1964 when she was fetching water from a well. Having

dropped the bucket into the well, she watched how rippling circles

formed on the surface of the water.

GINGERBREAD B ISCU ITS

MAKES 10 –14

100 g butter1 dl icing sugar1.25 dl brown sugar1 egg3 dl wheat flower2 tsp baking powder100 g chocolate100 g dried fruits0.5 tsp ground cloves, allspice, ginger and bitter orange peel

Beat the butter and sugar in a bowl until smooth. Add the egg. Mix the dry ingredients, chopped chocolate and dried fruits together. Add the mixture to the dough. Shape the dough into a roll. Wrap the roll in cling film and place in the freezer for about 2 hours.

Cut the roll into about 1cm thick discs. Bake the biscuits at 175°C for 10–15 minutes.

PEAR CHUTNEY

0.5 kg diced pears1 dl white wine vinegar3 dl brown sugar2 tsp ginger powder2 tsp mustard powder1 tsp salt0.5 tsp coriander powder15 drops of Tabasco sauceJuice of 1 lime

Put all the ingredients, except the lime juice and Tabasco, in a pan and stir. Cook with the lid on for about 10 minutes. Add the lime juice and Tabasco sauce. Mix and cook for another 3–5 minutes until the fruit is suitably tender. Let cool to room temperature and store in glass jars.

AND APPLE COMPOTE

2 gelatine leaves2.5 dl cream3 star anise5 cinnamon sticks0.5 tsp lavender0.5 tsp allspice0.5 tsp ginger2 tsp vanilla sugar2 tbsp sugar100 g white chocolate, melted 200 g mascarpone

Soak the gelatine leaves in cold water until soft. Dissolve the soaked gelatine in a little boiling water, following the instructions on the packet.

Heat the cream with the spices and let rest for 5–10 minutes.

Mix the gelatine with the mascarpone and melted chocolate. Reheat the cream-spice mixture. Pour the cream through a sieve into the mascarpone-chocolate mixture and stir until smooth. Pour into glasses and put in the fridge for a few hours to set.

1 l water1 dl sugar1 dl brown sugar1 cinnamon stick2 star anise5 clovesZest of 1 lime 200 g lingonberries

Put all the ingredients in a pan and bring to the boil. Take the pan off the stove and let the wine rest in room temperature for about 30 minutes. Pass the wine through a sieve and bottle.

APPLE COMPOTE

3 peeled apples 3 tbsp jam sugar1 tsp cinnamon1 tsp ginger

Cut the apples into small cubes and stir in the sugar and spices. Cook over a gentle heat for about 10 minutes. Let cool to room temperature before topping the panna cottas.
