Grilled Steak With Provencal Herbs

Place the steaks in a shallow dish. Rub both sides with

the oil, garlic, and herbs. Season with pepper. Let stand

1 hour. Prepare the barbecue (high heat) or preheat

broiler. Cook the steaks 2 inches f rom the heat source to

the desired doneness, about 4 minutes per side for rare.

Longer if you like well done. 4 servings.

Directions:

4 (1 1/2 inch thick 12 oz) New York (top loin)or Delmonico steaks

1 tablespoon olive oil

2 garlic cloves, minced 2 teaspoons minced fresh rosemary or1 teaspoon dried, crumbled

2 teaspoons minced fresh thyme or 1 teaspoondried, crumbled

2 teaspoons minced fresh basil or 1 teaspoondried, crumbled

Freshly ground pepper

Ingredients:

Firecracker Grilled Corn-On-the-Cob

In a small bowl, combine butter and red pepper sauce.

Mix well. Melt, if desired. Peel one side of corn husk

away from cob without removing completely and loosen

remaining husk. Do not remove silk. Brush butter

mixture over kernels and smooth back husk to original

shape. Twist open end to close. Serves 8.

Directions:

1 cup (2 sticks) unsalted butter, softened 2 teaspoons red pepper sauce 8 ears corn-on-the-cob

Ingredients:

Herbed Corn

Pull back husks from corn, leaving husks attached at

base of cob. Remove silks. Rin se corn and soak in water

20 minutes. Drain well. Combine butter and remaining

ingredients; brush over kernels of corn. Pull husks upover corn; wrap in foil and twist wrap at each end. Place

corn on rack of grill; cover and grill over medium hot

coals 30 minutes or bake at 400 degrees for 25 minutes.

Remove husks or pull husks back, and tie in knot.

Directions:

4 ears fresh corn on the cob 1/4 cup butter, melted 2 tablespoons chopped fresh parsley 2 tablespoons minced chives 1/8 teaspoon garlic powder Pinch of salt & pepper

cut 1 inch thick (12 to 16 ounces each)

1. Combine marinade ingredients in small bowl. Placebeef steaks and marinade in food-safe plastic bag;

turn steak to coat. Close bag securely and marinate inrefrigerator 6 hours or as long as overnight, turningoccasionally.

2. Heat large nonstick skillet over medium heat untilhot. Remove steaks from marinade; discard marinade.Place steaks in skillet; cook 16 to 22 minutes formedium rare (145o

F) doneness, turning occasionally.(Do not overcook). Carve steaks into thin slices.
