FUTURE KULTURE is another organisa-tion getting caught up in the hot topic of the decade: environmental sustainability.

Started in 1994, Future Kulture aims to promote cross-cultural dialogue between European youth, using shared interests like sports and music as the basis for interac-tion. is year, the eight-day exchange pro-gramme, which begins on 28 June, will bring youth from Estonia, Finland, Lithuania, the United Kingdom and Denmark together here in Copenhagen. On the schedule for

the exchange are meetings with environmen-tally-friendly causes and building a dirt-bike racetrack in Brønderslev.

After discovering that environmental ac-tivism was a common cause for all the part-ners involved in the exchange, it was decided that sustainability would be the theme for the 2012 exchange. When Future Kulture’s application to the Ministry of Education for nancing was approved earlier this year, a programme was put together for the event.

“We started contacting the co-operating partners and have been trying to implement the ideals of environmental sustainability within the activities,” explained Future Kul-ture founder Raymond Andres.

Assar Qureshi, who works with the Min-istry of Climate and Energy, will take the participants on a tour of public works in Co-penhagen, including a windmill farm. An-other expert joining the exchange – via web conference – is Sven Huseby, who in a lecture entitled ‘A Sea Change’ will discuss how pol-

lution in the sea can lead to the eradication of some cultures.

No-one comes to Denmark and leaves without a party, and once more, the public is invited. At the Cultural Festival on June 30, you can stop by and enjoy food from around Europe while DJs play music throughout the event. e associations involved with Future Kulture this year will make short presentations, and there will also be a talent show where people can show o their hid-den skills. is isn’t the only opportunity to party it up. e Social Media Festival on July 6 will be held in a more central and conveni-ent location for those of you who don’t want to make the trek to Ishøj. Once more, you can sample various European delicacies and activities similar to the Cultural Festival will be arranged. Be sure to stop by one of the events for a good time.

Future puts environmental sustainability rst

inside this week

ROSKILDE (see G3 for our pre-view) won’t clash with the football this year. Not sure whether that’s a good thing. Back in 2007, I did some research that showed that festivals during major foot-ball tournaments (1998-2006) outsold those that didn’t by over 5,000 a year.

is year, we’re once again focusing on the one-day tickets as the festival tickets can sell out in the last fortnight if the weather reports are good. And as things stand, they don’t look bad. While there’s rain expected, temperatures are expected to reach 25 degrees – the mandatory heat for wearing shorts.

But make sure you don’t wear golfer’s socks, particularly if you’ve recently turned 60 and can take advantage of the free admission o ered on Sunday, just like Bob Geldof, Chrissie Hynde and John-ny Ramone (he would have been).

Not sure how many do, but it stands to reason that this policy could become problematic as one

of the few things that remains consistent during your life is your fundamental taste in music. While many grow to despise their old clothes, tattoos, and certain members of their family, ‘Light my Fire’ still sounds as innova-tive today as it did to those who rst heard it back in 1966. People aren’t going to start liking Vera Lynn and ballroom dancing just because they’re getting on a bit.

Are the fans of classical music dying out? Not according to the organisers of the Frederiksværk Music Festival (see G9), who are back with a stronger line-up than ever for the month of July. Also prominent this week, for those not braving Roskilde, is Future Kulture (see G2) and the release of a whole bunch of kids lms.

Or at least that’s what I thought when I saw the title Mar-tha Marcy May Marlene (see G18) and learnt the main star is Eliza-beth Olsen, the younger sister of the Olsen brats (who are probably in their 30s by now – who cares?). Incidentally, they have an older brother, Trent Olsen, who’s also an actor, although his credits so far have mostly been con ned to playing himself in his siblings’ TV series. Sounds like a legend in the making.

Rest assured, the Olsens is one taste that we will all grow out of.

Tivoli CabaretTivoli, Vesterbrogade 3, Cph V; ends Sep 22; perform-ances Tue-Thu 20:00, Thu-Sat 20:30; Tickets: 315-415kr; duration: 180 mins, www.ti-volicabaret.dkComplete with little round ta-bles and singers who double as waiting sta , Cabaret at Tivoli is an evening of light-hearted kitsch entertainment. Incorpo-rating stand-up comedy, magic, drag queens, sketches, opera and music medleys, this will be a fun variety show, whether you take advantage of the free bar or not. Most of the acts are in Danish, but the cheesy pop hits are in a language everyone can under-stand. EB

Tivoli Pantomime eatreTivoli, Vesterbrogade 3, Cph V; free after entry to Tivoli Tivoli’s pantomime series fol-lows the adventures of Cassander, who lives alone with his beauti-ful daughter, Columbine, in old Copenhagen. Cassander’s servant, Pierrot, is a clown. Cassander’s ad-versary is Harlequin, a charming, masked bandit with empty pock-ets who loves Columbine and knows many wizards and fairies. e Unfortunate Suitor ends 26 AugMagic is involved when Cassand-er tries to marry Columbine o to a man who isn’t Harlequin. Pierrot’s Misfortunes ends 5 SepCassander has chosen yet another suitor for Columbine, this time an old, wealthy man. While Harle-quin is enlisting the help of a fairy, Pierrot is making life at home very di cult with his antics.

TOO BUSY, too lazy or simply too broke to party four days in a row? Roskilde Festival’s one-day alternative may just be your ticket.

While the standard ticket allows access to four days of non-stop music (nearly 200 bands) and nine days of camp-ing, the one-day ticket o ers an intense 24-hour experience, which can be just as unforget-table − depending on how well you use it.

