The juice of a coconut is a fascinating potion that is quite possibly one of the best gifts nature offers us! in this sense- everyday is christmas in the gilis! in this issue, we examine the coconut and the benefits of its water which is, among other things, an excellent remedy for the days after the big parties! so drink up (the coconut juice that is!) and happy holidays!

Voilà pourquoi dans ce numéro, nous nous sommes penché sur la noix de coco et sur les bienfaits de son eau qui est entre autre un excellent remède pour les lendemains de fête ! à consommer sans modération !

The Gili Islandsthe three Gili islands, composed of Gili trawangan, Gili meno and Gili air are located off the northwest coast of lombok. in sasak language, "gili" means "small island. " there are more than 30 Gilis around lombok but trawangan, meno and air are by far the most frequently visited. Because of their proximity to the equator, they have a tropical climate throughout the year with an average air temperature of 28c and water temperatures ranging from 26 to 29c. the rainy season runs from november to april and the dry season from may to october. the Gilis bathe in the Bali sea, at the convergence of the indian and pacific oceans and enjoy a drier micro-climate than the rest of indonesia due in part to the fact that they are situated between two great volcanoes- mount rinjani on lombok and mount agung on Bali.

community, the inhabitants of the Gili islands are primarily muslim and each island has a mosque(s) emitting sounds of live prayer five times daily. Bahasa indonesia is the national language spoken that unites all of the country’s islands but Gili locals speak sasak Gili air which is slightly different to sasak lombok.

about 200 years ago, fishermen from sulawesi of makassar, Bugis and mandar ethnicities arrived on the Gili islands. they began to settle temporarily because of the abundance of fish in the sea and the presence of fresh water on Gili air and at that time, sectioning off a bit of land with string was enough to claim it. these otherwise nomadic people began to settle in the Gilis and cultivate the land, planting peanuts, tapioca and corn whilst continuing their tradition of fishing. they sold and exchanged

their produce in the markets of lombok and also traded portions of their land for livestock, rice and other much needed items not native to the islands. coconut palms are indigenous to the Gilis while mango, banana and papaya trees have been introduced over the years.

the first Western traveler to set foot on the Gili islands came in 1984 to Gili air. By the mid 1990’s Bali had gained international recognition as a travel destination and the Gilis began to be known as an off-the-beaten-track paradise escape. today, the Gili islands are flourishing and are attracting all types of visitors from every corner of the globe.

trawangan, meno et air sont de loin les plus fréquentées. en raison de leur proximité avec l'équateur, elles ont un climat tropical toute l'année avec une température moyenne de l'air de 28˚c et une température de l'eau variant de 26 à 29˚c. la saison des pluies s'étend de novembre à avril et la saison sèche de mai à octobre. les Gilis baignent dans la mer de Bali et profitent d'un micro-climat, plus sec, car elles sont protégées par les volcans mont rinjani sur lombok et le mont agung sur Bali.

les habitants des îles Gilis sont musulmans comme la majorité des habitants de lombok. chaque île possède une à plusieurs mosquées

dont le son des prières est émis cinq fois par jour. le Bahasa indonesia est la langue nationale de l'indonésie que tout le monde parle, mais sachez qu'aux îles Gili les habitants, entre eux, parlent le sasak Gili air, un dialecte, un peu différent du sasak de lombok.

il y a environ 200 ans, des pêcheurs de sulawesi, des groupes ethniques macassar, Bugis et mandar sont arrivés sur les îles Gilis. ils s'y sont installés car les eaux étaient très poissonneuses et aussi pour la présence d'eau douce sur Gili air. à cette époque, il suffisait de délimiter un terrain avec une ficelle et de le nettoyer pour se l'approprier. ces pêcheurs nomades se sont donc sédentarisés et ont commencé à cultiver des cacahuètes, du tapioca et du maïs tout en continuant la pêche. ils vendaient ensuite leur produits ou faisaient du troc dans les marchés de lombok. parfois ils échangeaient leur terre contre une

vache ou d'autres produits qu'ils ne possédaient pas aux îles Gilis, notamment le riz. les cocotiers ont toujours été présents sur les îles, les mangues, bananes et papayes sont venues plus tard.

le premier étranger venu de l'occident est arrivé en 1984 à Gili air et les premiers touristes, dans les années 90 lorsque Bali a acquis sa réputation mondiale ! aujourd'hui, les îles Gilis sont de plus en plus populaires et séduisent un bon nombre de voyageurs venus de différentes horizons.

