INDUSTRY PROFILE

India is the world second largest producer of food next to China, and has the potential of being the biggest with the food and agricultural sector. With Indias food production to double in the next decade, there is an opportunity for large investments in food and food technologies, skills and equipments, especially in areas of canning. Dairy and Food Processing, Specially Processing, Packaging, Frozen Food/ Refrigeration and Thermo Processing. Fruit and vegetables, Fisheries, Milk and Milk Products, Meat and Poultry, Packaged/ Convenience Foods, Alcoholic Beverages and Soft Drinks sectors of the food processing industry. Health food and health food supplements are other rapidly rising segments of their industry which is gaining vast popularity amongst the health conscious.

The transition from an area of food scarcity to surplus serves as a witness to tremendous progress made in this industry. Being one of the largest and most dynamic markets in India, food has seen rapid growth in most of its segments. Increased per capita income and high corporate interest in the organized retail market creates a platform for the Indian food industry to leap forward. All participants in this sector, especially looking at market entry and investments in India, will benefit from this briefing. Highlights of the briefing include a political, industry profile, growth drivers and growth opportunities.

Indian agriculture is in the throes of a paradigm shift, thanks to the structural changes in the Indian economy. With the country achieving self-sufficiency in grains production, emphasis has changed from subsistence farming to commercialization, opening up vast opportunities for value-addition, packaging and exports, with a strikingly high level of technological involvement.

The Indian food market is approximately Rs.250000 crore ($ 69.4 billion), of which value-added food products comprise Rs.80000 crore ($22.2 Billion). Despite food production in the country is expected to double by the 2020, not much attention has been given to the growth of their vital industry, with no standard publication highlighting the importance of this sector.

With food production expected to double by 2020, large investments are already going in to food and food processing technologies, skills and equipments.

India is one of the worlds major food producers but accounts for less than 1.5percent of international food trade. This indicates vast scope for both investors and exporters. Food exports in 1998 stood at US $5.8 billion where as the world total was US$438 billion. The Indian food industries sales turn over is Rs.140,000 crore (1 crore= 10 million) annually as at the start of the year 2000.

The office of the Agricultural Affairs of the USDA Foreign Agricultural Services in New Delhi say that one of Indias proudest accomplishments has been achieving a tenuous self-sufficiency in food production and that the country produces of wide variety of agricultural products at prices that are at or below world values in most cases.

The Indian food palate is accustomed to traditional foods, mostly wheat and rice - based, rather than potato and corn - based western palate. In marketing perspective, this is considered an important factor for foreign marketers.

The USDA report says initially consumer-ready food products may have to tailor to include Indian spices and traditional ingredients. In addition to traditional tastes, there are other social factors which affect consumption in India. Hindus account for approximately 80percent of Indias population, and while only 2530percent is strict vegetarians, beef slaughter is prohibited in all but two states (Kerala and West Bengal) and consumption of other meats is limited. Incidentally, India is the only country where the US - based Mac Donalds sells its burgers with out any beef content and even offers purely vegetarian burger.

Indias middle class segment will hold the key to success or failure of the processed food market in India. Of the countrys total population of one billion, the middle class segments account for about 350-370 million. Though a majority of families in this segment have non-working housewives or can afford hired domestic help and thus prepare foods of their taste in their own kitchens, the profile of the middle class is changing steadily and hired domestic help is becoming costlier. This is conducive to an expansion in demand for ready-to-eat Indian-style foods.

Grains could emerge as a major export earner for India incoming years. Indias food grains production is now at around 225-230 million tones. These include rice, jawar, bajra, maize, wheat, gram and pulses. Indian basmati rice enjoys command in the international market. Besides growing Middle east market for basmati rice, many other countries are showing interest for this food grain. In 1998-99 export of basmati and non-basmati rice stood at Rs62000 million. There is a total rice milling capacity of 186 million tones in the country.

Spices are defined as a strongly flavored or aromatic substance of vegetable origin, obtained from tropical plants, commonly used as condiment. In ancient times, spices were as precious as gold, and as significant as medicines, preservatives and perfumes. India - the land of spices plays a significant role in the global spices market . No country in the world produces as many kinds of spices as India with quality spices comes from Kerala, an Indian state. At present, India produces around 2.5million tones of different spices valued approximately 3 billion US $, and holds the premier positioning the world. Because of the varying climates- from tropical to sub-tropical to temperatealmost all Spices are grown in this country. In 25states and 7unionterritories of India, at least one spice is grown in abundance. Spices herbs are good not only for taste buds but also for health. They supply calcium, iron, vitamin B, vitamin C, carotene and other antioxidant. For instance fresh parsley has been linked with cannier prevention due to its antioxidant content and spicy food is much more appealing than a vitamin pill. Spices exports will cross US$ 1 billion in the current financial year and touch US$ 10 billion by 2017, according to V J Kurien, chairman, Spices Board. Of the world's total annual spice trade of 850,000 tonnes, India accounts for 44 per cent in quantity and 36 per cent in value. Packaging of food products has become important in order to ensure safety and hygiene and to eliminate the possibility of adulteration. In some cases, more than 50% of the price of a product goes towards packaging. Good packaging will greatly catalyze the development of a food-processing sector. However, packaging industry is yet to achieve international standards in the country.