A one-day ticket gives you an entire day at the festival grounds, for as long as the mu-sic is playing. In other words, you get access to one of the con-cert days (between July 5 and 8), from 5:00 in the morning to 5:00 the next morning.

e number of one-day tickets is limited, so act fast, if you want a chance to experi-ence North Europe’s largest music and culture festival. e one-day tickets for Saturday are already sold out, proving that Bruce Springsteen is still e

AMERICAN singer Christina Perri, who will visit Denmark for the rst time next week, works in strong girl territory,

exposing her feelings and her broken and mended relationships more of-ten the wrecked ones. Her voice has a sweet tone, complemented by her tattooed, jagged hair-cut, rocker look. Her debut album Lovestrong was re-

leased in the spring of 2011 and pro-duced by Joe Chiccareli, who also works with the White Stripes and Tori Amos. e album was mixed by Michael Brau-er, who has Coldplay and Regina Spek-tor to list as past credits.

“I looked at the album as a whole piece, and the two themes that stood out were love and strength,” Perri writes on her website. “It really titled itself. Writing about love is just who I am. I’ve tried to write about other things, but ul-timately this is what comes out of me.”

A 25-year-old singer-songwriter from Philadelphia, Perri has been making headway in the United States for the past couple of years. Her

breakthrough came in the summer of 2010 when her single ‘Jar Of Hearts’ was used in the American version of the reality dance show So You ink You Can Dance. Overnight, the single was downloaded so many times that she made it directly onto the iTunes Top 10 pop list.

Afterwards she went on tour with James Blunt – no small feat considering the British star’s popularity in the US. And then her pop clout jumped sev-eral levels when her ballad ‘A ousand Years’ was included on the soundtrack of a Twilight lm, Breaking Dawn - Part I, one of the many vampire fran-chises still releasing lms.

Selecting songs for the album was an easy task for Perri. “I have been writ-ing songs since I was 15, so I reached into my arsenal and picked the ones I felt others should hear,” she said in an interview on her website. “My inten-tion for my music is pretty simple: I want to make people feel less broken and alone.”

Opening for Perri is the young pop singer Caroline Castell, who sings mainly in Danish, but also sometimes in English. Her sound is mixed with electronic nuance and a good deal of lyrical melancholia. She played the recent Vesterbro Festival in a zebra-striped trouser suit and got noticed as

an electro-pop girl with great potential. Often her songs wrap vocals around

only the most basic electronic sounds. e simple compositions leave plenty of room to focus on the texts. Her empa-thetic vocals deliver one clear-cut verse out after another, while her right-hand attends to the sounds and mixes.

is 18-year-old girl has already played concerts at venues like Rust, Temple, Posten and DR’s concert hall, and she is accustomed to playing to the audience the way few are at her age. Electro-pop fans in Denmark are expecting great things to come from Castell.

Nightlifewill be Copenhagen-based DJ Resoe, who’s been involved in the business for no less than 25 years.

KreayshawnRust; Tue 22:30; 170krThose who have experienced Roskilde will know that en-during nine days is hard going to say the least, as five days will do the trick. Turn up on Wednesday – have a trusty steed to set up camp in a de-cent spot a few days before – and avoid burning out before you even hear a gig. This is where Rust comes in handy to get you in the mood. Oak-land-born rapper Kreayshawn – the hip-hop brain behind the grimy hit ‘Gucci Gucci’ – and a unique cast of budding solo artists, DJs and rappers from Copenhagen putting in the hours – will storm the stage tonight.

Roskilde Festival Pre-partyKB18; Fri 21:00; free admRoskilde Festival is one of the main highlights on the Danish calendar, and to add the icing to the cake, KB18 is throwing a pre-party in the heart of Vest-erbro’s club district, Kødbyen. This will be, for the sane ones, the last night you’ll experience a warm bed after a hard night of partying before a solid week of warm beers, damp sleeping bags and camp parties become your daily diet. Organisers are still finalising the final details for tonight’s line-up, but you can expect Copenhagen’s fin-est DJs to turn out for this one.

Kopp & DJ ResoeCulture Box; Fri 23:00; 70krTonight’s set is the penulti-mate gig before Culture Box closes its doors for the sum-mer. The headline act will be Kopp, who is one of America’s best-known house DJs and re-nowned for his hypnotic sets, industrial beats and spacey ar-rangements. Backing him up DANIEL VAN DER NOON

DANIEL VAN DER NOON

Review en various roadies were

clearing the stage and tuning instruments, and nally Billy Talent’s Aaron Solowoniuk was seated behind his drum kit, joined shortly by bassist Jon Gal-lant and guitarist Ian D’Sa. e audience’s cheers nearly drowned out the opening notes of ‘Devil In A Midnight Mass’, reaching a crescendo as vocalist Ben Kow-alewicz nally appeared on stage.

And from that moment, the night passed by in a blur, paus-ing only when the band left the stage before returning for a three-song encore. Within the rst three songs, the band had played one song from each of their albums: the cleverly titled Billy Talent, Billy Talent II and Billy Talent III.

While waiting outside Vega, huddled under a tiny roof as rain crashed down, I had wor-ried that not many people would show up for the concert. Again, my worries had been put to rest, and the hall was nearly full by the time Billy Talent took to the stage. After playing the Eu-ropean festival circuit for a few weeks before ending up at this tiny venue, Billy Talent’s stage presence was almost ten times

too big for Lille Vega’s stage, but Danish fans were more than ready to rock out at the band’s rst show in Copenhagen since 2007. e crowd was hot, sweaty and loud – all the ingre-dients necessary for the perfect punk rock concert.

e set list was practically awless, featuring a selection of hits and fan favourites that kept the screams coming all night. And what better place to play ‘Viking Death March’, the band’s newest song, than in Denmark? After nine fast-paced numbers, the tempo was slowed down for ‘Surrender’, but picked right back up again as the band dove into ‘River Below’, one of their earliest hits about a schizo-phrenic man who threatens to detonate a bomb.

e night came to an end with ‘Red Flag’. A better song couldn’t have been chosen to make sure that everyone left Lille Vega completely hoarse, and the extra choruses tacked onto the end ensured that by the time I was asking the merchandise seller for a shirt, I could barely muster a whisper.