Historyover time, the people of the Gili islands have adapted to a multitude of changes and cultural immersions but have managed to maintain their cultural identity. Historically the people here have seen their days of hardship when during WWii, lombok and the Gili islands were occupied by Japanese forces. the islands were used to contain prisoners of war and the locals endured forced labour. a hill situated on the south of trawangan

hot Tip: Bear in mind that the Gili islands are exposed to open oceans and can have incredibly strong currents running between and around them and trade winds that create choppy seas. For this reason- always check daily conditions before commencing oceanic sports and know that it is not recommended to swim between the islands no matter your skill level.

was used as a lookout post and today remnants of the bunker still remain. trawangan derived it's name from the indonesian word "terowongan" meaning "tunnels" of which a network were dug by the occupying forces. the holes have since been filled in.

When you hear about Gili t you probably also hear the words "party island" yeah? thought we should just address that straight away! Gili t gained this title because it is the largest of the three northern Gili islands with the most development, hence it offers the greatest abundance of everything- including nightlife. there are fantastic parties every night of the week that attract large crowds of people from all different walks of life and every corner of the globe. nightly features start with a sizzling local food market and advance into live music, beach parties and dJ's. there's also the option of watching movies screened at an open air beach "theatre." the rumored growth of trawangan from a backpacker island into something of a glam island is supported by the unveiling of new upscale boutiques, restaurants, resorts, spas, and now a heli-pad, however, it remains a hub of charm for a wide spectrum of travelers. it's an iconic island of variety with numerous options for every budget/lifestyle for eating, sleeping (backpacker dorms to luxury villas), entertainment and activities. Gili t has extraordinarily beautiful beaches and shimmering ocean waters of crystal-clear

visibility for diving and snorkeling. this island boasts some of the finest coral gardens and the widest range of dive centers with the best socializing opportunities. although it is predominately known as a party island, Gili t has much more to it and venturing away from the densely developed east coast, you can find a plethora of vacant beaches. renting a bicycle is a great way to see the island, bearing in mind there are some sandy patches! seeing how life works here can be very eye-opening: it's not an escape from reality- just a slightly different one…but understandably surreal nonetheless! there are several conservation organizations based here including Gili eco trust (Get) and the Gili shark Foundation- ask around (try dive centers) about how you can get involved! as you may know- there is no motorized transport in the Gilis and what a soothing break that can be! surfing is popular off the south and it's not unwise to speak to locals about the break. For a supreme viewpoint walk up the hill on the south that was previously used as a lookout during WW ii.

Que vous soyez "routards" ou que vous recherchiez un logement de grand standing, tout est possible. la nourriture est très diverse et internationale, vous aurez aussi un grand choix d'activités et de divertissements ! Gili t possède de très belles plages aux eaux limpides et cristallines idéales pour la plongée et la

set between Gili air and Gili trawangan, Gili meno arguably offers the finest beaches of all the Gili islands. the sands are white and soft beneath your feet and you can relax on vacant stretches of beach lined with coconut trees. meno is the real escape to paradise where you can fill your days with activities like diving, snorkeling, surfing or just simply taking in the tranquil views. this island is a treasure of local lifestyle where time seems to bend and life seems to slow down. it is the least developed island where you can completely relax amongst abundant nature- meno is a holiday within a holiday. Here you can walk or take a cidomo (horse&cart) to attractions such as the salt lake where it's possible to spot rare blue kingfishers and the elusive island monitor lizard, or venture to the eerie remnants of an abandoned resort- where a popular wreck-dive site exists just offshore. there are no bicycle rentals in meno but it's possible to walk the island in an hour. Gili meno offers great selections of local and western restaurants and most places serve a variety of the two. there are also traditional warungs for popular local dish- nasi campur. there is a variety of accommodation on meno

