PERSPECTIVE

These words are subjective, and that means they are open to interpretation by the

individual. We all see things differently. Because our life experiences influence the

way we look at the world each day, we are bound to see things from different angles.

In most cases we view our own behaviour as normal and everyone else’s is a variation on that. It gets really hard at times to understand some people’s point of view, certainly their behaviour – even their ethics.

We tend to deceive ourselves by thinking that we understand certain people, we feel that because they have a familiar point of view to ours they are right, yet this just means their experiences have been similar to ours. Maybe they grew up in a society with a similar code of ethical behaviour, or their family followed the same principles. We can’t ever completely understand the motivations of others. Gnostics understand that all – absolutely ALL– conflict comes from misunderstanding.

It certainly makes life easier if we mix with people who have values like ours. We know what to expect from them and we also know what we can get away with. However, real spiritual growth comes when we dare to step outside our own ethics, morals and principles and try understanding a completely different culture.

An easy, less disturbing way to do this is to read about civilisations from the past. Try to really get a feeling for their behaviour and understand what motivated them – why they accepted the things that they did. Then see them as your own ancestors, imagine how the changes that came with time had an influence on them and eventually you end up in the 21st century in your own life. You might be able to see that the threads of influence through time change what is acceptable behaviour.

Things that we once thought of as absurd or ridiculous now seem not so far left field when we see the influences that happened along the way to lead us to our current understanding. And remember we will be judged by others for our limited views also.

Everyone is doing the best they can at all times, given the limitations they have that are caused by fears, doubts and lack of under-standing.

When we accept the things that influence other peoples’ ethics, morals and principles we can live without conflict. And when we realise that ours are based on opinions we might even be prepared to let them change with time.

A love of cooking and a fascination with different cultures led writer and photographer Bree Hutchins on a journey to explore the hidden kitchens of Sri Lanka. We caught up with her on a recent visit to the Coast.

What was it about Sri Lanka which inspired you to delve into the food culture?

I was there photographing with a film crew for MJF, a charitable Foundation set up by Dil-mah. One dish that sparked my love affair with Sri Lankan food is Brinjal Moju, an eggplant pick-le. We were determined to find out what was in this pickle! There was one flavour I couldn’t identify, which I found out was coconut vinegar. Slightly acidic but with a really soft flavour, you’ve got to try it.

My travels seem to be navigated around the world by food. It’s the best way to meet people. I might not speak the language but everyone speaks food!

Kitchens are very personal places. Were people open to the idea of having their spaces photographed?

I would follow the smell of food on the street and wander into a stranger’s kitchen. My opening line was “that smells great!” Then I asked if I could

photograph them. My friend and interpreter Neyome was a huge help. What was the process of gathering the recipes?

I had the women cook the dish in front of me. They don’t write anything down – all their dishes are an oral tradition. And these women cook fast! Pinch of this, bit of that… So I was just writing it all down as best I could and photo-graphing, trying to keep up. What did they think of your photographs?

I showed one man a picture of his wife cooking – he’d never seen a photo of her except on their wedding day – and he just stood there staring, transfixed by it. I’m going back to Sri Lanka soon to see all the families, and give them a book and an album of all their photographs. I’m looking forward to that.What makes Sri Lankan food special?

Food plays an important role in the culture, and they are really proud of their recipes, hand-ed down from one generation to the next. Sri

Lankan cuisine has been influenced by so many nationalities – Arab traders who brought a lot of the spices, and the Malays, Dutch, Portuguese and British. So you get this interesting mix of flavours.Which recipe would you recommend to start with?

The Pumpkin Curry is a very simple one and also the Kiri Bath, a coconut milk rice slice, which is a traditional Sinhalese dish.

I encourage people to make their own curry powder from scratch. Dry the spices in the sun, toss them in a wok and grind them down. It re-ally changes the flavours. There are two recipes in the book for it. Even my dad’s done it!Did you feel safe travelling around the country?

