Beef Stroganoff 1 tablespoo n butter 400g beef rump steak , sliced 1 onion, finel y chopped 300m beef stock 1 tablespoo n tomato puree Salt & pepper 1 tablespoon olive oil 300g small button mushrooms 1 tablespoon plain flour 1 tablespoon Dijon mustard 1 OOml neutral Calogen In a large, non-stick frying pan, melt half the butter with hal f the oil . Increase the heat , then quickl y sear the beef n batches until browned on both sides. Remove the meat and set aside. Repeat with the mushrooms, then set aside. Add the remaining butter and oil to the pan and soften the onion for a few minutes. Stir in the flour for 1 minute, then gradually stir in the stock. Bubble for 5 minutes until thickened, then stir in the mustard, puree, Calogen and seasoning. Heat for 1 minute more and then return the beef and mushrooms to the pan. Serve the creamy stroganoff with pasta or mashed potato (and even try a little neutral Calogen in the mashed potato). Sauces made Easy White Sauce 2 tablespoons butter 190ml milk Salt and pepper 2 tablespoons flour 60ml neutral Calogen Melt butter in a saucepan. Add flour, salt and pepper. Gradually add the milk and Calogen, stirring all the time. Whisk to remove lumps and stir over a medium heat until sauce thickens. Cook for 2-3 minutes. Cheese Sauce - add 1 cup grated cheese Onion Sauce - add 1 chopped, fri ed onion Parsley Sauce - add 2-4 tablespoons chopped parsley Gravy 1 packet gravy mix 50ml neutral Calogen 200m water Make up the gravy according to the directions on the packet, but substitute the 250ml water for 50ml Calogen and 200ml water. ~ U T R I C I A Calogen Soup with a Boost This recipe is a favourite, as it's an easy wa y to bump-up the nutritional value of homemade or inned condensed soups.