and your options range from backpacker dorms, beachfront and village bungalows to luxury villas, apartments and resorts. there is also open air baruga-style accommodation for the true outdoorsmen- er, and women! other points of interest on meno include a bird park and the turtle conservation pools (which run entirely on donations). this island is primarily popular amongst couples and those seeking a more enlightening, recharging time. Yoga and meditation are up there with diving and honeymooning for making Gili meno an ideal travel destination. in the past, meno was said to have a mosquito problem but this is not the case- in the wet season there are normal levels of what you would expect in a tropical place, perhaps even less, and in the dry season- tidak apa apa- no problem!!

et la plupart des lieux servent une variété des deux. il y a aussi les warungs (restaurants traditionnels) pour les populaires plats locaux comme le nasi campur. il y a aussi plusieurs options d'hébergements : Baruga en plein air, bungalows en bord de mer, villas de luxe et resorts haut de gamme. autres points d'intérêt sur meno, le parc aux oiseaux (Bird park) et le centre de conservation des tortues (meno turtle conservation), essentiellement financé par des dons. cette île est surtout appréciée par les couples en lune de miel et les personnes qui recherchent une détente absolue. d'ailleurs, pourquoi pas essayer le yoga ! meno est une destination idéale pour la méditation. dans le passé, meno avait une mauvaise réputation à cause de la présence des moustiques. il n'en est rien. il est tout à fait normal, dans un pays au climat tropical d'en croiser quelques uns, surtout en saison des pluies mais en saison sèche tidak apa apa ! (pas de problème !)

at the annual suunto vertical Blue competition off Bahama’s long island, former royal marine commando, michael Board took the record for Britain’s deepest free-diver. descending to a depth of 100m (328ft) michael used a set rope to keep himself oriented in a straight line and propelled himself downward with the use of a mono-fin. upon reaching this depth michaels lungs were compressed to a quarter of their normal size which, just days earlier, was the cause of a black out during an attempt to reach 100m. But on november 13th at the vertical, underwater cave known as dean’s Blue Hole*- mr. Board reached the surface safely, completing a dive that required him to hold his breath for a total of 2minutes 53seconds. on land, he can hold that one breath for 6minutes 32seconds! this was a huge success for the free-dive instructor, but as michael recalls, “not everything went right though, my nose-clip was not tight enough and i was losing air on the descent so i almost ran out of equalisation before the bottom and only just made it.” this record broke michaels first when he dove to 91m without the use of fins

in a “Free immersion” dive. michael Board currently resides in Gili trawangan and runs Freedive Gili where he teaches with his partner Kate middleton who is also a record holding freediver. à la compétition annuelle de "suunto vertcal Blue", à long island aux Bahamas, l'ancien commando de la marine royale, michael Board s'est <emparé> du record britannique de la plus profonde plongée en apnée. descendant jusqu'à une profondeur de 100m ( 328ft ), michael a utilisé une corde de jeu pour se maintenir orienté dans une ligne droite et s'est propulsé vers le bas à l'aide d'une mono-palme. après avoir atteint cette profondeur, les poumons de michael se sont comprimés à un quart de leur taille normale, ce qui, quelques jours plus tôt, lui avait causé un black-out lors de sa première tentative à 100m. mais le 13 novembre, dans la grotte verticale de "dean's Blue Hole"*, monsieur Board a refait surface sain et sauf et a effectué une plongée qui l'a obligé à retenir son souffle pour un total de 2 minutes et 53 secondes. sur terre, il peut retenir son souffle pendant 6 minutes et 32 secondes ! ce fut un énorme succès pour