Yes I did. I’ve been to many countries, includ-ing Africa and Central America and I have to say that the only places I’ve ever felt unsafe were Paris and Rome.

Sri Lanka is like anywhere that’s recovering from conflict – there are issues in some parts of the country. The landmines in Jaffna, for exam-ple, are in the process of being cleared but there are still many amputees. The MJF Foundation is building a cooking/hospitality school at the moment for people affected by landmines.What was your favourite part of the trip?

Meeting amazing people and learning their stories. The country has gone through so much – civil war, and the tsunami in 2004. The people have a resilience and positivity which is awe-in-spiring. I was captivated by them.

As I was enjoying a rather fine cappuccino the other day, I noticed a family out for breakfast.

“How nice”, I thought. But then I noticed that every single one of them

was glued to an electronic device.The parents toyed with their smartphones, the

grumpy-looking teen was headphoned up to his iPod and even the toddler was tucking into toast while watching Peppa Pig on an iPad.

No one was talking or even looking at each other. This lovely family occasion had been totally eroded by the presence of technology.

So are smartphones ruining our reality and screwing with our social life?

And if they are, how many of us would be willing to ditch our devices and go cold turkey?

Now don’t get me wrong. I love my smartphone, passionately.

It stops me getting lost, helps me pay my bills and keeps me in contact with friends far and wide. I’ve got an app that tracks my weight, one to manage my weekly shop and myriad awesome games to play.

But I also loathe the bloody thing. I hate being connected and contactable all the

time and I can’t help but check my social networks every 2 seconds. I tend to think of every lovely view as a potential Instagram picture and I’m over wasting hours playing Sudoku when I could be living life.

I’m also sick of those people (me) who check their phones in social situations and spend time texting when they should be talking.

This hideous habit has even been given a name: Phubbing.

This phrase (which describes the act of snubbing someone in a social situation by looking at your phone instead of paying attention) was coined in May 2012. Ad agency, McCann, invited a number of lexicographers, authors, and poets to create a neol-ogism to describe this behaviour for a campaign to promote the Macquarie dictionary. It even has its own website: www.stopphubbing.com.au

And it’s getting worse! According to a recent Nielsen study, nearly 66% of homes with mobile phones have a smartphone (up 44% since 2011). The study also tells us that the average person spends around 34 hours, 17 minutes on their smartphone each month. Yes, that’s right; 34 hours EACH MONTH.

Just think of what you could be doing with all that time. You could:n Learn a language or an instrumentn Read a book or threen Catch up with 34 friends for an

hour-long coffee eachn Go to the gym every day for a monthn Spend four days on your back just

watching the clouds…In an attempt to cut down on my smartphone

addiction my husband and I left our phones behind on a recent five-day holiday.

The first day I was anxious. The FOMO (Fear Of Missing Out) was strong. I felt strange not being connected to my social media chums. I couldn’t check the time or the weather and had to resort to using real maps to get around.

By day two I felt calmer and more engaged with the world around me. On day three I was sleeping better, feeling happier and enjoying being in the moment. When day four came around, I’d have quite happily given up my smartphone for life, but on day five we returned to reality and we had to plug back in.

But I learned a lesson and now my smartphone is a ‘sometimes’ device, not an ‘all the time’ device.

So next time you’re out with your family and friends, how about keeping your smartphone in your pocket? Let’s all say “no” to the vile act of phubbing!

to, influences the field of potential experience for all.

The last two generations; where children were given violent electronic games for entertainment, have lowered the field, making it more difficult to create this personal feeling of safety and security. This in turn encourages violence as a form of protection from perceived danger even before it presents.

Take time to notice how you feel when you see the mother with the small family drop a bag of fruit and other people come to help her. Everyone who witnesses this small act of kindness walks away with a smile. This is co-operation.

Then how did you feel when you were in the car park and someone stole another person’s parking space and the rage flew back and forth between them. Regardless of the right and wrong, each set of behaviour leaves a feeling on all who witness it. The next time you enter the car park you might be likely to rush around worried that your space will be stolen. Those in the know play the quantum game of creating a car space right where you want to park.

