GLOBALIZAÇÃO Matéria de capa pressphoto/Freepik São Paulo, terça-feira, 03 de março de 2020 6 QUALIDADE E SEGURANÇA DOS ALIMENTOS PRECISAM ESTAR ATENTOS AOS PADRÕES DO MERCADO GLOBALIZADO Todas as fases da cadeia de produção e distribuição de alimentos devem ser controladas por meio da regulamentação e fiscalização para que o consumidor tenha acesso a comida saudável e de qualidade. Isso vale desde os gigantes do agronegócio até os pequenos produtores, da industrialização de ponta até os mais bem intencionados orgânicos. A boa notícia é que a legislação brasileira está acompanhando o que existe de mais avançado no planeta. A fraude não é necessariamente uma contaminação, mas uma substituição para ganho econômico. Luiz Henrique Romagnoli A avaliação é do especialista em segurança de alimentos, Claudio Iório, diretor associado da BRG Brasil. “Nossa legislação está cada vez mais alinhada com a globaliza- ção. Isso é uma tendência. Tem países mais evoluídos, mas a certificação em normas internacionais têm sido um requisito muito importante para a exportação. E quando a empresa faz uma certificação, além da legislação brasileira, tem de cumprir a legislação do país pra o qual será comercializado o produto. "Isso acontece para a matéria prima também. As grandes multinacionais pedem aos seus fornecedores estas certificações reconhecidas internacionalmente. Isso amarra tudo que é preciso para manter a qualidade. É uma pratica de mercado”. Claudio Iório contou em entrevista ao Jornal Empresas e Ne- gócios, que os padrões do mercado globalizado exigem processos de avaliação desde o campo até a mesa. - O trabalho começa a partir da agricultura até a industriali- zação do alimento, passando pelos processos até chegar à mesa do consumidor. Todos os aspectos da qualidade do alimento são analisados, com avaliação de risco das possíveis fontes de conta- minação ao longo da cadeia produtiva. Com todas as ferramentas normas e regulatório pra apoiar a empresa nesta avaliação. Mas ele acrescenta que a atenção se estende aos fornecedores e todas as partes do processo que apoiam a empresa. “Embalagens que compõem o produto, coadjuvantes de tecnologia que às vezes não saem na formulação do produto, por exemplo, catalizadores de processo, e também aos equipamentos de processamento”. Nesta extensa cadeia produtiva a necessidade de controle vai até a comercialização: “Avaliação do produto na prateleira, sua refrigeração, como ele é exposto ao consumidor. A rotulagem que é a divulgação do produto”. E seguem em outras áreas como o preparo, boas práticas no trabalho das cozinhas de restaurantes de refeição coletiva. E vai até as dietas enterais para hospitais. “elas envolvem um público específico, como pacientes imunode- primidos, que têm sua especificidade no tipo de contaminação que possa haver neste produto”. LEGISLAÇÃO E NORMAS A gestão de qualidade e segurança de alimentos precisa estar atenta não apenas à legislação do país, mas também a norma- tização, como explica Claudio Iório:- Quando a legislação não acompanha as mudanças que acontecem a todo momento no mercado global, existe a normatização, conjuntos de normas de qualidade e segurança de alimentos. Hoje há um fórum global GFSI- Iniciativa Global para Segurança de Alimentos - que se reúne pelo menos uma vez por ano para discutir as tendências no mundo inteiro. A norma é uma adoção voluntaria, não é como a lei, obrigatória em cada país. Claudio Iório prossegue: “Tradicionalmente havia um controle de qualidade voltado apenas para o produto então se enxergava todas as contaminações inerentes da cadeia como acidentais. Então, se há probabilidade de contaminação por agrotóxicos, seria feita uma avaliação de risco naquele grão ou fruta pra ver se no final da cadeia este problema ia aparecer”. FRAUDE E SABOTAGEM - Só que as coisas tem evoluído muito com esta questão de glo- balização. Existem outros fatores importantes como contaminação proposital. É alguém que intencionalmente, por terrorismo ou um Claudio Iório, especialista em segurança de alimentos e diretor associado da BRG Brasil. Quando não a veiculação de “fakenews”, com fatos deliberadamente adulterados. - Na agricultura, há muitas versões na mídia de que o agrotóxico é o vilão da história como produto químico. Na verdade, temos que avaliar. Tudo na cadeia de produção tem que ter o controle. Todos os agrotóxi- cos aprovados pelo Ministério passam por uma avaliação, são testados quando ao residual permitido para cada tipo de agricultura. Então há produtos e quantidades testados para soja, milho, arroz, pimentão.... Outra meia verdade, se- gundo Iório é sobre os ali- mentos orgânicos: “é mais saudável? Sim, existe uma saudabilidade. Mas se não houver controle, ele pode gerar uma contaminação. A obtenção do alimento orgâ- nico envolve adubação com esterco, que pode vir de uma cama viária. Se este adubo não passa por um processo de recompostagem, pode inserir um coliforme pato- gênico fecal no vegetal, ser consumido e gerar graves doenças. Já houve registros”. Um