Welcome to the latest edition of the Hythe Handbook; and we hope 2013 is proving to be a good year for you so far…We’d like to thank Irene Finch, a local Hythe resident, for the fantastic poem she has kindly provided for us for this edition of The Hythe Handbook. Describing our local high street, we really enjoyed it, and particularly the way you could picture yourself within our lovely high street in Hythe as you read it.

On the subject of the high street, we’re pleased to feature The Dolls House, which is in the centre of Hythe High Street, as our front cover image. If you’ve not had a chance to visit yet, please do. It’s a great building, full of treasures and stalls to browse through over 3 floors. They also have the most delicious sandwiches from The Good Food Brothers, as well as

the exquisite coffee shop. Have a look at the feature on pages 10 and 11, and do pop in!

Emily Sharp Pianist & Piano TutorEmily Sharp’s love of the Piano began at the young age of 5 and after years of study began teaching Piano at the tender age of 13.Since then, Emily has honed her skills over the years to give students every ounce of attention they deserve during their time with her and strives to create a fun yet productive learning environment for all of her students. Regardless of age or ability, each student benefits from one-to-one tuition and lessons are tailor-made to suit the particular needs and wishes the student has. Boasting a 100% pass-rate for examination results since 1993, students are

encouraged to set themselves achievable targets whilst at the same time discovering a love for the instrument. “Music should be fun” would perhaps be her mantra. In 2009, Emily decided to expand her musicianship into the realms of “Portable Pianist” playing for Weddings, parties, functions and events. Word quickly spread and since that time Emily has performed at a variety of venues including restaurants and bars. Emily prides herself on her levels of perfection so no song is unplayable! Brides (and grooms) are welcome to ask for all sorts and if it can’t be found, it will be arranged by Emily for that special day. Bookings can be for playing simply during the ceremony but she is perhaps better

utilised during dinner where guests will be serenaded to all the very best in background entertainment ranging from The Ink Spots to Sinatra, and Billy Joel to Emelie Sande.

Aims & PurposeThe Chamber has two main functions: to attract short break, leisure and shopping visitors to Hythe from across the county

and farther afield; to increase footfall by residents and visitors at shops, restaurants, places of interest and attractions.

What was achieved in 2012 by the Hythe Chamber?•Produced 50,000 copies

of the Hythe Visitor Guide which was distributed to Tourist Information Centres throughout Kent, near Europe and the Home Counties. This was promoted in guest houses, hotels, and public houses. Only members are listed in the guide and only members are permitted to advertise. In the Guide there are “Where to stay” and “Where to Eat” guides which again only lists members.

•Organised and arranged funding for all the new festive lighting for the town - some 14 large trees and 110 smaller Christmas trees.

•Arranged all high street entertainment throughout the year including the popular and very well attended Late Night Shopping Event in early December.

•Arranged free parking for shoppers during the period of the gas-pipe works.

•Continued to keep members updated with what’s happening in the high street, and all the latest council news that affects the high street.

We asked local resident Hannah O’Donnell for her view, having recently visited The Dolls House, Hythe for the first time, and we think her reviews sums it up perfectly!

“Whether you’re a lady of leisure or a cosmopolitan countess, you will find something of intrigue at The Doll’s House.

You’re welcomed by the warm smell of cake, bread and coffee from The Good Food Bros sandwich stall but if you’d rather work up an appetite first, The Doll’s House stalls take you on a colourful tour on three floors of creative wonders; such as handmade cards and jewellery, home accessories and antiques so that you will find something

decorative for the person and the home. There’s also space for children so feel free to bring your bundle of joy along for a nice time too.

On the mezzanine floor lives a small cave of books, which coincidentally is my favourite stall. A gold star if you can guess why.

Whenever I visit it I find it difficult to walk away from all things shiny, soft and smelling delicious but I must, so I can get back to my computer and write how wonderful The Doll’s House is, to coax you into going yourself. As a creative person myself, you’ll find me there too, taking in the bright colours, warm atmosphere and sharing a tea with the friendly stall holders.”

TeneleventwelveAn appreciation for good design and manufacture, and a hatred of waste has led Jean to work with ideas to promote the use of pre-existing materials.

The launch of teneleventwelve on 10th November 2012 is her quest to encourage less waste, good manufacture and a more pleasurable retail experience.

