Preheat oven to 250F. Place a cooling rack ona baking sheet and set aside.Pour buttermilk into a wide, shallow bowl.In another bowl combine 1 cup flour withpaprika. Season steaks generously with saltand pepper.Dredge each steak in the flour mixture, thendip in buttermilk; allow all excess to drip off,

then dredge in flour mixture again.In a large nonstick skillet, heat olive oil overmedium-high heat. Cook steaks in skillet untilcrust is golden, about 3-4 minutes per side.Transfer steaks to the prepared baking sheetand place in oven to keep warm.Pour off all but 1 tablespoon oil from theskillet. Add the remaining 2 tablespoons flourand cook, whisking, until golden, about 30seconds. Gradually add milk while whisking;raise heat to high and boil until thickened,4-5 minutes. Season gravy with salt andpepper. Serve steaks topped with gravy.
