Spinach-Mushroom Stuffed Pork Chops

Thaw and drain spinach. To prepare stuffing, combine

spinach, onion, mushrooms, salt, pepper and nutmeg.Cut a pocket into side of each chop and stuff with

spinach mixture. Secure openings with toothpicks. Saltand pepper chops. Roll each chop in flour and brown

in butter in large skillet. When chops are brown,

transfer to 9”x13”x2” baking dish. Add wine to skilletand stir until smooth. Pour wine sauce over chops,

cover and bake at 350 degrees for 1 hour. Removecover and bake additional 20 minutes or until tender.

Remove chops to serving platter. Return juices toskillet and thicken with flour to make gravy. Serve

gravy with pork chops.

Directions:

• 10 oz frozen chopped spinach• 1/2 cup chopped onion • 3/4 cup chopped mushrooms

• 1/2 teaspoon salt• 1/8 teaspoon pepper• 1/4 teaspoon nutmeg • 8 center cut pork chops, 1” thick• Salt & pepper• 1/3 cup plain flour• 3 tablespoons butter• 1 1/2 cup white wine

Ingredients:

Corn And Tomato Casserole

In a large skillet, fry bacon until crisp. Drain on paper

towel, reserving the drippings in skillet. Crumble bacon into bottom of a greased 1 1/2 quart casserole. Add onions and green pepper to bacon drippings; cook

over medium heat until tender. Cut corn off cob; add

to onion mixture along with brown sugar, salt, pepper, basil and tomatoes. Cook 10 to 15 minutes. Pour over bacon in casserole. Top with stuffing mix and cheese.

Bake at 350 degrees for 30 minutes. Yield: 6 servings.

Directions:

• 3 strips lean bacon • 1/3 cup minced onion • 3 tablespoon green pepper, diced • 3 large ears sweet corn (about 3 cups or

1 (16 oz) pkg frozen sweet corn)

• 2 tablespoons brown sugar (optional)• 1 teaspoon salt• 1/8 teaspoon pepper• 1 teaspoon sweet basil• 2 1/2 cups home-canned tomatoes, drained &

chopped TOPPING:

• 2/3 cup herb flavored stuffing mix• 2/3 cup grated cheese

Go Tender Marinade

Combine ingredients and marinate thick

chuck, round or flank steak 4 to 5 hours

or overnight, turning several times. Broil, basting with remaining sauce.

Directions:

• 1/2 cup chopped onion • 1/2 teaspoon celery salt• 1/2 teaspoon pepper• 1/2 cup salad oil• 1/2 teaspoon thyme• 1/2 teaspoon oregano• 1/2 cup lemon juice• 1/2 teaspoon rosemary

Ingredients:

Lay haddock fillets in bottom of glass oven proof dish. Cover withsliced onions.

Spread can of cream of mushroom soup over all.

Lastly, spread grated cheese over it all.

Bake in preheated 350 oven for about 40 minutes until fish isdone. (You’ll be able to tell it’s done when fish separates intoflakes easily.)

Directions:

• 2 lbs of white haddock fillets• 1 can cream of mushroom soup• 1 onion sliced

• 1 cup grated mozzarella or cheddar cheese
