMBER INCENTIVE REFERRAL PROGRAMThe Club will issue a $500 “account credit” to an equity member who is the first person to refer a prospective member who thenpurchases an equity membership within one year. For a second referral the member will receive a $750 “account credit” and for thethird and subsequent referrals the member will receive a $1000 “account credit.” All referrals must occur within a 365 day period inorder to be eligible for the upgraded credit. The “account credit” will be applied to the purchase of all goods and services includingfood and beverage, but will not be applied to charges for dues or assessments. There is no limit to the number of prospects that amember can refer under this policy. An equity purchase in connection with a sale of a Boca Pointe home is not eligible for thereferral incentive. In all cases the referring member must escort the prospective member to the membership office. Both referringparty and prospect must sign a form acknowledging that the person present is the referring person.

what’s hot in the kitchenARTISAN BREAD COMES TO BOCA POINTECOUNTRY CLUB

Not all bread is created equal. Just ask Chef Keith Rinaldi,Boca Pointe’s new “artisan” bread baker and pastry chef. Hetakes bread very seriously.

Chef Keith didn’t know bread would be his calling whenhe was attending Ohio State University toward a degree inbanking. But when he began working in a local restaurant to earnmoney for college, the passion for food hit him and never left,causing him to trade in a future in money for a future in, well -dough.

After graduating college, Chef Keith began working insome of the finest food service operations, from fine diningrestaurants in Ohio to Hyatt Regency Hotels to Royal Caribbeancruise line. He even ran the second largest bakery operation inthe United States in Reno, Nevada, where he implemented thecasino’s artisan bread program.

So, what is “artisan” bread? In Europe, foods that are“artisan” are hand-made in small batches using only the finest,freshest ingredients. These are the hallmarks of Chef Keith’swonderful breads.

The flour is never bleached or bromated, and is organicwhenever possible. The nutrient and protein content is higher,making it a much healthier alternative to inferior quality, “massproduced” breads.

Temperature control is essential when creating artisanbreads, and Chef Keith is vigilant at checking the dough’stemperature throughout the process. Proper hydration andadequate proofing times are also critical to the success of thefinished product. Slow fermentation of the yeast lends the breadthat true artisan earthiness.

But the “artisan” aspect of Chef Keith’s breads doesn’tstop with the dough. It carries over into every ingredient he uses.Only the freshest cheeses, olives, herbs, sea salt, extra virgin oliveoil and other ingredients areused. The result is breadsthat are not only morenatural and healthier, butwhich are also bursting withthe freshest tastes andaromas.

Chef Keith is alwaysbusy baking up 60 differentvarieties of artisan bread forhis Boca Pointe CountryClub diners. If purchased ina fine retail bakery, thesebreads would cost from $5 to$7 per loaf. But thanks toChef Keith, all of thesewonderful masterpieces areavailable right in our ownrestaurants!

A FRESH APPROACH TO DININGChef Terry Daniels began his career in the restaurant

industry at the age of 15, graduated magna cum laude with adegree in Culinary Arts from the prestigious Johnson & WalesUniversity in Providence and worked at some of the finest hotelsand restaurants along the eastern seaboard. Now he is bringinghis own culinary style and creative flair to Boca Pointe CountryClub.

Chef Terry, who has worked as chef de cuisine at the Clubsince 2004, has recently taken over the helm as the Club’sexecutive chef - a position that he is diving into with enthusiasm

and passion. Chef iscommitted to elevatingthe level of dining atthe Club and providingour members with thefinest ingredientspossible. Thiscommitment isreflected in his newmenu, introduced onMay 23rd. “My mainfocus is on quality,freshness and flavor of products,” he says.“Diners can now lookforward to dailyspecials based on thefreshest products mypurveyors are offeringthat morning. For me,cooking with thefreshest, highest qualityingredients ensures the

CONGRATULATIONS TO CAPTAINVince Loscalzo and his team, Bodo Dolch, Richard Jacobs, MaxKaplan, Arnie Krassner, Joel Meisner, Mel Schoen, HerbBrotspies, Warren Goldblum, Steve Mason and Dave Kleinsteinfor winning the League North American Division. Amy Cohen’sSenior Ladies Division Six Team finished the year in secondplace, just one year after a last place finish! Congratulations on sucha great improvement ladies! Jordan Augensicht’s Men’s Divisiontwo team also ended the season in second place. Kudos to ourBoca Pointe Matchmakers 3.5 WTT team. They won two matchesin Las Vegas to make it to the quarterfinals of the WTT NationalTournament. Team members are, Captain Monroe Schenker,Barbara Schenker, Laurie Keenan, Jerry Kaye, and DomingoAraos. The Boca Pointe USTA Adult Tournament had over eightyparticipants. Stu Itzkowitz and Howie Weinstein won their firstround matches. Allan Carter, Lance Lafazan and Jeff Wernickreached the semis in their respective divisions. A special thank youto the members who came to watch. After two days of rain,eleven members attended the third day of the adult tennis camp.In addition to drills and instruction, each attendee had a videoanalysis session with a pro. The individual video analysis sessionswere very well received by the members.