caso famoso também é a adição de hormônio no fran- go. O especialista é enfático: “Hormônio é muito caro. A produção não paga o valor. Se há bons frangos é porque exis- tem matrizes que garantem uma produtividade boa e esta carne é segura. Com todos os controles. São empresas gran- des que fazem este controle. E o Ministério da Agricultura está envolvido nisso antes e depois do abate”. Claudio Iório conclui propondo: “Cabe veicular muita informação ao consumidor”. Hormônio é muito caro. Além da contaminação pro- posital, pode existir a fraude, que se apresenta de várias maneiras: “A fraude não é necessariamente uma conta- minação, mas uma substituição para ganho econômico. Ocultar alguma informação como pra- zo de validade, substituir um componente, colocar óleo de soja no azeite de oliva porque é mais barato, ou colocar outra substancia derivada de açúcar no mel, por exemplo. Isso pode não significar uma questão de segurança de alimentos, mas você descaracteriza o produto. O consumidor pode nem sentir, mas isso é uma fraude. AGRICULTURA E AGROTÓXICOS No início da cadeia da produção alimentar está a agricultura. Esta área está bastante bem regulamentada segundo Claudio Iório. “Precisamos analisar que todos estes princípios ativos são necessários na lavoura porque aumentam a produtividade, pre- vinem o ataque de pragas, que é uma necessidade para suprir a alimentação da população”. - O que se espera é o controle do agricultor. Quando se aplica um pesticida, tem um tempo de biodegradabilidade. É o prazo de carência quando ele é aplicado na concentração certa. É fei- to um estudo toxicológico. O receituário diz após quantos dias pode ser iniciada a colheita. Depois deste tempo o pesticida já se degradou e está dentro de um limite residual permitido para consumo. E não terá nenhum efeito adverso à saúde. Para o especialista o país já tem tecnologia suficiente para atender à toda gama da agricultura. “O Brasil é um celeiro, muitas terras para plantação tem uma agricultura desenvolvida. Os receituários para aplicação de produtos são testados internacionalmente. E além das empresas produtoras há entidades do setor e o ministério da Agricultura atua bastante”. Existem vários controles, por exemplo o procedimento de, quando o agricultor compra o produto, ter de devolver o rótulo. “O ministério tem um controle do que saiu e o que volta e como foi utilizado na agricultura”. FISCALIZAÇÃO Sobre a fiscalização, Claudio Iório traça um quadro realista: “Os ministérios da Agricultura e da Saúde atuam na mitigação. Nada é 100%, não se pode prometer isso. A mitigação trabalha com estatística e atua onde pode haver maior possibilidade de recorrência do problema. Atua com amostragem para entender as tendências”. Ele avalia que a fiscalização no país atinge a todos os tamanhos de produtores. “Na inspeção de origem animal, por exemplo, é obrigação do ministério estar em todas as escalas, pequenos e grandes negócios’ SEGURANÇA ALIMENTAR E SEGURANÇA DE ALIMENTOS Claudio Iório chama a atenção para a sutil diferença dos nomes de duas áreas diferentes: ‘Segurança alimentar” para a questão de disponibilidade de alimentação para a população e “Segurança de alimentos” é o termo usado para a análise de contaminação do alimento. - Cada vez mais tem aumentado tanto a disponibilidade do alimento quanto a sua qualidade e segurança. Isso é um fato. O Brasil é um grande produtor e nós temos investido em alta tecnologia. Os frutos que a gente colhe são a melhora do acesso ao alimento de qualidade, os custos mais baixos.  What’s in our `Kalpana’?  2018….A new year that  is already on us now with all its hopes and aspirations.  We will all optimistically  imagine that the new year will be infinitely better than its predecessor.  Our `Kalpana’  will  be  at  its  well‐oiled  best  to improving ourselves, this new year.    Did  you  know  that  an  Indian  `Kalpana’ married  into  the  Japanese  first  family  is working hard at improving the India, Japan & US trilateral?  Kalpana Abe, who is married to the  Prime Minister’s  cousin  is making  news  for  her  attempts  to  take  the  Indo  Japan Global  Partnership  (IJGP)  to  Africa.    As  our two  countries work  tirelessly  to  strengthen the  partnership  and  take  it  to  countries outside  Asia,  her  contribution  shall  remain valuable.    There  must  be  something  in `Kalpana’ that makes them stand out, doesn't it?  (Remember  another  Kalpana  with  a Chawla surname?).  Take a bow Kalpana!  Meanwhile, the senior Abe became the third longest  serving  Prime Minister  of  post  war Japan  as  he  swept  the  Snap  Elections  in October 2017.   This augurs well  for brighter times  for  the  Indo‐Japan  relationship  and both our countries can look forward to some serious ground being covered  in  the  time  to come.    No  surprise  that  one  of  the  first tweets congratulating Prime Minister  Shinzo Abe  came  from 7, KalyanMarg –  the official residence of his dear friend and counterpart, Prime MinisterModi.  