I’VE BEEN TOLD all my life that patience is a vir-tue, but usually, by the time I’m done being patient, my

hopes are so high for whatever I’m waiting for that I end up horribly disappointed. So, after seven years of waiting to see Billy Talent live and ten hours spent in line outside Vega, it’s under-standable that I was a bit appre-hensive that the night may not live up to my expectations. I’ve never been happier to be wrong.

Local band Kill e Rooster kicked o the show, barely stop-ping for breath during their eight-song set. ough their lyr-ics may have left something to be desired, their musicianship was remarkable. Drummer Leo Mega was the star of the show, pound-ing out impressive rhythms while singing back-up, with vocalist and guitarist Carsten Hansen and bassist Troels Bak rounding

o the trio. irty short minutes later, they ran o the stage, and for the rst time, I found myself shocked at how quickly a local opener’s set had passed.

MadonnaParken; 19:00; 320 -1520krMadonna hardly needs an in-troduction. She’s the world’s top-selling female artist in mu-sic history, and both her name and seductive image have be-come synonymous with the pop world. Remaining an un-stoppable force in the industry, Madonna’s unique formula for success has led to sold out sta-dium concerts across the globe. Marking the release of her twelfth studio album MDNA (2012), Madonna has once again taken to the skies for a global tour of the same name that will visit six continents throughout 2012.

A$AP RockyRoskilde Festival, Cosmopol Stage; 23:00Here’s another good reason to cash in on a day-ticket. Hail-ing from Harlem and giving up the thug life for the stu-dio, Rocky launched his ca-reer in New Jersey and made his first impression on the rap scene on the back of his singles ‘Peso’ and ‘Trilla’ in 2011. Renowned for his bass-heavy, high-energy southern-styled rap and intensive use of classic samples, Rocky’s found a niche in the market that’s blown the rap world into smithereens.

John Hiatt and the ComboAmager Bio; 20:00; 375krBeginning his solo career in 1974, Hiatt set out to write folk songs. Evidently in uenced by Bob Dylan, Tom Waites and Bruce Springsteen – artists that continue to in uence his music – his soothing and honest song-writing has led to his reputation as a reliable songwriter with acres of solid releases under his belt. High-pro le artists like Iggy Pop, e Neville Brothers and Dr Feelgood have covered a number of his songs. Having remained one of rock music’s best-kept secrets, Hiatt is uni-versally regarded as something of a cult artist.

Walk e MoonRust; 20:00; 140krOne of Ohio’s up-and-coming pop-rock groups, the quartet have tapped into a new wave of art-rock that’s far reaching and appealing to a broad spec-trum of fans. eir upbeat, fancy-free and swirly styled pop-rock is neatly captured in their viral hit, ‘Anna Sun’. Fol-lowing appearances on MTV, a gig at last year’s SXSW festival and several other high-pro le gigs, including an appearance on e David Letterman Show, thousands are now anticipating the band’s gigs in Copenhagen, London, Berlin and Amsterdam throughout July.

Django DjangoRoskilde Festival, Pavilion Stage; 17:00; day-ticket 920krArguably the best line-up at this year’s Roskilde breaks out on the opening day. Among the rst bands to open for the festival are London-based quartet Django Django. Be-coming darlings of the British rock scene practically over-night earlier this year on the back of their intensely addic-tive single ‘Default’, their com-bustive blend of spacey Kraft-werk-tasting keyboard beats, combined with unimaginably catchy melodies, are now tak-ing Europe by storm in much the same fashion.

FRIDAY 29 SATURDAY 30

AndromedaCopenhagen Jazzhouse; 20:00; 60kr e annual exodus of Copenha-gen is already underway – thou-sands of city dwellers are mak-ing tracks for Roskilde Festival, which opens its gates on Saturday at 6pm – and the hype surround-ing festivals tends to put bands o playing in the city this week. Still, there are a few gigs worth seeing, and Danish trio Androm-eda, the winners this year of the prestigious Young Jazz Award hosted at the Jazzhouse, provide an alternative night out on the town. De ned by Christian Pehr-son Balvig’s neat piano solos, they o er an elegant insight into Co-penhagen’s rich jazz scene.

THERE IS AN Australian slant to this edition of Hot Tickets, not only thanks to the columnist’s nationality, but also due to the high calibre of these musicians from Down Under. Let’s start with Wouter ‘Wally’ De Backer, a Belgian-Australian singer better known as Goyte. In 2001, the singer-songwriter started out by re-cording 50 copies of a four-track CD, handwriting the track list and colour-ing the cover sleeves with crayon. He sent the CDs to every radio station and recording contact he could find in the phone book, and then followed up each one with a phone call. A dec-ade since then, his song ‘Somebody that I used to know’ – the one with body paint in the video clip – has hit the airways the world over. He’ll be at Falconer Salen in Frederiksberg on November 21. Tickets are 380kr at www.billetlugen.dk.