These scenarios are examples of how easy it is to get swept along with the current mood, behaving in reaction to what you think is likely to happen, rather than behaving in accordance with what you would like to happen. Either way your consciousness is creating the experi-ence.

As we move forward into the 21st century we are in the Age of Aquarius. The 60’s song, The Dawning of the Age of Aquarius promised Harmony and Understanding, Sympathy and Trust abounding.

If we focus our consciousness on achieving this we will create safe communities, sharing resources and information for the common good of all.

We live in a world where we are reminded daily to stay safe. The media reinforces

this daily with stories where something went wrong, how somebody got hurt, or reports of humans threatening one another or causing suffering.

We get sold insurance for when these bad things happen. We use a lot of our energy to try and achieve these constant states were everything is secure and predictable. We expect governments to legislate making laws to keep us safe from life and each other.

Guess what? No amount of external protec-tion will guarantee you a feeling of security. The people with the most locks still often feel the most insecure. Feeling safe and secure comes from within, just like feeling loved and valuable.

A society that supports each member, like a family that takes care of the youngest or the oldest is going to reinforce a sense of security, but they will not be able to create it. Your own behaviour towards others is what creates the feeling of being safe. If you care you feel cared for.

The ancient Gnostic communities knew this and lived in societies created and maintained by co-operating and taking care of the weaker members. Living in co-operation with others creates a space where you can feel secure. Externals laws and locks and boundaries rein-force the feeling of danger and the need to be protected.

21st Century quantum physics has returned to a similar understanding. We now realize that every action we give our consciousness

These words are subjective, and that means they are open to interpretation by the

individual. We all see things differently. Because our life experiences influence the

way we look at the world each day, we are bound to see things from different angles.

In most cases we view our own behaviour as normal and everyone else’s is a variation on that. It gets really hard at times to understand some people’s point of view, certainly their behaviour – even their ethics.

We tend to deceive ourselves by thinking that we understand certain people, we feel that because they have a familiar point of view to ours they are right, yet this just means their experiences have been similar to ours. Maybe they grew up in a society with a similar code of ethical behaviour, or their family followed the same principles. We can’t ever completely understand the motivations of others. Gnostics understand that all – absolutely ALL– conflict comes from misunderstanding.

It certainly makes life easier if we mix with people who have values like ours. We know what to expect from them and we also know what we can get away with. However, real spiritual growth comes when we dare to step outside our own ethics, morals and principles and try understanding a completely different culture.

An easy, less disturbing way to do this is to read about civilisations from the past. Try to really get a feeling for their behaviour and understand what motivated them – why they accepted the things that they did. Then see them as your own ancestors, imagine how the changes that came with time had an influence on them and eventually you end up in the 21st century in your own life. You might be able to see that the threads of influence through time change what is acceptable behaviour.

Things that we once thought of as absurd or ridiculous now seem not so far left field when we see the influences that happened along the way to lead us to our current understanding. And remember we will be judged by others for our limited views also.

Everyone is doing the best they can at all times, given the limitations they have that are caused by fears, doubts and lack of under-standing.

When we accept the things that influence other peoples’ ethics, morals and principles we can live without conflict. And when we realise that ours are based on opinions we might even be prepared to let them change with time.

Warm hugs at the door and an offer of tea. Bewilderment from both sides about how

and why its taken us this long to have a cuppa to-gether. Some homes have a way of disarming you. This one, though armed, did just that. The walls are covered with art, feathers, drums. The shelves are laden with tidy stacks of books, a myriad of crystals and sacred objects and symbols adorning the walls.

Hanging with Medicine Crow, a descendant of the Lenai Lenappe people, and later the Sand Hill Band (Cherokee/Delaware) descendants, is an experience. Be prepared to be called on your shit and to laugh simultaneously.

