The 28th annual California State University, Long Beach (CSULB) Campus Couture Fashion Show took place on Friday, May 6, at 7 p.m., at the Karen and Richard Carpenter Performing Arts Center. The Campus Couture Fashion Show is the largest student-run fashion event on the West Coast entirely run by students who plan and execute the show under the mentorship of Associate Professor Suzanne Marshall, director of the FMD program. This year’s student committee was comprised of Head Coordinator Jasmin Garcia, Assistant Coordinator Olivia Le, Public Relations Coordinator Shelby Kloves, Fundraising Coordinator Ulylisa Maldonado, and Design Liaison Nicole Azevedo. Student Awards and Scholarships

Kristin Mahood is currently in the combined Die-tetic Internship and Nutritional Science MS pro-gram and was awarded Outstanding Dietetic Stu-dent in a coordinated program by the California Academy of Nutrition and Dietetics. Her thesis study entitled “Wine Taste Perception in a Som-melier and Naïve Wine Tasters With and Without a Tongue” investigates taste perception using wine in a person with isolated congenital aglossia (ICA, being born without a tongue) as compared to an average naïve wine taster with a tongue and a sommelier. Kristin presented her research poster at the Experimental Biology 2016 conference in San Diego and the 2016 Annual Conference of the California Academy of Nutrition and Dietetics in Riverside, CA in April 2016.

Jennifer Ratanapratum Jennifer Ratanapratum has enjoyed great success in the

department of Family and Consumer Sciences. Jennifer,

with the advisement of Dr. Michelle Barrack, presented

research conducted as part of the Summer Student Re-

search Assistantship at the 2016 CSULB Student Research

Competition. Jennifer won Honorable Mention (3rd place)

in the Health, Nutrition, and Clinical Sciences division

among a field of undergraduate, masters, and doctoral stu-

dents. She was also awarded Outstanding Dietetic Student

in a Didactic Program by the Academy of Nutrition and Die-

tetics (AND). She was presented with her award at the Cali-

fornia Academy of Nutrition and Dietetics Annual Confer-

ence in April 21st in Riverside. Due to her amazing achieve-

ments, her name will be published in the September issue

of the Journal of the Academy of Nutrition and Dietetics.

tetics. The DP is the set of course

work in the Nutrition and Dietetics

Traveling with Dr. Marshall

Thirty two students traveled with Dr. Marshall to New

York in January for a week of fashion seminars presented

by companies such as Calvin Klein and Tommy Hilfiger.

Additionally, Dr. Marshall and 34 students attended the

Magic Tradeshow in Las Vegas, which is the largest

Fashion tradeshow in the US.

Long Beach City Council Recognizes Beach

Community Wellness Program

The Beach Community Wellness Program (BCWP) was recognized by Council Member Rex Richardson at the city council meeting held on December 1, 2015. Nutrition and Kinesiology professors and students were part of the BCWP which provided free fitness and nutrition classes for the community, as an effort to promote healthy behaviors and reduce their risks of cardiovascular diseases such as obesity and type 2 diabetes.

Excellence in Teaching Award

Casey Goeller, of the FCS Gerontology Program, won the

Lecturer Excellence in Teaching and Learning Award.

This is a program created by the

Provost to recognize lecturers for their

contributions to teaching and learning

that have proven to be beneficial for

student engagement and successful

learning among students from diverse

backgrounds.

AHLEF Partners with CSULB in Scholarship

Grant Program The American Hotel & Lodging Educational Foundation

(AHLEF) has allocated $7,500 to CSULB’s Hospitality

Management (HM) program for distribution as scholar-

ship awards to HM students for the upcoming 2016-17

academic year. These funds were obtained through a

competitive grant process and we are pleased that the

HM program at CSULB was chosen as an affiliate of the

AHLEF, which is the charitable, not-for-profit compo-

nent of the American Hotel & Lodging Association.

Dr. Cheryl Rock and Nutrition Students Featured in the Journal of Food Science

The work of Dr. Chery Rock and nutrition students

Francis Dizon, Sarah Acosta, Amanda Harris, Cierra Husk

and Jenny Mei, titled “Genetically Modified (GM) Foods

and Ethical Eating” was featured in the 2nd Issue of the

2016 Journal of Food Science. Their work concentrated

on GMO labeling, ethical concerns about the use of ge-

netically modified foods, and health and industry applica-

tions of genetically modified foods.