Another Aussie act getting some much-deserved kudos in the north-ern hemisphere is The Temper Trap, who are slated to rock out Store Vega on September 23. The indie band formed in Melbourne in 2005 when an enthusiastic busker and two guys working in a clothing store got to-gether. And they’ve gone a long way since then – they were nominated for the BRIT award for International Breakthrough Artist last year and sold out two UK tours. But enough yabbering, you can see what all the fuss is about first hand for 220kr at www.billetlugen.dk.

Tame Impala see themselves as “a steady flowing psychedelic groove

rock band that emphasises dream-like melody”, which probably means that they write much of their music stoned. Bearing some resemblance to their medium-sized antelope name-sake, the band members look dreamy and dopey when they perform. In fact their live shows feel a little vo-yeuristic, like the crowd is watching a living-room jam session. When they get into their ‘60s-inspired, psyche-delic groove, they go a bit nuts, as if there’s no-one there watching. Go and check out the Perth boys out at Lille Vega on October 22. With tick-ets available at www.billetlugen.dk for 200kr, it’ll be the cheapest peep show you ever see.

Keeping with the animal theme, Andrew Bird is fluttering to Co-penhagen for a show on November 19. From the age of four, the musi-cian began training in the Suzuki method of music – no it’s nothing to do with motorbikes or cars, but more to do with learning music in a positive environment. It must have had some affect on him because Bird plays guitar, violin and glockenspiel brilliantly, not to mention his voice. But the most interesting sound he makes is with his whistle. Like a bird at dawn, he can whistle melodically for a whole song without drying his lips – it’s a beautiful thing to witness. And the weird part – Bird is his real name, not just a clever marketing trick so columnists can write puns about feathers etc. He’s performing at Amager Bio, Storkøbenhavn; tickets are 260kr from www.billetlugen.dk.

Another delicious folk o ering comes in the form of Swedish musi-cian Jens Lekman. e singer com-bines delicate guitar and ukulele with some dark, yet amusing lyrics at times. His song ‘Your Arms Around Me’ por-trays Jens slicing an avocado, when his lover walks up behind him, causing him to lose concentration and slice o the tip of his nger. It’s much more delicate than it sounds. He’s playing at Lille Vega on September 12. Tickets are 200kr from www.billetlugen.dk.

And the rest. New York experi-mental rock band Dirty Projectors will bring their quirky and wonderful sound to Store Vega on October 31 – tickets are 220kr at www.billetlugen.dk. Dream pop duo Beach House have a mesmerising sound that’s de -nitely making waves – their album Teen Dream was listed as #5 on Pitchfork’s Top 50 Albums of 2010. Drift o with their music at Store Vega on November 6 – 275kr tickets from www.billetlugen.dk. For the boot-scooting types, Kris Kristo erson will play Falconer Salen on November 17 – wrangle some tick-ets for 280kr from www.billetlugen.dk. And the Danes must love Chris Issak – it’s hard to forget the sexy ‘Wicked Game’ video in a hurry, particularly as Danish model Helena Christensen co-starred in it. Remind yourself on Octo-ber 19 at Det Kongelige Teater’s Gamle Scene. Tickets start from 302kr at www.billetnet.dk. And why anyone would want to see Nickelback at Falconer Salen for 1,300kr is anyone’s guess. But if you are one of the people devastated that their September 11 show is sold out, rstly shame on you, and secondly, you can still pick up tickets at www.viagogo.dk.

Guaranteed, every year, to pull some strings

HALF THE TOWNS of Denmark claim some kind of festival between June and September. Whether it’s a medieval festival, ower festival, shell sh festival, or an origami festival (okay, I made that one up), they’ve all got something to o er.

Frederiksværk, a small city just over 50 kilometres northwest of Co-penhagen, is no exception. ey actu-ally host Denmark’s largest chamber music festival: Frederiksværk Music Festival. Both well-established en-sembles and the rising stars of Dan-ish music perform every year with 17 concerts spread out over the month of July.

e festival is being held in a building called Gjethuset. Dating from 1767, the building was used as a cannon foundry until 1928, and after-wards for heavy industry until 1976.

en the building was restored to preserve the history of the town and reopened in 1996 as an art and cul-ture centre with theatre performances, concerts and art exhibitions.

is former foundry is the setting for the entire month of classical con-certs including top-name ensembles, as well as the most talented, promis-ing young names on the Danish music scene.

TOP PICKS: Copenhagen Saxophone QuartetSat 7 July, 12:15; 120krCopenhagen Saxophone Quartet is one of Denmark’s most recognised ensembles in the eld of classical chamber music. Since their debut in 1998, the quartet has toured Ireland, Germany, Belgium, Scandinavia, Austria, Croatia, the USA, Iceland, UK, Italy, and Poland, and has taken part in an o cial state visit to Slove-nia with the Danish royal couple. “If you think you can imagine the tone of a well-played saxophone without having heard this recording, you should think again,” Politiken newspaper wrote.

Nikolaj ZnaiderMon 9 July, 20:00; 150kr“Znaider is one of his generation’s great-est artists,” wrote the respected British magazine Gramophone in 2009. Nikolaj Znaider is both a charismatic violinist and conductor. He has directed the orchestra

of the Mariinsky eatre in St Petersburg, Dresden Staatskapelle and the Russian National Orchestra, and he is the rst guest conductor of the Swedish Chamber Orchestra.

Leipzig String QuartetMon 16 July, 20:00; 15kr is quartet has been described as the true sound of Leipzig, and for this concert it has prepared three pieces for strings by Mendelssohn, Shostakovitch, and Schu-bert – each full of intense emotion and drama. e quartet was founded in 1988, and three of its members have also held solo positions in the renowned Gewand-haus Orkester in Leipzig. e classical music-focused Strings Magazine praised the quartet’s ability to play Schubert. “Of the highest standard, the interpretation is clear and intense, and the recording itself has the ideal clarity, richness of tone and natural acoustics,” it wrote.