His voice is strong and deep and he confesses to have lost his ability to have patience with Bull#$%.

Gulp. He tells me of his family, his sons and he speaks

fondly of his late mother. We speak of “souls” and he stops me, “Souls are

a religious thing!” He says bluntly. “Spirit, now Spirit moves through all things”

Questions I had written out to be answered quickly go by the way-side as Crow begins to speak and the doesn’t really stop. He has lived 10 lifetimes already by the sounds of it.

Medical school training as a respiratory phys-iologist, Trainer/Teacher at UCLA, Psych nursing, Screenplay writer, ordained minister , Single dad, Musician and now, Urban Shaman.

As he talks I learn that Crow has many influenc-es especially that of KaHuna (Hawaiian shamanic) principles of which I am quite fond.

First Principle: The world is what you think it is. “You only get one shot at the box in your Skin Suit,” he says laughing. We talk about leading an authentic life and being honest both with yourself and with others.

Second Principle: There are no limits. “To know yourself is to be powerful.” When we have an understanding of who we are and that we are all inherently connected we realise the power of this connection.

Third Principle: Energy flows where attention goes. A few minutes after we chat about totems and animal messengers, specifically the kookabur-ra, one swoops down and eye balls us. “Be aware of what you say,” says Medicine Crow “Your words create things.”

Fourth Principle: Now is the moment of power. “You will never be any more powerful than now,” he says.“What will you do with it? Power moves from moment to moment, don’t waste it…”

Fifth Principle: To love is to be happy. To love yourself, to be happy with yourself. “How simple can it be?” he asks me. “Happiness creates healthi-ness, its as easy as that.”

Sixth Principle: All power comes from within. He tells me that he says his prayers everyday. “Keep it Simple, Sis.” Prayers, he says are a deal. Like any form of creation they require Focus, Imagination and Intent.

Seventh Principle: Effectiveness is the measure of truth. “Is it working? if it’s not then stop and do something else. It’s okay to change one’s mind.”

CREME OF THE CROP

COFFEE

Gather around all you wannabe baristas, all you lovers of the bean, all you purveyors of the creme. Gray from the Gnostic Mana Cafe has some hot tips to help you produce some top shelf caffeine at home on your own domestic espresso machines!

Let’s start with the beans. Most popular commercial store-bought beans are roasted

around 3 months before you get them in your hand. You should be aiming for something much fresher and unadulterated. We personal-ly roast our own beans in house, and after let-ting them sit for a ‘de-gassing’ period (usually 4 or 5 days) they have developed the appropriate oils we need for proper extraction and flavour.

The grind. To achieve the best flavour and fullness from your beans, you really need a quality grinder at home. some better coffee machines on the market today have grinder either attached or built in. As soon as a bean is cracked open or ground, it begins to oxidise and lose its precious aroma and oil content, hence, we want to do this just prior to extrac-tion rather than at the store. The grind should be as fine as your machine can handle. This is usually the area of most frustration, finding the right ‘coarseness’ for your setup. We are aiming for a steady, slow stream of coffee from the spout. The common expression is a “rats tail” shape to the pour, as the surface tension of the oils in the coffee contour the pour. Good extrac-tion is roughly 25 seconds for 30ml coffee. And remember to use a good firm tamp.

The milk. If you are one of those people who likes to ruin their coffee with milk, then so be it. The key to quality textured milk, is sound. Your milk should not scream, gargle, burp or pass gas. it should sound almost silent. The trick is placing the nozzle just under the surface of the milk and have the steam create rotation in

the milk jug. less is more, add just a little air at the beginning and spend the rest of the time ‘mixing’ that air through your milk as you bring it to temperature.

And finally for todays lesson, the machine itself. Know your machine, love it, shine it, name it. Mine’s called Jessica. Knowing the ins and outs of your machine will help you produce the best cup. Learn how to clean and maintain it correctly, how to program it, allowing heat up before use, hot crockery and group arms are key to maintaining creme on your espresso.

