Get out of Town - 1,000 Steps - Kokoda Track Memorial Walk

The 1,000 Steps Kokoda Track Memorial Walk is a unique tourist spot located in the Dandenong Ranges National Park at Mt Dandenong.

The walk (climb) is roughly 2.8 km’s long and will take about an hour to get to One Tree Hill, a small picnic ground at the top of the walk.

Classic Caesar Salad

Ingredients

Salad1/2 (12cm) ciabatta bread loaf, cut into 2cm pieces2 tbsp olive oil4 rashers 97% fat-free bacon, thinly sliced1 large cos lettuce, leaves separated, torn2 hard-boiled eggs, quartered40g parmesan cheese, shavedCaesar dressing1/2 cup light whole-egg mayonnaise2 anchovy fillets, drained, chopped1 garlic clove, crushed2 tablespoons lemon juice

Method

Heat olive oil in pan and toss bread until coated. Fry until golden and crisp, set aside

For the Caesar dressing, process mayonnaise, anchovy, garlic and lemon juice until smooth. Season with pepper.

Heat a non-stick frying pan over high heat. Add bacon. Cook, stirring, for 3 to 4 minutes or until crisp. Transfer to a plate lined with paper towel.

Place lettuce in a large serving bowl. Add fried bread, bacon, eggs and shaved parmesan. Toss to combine. Drizzle with dressing and serve.

Delicious on its own or as an accompaniment, this classic salad always hits the spot.
