MATERIALS :

Shallots Candlenuts Garlic white pepper ground coriander salt and sugar carrot beans sprouts cabbage spring onions Chinese celery Eggs flour and tapioca rice flour water

1. Shallots, candlenuts, garlic, white pepper, ground coriander, salt and sugar. This spices are ground in a mortar and pestle till fine.

2. Vegetables used are carrot, beans sprouts, cabbage, spring onions and Chinese celery with some chilies. This vegetables are combined all these in a big bowl.

3. A couple of eggs are added in the bowl.

4. All-purpose flour and tapioca starch are added.

5. Lastly, the rice is added flour into the bowl. If no rice flour available, substitute with fried chicken coating mix.

6. Some water are added.

7. Everything well are mixed with a spoon till it resembles thick batter.

8. A batter is droped into hot oil.

9. A batter is fried till golden without over-crowding the wok.

10. From the wok is removed and serve warm with some chili sauce.