representatives delphine robbe of Gili eco trust (Get) & satGas, martin cognoli, Guillame Holzer & Julien of coral Guardian, Brendan and liz sing of shark Guardians and andy Hardy of manta Watch came together for two nights of audio-visual presentations on Gili air and Gili t, all with similar objectives in mind- to raise awareness about the fragility of marine ecosystems and to emphasize the need for human intervention to protect and conserve these ecosystems. many of these associations work together in conservation including the rehabilitation of coral reefs (which produce 70% of the oxygen we breathe). a spotlight was shown on indonesia’s unregulated shark and manta fishing market as an example of how the absence of these creatures interrupts natural and necessary cycles of marine ecosystems. these

on november 5th, melbourne cup day was alive and kicking again this year in the Gilis with dressed up race-goers at the Beach House resort, Gili t! the Beach House served up delicious, post-race lunch selections followed by a raffle and betting on other horse races as well as a standup paddleboard race where enthusiastic bets were placed on the paddlers. This broke his first and second world record dives where he was submerged for 24 hrs and 33hrs respectively.

technical diving is offered at select dive centres in the Gilis who operate in association with tecrec and tdi (technical diving international). tdi was established in 1994 by some of the world’s most skilled and experienced dive instructors in order to be able to offer applications of technical diving to a broader range of people. technical “tek” diving is a relatively new niche of the diving market and can be tricky to classify but essentially it requires greater comprehension, skill, fitness, experience and training than recreational diving including: planning for necessary decompression stops, using variations of gas mixes, diving to depths beyond 40m and diving into enclosed and overhead environments such as wrecks and caves. incorporated into "tek" diving is the use of advanced equipment such as JJ-closed circuit rebreathers (ccr’s) which work by recirculating exhaled air, using a chemical “scrubber” to remove co2 instead of releasing it as bubbles.

<We were on our way to dive at Bounty but just as we were going past Bungkas reef we saw two big manta rays near the surface. they were about two metres across, big ones! so we stopped there and put our dive gear on and decided to dive with them instead of going to our planned site. they were swimming near the edge of the reef and it was very good.. a very good feeling to have the mantas swimming around us and cirlcing above our heads. all the divers were very happy and saying “Wow! Wow!” at the end of the dive. it was the first they had seen mantas and we stayed with them for about 25 minutes in one place and just watched and the mantas stayed close to us! everyone was really surprised and really happy. i was really proud to swim with the mantas and to be there to show them to the other divers. it was a really good day!>

her birthplace. she mates near the coast and can lay up to six times (20 to 250 eggs) over the course of one and a half month. Females often wait until night-fall to venture on to land to lay. after ensuring the safety of a place, she digs a nest in the sand with her fins, lays her eggs (each one is about the size of a golf ball). she then fills the hole back up- covering the eggs with sand to erase evidence of her

passage. it takes about 30 minutes for the entire operation. the incubation period is 45 to 70 days depending on the

You can see turtles, all kinds of fish, blue-spotted stingrays... let yourself drift with the current, whilst being careful because sometimes it can be very strong! You can rent the equipment very easily on all three islands. another alternative is a snorkeling trip - a day out on a boat. You leave in the morning around 9am for a full circuit of the Gilis, visiting the best snorkeling spots of the three islands. You stop for lunch and finish about 4pm. good afternoon acok, tell me a little about yourself?bonjour acok, parlez-moi un peu de vous ?salamat sore! i was born here (Gili trawangan) and i went to school and grew up in Gili air because Gili air had the only elementary school then. i went to lombok for junior and high school then i lived in Bali for a year to learn to surf and came back to Gili t and started working for Blue marlin when they opened in 1990 as a boat captain and a guide.

to now? ok, qu'est-ce que vous faites maintenant ?i’m working with the Fmpl. it’s an organisation of the local community who cleans and collects rubbish from the streets everyday and we work with Gili eco trust. i want to keep the Gilis as clean as possible and send the rubbish to lombok where they process it and recycle it. We need to work together to do this, if we try to do by ourselves its impossible. We support eachother and it’s easy to work together. in 2001 we built satGas (local people patrolling the sea) to stop the dynamite fishing. satGas and Get work together with the fishermen to try to stop illegal fishing.