Have fun with your coffee, the key is expe-rience and perseverance. I’m full of, amongst other things, lots of tidbits on coffee. Everything from the number of chromosomes in certain coffee plant species to the secret internal work-ings of domestic and commercial machines.

Caroline and Glenn Cardier bought Gnostic Organics 18 months ago with a vision to expand the scope of the store. After an inspiring visit last year to the US, they’ve now added a kitchen upstairs and have begun creating organic raw cakes, slices cookies and bites.

“There’s this amazing organic vegan restau-rant in New York called Quintessence,” says Caroline. “We ate there almost every night. They make a whole range of food styles from Mexican to Asian. It was 80% raw, with just some cooked elements like quinoa. The flavours they were getting were unbelievable!

“Ten years ago I substituted sugar and butter for flour in my gluten free cakes. Now we use activated nuts, coconut products and agave syrup to sweeten. Using all the organic raw ingredients available in the shop we can offer these healthier alternatives that are much more satisfying and taste delicious.

“The whole raw food idea can scare people – it scared me at first! I just thought it all seems too hard, but it really comes down to getting your mind into the process.

“We’re really passionate about good, clean food and introducing people to the concepts behind creating it all. From using raw cacao and coconut oil; the easiest way to crack a coconut;

green smoothies, to making raw cheese and your own nut milk.

“The practice of ‘activating’ nuts is interest-ing – basically soaking and then dehydrating them. It’s important because the outer skin has enzyme inhibitors to stop them sprouting and this can be a hard for your stomach to digest. By activating them you absorb more nutritional benefits.”

Food can be such a joy and when you talk to Caroline she really embodies this. Her passion and infectious laughter chime through the new and expanding space. but there are some general rules that are easily observed.

Raw, uncooked foods have a cooling, draining and moistening effect. The draining aspect relates to elimination of toxins from the body. Raw food is best taken in moderation and balanced with cooked foods in order not to exhaust the body’s energy. Digesting uncooked foods requires more energy from the body than cooked foods. Uncooked food can be consumed in higher amounts in spring and summer to balance the heat of the seasons and help the natural detoxi-fication process.

Cooked food has a warming, nourishing and energising effect. It supports the building of body tissue and strengthens the immune sys-tem. Slow cooked stews are most appropriate in the cold months of the year when the body goes into a storing and preserving mode and quickly cooked foods such as stir-fries are more appropriate during the warmer months. Nutrition does not have to be complicated. Observing simple rules such as balancing raw and cooked food according to the seasons is a great start to healthy eating.

Let food be your medicine Have you ever asked yourself: What is the right food for me?

The classic system of Chinese medicine de-veloped over the last 2000 years. It does not

look at the chemical constituents of our food, instead it evaluates the energetic effect foods have on our organism.

These energetic effects are categorised into cooling, warming, moistening, drying, raising, descending, dispersing, astringing, stimulating or sedating. Knowing the energetic effects of the food you are eating enables you to eat the appropriate food for the seasons as well as using your food as medicine.

To explain this, let me give you an example: The energetic effects of bananas are cold, sweet, descending and moistening. It is an excellent food during warm, dry seasons because of its cooling and moistening effect on the body. As a medicine, bananas can be used to treat consti-pation because it has a descending, downward draining and moistening effect on the intes-tines. However bananas must be avoided if one suffers from conditions marked by too much mucus such as sinus infections, productive cough or even a stuffy nose because its moisten-ing action will produce more mucus and make things worse.

Mind MULCH!

Deeply rooted beliefs are a mind-gardeners delight!

Mind gardening is the habit of occasionally flipping your awareness away from the

external world to begin weeding out habitual thoughts and belief systems that are no longer useful.

This pruning can discard that which is supposed or imagined or outdated but always deserves a careful eye to avoid delusion.

Recently I read something from Vietnamese Zen Buddhist teacher Thich Nhat Hanh which busted through a few long year’s worth of delusion for me. It stated that while hope is important, because it can make the present moment less difficult to bear, it is also a form of clutter.