ERS

CAN YOU HAVE your cake and

eat it too? Conventional wisdom

says no, but with their rst budg-

et plan since the shift of power,

the new Socialdemokraterne-Radikale-

Socialistisk Folkeparti (SRSF) coalition

appear to be giving it a shot.

Many of the elements of the new

budget – which is expected to be re-

leased in its entirety on ursday – will

increase state spending at a time when

the budget de cit has increased. But

where the money would come from re-

mained a mystery.

A number of the new budget items

reinstate spending cuts made by the pre-

vious Venstre-Konservative (VK) govern-

ment. Here are a few of the major points:

Families: VK limited the state’s

monthly child support handouts (bør-

necheck) to 35,000 kroner per fam-

ily. at limit has now been abolished,

meaning that many families will get

larger child bene ts. e government

will also pay for fertility treatments and

voluntary sterilisations.

Welfare: VK and Dansk Folkeparti

(DF) introduced specialised welfare pro-

grammes that reduced the cash bene ts

for new immigrants. ose programmes

have now been eliminated and going

forward all residents in need of state

support will receive the same welfare

bene ts. Higher education and research:

Universities will get an extra one billion

kroner over two years to cover costs as-

sociated with a predicted increase in

the number of students. Moreover, stu-

dents will no longer pay administrative

fees, and prospective Master’s students

will have prerequisite course tuitions

paid. e government will also fund

1,500 more state-supported internship

positions.Infrastructure and job creation:

Some 17.5 billion kroner will be in-

vested over two years in infrastructure

projects, such as a new rail line between

Copenhagen and Ringsted, a project to

widen the Holbæk motorway, erosion

protection e orts along Jutland’s west

coast, and renovations to public hous-

ing. Prime minister Helle orning-

Schmidt has said that these ‘kickstart’

projects will create 20,000 new jobs

from 2012-2013. e Danish Construc-

tion Association predicts 10,000.

Tax break: e unpopular ‘mul-

timedia tax’ introduced by VK will be

abolished, saving some 525,000 Danes

with business laptops and mobile

phones 3,000 kroner per year.

Not everyone, however, can look for-

ward to a cash infusion. Smokers and junk

food lovers will be taxed higher on their

vices, while international corporations

will also see higher tax bills. SRSF plans

to raise revenue by closing a number of

tax loopholes going back nearly 20 years

WHEN I FIRST stumbled upon this recipe, I suspected that it was something I would adore. I wanted a mussel recipe and I love mushrooms, so what’s not to like? Turns out, the match between mushrooms and mus-sels is divine. Even with human error factored in!

While mussels are a rather elegant food item, they’re actu-ally fairly a ordable – especially when compared to other sea-food. And in hindsight, my de-cision to not go to a sh market and instead cash in on a special o er at my local supermarket (1.5kg for 35kr) was probably the wrong one.

And then I exacerbated the error by waiting until the ‘ -

Mussel Fricasse with Wild Mushrooms and Arugula470 ml chicken stock2 kg mussels, scrubbed and de-bearded2 tbs finely chopped shallots1 garlic clove, finely chopped6 tbs unsalted buttersalt and pepper to taste3 tbs white wine or water½ kg wild mushrooms, trimmed, cleaned, and cut into 1cm slices115g baby arugula, tough stems removed3 tbs chopped chives (optional)

BEFORE YOU get started, scrub and debeard the mussels. While doing this, make sure you place them under cold running water. e ones that are not dead will close when covered in cold running water.

In a large pot, bring the chicken stock to a boil. Add the mussels (discard any with cracked shells or that did not close when you scrubbed them), cover,

and let steam for six to seven minutes, until most of the shells have opened; discard any that did not open. Remove the mussels from the shells and place them in a serving bowl. Mix in the shal-lots and garlic while the mussels are still hot. Let cool.

Meanwhile, boil the mussel broth for about ten minutes, or until reduced to approximately 240ml. Turn o the heat. Whisk in four tablespoons of the butter (make sure to use unsalted but-ter, otherwise it will be insanely salty). Do not allow the sauce to boil again. Season with salt and pepper.

Combine the remaining two ta-blespoons butter and the white wine in a medium saucepan and heat over me-dium-low heat. Add the mushrooms and cook for six to seven minutes. Stir the mushrooms and broth into the mussels. Stir in the arugula, sprinkle with the chives, and serve.

Serve with lots of bread, or small baked potatoes, to absorb the juices.

nal day’ to cook them - not a great idea when you’re cooking something that’s still alive. e price I paid was a load of funky-smelling mussels. So you’ve been warned! Seafood is best prepared as fresh as possible.

It truly is a lovely recipe though. And although it re-quires more work than your av-erage mussel recipe, what took the longest for me was chopping the mushrooms. It’s actually rel-atively simple and easy.

e recipe serves four and is quite a lot of food. You have the choice of serving the mixture of mushrooms and mussels on top of a bed of arugula or following the recipe and mixing the aru-gula in. Chives are also optional.

When you first enter hercegovina, the thing that really strikes you, besides the fantastic smell of slow-cooked meat, is the atmosphere. The smiling staff are dressed in traditional costume, the walls are covered with mementos, and you feel like you’ve just walked into a family’s home.

Taking centre stage in hercegovina is the giant stove-top that greets you as you come through the door. As you watch the pork gently rotating on the spit, next to generous portions of scrumptiously slow cooked meat, homemade bread, and oth-er delicious side dishes, you’ll be tempted to just pull up a chair and soak in the cosy atmosphere.