          Our  Centre  filled  the  2017  calendar  with many  efforts  and  activities  –  some  regular and  some  new  –  that we  can  all  look  back with happiness.   We  are  also  so proud  that our  Chairman,  M  R  Ranganathan  was appointed  the  President  of  SAFAAS  during the convention at Colombo  in  the month of October  2017  –  a  true  reflection  of  his contributions not only  towards  the activities of  our  Centre  but  for  having  touched  so many  lives  that  has  had  an  interest  and inclination in Japan, its people, language and culture.    The  entire  team  at  ABK‐AOTS Dosokai,  Tamilnadu  Centre  joins  me  in congratulating  him  and  look  forward  to several more years of is stellar leadership. . Here’s wishing you all a healthy, happy and heart-warming 2018!

Japanese Night – Vol. 7

--- 13 October 2017 --- The Consulate-General of Japan in Chennai in association, ABK-AOTS Dosokai Tamilnadu Centre, Sethu Bhaskara Japanese Language Academy, Soka Ikeda College of Arts and Science for Women, ibis Hotel, Indo - Japan Chamber of Commerce and Industry, Hayakawa Japanese Language School and Cultural Centre, Surya Nihongo Gakko and KC Consulting Services organized “JAPANESE NIGHT VOL.7” on Friday October 13, 2017 with various cultural events performed by the students learning Japanese in Chennai. This year the Japanese Night celebrates the seventh meeting in Chennai. It is mainly organized for the Japanese language students and teachers in various language schools and people friendly to Japan in South India to interact among each other and improve their conversation skill and know more about the Japanese culture. The invitees for the event were forbidden to use any languages other than Japanese. The opening ceremony began with a Speech by Mr. Jun Arisue, Japanese Language Advisor, The Japan Foundation followed by Japanese songs, Bharatanatyam along with Japanese song, and Drama, etc. performed by Japanese language students. Ms. Kaoru Ono, Japanese, gave performed Bharatanatyam performance. In concluding there was a Japanese Music Performance by Chennai Chorus Group, and CKB (Japanese resident music band) & Dancers. India - Japan Fusion Dance, Song, Skit by students of our centre, and the students from our Franchise Thiruvanmiyur and Tambaram was excellent and the visitors are enjoyed a lots. Photographic Images and Matter: Japanese Prints of the 1970s

The Consulate General of Japan in Chennai, the Japan Foundation, and ABK - AOTS Dosokai, Tamilnadu Centre are organizing a Exhibition “Photographic Images and Matter: Japanese Prints of the 1970s”, commemorating the “2017 The Japan - India Friendly Exchanges” from 23 October to 3 November 2017 at our centre This exhibition Photographic Images and Matter: “Japanese Prints of the 1970s” focuses on print expressions from the 1970s as seen in the work of 14 artists who helped develop a print movement in the world of Japanese contemporary art. The exhibition is divided into two sections “The Age of Photographic Images”, which focuses on the use of photographic images in the print medium, and “Images of Autonomous Matter”, which focuses on works that were shaped by the intentions of matter. “The Age of Photographic Images” curates exhibits by artists such as Tetsuya Noda and Kousuke Kimura. It focuses on the transference of the photographic material/images to print medium. Methods such as silk-screening and photoengraving were employed. “Images of Autonomous Matter” curates exhibits by artists such as Jiro Takamatsu, Katsura Yoshida and Lee Ufan, who were a part of the Art Movement, “Mono-ha” that engaged in Tokyo during the late 1960s and continued well into the 1970s. In these, one can sense a distinctive intention to limit the human manipulation of the corporeal and to grant materials their autonomy. The 1970s mark the emergence of a new trend in contemporary Japanese Art where one can see a visible shift from traditional creation by the hand and an increasing effort to create objective work dispensed of any illusory elements. The viewers can attain a better understanding of contemporary Japanese art trends of the 1970s – an era that saw audacious departures from erstwhile trends in the west such as Pop Art and Minimal Art. Ms. Hiroko Taniguchi, Acting Consul General of Japan at Chennai will inaugurate the Exhibition on 23 October 2017. Ms. Kanae Nakaya, Assistant Japanese Language Advisor, The Japan Foundation and Mr. M. R. Ranganathan, Chairman, ABK - AOTS Dosokai, Tamilnadu will preside.

