I ntroductionThe word whiskey literally means Water of Life – Uisce Beathain Gaelic.

The origins of Irish whiskey are buried in the depths ofunwritten Irish history. It is however nearly certain that theart of distillation was broughtto Ireland bymonks

During the 19th century, Irish whiskey had a superior quality image and was regarded asbeing much more drinkable than Scotch.

Despite Ireland’s dominance of the 19th century whiskey export market, many social and economic factors were to affect the production, consumption and export of Irishwhiskey. The story of Irish whiskey is one punctuated with political and economic upheaval, disasters, poor decision making and more than a fair share of bad luck. In 1838, thecharismatic Capuchin Monk, Father Matthew, began a personaland highly successful crusade against whiskey.

Good luck prevailed for a time for the Irish whiskey industry,when in 1870 the wine louse decimated European vines, andwith them, the wine and brandy industry. Irish whiskey soonbecame the drink of choice for the gentry in Europe and salessoared until the advent of World War I. This was followed byAmerican prohibition in 1919, Irish independence in 1921, civilwar in 1921-22 and a trade war with Great Britain and hercolonies, all of which combined to cause a complete collapseof the Irish whiskey industry. Distilleries in Ireland closed bythe dozen.

I ntroductionProhibition in the USA was probably the severest blow. Due toa misplaced sense of loyalty to the American government, anddespite many requests, the Irish passed over the opportunityto supply thousands of gallons of whiskey, both during andeven after Prohibition. It was essentially after Prohibition thatScotland quickly made a name for itself in the world of whisky.An entire generation of Americans never had the opportunityto drink and appreciate Irish whiskey. Scotch, andnot Irish, became the word for goodwhisky.

Irish political decisions regarding

whiskey exports during World War IIalso lacked basic economic foresight. Whilst

production was heavily boosted in Scotland for the post-warexport market and domestic consumption was restricted,while exports were criminally neglected. The result? The export market collapsed completely after the war and evenmore distilleries closed down.

In 1975 the new Midleton Distillery was commissioned on a sitenext to the old Paddy Distillery in County Cork. Since thenJameson, Paddy, Powers and Tullamore Dew have been produced in this ultra modern distillery.

In 1988 Irish Distillers was taken over by the French drinksgiant, Pernod Ricard, which offered the benefit of its worldwidedistribution channels and networks and which gave Irishwhiskey sales a very substantial thrust into world markets.

In 1989, the Cooley distillery started distilling whiskey and it remains to this day the only independent Irish distillery. In 2006, the Bushmills Distillery in Antrim was sold by IrishDistillers and now forms part of theDiageo Group.

Irish whiskey, is today enjoyingonce again a golden era and has become one of the fastestgrowing categories of spirit in theworld.

Greenspot Pure Pot Still €5.10For true aficionados of Irish Whiskey, the words GreenSpot make the pulse quicken. This is Mitchell’s ownlabel Irish Whiskey for the past 100 years. Mitchell &Son Merchants was founded in 1805 and both the 5th and6th generations of the family run the business. GreenSpot is produced by Irish Distillers, and is distilledin Midleton, Co. Cork. It’s made up of 7 and 8 year oldpot still Whiskey, and 25% of it is matured in sherrywood.“One of the cult whiskeys of the world.”The Malt Advocate (USA), July 2001.

Cooley/Kilbeggan DistilleryCooley is the smallest and the youngest of the three distilleries operating in Ireland, having started distillingin 1989. It is also the only one which is independentlyowned. It is located in the Cooley Peninsula in Co.Louth. It currently produces over 1.5 million litres andfilling over 12,000 200L ex-Bourbon casks annually. Itdistils both grain and malt whiskey and operates a double distillation process. Double distillation in potstills produces a new spirit which is more robust in nature than triple distilled whiskey and which has verypleasant malt and gentle fruity notes.

Cooley is also the only Irish distillery creating peatedSingle Malt whiskeys and bottling Single Grain IrishWhiskey. Their Single Grain whiskey has been distilledfrom maize and malted barley in tall column stills..

All Cooley whiskeys are matured in ex-Bourbon casksonly, with the exception of whiskeys finished in specialcasks, such as the Tyrconnell collection.

Cooley produce many different brands of whiskey, suchas: Locke’s – Tyrconnell – Connemara – Kilbeggan.

Cooley also manage the oldest continually licensed distillery in the world, the Kilbeggan Distillery which is situated on the Brosna River in Co. Westmeath. Originally opened back in 1757, it closed in 1957due to tough economiccircumstances in Irelandat the time. In 2007 however, 50 years afterits closure, productionstarted again in Kilbeggan and the firstnew whiskey - The Kilbeggan Malt - tocome from this distillery in over 50years was bottled in2010.

Daniel EWilliams was the major influence on the development of thedistillery. Bushmills DistilleryBushmills is the second largest distillery and the oldest working distillery in Ireland. It is located in thevillage of Bushmills, in Co. Antrim in Northern Ireland.It currently produces over 500,000 cases a year andaims to double this output by 2013. It only distils maltwhiskey and all their whiskeys are triple distilled.

Bushmills however also bottle blends as well as singlemalt whiskeys. The grain whiskey for their blendscomes from Midleton.

Bushmills mature their whiskeys in ex- Bourbon and ex- Oloroso Sherry casks, but also regularly use othertypes of casks such as Port and Madeira to producebrands such as Bushmills 16 Year Old and Bushmills 21 Year Old.

The Bushmills Distillery is owned by the Diageo Group.

Black Bush and all whiskeys bearing the name Bushmills are produced by the Bushmills Distillery.