Jean has a great appreciation for vintage and also stocks a selection of designer, new and nearly-new pieces. As well as a dress agency service, you can also find beautiful handmade jewellery using remnants of vintage and contemporary Liberty silks and cottons, and a small section for gentlemen. This year Jean will be working on her own designs and continuing to promote other designer-makers’ work. Pop in and browse.

Brenda’s BooksBrenda Books offers a wide range of quality used books including art, craft and food books together with a selection of new books by local authors.

The shop has the air of an old fashioned cosy second hand bookshop rarely found on High Streets (unless you are in Hay on Wye!)

Method1. Put all the marinade ingredients in a small blender or pestle and mortar and mix to a rough paste.2. Place the shanks in a deep roasting tin, smother in the paste, cover and leave for 2 hours.3. Pre heat the oven to 180 celsius or gas mark 7.4. Keep the shanks covered and roast for 1 ½ hours.5. Uncover shanks and roast for a further ½ hour.6. Remove from the oven and allow to rest for 10 minutes and to serve simply.7. Place the shanks in bowls and add some of the rich roasting juice.

Delicious with buttery mashed potatoes and some dark greens.Chef’s tip: No need to add any salt to the marinade

as the anchovies provide the salt content.

Ingredients:• 4 Lamb shanks

For the marinade:• 2 cloves Garlic

• Handful of fresh Rosemary

• 2 tablespoons Olive Oil

• 1 Tablespoon Red Wine Vinegar

• 4 anchovy fillets (the salty ones from a jar or tin)

This recipe is simple to prepare and great for dinner parties because once the marinating is done, just leave the shanks in the oven and serve when you’re ready.

How to choose fabricsBefore buying, ask to borrow a swatch or length of fabric so you can see how the fabric looks in situ, at different times of the day and night. Ask these questions before you start:

•Width? The wider the fabric, the better the value, and the less sewing will be required. 140cm is average.

•Weight? Heavier fabrics are usually too bulky for small projects, while lighter fabrics usually wear more quickly.

•Durability? Fabric is divided into categories depending on whether it will be subjected to light, general or heavy domestic use.

•Washable? And, if so, has it been pre-shrunk?

•If it’s patterned, what size is the repeat? Large patterns require more fabric so that you can match the repeats.

Types of fabricFabrics are composed of natural or synthetic fibres, or blends of them, and made using a wide variety of weaves.

FIBRES

•Cotton can range from lightweight muslin to heavy canvas and is the most commonly used fabric for home furnishings.

•Linen has a lovely drape and lustre, is durable, but has a tendency to crease.

•Nylon, or polyamide, is tough and resists abrasion, but tends to produce static electricity.

•Polyester is a very strong synthetic fibre that mixes well with other fibres to produce versatile fabrics.

•Silk comes in intense colours and has an attractive, lustrous surface.

•Viscose is made from wood pulp. It is hard-wearing and durable.

•Wool is breathable, warm, naturally water-resistant and available in a wide range of thicknesses and textures.

WEAVES•Bouclé has a looped pile.•Corduroy features pile in stripes

that may be narrow or wide.•Damasks contrast matt and

shiny areas of pattern and are usually rather traditional in style.

•Jacquards feature a complex, raised pattern.

•Moiré is a water-mark pattern, often found on silks.

•Plain weaves have a smooth surface.

•Satin is heavy with a lustrous surface, usually made from silk or polyester.

•Twill weave produces diagonal or zig-zag lines on the surface.

•Velvet may be made from a variety of fibres and features a luxurious, soft pile.

What to use whereUPHOLSTERY•Hard-wearing, tightly woven

fabrics are best for most upholstery. Medium-to heavy-weight cottons and cotton mixes, linen mixes and wools are all good, conventional choices, while corduroy, denim and low-pile velvet are interesting as well as usable.

•Avoid deep piles, which may become crushed, and loose or loopy weaves, which are likely to snag.

•Bold motifs should usually be centred on sofa

or chair backs. You will need to buy more fabric to ensure everything fits in the right place.

LOOSE COVERS•Choose a fabric that is washable

and substantial enough to hold its shape yet soft enough to be comfortable: medium-weight cottons, linens or blends, or light wools are all ideal.

CURTAINS•Curtains can be made of

practically any fabric, from cotton and linen to velvet, silk or wool.