Located a few metres from the Tivoli entrance (enter either via the street of from the amusement park), it is a great place for patrons to enjoy the wonderful views of the lights and flowers or dine in the restaurant’s open air backyard.

For over 25 years, this Copenhagen staple has been serving great food at really affordable prices. When dining at hece-govina the options are endless, so make sure to head there on an empty stomach. Those wishing to try a bit of everything should check out their lunch and din-ner buffets, which are varied and plenti-ful. The dinner buffet in particular will have carnivores sweating with excitement when they see the grilled pork and chick-en, pork on the spit, sausages, casseroles, and much more on offer.

hercegovina also has an à la carte menu available – which is great for those who prefer a more traditional style of din-ing. Two of the appetisers from the à la carte menu came highly recommended by restaurant manager Maria Lukac.

The first was a heavenly hungarian goulash soup with beef, vegetables, red wine and spices. The meat almost melted in the mouth, and it was so good that I’ve told my goulash-loving father in Australia that if he comes to Copenhagen for noth-ing else, he should come for hercego-vina’s goulash. Both my companion and I were so impressed that we practically licked our bowls clean.

Scared that it couldn’t get any better than that, we moved onto a Brixtofte-style marinated salmon with home-made lime sauce. My companion was blown away by the freshness of the salmon and the flavours of the lime sauce.

For our main courses we had two dishes, both from the à la carte menu. To begin we enjoyed a juicy tenderloin steak, served with a Vinjak (Croatian brandy)

sauce, a giant oven-baked potato and green salad. The steak was flavourful and cooked to perfection, whilst the brandy sauce with four different types of pepper was so good you’ll want to drink it.

The second dish was a great-looking and ample mixed-meat skewer. It had pieces of pork, chicken, homemade pork sausage, beef, onion and pepper. It was served with baked and then lightly fried potatoes and a slow-cooked paprika sauce.

The meats had a wonderful barbeque taste and overall were moist and tasty. The

real winner, however, was the homemade pork sausage that really packed a punch. I could easily have eaten ten more of them (could have done had I opted for the buf-fet). The potatoes were crunchy and felt a bit like a naughty treat, while the home-made paprika sauce was delicate and the perfect accompaniment for the meats. Throughout the meal we enjoyed a soft but full-bodied ‘Vranac Plantaze’ from the Montenegro region in the Balkans.

If your pants haven’t burst by this stage, I would recommend the pancakes flambéed in Kruškovac (Croatian pear

From Croatia with love, a buffet you won’t balk at

liquor) liquor, served with vanilla ice cream and flakes of almond. every bite was like a sweet piece of heaven in your mouth.

hercegovina really is about more than just great food. It is a complete din-ing experience with various food options, free music (sometimes with belly dancers) and entertainment every day, and high quality friendly service, all within beau-tiful surroundings. So for the restaurant that has it all, it’s got to be hercegovina.

Fourth instalment of franchise a cold-hearted a air

WHEN THE rst instal-ment in the Ice Age fran-chise hit cinemas world-wide in 2002 it was the then-third-best opening

ever for an animated lm. What’s more, the new lm from the Fox-owned Blue Sky Studios even won the hearts of most critics, which is impressive con-sidering the competition from Pixar and DreamWorks. Seven years later, Ice Age: Dawn of the Dinosaurs became the fourth highest grossing animated lm of all time – amazing for a threequel. So much as I regret having wasted 94 minutes of perfectly good summertime on Continental Drift (and some of those jokes literally made me groan), I guess from a purely economic viewpoint a fourth instalment was inevitable.

e action is catalysed by the series mascot Scrat (a sabre-toothed squirrel screeched by Chris Wedge) gently po-sitioning one of his prized acorns on the packed ice in some Arctic region. e result of this: a seismic shift that causes the prehistoric supercontinent Pangea to break violently apart. And when Scrat plummets to the core of the Earth and ricochets around there like a pin-ball causing would-be hilarious havoc 4,000 miles above, I was power-fully reminded of Cartoon Network at its most putrid and retarded.

Anyway, the Earth breaks apart, recognisable continents are formed, but the woolly mammoth Manny (Ra-

mona) gets separated from his mate (Queen Latifah) and their now-teenage daughter Peaches (Keke Palmer). Pic-ture drifting clunks of ice and animal ‘hands’ stretched helplessly out to grab imperilled loved ones. Well, all to no avail. Manny ends up on the open sea with a heavy heart and a few familiar faces: the sabre-toothed tiger Diego (Leary), the sloth Sid (Leguizamo) and Sid’s truly obnoxious (not funny obnoxious) granny (Sykes). Plans are made, the prospects are grim, plot ten-sion is established, but from a screen-writing perspective, Sid and his granny impede the lm’s action and charm by

being so ipping unbelievable (and remember, this is a cartoon). It’s an odd child who would prefer Sid to such comparable nitwit characters as DreamWorks’ Donkey (from Shrek) or Pixar’s Mater (Cars). One di erence is that Sid is simply too stupid to have human feelings. Not even Fox’s Homer Simpson is that vulgarly caricatured.

When all looks bleak for the ma-rooned mammals, along comes a pirate ship led by a vicious and sadistic oran-gutan, Captain Gutt (masterly voiced by Dinklage). As in most children’s sto-ries, Gutt and his evil band of villains mainly serve as a foil through which we

view the ingenuity, courage and moral-ity of the good guys. e pirate aspect is tired and formulaic all the way down to it involving one misled but beauti-ful fmale marauder (Lopez), a feline femme fatale and love interest for Die-go as it turns out. Unsurprisingly, this proud and cold tigress must be con-vinced of her wrongs and persuaded to betray her cohorts, who by the same token must be outsmarted by means of admirable virtues. Okay, the animation work is quite vivid and the sight gags keep coming but it’s a yawner from the rst “Ship Ahoy”.