Without a strong and dependable cold chain vital sector like food processing industry which is based mostly on perishable products cannot survive and grow. Even at current level of production, farm produce valued at Rs 70,000 million is being wasted every year only because there is no adequate storage, transportation, cold chain facilities and other infrastructure supports. Cold chain facilities are miserably inadequate to meet the increasing production of various perishable products like milk, fruits, vegetables, poultry, fisheries etc.

A dominant segment of the food industry, food processing is estimated to be worth US$ 70 billion with a 32 per cent share. It comprises agriculture, horticulture, animal husbandries, and plantation. Experts estimate the industry GDP at 6-8 per cent with value addition of food products to increase from 8 per cent to 35 per cent by the end of 2025. Significantly, processed food exports have increased from US$ 6.98 billion in 2002-03 to US$ 20.51 billion in 2006-07, recording a whopping 193.83 per cent growth rate. To realize India potential in this industry, the Government has set an investment target of US$ 25.07 billion by 2015 to double India's share in global food trade from 1.6 per cent to 3 per cent, increase processing of perishable food from 6 per cent to 20 per cent and value addition from 20 per cent to 35 per cent.

MAJOR CHALLENGES FOR THE INDIAN FOOD INDUSTRY Low elasticity for processed food products.

Need for distribution network and cold chain.

Backward forward integration from farm to consumer.

Development of market channel.

Development of linkage industry.

Taxation in line with other nations.

Streamlining of food laws. Change in consumption pattern or increase in income are always accompanied by a change in food market. For insurance, the appropriate expenditure staples decline from 45% to 49% in rural India, while the figure settled at 32% of the total expenditure on food in Urban India.

The Confederation of Indian Industry (CII) has estimated that the food processing sector has the potential of attracting 15000 crores of the Investment in 10 years and generates employment of a million persons. The question of providing financial assistance under the plan scheme for setting up/ modernization in the grain/ rice/ pulses four million sectors has-been reviewed. The government has formulated and implemented several plan schemes to provide financial assistance for setting up and modernizing of food processing units, creation of infrastructure, support for research and development and human resource development.

Ministry of food processing industries, set up in July1988, is the main and central agency of the government responsibility for drag a strong and vibrant food processing sector, with a view to create increase job opportunities in rural areas, enable the farmer to reap benefit from modern technology create surplus for exporting and stimulating demand for processed food ministry of food processing also providing financial assistance to all Food Processing Industries.

In order to boost the food sector, the government is working on organize and the concept of mega food parks. 20 such mega parks will come up across the country in various cities attract Foreign Direct Investment in the food processing sector. The government approved 105 proposals from foreign industrialists to set up food processing industries in India.

PRODUCT PROFILE Curry powder is a mixture of spices of widely varying composition developed by the British during their colonial rule of India.

The word "Karhee" or "Kadhi" from which "curry" is derived comes from Southern India and refers to a sauce of any kind. "Curry powder" was developed by the British, who wished to take the taste of Indian food home, without having to utilize fresh spices. As a result "curry powder" in the Western world has a fairly standardized taste, but there are literally millions of curry flavors in India.

Curry powder was largely popularized after World War II, when immigrants from Southeast Asia moved to the UK. Still, curry powder did not become standardized, as immigrant households often had their own blends of curry powder.Curry is synonymous with Indian food and curry powder is thought of as its key ingredient. This is a misconception though, as all Indian food does not contain 'curry powder'. This all-important powder is actually a mix of spices collectively known as garam masala. It is added to some dishes along with other spices to enhance their flavor and aroma. While the basic ingredients used are the same, each household has its own proportions so that the end result will often differ from home to home. The better the quality of the ingredients, the tastier the garam masala and the resulting dish in which it is used. Most Indians still prefer to prepare their own garam masala just prior to cooking. Making your own can seem intimidating if youre just starting out with Indian cooking, but the recipe and a good coffee grinder is all it takes! Theres nothing to beat the flavor of fresh garam masala!

The late 60s and early 70s saw a large increase of Indian food consumption by the UK populace. This also led to an increase of Indian restaurants. The tradition of keeping special blends of curry powder simply became uneconomical, and curry powder became increasingly standardized.

Indian cooks often have readier access to a variety of fresh spices than their native UK counterparts, and are more likely to make their own mixtures. Indeed, most Indian cooks will have their own specific mixtures for different recipes. These are often passed down from parent to child.

Most recipes and producers of curry powder usually include coriander, turmeric, cumin, and fenugreek in their blends. Depending on the recipe, additional ingredients such as ginger, garlic, fennel seed, cinnamon, clove, mustard seed, green cardamom, black cardamom, mace, nutmeg, red pepper, long pepper, and black pepper may also be added.