•Consider unusual fabrics such as blankets, tweed, fleece, or perhaps a sari or chintz quilt.

•Very thick, heavy fabrics will be too bulky for small window openings.

•Sheer fabrics will not hold a crisp fold and will allow light through.

CUSHIONS•Choose almost any

fabric, within reason. •Try using remnants from fabric

Do you have powers that the ordinary person doesn’t have? Can you see into the future? Can you guarantee that you will always be fit and healthy? If you can say ‘yes’ to these questions then you probably don’t need a Lasting Power of Attorney. However, to date I have never met anyone who is able to give a positive ‘yes’ to them.

So what happens if things do go wrong? Who can take care of your affairs; make decisions on your behalf if you are no longer able to due to an accident or illness? Most people would think that their husband/wife or children would be able to take charge, WRONG! The answer is no one can unless there is a Lasting Power of Attorney in place. Without one your family or friends will have to apply to the Court of Protection to be appointed your ‘deputy’, which is expensive, restrictive, intrusive and a very long process. The person who is appointed may not be the person you would have chosen and if there is an argument over who should be appointed, you will end up paying all of the legal costs as the person who is being fought over! Most people are not

aware that if one of the signatories of a joint bank account loses their mental capacity, the account can be frozen which can pose a major problem if that account is used to pay bills. The delay in getting the Court of Protection to unfreeze the account could be six months and that can be disastrous if it means a mortgage is unpaid.

According to the Alzheimer’s Society, by 2025, more than 1 million people in the UK will have dementia. One in five people over 85 already suffers from it, with rates significantly higher among women. However, a Lasting Power of Attorney is not just for the elderly. Mental and physical incapacity can hit anyone at at any time.

February is the time of year to think about perfect potatoes and smashing spuds. Home grown potatoes are an incredibly good value crop and you’ll soon find that the so-called humble spud is actually a very tasty and extremely versatile vegetable.

If you don’t have much space, use a 45cm (18in) diameter pot with a single tuber. Make sure the container is well supplied with drainage holes, fill it two thirds full of compost, pop a tuber in the centre and add a further couple of inches of compost. As foliage appears, add more compost to cover it over and repeat until no more can be added, then keep the container well watered.

Most potatoes produce a slightly earlier and somewhat heavier crop if the seed potatoes are allowed to produce small but sturdy sprouts before planting. Stand the tubers widest end uppermost in a seed tray or old egg carton

and place these in a cool but frost free spot with plenty of natural light. After a few weeks the sprouts will be about 1cm tall, perfect for planting.

What to Grow:

•Steamed potatoes are delicious, especially if cooked the day you lift them. Try Vanessa, Dunluce, Edzell Blue and Lady Christl for some of the tastiest steamers.

•New potatoes dripping in chives and butter are wonderful. Try Lady Christl, Charlotte, Juliette, Casa Blanca, Nadine and Nicola.

•If you adore mashed potato then try Dunluce, Valour, Maris Bard, Lady Balfour and King Edward.

•If you love your potatoes in their jackets, then try Cara, Lady Balfour, Picasso, Kestrel, King Edward, Desiree and Valor.

•For great roast potatoes try Kestrel, Maris Piper,

Desiree, Lady Balfour, Vivaldi and Edzel Blue.

•For the best chips, use Kestrel, King Edward, Maris Peer, Accord, Rooster and Edzel Blue.

Potatoes are divided into ‘earlies’ (first to be harvested) and ‘main crop’, generally larger tubers, harvested later. Try ‘earlies’ if your soil hasn’t been cultivated for several years. ‘Earlies’ are in the ground for less time than main crops and are less likely to suffer from wire-worm attack. ‘Earlies’ are also useful in smaller gardens as they takes less space and are in the ground for a shorter period, giving you the opportunity to grow another fast-maturing crop after the potatoes have been lifted.

No crop is without its share of problems and the fungus responsible for potato blight is sometimes hard to beat, especially in warm, damp years. Generally, ‘earlies’ suffer less with blight and you can select varieties which show resistance to the infection such as Valor, Lady Balfour, Coleen and especially Sarpo Mira and Sarpo Axona.

Slugs are also a real menace, tunnelling into the tubers’ flesh and sometimes even hollowing them out completely. The biological control nematode Nemaslug works under the soil surface, has a brilliant effect and poses no threat to wildlife.