We have to pay to the fishermen to not fish certain spots because we want them protected. that’s why all the dive

shops have the reef tax to put towards these costs of patrolling the waters and giving money to the fishermen so they won’t illegally fish these waters. it can be about money, but we need to think.

what else can you tell me about conservation efforts here in the gilis? que pouvez-vous me dire de plus sur les actions de conservation aux gilis ?there needs to be more conservation organizations, the government needs to get involved. there needs to be more funding, if it’s just us it’s very hard. For the school, the local community came together to build and donations were put towards the wages for the salaries for the teachers. the donations came from all the companies here- everybody helped.

back to the gilis? donc, après avoir vécu à bali pendant un an en 1989, pourquoi revenir aux gilis ?nobody had heard of the Gilis in the 1990s when we were telling them about it. so we started telling them how to get here. We would go to all the bars and talk to people (in Bali) and make brochures and tell them about the Gilis. tourists started really to come in 1995. tourism has risen and fallen many times since then. people used to come here by ferry and that would take one day! they would start at 7 am and get here at 7 at night, now it only takes two hours. now the islands have changed a lot, the economy, the people, it’s going very fast. now people make money here by recycling the plastic bottles!

personne n'avait entendu parler des Gilis dans les années 1990. à Bali, nous avons commencé à faire la promotion des îles en allant dans tous les bars, en faisant des brochures, on parlait aux gens et on leur expliquait comment y aller. les touristes ont commencé vraiment à venir en 1995. le tourisme a augmenté et diminué à plusieurs reprises depuis. les gens venait en ferry et ça prenait un jour ! ils partaient à 7h du matin et arrivaient à 7h du soir ! maintenant ça ne prend que deux heures. les îles ont beaucoup changé, l'économie, les gens, ça va très vite. aujourd'hui les gens gagnent de l'argent en recyclant les bouteilles en plastique !

and how did sama sama bar come to be? comment le bar sama sama est-il né ?i started building two bungalows in 1998 and kept working to keep building and opened them in 2002. in 2004 i built and opened two more and now i have eleven. i built the bar in 2007, it took me a year because i built it by myself. then in July 2008, we opened. and do you know why we called it sama-sama Bar…?

en 1998, j'ai commencé à construire deux bungalows, j'ai continué à travailler et j'ai ouvert en 2002. en 2004, j'en ai construit deux de plus et maintenant j'en ai onze. and why did you decide to make it specifically a reggae bar? et pourquoi un bar reggae?Because when i was in Bali i really liked the reggae spot Bruni café and got into the music. From then i wanted to have a reggae bar in Gili because there were no live music places and reggae is beach music!

parce que quand j'étais à Bali j'ai vraiment aimé le Bruni café, un bar reggae...je suis tout de suite entré dans cette musique. dès lors, je voulais avoir un bar reggae à Gili parce qu'il n'y avait pas d'endroit avec des concerts live et puis le reggae ça va bien avec l'ambiance plage...!

what do you want people to know about sama sama reggae bar? que voulez-vous que les gens sachent du sama sama?i want people to know Gili (trawangan), if they know Gili, they know sama sama. We started by having singers perform behind the bar. then i was meeting musicians and telling them i have a place for them to play in the Gilis. now musicians from all over indonesia and the world come to visit us and jam with the bands. We have two resident bands- Joe mellow mood & Gili t rock Band and every saturday we have a big party. i like pulling together all the people- so many minds and people from everywhere to play music and enjoy. i want to control the alcohol and i only buy from one person in lombok to keep people safe. i’m here everynight to make sure everything is good.

and i’ve heard you have a recording studio? et j'ai entendu dire que vous avez un studio d'enregistrement?Yes, we have a recording studio here onsite, sama sama records. i like music but i cannot play, i like to hear and help. iwanous from coconut treez does the sound engineering and we’ve produced two albums for Joe mellow mood. people can come here and record an album. i’m using a room as the studio now but i’m building a proper studio that will be ready in december.