Music Concert performed by “WASABI”

Traditional Japanese Instrumental Group

The Consulate General of Japan in Chennai, the Japan Foundation and ABK-AOTS Dosokai, Tamilnadu Centre. are organizing a Music Concert performed by “WASABI” Traditional Japanese Instrumental Group commemorating the “2017 The Japan-India Friendly Exchanges”* at 6:30 p.m. on Tuesday, 31 October 2017 at the Rani Seethai Hall,. ANA (All Nippon Airways) is supporting this event. WASABI ( わ さ び ) is a traditional Japanese instrumental group composed of Ryoichiro Yoshida(Tsugaru - shamisen (津軽三味線)/ three - stringed Japanese instrument ) , Hiromu Motonaga(Shakuhachi(尺八) / Japanese bamboo flute),

Naosaburo Biho(Taiko(太鼓) / Japanese Drum)

and Shin Ichikawa ( Koto ( 箏 ) / 17 - stringed Japanese harp. The name “WASABI” comes from combining “WA ( 和 ) ”which means “Japan” or “harmony” and “SABI (さび) ” which means “the catchy part of the song”. The group aims to produce modern style of the traditional Japanese music, which is more approachable and attractive to young generation by arranging the folk songs and traditional music. In order to transmit the wonderful aspects of Japanese music, WASABI frequently visits and gives performance at schools in all over Japan. Also, WASABI gives performance in all over the world, and this is their first performance in South India especially in Chennai and Madurai. The group after their performance at New Delhi came to Chennai and thereafter visited Madurai. Music lovers in Chennai thronged and enjoyed the musical sensation created by the dynamic live performance of the WASABI Traditional Japanese Instrumental Group.

Talk your Way to Japan Speech contest trip to Japan

--- 11 & 22 October 2017 ---

The Four First Prize Winners of the Talk Your Way to Japan Speech Contests were sent to Japan on a two week totally free Study cum Cultural exchange trip with the support of Hiyoshi Corporation, Japan. These children brought back their memories of seeing Japan with their eyes, moving with Japanese people, visit places of Cultural importance and Historical importance, and also travel by Shinkansen, visit the technical entertainment world of Universal Studios and Disney Land and shared their learning with other children and people of Tamilnadu through various media Moreover the First, Second, Third and Fourth prize winners of the finals of the speech contest of the Corporations / Government schools are offered free Japanese language courses at our centre for all the five levels of JLPT. Our passion towards environment is such that the judges for adjudicating the speech contest winners are also from the Environmental Sector. WNF Program at Peru on Human Behavior in the 5S

In response to the request from AOTS Peru for a special address on the above mentioned topic during their national 5S award ceremony AOTS Japan, WNF suggested to invite an expert on the subject from ABK-AOTS DOSOKAI, Tamilnadu Centre, Chennai. In this regard Mr. B. Palaniappan of our centre was invited to Peru On 6th November 2017, Mr. B Presented the topic in Aris Industrial. The company is in Textile, Chemical and Ceramic business. They won the Gold medal in the national 5s. The duration of the presentation was 2 hrs followed by Q&A. About 50 members attended the session. It was well received and appreciated by one and all. After that a short visit to the plant was arranged. On 7th November 2017, Mr. B. Palaniappan presented the topic at Co- operative – Pacific , cooperative bank. About 70 members attended the session. It was also for two hours followed by Q&A. It was well received and appreciated. Then a short tour to the office was arranged. The most important fact was the content and

ABK – AOTS DOSOKAI, Tamilnadu Centre is organized the “Colours of Culture” a closing event of the Year Long Cultural Activities for 2017 - The Year of Japan India Friendly Exchanges held at RR Sabha, Chennai on 10th December 2017 between 5.30 and 7.30 p.m. His Excellency Mr. Seiji Baba, Consul General of Japan at Chennai was the Chief Guest. Ms. Neerajakshi Sunderrajan - The All World Winner of Nodojiman 2017 and her team consisting of Ms. Sindhuja Sunderrajan and Ms. K. Meghaa Bhargavi rendered Japanese Songs. Ms. Kaoru Ono Bharathanatyam dancer from Japan and disciple of Guru Natyam Selvam Sri Shanmuga Sundaram performed the Indian Classical Dance. The Bharathanatyam by Ms. Kaoru Ono was performed in four segments viz. Mallari followed by Alarippu, Varnam, Nee Matale and Thillana followed by Mangalam.

 Between the 3rd segment (Nee Matale) and 4th segment (Thillana followed by Mangalam) of the Bharathanatyam performance young artists werehonoured during the simple ceremony at around 7.00 p.m. His Excellency Mr. Seiji Baba, Consul General of Japan at Chennai delivered a motivational speech during the above ceremony to encourage the performers. Special mementos were presented to the artists by His Excellency - Consul General of Japan at Chennai to thank and show our appreciation to the young artists which a great impact on have their enthusiasm and contribution to Japan India Relationship.
