store to Bend with the opening of the Savory Spice Shop in October 2011. Bend

residents Matthew and Betsy Perry bring their passion for food and spices to the Old Mill District with a shop that specializes in more than 400 fresh ground herbs

and spices, 140 hand-blended seasonings, organic selections and gift sets. Customers are encouraged to sample products and have packaged only the amounts that they need, starting at as little as

a half ounce.

Created in Colorado in 2004, Savory Spice Shop has a loyal customer base in the Denver Metro area. Since 2009, Savory Spice Shop has introduced their concept to select cities across

the country. Matt and Betsy Perry are the first to introduce Savory Spice Shop to Oregon. “We are thrilled to become part of the

Old Mill District while pursuing one of our personal passions,” said the Perry’s, who have lived in Bend since 2005. “Having the opportunity to bring

Potato Chowder with Caraway Havarti

This chowder, traditionally prepared with bacon, onions and potatoes simmered in stock and milk is elevated to new richness with the addition of havarti cheese studded with caraway seeds.

4 slices of bacon cut into ! “ pieces! Cup medium diced onion! Cup diced celery1 lb. red potatoes scrubbed, cut into !“ dice1 Tablespoon minced garlic2 Cups rich chicken stock2 Cups whole milk1 cup grated havarti with caraway seeds1 Tablespoon unsalted butter1 Tablespoon all-purpose flourSea SaltGround Pepper2 Tablespoon minced chives for garnishDrizzle of La Tourangelle white truffle oil to finish (available at Ginger’s Kitchenware)

Sauté bacon in Le Creuset French Oven or other heavy pot over medium heat until brown and crisp. Transfer bacon to paper towels to drain. Pour out all but 2 Tablespoons bacon drippings.

Add onion and celery to the bacon drippings in the pot. Cook, stirring often until soft; about 5 min. Add diced potatoes. Sauté for 2 minutes. Add garlic and stir for 1 minute.

Add chicken stock and milk. Bring to a simmer. Cook soup until potatoes are tender. Do not let boil.

When ready to serve, add the cheese, a little at a time, to the hot soup. Stir after each addition to melt.

In a small bowl, whisk butter and flour to make a paste. Add to soup a little at a time and whisk until completely blended for 2 minutes. Season to taste with salt and pepper as needed.

Serve in bowls and sprinkle each serving with chopped bacon, chives and a drizzle of truffle oil.

Jungers Culinary Center

The Jungers Culinary Center is home to the Cascade Culinary Institute’s state-of-the-art facilities that recently opened to the public. The 15,000 square-foot building includes two multipurpose kitchens, a baking kitchen, demonstration kitchen and a dining lab/restaurant.

Cascade Culinary Institute is led by Director and Executive Chef Gene Fritz, a respected leader in Pacific Northwest food circles and a rising star in culinary education. Cascade Culinary Institute’s program is accredited by the American Culinary Federation Foundation. Elevation restaurant, serves as the “real life” course for the entire culinary program.

CCI’s teaching restaurant is committed to sustainably produced, organic and locally grown food. The menu features locally sourced meats and cheeses, certified organic coffee and tea and seasonal/regional produce. Sustainability also guides the operational side of the facility through

composting and recycling. Green construction and energy efficiency highlights include radiant floor heating, infrared heat detectors and tank-free on-demand water heaters.

