Rinse lobster tails. In skillet, combine lobster,champagne, scallions, and salt. Heat to boiling.Reduce heat, cover and simmer 15 minutes.Remove lobster; add cream to sauce in skillet.Boil quickly until reduced to about 1/3 cup. Witha wire whisk, beat in butter ( 1 tablespoon at atime) until smooth. Keep warm. Remove lobsterfrom shells and slice into medallions. Spoon sauceover each. Serves 2.

Directions:

Ingredients: 3 frozen lobster tails 2/3 cup champagne or sparkling wine 2 scallions, mince 1 teaspoon salt 2/3 cup whipping cream

4 tablespoons unsalted butter

Lobster Tails In Champagne Sauce

Place the steaks in a shallow dish. Rub bothsides with the oil, garlic and herbs. Season

with pepper. Let stand for 1 hour. Prepare thebarbecue (high heat) or preheat broiler. cookthe steaks 2 inches from the heat source to thedesired doneness, about 4 minutes per side forrare. Longer if you like well done. 4 servings.

Directions:

Ingredients: 4 (1 1/2 inch thick 12 oz.) New York (top loin)

or Delmonico steaks 1 teaspoon olive oil 2 garlic cloves, minced 2 teaspoons minced fresh rosemary

or 1 teaspoon dried, crumbled 2 teaspoons minced fresh thyme

or 1 teaspoon dried, crumbled 2 teaspoons minced fresh basil

or 1 teaspoon dried, crumbled Freshly ground pepper

Grilled Steak With Provencal Herbs

Combine the yogurt with the sugar, vanilla andcinnamon. Alternating the fruit, thread them onto6 inch bamboo skewers. Serve the fruit kabobswith the dipping sauce. Makes 24 kabobs.

Directions:

Ingredients: 1 cup unflavored yogurt 2 teaspoons brown surgar 1/4 teaspoon vanilla extract 1/4 teaspoon ground cinnamon 2 pints fresh strawberries 1 pineapple, peeled, cored & cubed 1 honeydew melon, scooped into melon balls 3 kiwi fruits, peeled & sliced