One plus, however, is that not all

the action revolves around the show-down between Gutt and Manny. Back on land, young Peaches is discovering the lessons of integrity, loyalty, and friendship while, at some cost, earn-ing her place in a high-school-ish chick clique existing around the mammoth hunk Ethan (voiced by Audrey Drake Graham). I’m not saying it’s very original, but at least this angle pro-vides some opportunity for exploring themes incompatible with piracy. And yet for this reviewer, diversity and hu-mour were hugely defeated by triteness and unremedied lack of heart.

FILM

Ice Age: Continental Drift 3D

Dir: Steve Martino; US comedy, 2012, 94 mins; Ray Romano, John Leguizamo, Jennifer Lopez, Denis Leary, Peter Dinklage, Wanda Sykes

Premiered June 28Playing nationwide

“Ain’t CGI amazing! I’m being terrorised by a sadistic orangutan, who in real-life is the poisonous dwarf in Game of rones. How cool is that?”

KASPER RGULDBERG

F ROM THE o , the lm is comprised of beautiful im-ages. Most shots are made

from natural light and resemble a painting by Vermeer or similar. All the more powerful then when a moment of extreme tension or violence smashes through the serenity of these carefully com-posed frames. is happens in-

creasingly over the course of the narrative.

We follow the titular char-acter Martha (brilliantly under-played by debutant Olsen) on a two-pronged journey. e rst follows her escape from a rural community situated somewhere in the wilds of North America, and her subsequent re-integra-tion back into her old life. e second is her brainwashing initia-tion into said cult, told in ash-back (of note are the particularly well thought-out transitions be-tween the two time-lines). We learn her only family is an older sister (Paulson) who, following her recent marriage to sti Brit Ted (Dancy), is looking to start a family of her own. Her sister feels

great pressure to provide sanctu-ary for her disturbed younger sibling, while her husband is less enthusiastic about Martha’s presence in the house – not least because behavioural norms from the cult appear quite alien to the couple. Slowly we piece together Martha’s history.

e juxtaposition of time-lines allows us to compare Mar-tha’s experience of the cult with that of her sister’s marital home. What’s more striking than the di erences are the similarities. Both seek to modify her in some way, be it by drugs or with nu-merous rules and rituals. Both seek to open her up to them and essentially ‘possess’ her. It’s clear that while the cult leader

(John Hawkes in a wonderfully nuanced performance) exploits Martha’s vulnerabilities by pro-claiming her to be his favourite, she is not loved or respected in either of these homes. e famili-arity of one place versus the pecu-liarity of the other serves to ques-tion the level of manipulation we all tolerate in our everyday lives.

e claustrophobic menace of this debut by writer/director Durkin stands comparison of Michael Haneke’s Funny Games, Yorgos Lanthimos’ Dogtooth and the recent We Need To Talk About Kevin from Lynne Ramsy. It should come to be regarded as a cult lm in every sense.

KE

 e Avengers (11)

Dir: John Whedon; US ac-tion sci-fi, 2012, 142 mins; Robert Downey Jr, Chris Evans, Mark Ruffalo, Chris Hemsworth, Tom Hid-dleston e Avengers is for Marvel what Dark Night was for DC – Whe-don has scored the crowning achievement for Marvel Studio’s interconnected universe. MW

Avoid like the Plague

What to Expect When You’re Expecting (11)

Dir: Gary Ross; US sci-fi, 2012, 142 mins; Jennifer Lawrence, Josh Hutcherson, Liam Hem-sworth, Woody HarrelsonPrepare to keep your expectations low for the latest Hollywood en-semble rom com, What to Ex-pect When You’re Expecting. For a lm that claims to show how unpredictable life can be, the script is horribly predictable. ED

Dark Shadows (11)

Dir: Tim Burton; US hor-ror/comedy, 2012, 113 mins; Johnny Depp, Michelle Pfeiffer, Helena Bonham Carter ere is absolutely nothing dark about this lm and the only thing lurking in the shadow is a huge amount of wasted poten-tial. A man-made monster may well be a feature retained from the original series, however in this case the man is Burton and the monster is Dark Shadows. AS

We Bought a Zoo (7)

Dir: Cameron Crowe; US dramedy, 2011, 124 mins; Matt Damon, Scarlett Johansson, Thomas Haden Church, Patrick FugitAfter his misadventures with Elizabethtown and Vanilla Sky, writer-director Cameron Crown returns with a slice of perfectly good-natured and harmless family entertainment. Unfor-tunately, We Bought a Zoo is formulaic, u y, politically hypercorrect and dreamy. KG

Snow White and the Huntsman (11)

Dir: Rupert Sanders; UK/US action, 2012, 127 mins; Kristen Stewart, Charlize Theron, Chris Hemsworth,Sam Claflin, Ian McShaneIn a twist to the fairy tale, the huntsman ordered to take Snow White into the woods to kill her winds up becoming her protector and mentor in a quest to vanquish the Evil Queen. But unfortunately, this overlong retelling of a Grimm fairy tale is short on magic. MH

 e Hunger Games (11)

Dir: Gary Ross; US sci-fi, 2012, 142 mins; Jennifer Lawrence, Josh Hutcherson, Liam Hemsworth, Woody HarrelsonRoss has successfully dissected and expanded the book and pro-duced something that works as a lm – so long as you’re not too precious about its origins. MH

 e Dictator (11)