Elevation Restaurant will be open through December 2 and reopens January 18 with the winter quarter. Dinner service is offered Wednesday to Friday and lunch on Thursdays. The Peak happy hour runs from 4:30 - 6 pm Wednesday - Friday with a tapas tasting for $8. Peak happy hour is first-come, first-served for 25 guests per evening. Elevation serves a Prix Fix lunch for $15 which includes a choice of starter, entrée and dessert. Dinner runs $19 and also includes an appetizer/salad, entrée and dessert. Bolshoi Ballet NCM Fathom and Emerging Pictures are bringing world-class ballet to the big screen with a live performance of Tchaikovsky’s The Sleeping Beauty to movie theaters nationwide. Broadcast live from Moscow’s renowned Bolshoi Ballet, The Sleeping Beauty will be shown on Sunday, November 20 at 7:00am and 1:30pm with a special additional performance on Tuesday, November 22 at 6:30pm. The Tower Theatre has two great musical acts coming in December. Flamenco guitarist Todd Haaby and his group Sola Via return to the Tower on Saturday, December 3 at 7:30pm for a fantastic night of Latin music by this award winning guitarist. To make the holiday season more healthful and enjoyable, St. Charles Registered Dietitian RanDee Anshutz recommends setting realistic goals and advises that people should simply try to enjoy the holidays with family and friends while maintaining their current weight. To do so, Anshutz suggests eating a healthy snack that is low in fat and high in fiber such as an apple or veggie sticks with a low fat dip before attending holiday parties. “This can help you to avoid filling up on high-calorie treats or over-eating at the buffet line,” she said. After filling a plate of food, sit down, pay attention to what you’re eating and avoid unnecessary grazing. Remember that smaller portions can be savored slowly and that left-overs can be taken home for a snack or lunch.

For parties, potlucks, or work events, offer to bring a healthy snack. The fruit or vegetable tray will add a nice balance to all the sweets. When preparing dishes, smaller amounts or lower fat alternatives can often be substituted in recipes to shave off some extra calories. “Also, beware of alcohol and other drinks high in calories,” Anshutz said. “So drink in moderation and remember that water is always a great choice.” Finally, make movement a part of the holiday experience with a nice after dinner walk or game of ball while the turkey is cooking. Gran Prix of Cyclocross - The Deschutes Brewery Cup

The Old Mill District and Deschutes Brewery will host the 2011 U.S. Gran Prix of Cyclocross on December 10-11. Cyclocross consists of many laps on a short course, various terrain and numerous obstacles. The Deschutes Brewery Cup will follow a course similar to the course featured in the 2009-2010 USA Cyclocross National Championships and includes a fly-over, a classic set of stairs and surely mud galore. Cold weather, mud and snow are all part of what makes Cyclocross as much fun to watch as it is to race. Races run from 8am-4:30pm both days with Elite Pro races starting at 2:15pm and 3:30pm on Saturday and Sunday afternoon. Food vendors and a Deschutes Brewery beer garden round out the weekend

of races. There are entry level races, junior races, masters and pros races for men and women. This year the top pros will descend on Bend in what will be the final battle for the series title. Grab your cowbell and head to the

Old Mill District to cheer on the youth, amateur and professional racers.There will be a clinic for both kids and adults on Friday, December 9. The Free Clif Bar Kids Clinic provides kids aged 10-14 with an opportunity to ride with pro riders from the Clif Bar team and learn basic skills and practice technique on the race course. The Course Preview Clinic offers adult racers the chance to ride with the pros from Team Specialized and learn how to attack the course and approach obstacles. Bonfire on the Snow dates are December 17, 23, 26, 28, 30 and 31.

One of the best things about winter is it provides skiers and snowboarders a chance to catch some big air. In the Old Mill District thrill seekers and spectators alike can appreciate the demonstration of speed and height at the OnPoint Community Credit Union Oregon WinterFest. Presented by American Family Insurance, the event runs February 16 -19, 2012. Held over the President’s Day weekend the event is the Northwest’s largest winter festival.

WinterFest’s main feature is the off-mountain rail jam— a colossal structure built in Bend’s Old Mill

District. The U.S. Cellular Rail Jam takes a team of design engineers a week to build, and requires fifty dump truck loads of snow to be hauled from Mount Bachelor into town. Family friendly activities include a kid’s performance and craft area with The Oregon Museum of Science (OMSI) Science Festival Kit including touch tables and brain teaser activities that will challenge a wide range of ages. Stroll through the European-style market, selling the Northwest’s best food, wine and fine art. Check out the amazing feats of snow carving and ice sculpting. Each evening offers

live music on an outdoor stage.