“If we can refrain from hoping” he says, “we can bring ourselves into the present moment and discover the joy that is already here.”

What? No hope? My Catholic upbringing and current spiritual

philosophies were scrambling. “But where are we without hope?” I thought to myself. Hope has been a widely promoted, highly cherished ideal of mine. It’s the stuff of a better brighter tomorrow, a more peaceful future, a change for the better.

Thoughts tossed and turned looking for reasons to refute this in my own life yet each

one, when upturned, showed its underbelly to be one of the following:

◆ Not being present. Living in the past or future.

◆ Not being willing to take action myself, waiting for someone else to act.

◆ Being in a state of delusion about the true reality of something. These thoughts had been planted so long

ago I forgot they were just an introduced spe-cies and not the native natural truth.

I was able to surmise that in my life, hope, whilst having been useful in the past, ren-ders me nearly inactive to being truly in the moment.

Damn… and here I was thinking it was a useful tool for me.

Each of us is different and our lives are built on different experiences, some of which hope can assist with but I really felt ready to let this one go and attempt some peaceful acceptance of what IS.

I’ve since discovered its far more useful to be honest with myself and others, to create some-thing or accept its absence and mentally move along. We can only ever truly change ourselves and a big part of this is mindfulness especially in relation to our inner world and its “stories”

Cultivating self knowledge – like yard work – can be challenging, even exhausting but the rewards when done regularly are so worthy of the effort. What deserves to be in your mental mulch?

Hope also implies that it may not be the out-come but rather just a wish. I hope the seeds propagate and the flowers bloom, but I know it might not happen. Hope is just my ego’s way of accepting the possibility my wish may not be granted.

The idea of compost is so relevant to the mind.Just like in the compost bin we add new ingredients to transmute waste into some-thing new and useful.

Intense encounters from powerful people who prey on your vulnerability may occur this month. Be aware not to be coerced into underhanded dealings or subversive tactics. Stand your ground as you can bring insight and balance the power to make you strong. You must be honest with yourself as you transform weakness within, healing past grudges and grievances. Working through this you will feel confi dent as you immerse yourself in loved ones, friends, social activities and community care.

February

Sees a drive for success and power as your mind and concentration intensify. Obsessive behaviour, pessimistic thinking, and worrying about the small stuff may make you want to cut corners. Not a good idea! Proceed with caution! Listen to other peoples ideas as they can be helpful to bring to you into a new cycle of thinking. Your mental energy is strong. Expect sudden and exciting changes as you are eager for more interesting subjects to enter your life. Health issues, nutrition and fi tness are high on the agenda.

Religion for AtheistsAUTHOR: Alain De Botton PUBLISHER: Penguin RRP: $23.00 • Available at Gnostic Forest

“The challenge of today’s parents is to make their children more interesting than an iphone.” This quote put De Botton, a Swiss/British writer and philosopher on my reading radar.

The premise of this book is not to debate the existence of God or convert believers into atheists or vice versa though it does pose some interesting questions.

De Botton asks what we may be neglecting to embrace from religion that will assist us in regaining a strong sense of self within a cohesive communi-ty. The stronghold of religion, beyond common faith, is inextricably wound up with our culture at large. Its education, arts, sense of community and our emotional awareness and refinement are all deeply affected by our religion or that which predominates the culture we grew up in. And, he states, if they’re not, perhaps they should be.

Sifting through categories as diverse as Architecture and Tenderness, De Botton does reference many religions but there is a heavy reference to Christianity throughout. Thoughtful, prompting, reflective and challenging this book is a great read despite the, at times, academic phrasing.

Recommended for: The disenchanted Ex-Believers, Right-Brainers, Scientists and Humans alike.

It has provided me with guidance and great personal benefit including one instance which many might call a miracle.

I highly recommend Laura’s book for anyone who wishes to invite the Angels and all they have to offer into their lives.