Dir: Larry Charles; US comedy, 2012, 83 mins; Sacha Baron Cohen, Anna Faris, Ben Kingsley, John C ReillyCohen’s fans will recall the tepid disappointment of Ali G: Inda-house. e Dictator shares the ction approach of that lm and con rms the superiority of Cohen’s ction/documentery hybrids over these pure ctions. Genuinely funny moments are too few, and almost all of those aren’t politicised. MW

 e Lucky One (11)

Dir: Scott Hicks; US drama, 2012, 101 mins; Zac Efron, Taylor Schilling, Blythe Danner e Lucky One doesn’t deliver many plot twists, and if you have seen the trailer, you basi-cally saw the whole lm. But that’s not necessarily a bad thing. You know what to expect, so you can’t claim to be disappointed by it. It’s a romantic drama, so don’t expect reworks. DC

Captive (15)

Dir: Brillante Mendoza; UK/Fra/Ger/Fhi drama, 2012, 120 mins; Isabelle Huppert, Mercedes Cabral, Maria Isabel Lopez e lm drew a lot of re from the press as it was rejected by both Cannes and Venice, which created a somewhat toxic whi . After all, Cannes built Mendoza’s reputation with his win for Ki-natay, so how bad could his rst decently budgeted lm be? Well, not half as bad as expected. MH

Prometheus (15)

Dir: Ridley Scott; US sci-fi, 2012, 126 mins; Michael Fassbender, Noomi Rapace, Charlize Theron, Idres Elba, Guy Pearce ere are some decent moments of horror and tension. ere are also planet-sized plot holes and moments of ham- sted stupidity. With the recent announcement that Ridley is returning to that other sci- masterpiece, Blade Runner, there’s a sense that in his twilight years he’s riding the coattails of his past success. MW

Men in Black III (11)

Dir: Barry Sonnenfeld; US action, 2012, 105 mins; Will Smith, Tommy Lee Jones, Josh Brolin, Jemaine ClementIt’s a light, fun sci- adventure, with perhaps a slightly darker overture than the previous lms, MiB3 is worth seeing in a theatre – if for nothing else the roar of the Apollo rocket that rumbles your chest, and the 3D which is one of the bet-ter that I have encountered. KE

Salmon Fishing in the Yemen (7)

Dir: Lasse Hallström; UK dramedy, 2011, 107 mins; Ewan McGregor, Emily Blunt, Kristin Scott Thomas ey don’t really make mov-ies like Salmon Fishing in the Yemen anymore, but when they did in the 90s, it was Hall-ström who made them, and in that way the movie feels like a pleasant throwback. MH

Wuthering Heights (15)

Dir: Andrea Arnold; UK drama, 2011, 129 mins; Kaya Scodelario, James Howson, Oliver MilburnBased on the classic novel by Emily Brontë, this adaption of Wuthering Heights is one of the most impressive cos-tume dramas of the year. MH

Get the Gringo (15)

Dir: Adrian Grunberg; US action, 2012, 96 mins; Mel Gibson, Peter Stormare, Dean NorrisMel Gibson nds new life in a Mexican jail after getting caught with $4 million dollars of mob-ster money. Not an easy place for an outsider, unless it’s with the help of someone who knows the ropes – a 10-year-old kid. It’s both cheesy and striking, corny and bold, dismissible and yet strangely appealing. MH

PICK OF THE WEEK

THE BEST history can make the worst dramas. Look at this lot: Ca-ligula, Henry VIII, Columbus, Pearl Harbour and the Crusades. Each of them a fascinating period of history, but on screen: turgid.

And you can add e Borgias to that list. e 1981 TV series bombed, and so does the 2011 ver-sion. It’s got adultery, rape, incest and murder, and yet it’s so dull. It even makes e Tudors look good.

“With writing and directing by Neil Jordan and [Jeremy] Irons in the lead, it has pedigree and prom-ise,” noted Time. “And yet e Borgias, besides the glaring Tudors parallels, is one of those shows that seems like it might actually be better if it were worse.” To be fair, not all the reviews have been bad, and it has 7.9 on IMDB and 66 on Metacritic.

In contrast, the praise for Won-ders of the Universe has been uni-versal. Presented by science’s poster boy Brian Cox, according to the Independent it is “big on cosmic dazzlement and mind-boggling perspectives and full of epic orches-tration and screen-saver graphics”. en again Creationist Monthly thought it was “utter tosh”.

Among the other docs worth checking out are Pearl Jam Twenty (SV1, Sat 23:10), an acclaimed homage made by Almost Famous director Cameron Crowe; Paris – e Luminous Years (DRK, Tue 20:00), the documentary version of Midnight in Paris; Go Back to Where You Came From (SV2, Tue 20:00), which see journos pretend-ing to be immigrants in Australia with alarming, if not predictable

results; while Citizen USA: A 50 State Road Trip (SV2, Wed 18:00) looks at the same issue from the viewpoint of new US citizens.

Elsewhere, Immodesty Blaize: Burlesque Undressed (DRK, Sat 23:15) is rather gratuitous; Nuclear Sharks (DR2, Tue 17:55) o ers an interesting take on the Cold War; there’s another chance to see UK series Friday Night Dinner (SV1, Sun 22:50) and Luther (BBC Ent, Sun 20:00); there’s new seasons of Mad Dogs (SV1, Wed 21:30) and the UK version of Undercover Boss (SV1, Wed 22:50); and in prepara-tion for the Olympics, e 100 Me-tres - Gold in Seconds (BBC World, Sat 16:10 or Sun 22:10) looks at how some spend a lifetime preparing for just one ten-second moment.