AUGUST“FACTS FROM THE FITNESS DEPARTMENT”Repeated Endurance Exercise Bouts Boost Fat useExercise is important for weight control because itburns calories during the activity and raises metabolicrate for hours after the exercise is over. Most peopletrying to control their weight run on a treadmill,ride a stationary bike or work on an elliptical trainercontinuously for 30 to 60 minutes. There may be a better way. Researchers have found that two 30-minute, moderate intensity aerobics programswith 20-minute break between sessions burned morefat than one 60-minute exercise session. Researcherscompared fat use and hormone levels in peopleriding a stationary bicycle for 60-minutes continuously,or doing two bouts of 30-minutes separated by 20-minutes of rest between sessions. Two 30-minutebouts of exercise increased fat metabolism, stresshormone levels and blood keytone levels (a marker of increased fat use) while lowering insulin andblood sugar more than the continuous 60-minuteworkout. Burn more fat by splitting your cardio.

Other tips: 1. Try to do your cardio beforeyour first meal 2. Do your cardio after weighttraining 3. Consistency is key.

AS WE READ DAILY IN THE NEWSPAPER AND SEE ONTV, ozone depletion is very real. Small amounts of ozone (whichis a natural filter from damaging UVC rays) are being createdconstantly by sunlight and oxygen. At the same time, some of that ozone is broken down by natural processes, creating adelicate balance for the Earth’s atmosphere. The Denim Dilemma: What to Do? by Randy Delaney

Having the distinct privilege of being the GM of a prestigiousold-line private golf club in Atlanta, I suspect that in my 10years here this club has dealt with all of the issues du jour thatmost other clubs have wrestled with during this decade.

Every topic from cell phone policies to same sexpartnerships have found their way through our venerableportals. We’ve even had to legislate the criteria for thongs at the pool, which seems like good work if you can get it - untilyou have to tell someone she “didn’t make the cut.”

Through it all our board and its committees havehandled each issue adroitly and we’ve come out relativelyunscathed. Our membership still tolerates us, our roster is full, and remarkably we’ve avoided any claims on our D&Oinsurance! That is until the Denim Dilemma raised its uglyhead.

As America has become increasingly “casualized,” so hasthe demand for more casual attire been evident at the club. Incase you didn’t notice - denim is in! Not the denim that youwore while working as a lad on the farm in Illinois all summer.I’m talking designer denim jeans at $175 a pop - with designerholes. How’s that for an oxymoron?

Anyway denim is big “out there” in the world beyondyour hallowed walls. How your club manages the issue can be like nailing Jello to a tree!

My club has a bit of an aversion to denim. We’ve trieddesperately to cling to our storied past while keeping one eyeon the revenue line. We didn’t altogether ban denim, but wedid limit it strictly to our family dining room and suggestedthat it was “permitted but not preferred” in there.We do not allow it in the adult casual dining room, the men’s lounge, the golf course nor the main clubhouse. Inpractice, one could come into the casual adult dining room in sweat-soaked athletic attire and be seated for dinner.However when the tennis chairman’s shapely bride arrived in her killer designer jeans with matching jacket and Guccihandbag she was turned away.

There was an outcry from the 30 and 40-somethings!You had to find the humor in a policy, which forbade denim in the men’s lounge but allowed Cletus to wrap a locker roomtowel around his ample girth, plop in a chair with his legsakimbo and order up a Bud. Cletus is one of those who thinks he has the body of a God. CONTINUED ON PAGE 23

It was time to revisit our dress code rules. But first Isurveyed my 75 colleagues whose clubs comprised the “GreatClubs of the South.” I was fascinated to see the range ofanswers and what factors influenced a club’s policymaking.Essentially it boiled down the three components:

GEOGRAPHY Where one’s club is located can be amajor factor in the application of its dress code. One of mydistinguished peers in San Antonio said, “We invented denimin Texas; it’s a way of life here so of course we permit it.” Asecond manager in Austin said, “We have a PGA Touring Prowho wears denim over here every day. We aren’t about tochange that.” A Knoxville GM added, “Casual dining is 75percent of our food volume so we are fine with denim.”

TRADITION Conversely, several “blue blood” clubs in the heart of Dixie all forbade denim anywhere on theirproperty. In Charlotte it was stated, “If a member drives up tothe front of our club and runs in to pay his bill in denim, hewill get a letter from the club president.” A third was simply“No way, no time, no how!”

REVENUE It should come as no surprise however that revenue has driven more decision-making than any other factor. Ninety percent of all clubs surveyed had madeaccommodations for casual dining, to include the wearing ofdenim. One of my peers observed that his city club’s boardwould not budge on the issue until he finally negotiated a“Jeans Entrance” at his club by saying, “How exclusive are wegoing to be if nobody comes to the club?”

Whether your club is one that stands on tradition orchooses dollars over decorum, there were two standards thatevery club agreed upon. No club allowed denim on its golfcourse or in its formal dining areas. It was refreshing to get a consensus on something!

My final query was to my wife of 22 years, who herselfsports designer denim pretty well. I asked her how she wouldfeel if she walked into my club one day in denim and I had to ask her to leave because she was improperly attired. She quickly reminded me who wore the jeans in our family!