Child and Family Center Open House

The Child and Family Center, a National Association for the Education of

Young Children accredited program, located in the Family and Consumer

Sciences (FCS) Building, held its annual open house on April 8, in FCS

rooms 107 and 109. The center is a nationally recognized student-teacher

training facility which provides childcare services for CSULB employees

and their families for children 18 months to 5 years of age. The open

house drew over 60 people and was an opportunity for families to re-

ceive enrollment applications and information. Perspective families got to

meet the lead teachers and administrators, learn about the center’s cur-

riculum and our the facilities. Applications for the 2016-17 school year are

now being accepted.

Family & Consumer Sciences at

CSULB has been chosen as a

“CHAMPION.” Dr. Diane Carson’s

efforts in the classroom and com-

munity brought to light the im-

portance of consuming enough

servings of fruits and vegetables

every day. She achieved this by in-

troducing her students to Fruits &

Veggies More Matters website,

newsletters, and by bringing dried

fruits, nuts, and seeds for her stu-

dents to taste. The Food & Fitness

Fun Education Program is taught to

children who are participating in the

Stone Soup Childcare Programs.

Study Abroad Programs for Summer 2016

Kevin Spencer Brings his Magic Therapy to CDFS

Students Kevin Spencer is a professional magi-

cian who has now created a program

working with children using magic. He

travels worldwide, primarily working

with autistic children and other chil-

dren with developmental challenges,

but he has also worked in the medical

field using magic as therapy. He visit-

ed Child Development classes during

late March to demonstrate to stu-

dents how magic can work in all areas

of development. He showed several

magic tricks and discussed how they

can be adapted to areas of learning.

Showing students that motivation and

interest can drive students to learn

and retain information, Kevin has

helped them to look at things from a

different perspective. One student

shared the following with her instruc-

tor:

“I just wanted to express how I felt

about today’s presentation. In my four

years of college I have never enjoyed a

presentation this much or can remem-

ber even having guest speakers in any

of my classes. I am a Sociology major

with a minor in child development and

I can truly say I enjoy your class and it

reassures me that I made the right

choice regarding my minor. I know

Kevin Spencer talked about kids with

disabilities and although he focused

on Autism, I was really happy to know

there are ways of helping kids with

disabilities learn in a more creative

way and to make them feel like they

aren't any different. My little brother

has Down ‘s syndrome and is the most

amazing child I have met and the

presentation really hit home for me.”

Dr. Wang’s Accomplishments Dr. Long Wang of the Nutrition and Dietetics program

was inducted as a Fellow of the Academy of Nutrition

and Dietetics. This designation acknowledges Dr.

Wang’s dedication to the field of dietetics, celebrates his

professional accomplishments, and recognizes him as a

promoter of life-long learning. In addition to this achieve-

ment, Dr. Wang attended the Third Advanced Training

Workshop for Nutrition Directors in Shijiazhuang, China

in March. He presented on dietetic education in the Unit-

ed States to more than sixty directors of nutrition depart-

ments from different hospitals in China. Dr. Wang has

been actively involved in helping China standardize its

dietetic education. As an expert representative of the

Academy of Nutrition and Dietetics, he met with the

President and delegation of the Chinese Nutrition Society

at the Academy headquarter in Chicago in November

2015. His latest pro-

ject is to help trans-

late the academy's

nutrition care pro-

cess and model into

Chinese.

FCS Professors Published in the Journal of Family and

Consumer Sciences The work of Dr. Wendy Reiboldt, Chair of the Depart-

ment of Family and Consumer Sciences, Dr. Libby

Gustin, Hospitality Management Professor, and Dr. Di-

ane Carson, Lecturer in Nutrition and Dietetics was pub-

lished in the 1st issue of the 2016 Journal of Family and

Consumer Sciences. The article "Successes and Challeng-

es Using a Train-the-Trainer Approach: Educating Chil-

dren about Nutrition and Physical Activity in After

School Programs" focuses on analyzing the train-the-

trainer model and its influence in educating school-aged

children about nutrition and physical activity in an effort

to combat the obesity epidemic.

Debbie Tindle Receives the 2016 FCS Distinguished Alumna Award

Family and Consumer Sciences has awarded Debbie Tin-

dle the department’s Distinguished Alumna for 2016.

