Penny’s Nacho Casserole
This is a very simple recipe that can be easily altered or customized. You can use almost
any of our salsas that you choose, depending on the flavor profile you want.
Ingredients :
• 2 Boneless, skinless Chicken Breasts, cut into chunks
• 1 large Bell Pepper, diced
• 1 ½ cups Refried Black beans or whole Black Beans (can substitute pinto beans)
• ½ Bag Penny’s Tortilla Chips (blue or yellow corn)
• 1 cup Penny’s Pico De Gallo - can substitute any other flavor – Mild, Medium, Hot, Black Bean, Restaurant Style
• 1 Teaspoon Cumin
• 1 Teaspoon Garlic Powder (or fresh minced garlic)
• 1 Teaspoon Onion Powder (or fresh chopped onion)
• 1 cup shredded Mexican Style Cheese
• 1 cup Queso Fresco
• ½ cup Black Olives
• 1 Teaspoon Olive or Vegetable Oil
• Sour Cream (optional)
• 8 x 8 or 9 x 9 glass baking dish
Step 1 :
o Preheat oven to 350 degrees o Cut up the chicken breasts into small
pieces/chunkso Heat up a small amount of Olive oil in a pano Add Chicken, Cumin, Onion and Garlico Cook Chicken chunks thoroughlyo Add diced Bell Pepper and Black Oliveso Add Penny’s Pico De Gallo or other favorite

Step 2 :
o Spray the pan with non-stick cooking spray
o Layer the Tortilla chips evenly overthe bottom of the pan
o Spread refried or whole beans over the chips
o Crumble the Queso Fresco over the beans
o Add some of the chicken, bell pepper and olive mixture in a layer over the beans
o Put a layer of Mexican style shredded cheese on top of everything
o Add another layer of chips and repeat until you are within an inch of the top of the pan.
Step 3 :
o Bake at 375 degrees for 15-20 min. or until all cheese is melted and starts to brown on the edges
o Serve with optional sour cream, hot sauce or add your favorite fresh salsa to the top
