Beef Stroganoff
1 tablespoon butter400g beef rump steak, sliced1 onion, finely chopped300m beef stock1 tablespoon tomato pureeSalt&pepper
1 tablespoon olive oil300g small button mushrooms1 tablespoon plain flour1 tablespoon Dijon mustard1OOml neutral Calogen
In a large, non-stick frying pan, melt half the butter with hal f the oil.Increase the heat, then quickly sear the beef n batches until brownedon both sides. Remove the meat and set aside. Repeat with themushrooms, then set aside.
Add the remaining butter and oil to the pan and soften the onion for afew minutes. Stir in the flour for 1 minute, then gradually stir in thestock. Bubble for 5 minutes until thickened, then stir in the mustard,puree, Calogen and seasoning. Heat for 1 minute more and thenreturn the beef and mushrooms to the pan.
Serve the creamy stroganoff with pasta or mashed potato(and even try a little neutral Calogen in the mashed potato).
Sauces made Easy
White Sauce2 tablespoons butter190ml milkSalt and pepper
2 tablespoons flour60ml neutral Calogen
Melt butter in a saucepan. Add flour, salt and pepper. Gradually
add the milk and Calogen, stirring all the time. Whisk to removelumps and stir over a medium heat until sauce thickens. Cook for2-3 minutes.
Cheese Sauce - add 1 cup grated cheeseOnion Sauce - add 1 chopped, fried onionParsley Sauce - add 2-4 tablespoons chopped parsley
Gravy1 packet gravy mix50ml neutral Calogen
200m water
Make up the gravy according to the directions on the packet, butsubstitute the 250ml water for 50ml Calogen and 200ml water.

Soup with a Boost
This recipe is a favourite, as it's an easy way to bump-up thenutritional value of homemade or inned condensed soups.
Homemade soupAdd 100ml neutral Calogen to the soup along with 150ml milk. Stirwell to combine and heat gently - do not boil.
Tinned condensed soupSubstitute 1 can of water with y.. can neutral Calogen and % canmilk. Continue with instructions as stated on the can - do not boil.
Macaroni Cheese
2 tablespoons butter2 tablespoons plain flour1%cupsmilk
Salt&pepper2 cups macaroni elbows, cooked
1 small onion, finely chopped% teaspoon dry mustard% cup neutral Calogen2 cups grated tasty cheese
Preheat oven to 190·C. Cook macaroni as per instructions on thepacket.
Melt butter in a saucepan. Add onion and cook until clear. Stir inflour and cook until frothy. Add mustard. Gradually add milk, stirringconstantly until sauce boils and thickens. Add Calogen. Removefrom heat. Season with salt and pepper to taste. Stir in half thecheese. Add macaroni, stirring to combine. Pour mixture into anovenproof dish. Sprinkle over remaining cheese. Cook at 190·C for20 minutes or until golden brown and heated through.
