Cuban Pea Soup
• Take advantage of what’s left of summer by making a yummy cold soup!
• Super tasty AND nourishing
• This soup is restorative of the digestive tract and the brain
• Simple to prepare
• Can always heat up in the winter
Pea Soup
Pea soup is one of those foods I am always happy to consume but it’s never on the forefront of my mind
Ingredients for Cuban Peas
• 1 tablespoon ghee or butter
• ½ tablespoon garlic powder
• 1 teaspoon ground cumin
• ¼ teaspoon red pepper flakes
• ¼ teaspoon sea salt
• 1 lb. frozen green peas
• 1 tablespoon filtered water
Ingredients for Soup
• 2 cups of homemade chicken stock
• 2 cups of Cuban peas (just made)
• 1 tablespoon fresh tarragon
• 2 cloves garlic, peeled and diced
• ½ teaspoon sea salt
• 4 tablespoons sour cream
• ¼ teaspoon paprika
To make the peas:
1. Melt butter in a large skillet over medium heat
2. Add spices to skillet while butter is melting
3. Add peas to skillet and stir with butter and spices
4. Add 1 tablespoon of water and cover
5. Cook for 5 min. or until peas are warmed and bright green
To make the soup:
1. Combine the Cuban Peas and remaining pea soup ingredients in a blender
2. Blend until smooth
3. Chill and serve
