WHY DOES THE ANTI-COAGULANTCOUMADIN HAVE A AN FDA WARNING ABOUT EATING GREEN VEGETABLES?
The only naturally occurring coumestan in the food chain is the phytochemicalcoumestrol. Coumestrol is found in beans, split peas, clover, spinach, alfalfa sprouts,
brussel sprouts and soybean sprouts. Coumestrol is an isoflavone from which coumadin is derived. The anti-coagulant properties of the seeds of the tonka bean
containing coumadin are so potent that they can be lethal in large doses. Due to this, the FDA had it’s use banned in food in the USA.