Here in Central Oregon, we are proud to boast some of the highest beer-per-capita rates in the country. Perhaps there is no time of year in which we revel in our craft beer culture more than the holidays, when many of our favorite (okay … ALL of our…) local breweries release limited edition winter ales. These brews are created for the crisp winter days in Oregon, meant for sharing with friends and pairing with the rich and hearty foods that mark the holiday season. Here are just a few of the local beers brewed specifically to help you celebrate the winter season:

10 Barrel Brewing Pray for Snow: The snow is coming and what a better way to celebrate then with a chest warming Strong Ale built upon malt notes of caramel, vanilla, and molasses. These notes are married with a bubblegum and spice character provided by both English and domestic hops. To round out this beer 50 percent was aged in Brandy barrels to throw in some apricot, wood and peach notes. This will be the perfect beer to sit by the fire and wait for the snow to fly.

Bend Brewing Company Doppelbock: This winter ale’s huge malt aroma assails the nose with a sweet complexity. At the first sip, the beer slinks over the palate leaving in its wake an intense creamy, sweet, nutty maltiness and nuances of freshly baked bread. What’s not to love?

Boneyard Beer Femme Fatale: A little bit different flavor for the season, this sour ale has been fermented with raspberries and has a medium body. Also known as the “breakfast beer” (ah, one we can have before hitting the slopes) for its morning flavor, this makes a great alternative to a bloody

mary. Sit back, relax and enjoy your holidays with this hypnotic seduction.

Brew Werks Red Flag Imperial: A nutty red ale that will warm you up from the inside out with a solid 8 percent alcohol, this malty brew is medium hopped to go down just right. Not available at press time (comes out in November), the powers that be still need to taste the beer to give an accurate description, but we can pretty much guarantee one thing: it will be tasty!

Cascade Lakes Brewing Slippery Slope: This new winter seasonal is replacing the brewery’s past holiday beer “Santa’s Little Helper.” This new full-bodied ale uses crystal malt and generous amounts of cascade hops to produce a well-balanced seasonal ale. So, whether your slippery slope is a mountain or your sidewalk (or possibly holidays with the in-laws) , this ale makes an excellent companion.

Deschutes Brewery Jubelale: Jubelale is brewed with dark crystal malt creating a luscious holiday note with bountiful hops to excite the taste buds. For the past 17 years, Deschutes Brewery has selected a local Oregon artist to create an image evocative of the season’s festive atmosphere. The original artwork on the Jubelale label is a welcome addition each year to this

fantastic beer. The intricate and unique art on the label enhances the Jubelale experience much like beautiful wrapping paper enhances a gift.

Good Life Brewing Pass Stout: Harkening back to the medieval times in England, when oats were a common ingredient in ale, oatmeal stout is gaining again in popularity. Nope, it doesn’t taste of oats, but is an extremely smooth, balanced brew with roast chocolate and coffee flavors. Perfect for warming up around the fire pit after a long day on the mountain.

McMenamin’s Kris Kringle: The 2011 version of this “winter warmer” highlights the rich, toasty, aromatic and chocolaty malt flavors as its very sturdy foundation. Four different hop varieties deliver a magnificent and massive hop assault. There’s still some ginger and cinnamon added into the batch but the spices are a little more subdued than in years’ past.

Phat Matt’s Brewing Company Phat Matt’s IPA: While this brand-new brewery hasn’t been open long enough to even plan a winter seasonal, they did come out of the gates last September with a classic IPA that’s worth a mention. A deep golden, mild and malty brew, this IPA features late hop additions that contribute to floral and

pine aromas with a mellow, bitter finish.

Silver Moon Brewing’s Winter Moon Strong Ale: English IPA meets northwest winter: this slightly darker IPA packs a smidge more heat to lift the winter chill. Winter Moon is brewed with American, British and Belgian malts. Organic New Zealand hops provide bitterness while American and British hops blend a complex spice finish.

Three Creeks Brewing Company’s Rudolph’s Imperial Red: Take Rudolph’s nose and multiply it exponentially – and you might get to the brightness of this Imperial Red. This big, dark holiday beer is due out just before Thanksgiving. It is about nine percent alcohol and features a hoppy balance with a delightful aroma. Enough to guide the sleigh, we’d say.

So raise a glass and toast the joys of the season with a local brew – there are plenty to choose from. Cheers!