Debbie is currently working as a registered dietitian for

Sodexo Quality of Life Services at Fountain Valley Region-

al Hospital. Debbie, who graduated in 1982 with a major

in Dietetics and Food Administration, has always showed

her pride and support of CSULB. Her accomplishments

have made a significant impact in the community. For a

decade, she has been a primary preceptor to nutrition

graduate students from different Southern California in-

stitutions, but primarily from CSULB, taking two interns

for 4 months per year, working with them 32 hours per

week, and providing remedial and advanced training for

students. She has also been an active participant and vol-

unteer in the community, providing Nutrition and Health

presentations in Senior Centers in different cities in the

area. All her efforts to help future professionals have

been non-paid. Therefore, the Department of Family and

Consumer Sciences is sincerely thankful.

Gerontology Students Present to California

Commission on Aging

In November 2015, Gerontology students (Cynthia

Brayboy, Miriam Henan, Isabel McGraw, Montse

Ruiz Salvat, and Oni Uyanne-Nwokedi) presented

testimony regarding issues of aging during the

quarterly meeting of the California Commission on

Aging, a governor-appointed body. Students were

matched with mentors from the commission, who

treated the students to lunch and offered

guidance.

Fashion Merchandising and Design Alumni Success

Walter Mendez (2013 FMD graduate) opened his first atelier in Los Angeles, which was

noted in the list of important fashion events in 2015 in California Apparel News.

Mia Seamon (2013 FMD graduate) formerly Account Representative for Valentino in NY

has moved to Senior Account Representative for Chloe.

Andrea Rodriguez (2014 FMD graduate) is now working in social media for Chanel in

NY.

Vivian Chan started her own clothing brand. Her work was featured in the Los Angeles

FCS Welcomes New Faculty

Welcome to the new tenure track faculty who will be joining

the FCS department beginning Fall 2016:

Dr. Youngok Jung will be Assistant Professor in the CDFS

program. She earned both Ph.D. and M.A. degrees in Psy-

chological Studies in Education, with an emphasis in early

Childhood Education and Child Devel-

opment from UCLA. Dr. Jung has pub-

lished three book chapters and a jour-

nal article in press. Her ongoing re-

search program focuses on early litera-

cy intervention with Latino, immigrant

children.

Dr. Tara Gruenewald will be Associate Professor in the

Gerontology program. She earned a Ph.D. in Social and

Health Psychology and M.A. in Psychology from UCLA .

Dr. Gruenewald areas of expertise in ger-

ontology include mind/body processes

and health behavior. Some of her re-

search experience includes having 46

papers published in peer reviewed na-

tional and international journals, being

the lead author of 11 of them.

Food Science Students Participate in the SCIFTS 2016 Competition

On March 10, 2016, 27 Food Science students, under the advisement of Dr. Cheryl Rock participated in the Student

Product Development Competition at the 29th annual Southern California Food Industry Conference. The event

was held at the Disneyland Hotel Exhibition Hall. There were 10 teams from different Southern California

Universities. This year’s theme: “Feeding a Hungry World”

According the Southern California Institute of Technologists (SCIFTS) Chapter, "Food Scientists are challenged to develop technical solutions to feed a hungry world. One approach to this problem is to utilize uncommonly-used, rare, or under-utilized natural resources by converting them to food grade ingredients and further test the feasibility of incorporating these ingredients in food applications.” The Southern California Institute of Food Technologist (IFT) Competition Objectives: 1. “To inspire students in applying their food science learning and find solutions to current food industry

challenges.” 2. “To provide an opportunity for students enrolled in local food science programs to organize and present their

original research at the SoCal Food Industry Conference.” 3. “To provide a venue for connection of research in industry and in academia, and for networking between

students and professional members.”

The Hospitality & Tourism Ca-reer EXPO took place on March 2, 2016, at the Pyramid at CSULB. The EXPO was jointly sponsored by the CSU Hospital-ity & Tourism Management Education Initiative, the Hospi-tality Management Program, and the Hospitality Manage-ment Association student or-ganization. Students in the pro-gram did a great job of helping to organize and make sure that the event ran smoothly. Ap-proximately 38 companies par-ticipated and many job offers were made. The Career EXPO was open to all students and alums at CSULB plus those form the other CSU campuses in Southern California. Stu-dents from local community

colleges also were invited to participate. This was the sec-ond year this event was hosted at CSULB.

he graduated from the LA County Sheriff’s

Department Academy. Dillan was part of

Academy Class #411, made up of 64 male

and 15 female deputy sheriffs.
