NEWSLETTER Chairman’s pen APRIL 2017 Dear colleagues April is upon us. It has 3 public holi- days, which is great for our social and family lives, but puts pressure on our clients to schedule the slaughter- ing in the 3 shorter work weeks. Administrative office Christa Scheepers has decided that it is time for her to retire at the end of April. She has for the past ten years meticulously ensured that IMQAS staff receive their pay cor- rectly and on time. It is a function where the weekly and monthly dead- lines cannot be missed or extended. Payday, for most people, is one of the most important days of the month. Christa is also the person whom irate, impatient, and sometimes rude, staff phone to complain if they feel that there has been an error or an oversight. We wish to thank Chris- ta for her years of loyal and dedicat- ed service. Our best wishes for the next era in her life. We have appointed a capable and highly experienced replacement: San- dra Jordaan. She will join us in April and be responsible for the salary and human relation functions. Our administrative manger, Anélda Potgieter, wil also be leaving at the end of April. Her husband has been transferred to George in the South- ern Cape. Great administration is es- sential for the smooth running of any business. It keeps the road on which our company travels smooth and free of ob- stacles. Anélda has been doing an excel- lent job for the past 3 years. Our best wishes accompany her on the next phase of her life. Alicia Meyer will join us in April and take responsibility for the administra- tion of IMQAS. Training Ella de Lange, our training manger, will be joining the Red Meat Abattoir Asso- ciation in April. Ella was responsible for training and our quality management systems. Over the past few years, she has built the department into a centre of excellence. We wish her all the best for this new challenge. Maxwell Tsuma and Laurane Moyo has been given the opportunity to manage the training and QMS. We are confident that they will build on the solid founda- tion and reach new heights. Meat Inspection Scheme We have been informed that the pro- cess for application to be appointed as a service provider will be made public by 15 April 2017 and the service providers appointed by 15 May 2017. training Ante-mortem inspection why is it im-portant?

Done to ensure that all animals which for some reason or the other cannot be pro-cessed into safe meat are identified and han-dled accordingly. It is regulatory require-ment done by an inspector with the exception of rural abattoirs where a meat examiner can perform the function after acquiring exemp-tion from the Provincial Executive Officer.

Ante-mortem meat inspection is carried out at the time of arrival and in the lair-age pens (pens where animals rest before slaughter). The inspector first checks the animal identification for traceability and uses the visual inspection of the ani-mal to take decisions relative to:

whether animals can progress to slaughter normally or should be separated from the normal slaughter. For example, cattle with diarrhoea or with exten-sive signs of faecal contamination may be associated with an increased risk of microbial cross-contamination during slaughter and should be slaughtered separately.

which animals must be removed from the food chain. For example, an animal that has died during transport.

which animals should go through a more detailed post-mortem examination. For example, based on external observations of the animal’s general health status and/or the food chain information given by the farmer (e.g. treatment history).

An important outcome of the ante-mortem meat inspection is the provision of feedback to the producers on problems detected. Most commonly, the problems detected will be relevant to animal welfare and to a lesser degree public health issues. Meat quality is thus directly related to these animal welfare issues. Measures of injuries (e.g. tail biting) detected during ante-mortem meat inspec-tion also constitute on-farm welfare-outcome indicators that could be used to en-force control measures or manage product quality programmes.
