MarionKracht No doubt about it, she has a talent for acting her

way into her audience’s heart: multi-faceted, rel-evant, funny and entertaining with an excellent

capacity for expression in a wide variety of genres. Withover 40 years of solid experience in the acting business,she successfully made the transition from child star inthe TV mini-series “Die Buddenbrooks” to adult actressand winner of the Goldene Kamera (“Golden Camera”)award. In 2002 Marion Kracht was awarded the GermanFederal Cross of Merit for her outstanding commitmentto helping the deaf, triggered by her theater role as Sarahin “Children of a Lesser God.” She learned sign languagespecifically for this role. Marion Kracht became especiallypopular for her role in the TV series “Diese Drombuschs.”

She is not just a well-loved TV and theater actress,however, but has also been making a name for herselfas an outstanding cook. For over 25 years now, the 51-year-old has been preparing vegetarian delicacies forherself, her husband and her two sons – and sometimeseven for strangers in other people’s kitchens: “To benefita children’s aid project, someone once paid 2,500 eurosto hire me as a chef for six persons. The guests, who werenot vegetarians, even wrote down the recipe for the veg-etarian balsamic roast with orange fennel and emmercouscous,” she recalls. Marion Kracht is not one of thosewho want to avoid meat simply because it is currentlyconsidered good social form. Makes 6 servings | approx. 90 min. | per serving approx.: 1,575 kJ; 375 kcal; 10 g protein; 19 g fat; 29 g carbohydrates

1 tbsp. oil | 60 g Spanish onion, finely diced |1 bay leaf | 1 tsp. ground white pepper | 1 tsp.thyme | 1/2 tsp. coriander seed | 18 g ginger |250 g carrots, diced | 100 ml white wine |250 ml carrot juice | 250 ml vegetable broth |200 g silken tofu, puréed | 150 ml soy whip |15 ml lemon juice | 2 tbsp. agave syrup | 5 pinches rock salt, ground | 1 sprig of cilantro,choppedLightly sauté the oil, Spanish onion, bayleaf, white pepper, thyme, ginger and dicedcarrots. Deglaze with white wine, then addthe carrot juice, vegetable broth, silkentofu and soy whip and let simmer for approximately 30 minutes. Remove thebay leaf and purée well with a hand blender. Add the carrot juice,cover and let all ingredients cook for approx. 20 minutes until soft. Purée ina blender until very smooth and seasonwith rock salt.

300 ml goji berry juicePour the juice into a flat bakingdish and place in freezer. Rakethrough with a fork every 30 min-utes to create fruit juice crystals ofa uniform size. Tip: Goji berry juicecan be found in natural food storesand organic food shops.

Goji berry granita

2 tbsp. olive oil | 30 g shallots, finely diced |2 bay leaves | 2 tsp. white peppercorns |250 ml verjuice | 250 ml vegetable broth |500 ml soy whip | 14 pinches rock salt Sauté the shallots in oil, add the bay leavesand pepper, deglaze with verjuice and vegetable broth. Leave to reduce until halfthe liquid is gone, then add the soy whip. Reduce the sauce to 500 ml. Season withsalt and purée. Pass through a sieve.

Verjuice foam

Makes 6 servings | approx. 90 min. | per serving approx.: 3,360 kJ; 800 kcal; 33 g protein; 51 g fat; 55 g carbohydrates

Black quinoa cake on a bed oftamarillo chutney with glasswort and verjuice foam

ENTRÉE

350 ml rice milk | 150 g black quinoa (naturalfood store or organic food shop) | 40 g agavesyrup | 60 ml grape seed oil | 50 ml rice milk |50 g buckwheat wholemeal flour | 125 g almonds, ground | 7 g baking powder | 2 pinches of rock saltSimmer 300 ml of the rice milk with the quinoa over low heat for 30 minutes. In themeantime, mix the agave syrup, the grapeseed oil and 50 ml of the rice milk with thebuckwheat wholemeal flour and the groundalmonds, baking powder and salt. Add thismixture to the pre-cooked quinoa and blendgently with a mixer. Brush silicone bakingmolds with oil. Distribute the mixture equallyinto the molds and place in an oven set to150 °C or 300 °F (convection) for 40 minutes.

Black quinoa cake300 g tamarillos (organic food store) | 50 ml olive oil | 15 g ginger, grated | 60 g onions, finely diced | 1 chili | 125 ml tomatovinegar | 75 g whole cane sugar | 1 bay leaf | 2 pinches of rock salt Remove the stem from the tamarillo (tree tomato) and cut an X into the bottom of it. Blanch in boiling water for several minutes and then quench in ice water. Pull off the skins and dice the pulp. Sauté the ginger, onion, chili,whole cane sugar and bay leaf in olive oil. Add diced tamarillo and vinegar and continue sautéing until thickened. Remove the bay leaf and season to taste with salt.

In themeantime, mix the agave syrup, the grapeseed oil and 50 ml of the rice milk with thebuckwheat wholemeal flour and the groundalmonds, baking powder and salt. Add thismixture to the pre-cooked quinoa and blendgently with a mixer. Brush silicone bakingmolds with oil. Distribute the mixture equallyinto the molds and place in an oven set to150 °C or 300 °F (convection) for 40 minutes.

Green oasesAs soon as the winter has passed, the inhabitants ofStockholm pour outside in droves to enjoy the first raysof sunshine – and that at temperatures that would seema little cool to most of the rest of us. There is more thanenough green space for soaking up the sunshine thanksto a huge nature preserve located on 27 square kilome-ters of land in the middle of the city center. Nature is generally very important to the inhabitantsof the city. There was good reason why Stockholm wasrecognized as Europe’s first Green Capital in 2010: for itssophisticated infrastructure system that helps to mini-mize emissions of greenhouse gases. Buses, for example,run on ethanol or biogas. The city’s objective is to becompletely independent of fossil fuels by 2050. Moreand more restaurants and cafés are seeking to protectthe environment as well. Green oasesAs soon as the winter has passed, the inhabitants ofStockholm pour outside in droves to enjoy the first raysof sunshine – and that at temperatures that would seema little cool to most of the rest of us. There is more thanenough green space for soaking up the sunshine thanksto a huge nature preserve located on 27 square kilome-ters of land in the middle of the city center. comes dry and cornification occurs. Special foot creams prevent

sweat, odors and foot fungus as well as promoting regeneration

of the skin. Ideally the cream should be applied generously each

evening before going to bed and then be allowed to absorb.

ated with conventional palm oil extraction, totally boy-

cotting palm oil is not the solution for us. That would cause

great hardship for many small farmers who have long

been producing palm oil under socially and ecologically

Controversial palm oil in cosmetics – whatis BÖRLIND doing about it? Brigitte M., SeelzeBÖRLIND is a member of FONAP, the Forum on Sustainable

Palm Oil. This initiative is helping to ensure that only certified

palm oil is used in Germany, Austria and Switzerland as

quickly as possible. FONAP members obligate themselves to

start using exclusively 100 percent certified palm kernel oil

by the end of 2014 and want to clearly indicate where the oil

in their products comes from. Despite the problems associ-

ated with conventional palm oil extraction, totally boy-

cotting palm oil is not the solution for us. That would cause

great hardship for many small farmers who have long

been producing palm oil under socially and ecologically

acceptable conditions.

ines skin structure, tissue strain, wrinkle for-

mation, fat and moisture levels (for example)

and also discusses topics such as nutrition

and illness with clients.