coconut palms are a vision of paradise. they appear to us as perfect emblems, telling us we have arrived in a place of unwinding tranquility where our worries can simply drift out with the tides. these lazy palms sway in the tradewinds along the Gili island shores creating dancing shadows in the sand. the act of these palms swaying in the wind may seem of little significance but it is in fact paramount to the tree’s survival. les cocotiers sont une image symbolique du paradis. ils représente nt un certain idéalisme, par leur forme, leur beauté, leur force et dégagent une sensation de paix et de quiétude lorsque l'on se retrouve au beau milieu de ces arbres si singuliers.ils caressent les eaux cristallines des plages de sable blanc et se balancent au grès du vent... dans notre imaginaire, ils représentent la perfection et l'évasion mais ce doux balancement a bien plus d'importance que l'on ne croit, il est en effet primordial pour leur survie.

High reaching survivalistsde grands survivantsit is no accident by nature that you can observe a coconut palm “swaying in the breeze.” these plants have evolved to be incredibly durable and move with the winds because they generally grow in areas exposed to extreme conditions and they have a very weak root structure that would allow the tree, if rigid, to be easily uprooted. a coconut tree’s root system is comprised of thousands of thin, vastly stretching yet shallow reaching fibers and adding to this seeming vulnerability is the fact that these trees grow in loose soils that are largely composed of sand- but by growing in these areas and in these conditions these trees have less surrounding competition so that they can grow to their necessary heights and achieve the maximum amount of sun exposure they need for a great deal of energy converting photosynthesis. ce n'est pas un hasard si les cocotiers se balancent au grès du vent. ils possèdent un système racinaire qui leur permet d'être flexibles et de résister aux conditions météorologiques extrêmes auxquelles ils sont exposés. ce balancement est donc naturel et essentiel. le système racinaire du cocotier est composé de milliers de minces, larges et peu profondes fibres qui s'étendent de part et d'autre du tronc. ils sont donc facilement déracinables. à cette vulnérabilité apparente nous pouvons rajouter le fait qu'ils poussent dans des sols sablonneux. ceci leur permet d'avoir plus d'espace car peu d'espèces poussent

Coconuts dissectedla noix de coco à coeur ouvertcoconuts are essentially encapsulated liquid endosperms made up of about 94% naturally sterilised water in the middle (when young). containing this water is the hard protective outer “kernel” and outside of that is the fibrous husk known as “coir” which is covered by the coconut’s outermost green to yellowish-gold skin. the prime time to harvest coconuts for drinking is when they are a bright green at 5-7 months old. these are “young coconuts” and this is the stage when they are highest in their nutritional content of sugars, vitamins, minerals, electrolytes, enzymes, amino acids, antioxidants and cytokines*. Historically, the Banda islands were flourishing in trade with highly valuable spices endemic and unique to their soils. in the 16th century, when spices were worth their weight in gold, the Banda island’s were the world’s sole source of the highly prized nutmeg. this led to the Banda’s otherwise inconspicuous location to be sought out by european fleets desperate to control the trade of this rare and profitable spice- thus inciting the european age of exploration. at this time in history the Bandas were ruled by king-like leaders known as orang kaya ('rich men') who managed to ward off colonial forces until the 17th century when they were mercilessly overtaken by the dutch- who then held a 200 year monopoly over the spice trade, operating as the dutch east indies company. dutch rule remained until indonesia gained their independence in 1945. once the site of the great spice Wars, today these islands are peaceful and allure those who want to experience a personal taste of adventure and paradise. Easy indonesian sweet holiday recipe: pisang gorengfried Banana fritters Beignets de bananes frites

MeThoD preparaTion1) in a large bowl, combine flour and sugar. make a well in the center, and pour in milk, egg, melted butter, vanilla and rum flavoring. mix until smooth. Fold in banana slices until evenly coated.

2) Heat oil in a wok or deep-fryer to about 190 degrees c.3) drop banana mixture by tablespoon into hot oil. Fry until golden brown and crispy, 10 to 15 minutes. remove bananas from oil, and drain on paper towels. serve hot.For an extra treat- serve with syrup or chocolate sauce!
