  • As we prepare to deck the halls with holly,Phoebe Seymour meets the man who knowsexactly what makes it the season to be jolly

    When you hang tinsel on aChristmas tree, pull acracker or get merry at theoffice party, do you everstop to think about why wecelebrate Christmas in the way we do?

    The Nativity is a huge part of Christmas,but the festival has slowly changed, adapting tomore recent traditions and customs tobecome the Christmas we know today.

    And what about our other traditions suchas Christmas trees in our homes, the idea that

    Christmases should be white and the originsof Santa Claus? Where do all these customscome from?

    Former University of Sheffield lecturerand author of The Christmas Book, Dr PatrickHarding has been demystifying our festivecustoms for the past 20 years.

    In his book, Patrick explains where allthese customs come from, but before we getinto all the weird and wonderful reasons whywe celebrate Christmas in the way we do, letsstart with the birth of Jesus

    The real meaningof Christmas

    The NativityThe accounts may have been slightlychanged over 2,000 years, but what I liketo do is see if there is any science to backthe nativity story up, says Patrick.

    It shouldnt come as much of a shockthat Jesus wasnt born on 25 December,nor was he born on what we think to bethe year 0AD. After much research, Patrickdiscovered that Jesus was actually born inSeptember 7BC.

    For Patrick, the most important partof the nativity story is the star, whichwasnt a star at all. David Hughes, anastronomer from The University ofSheffield, introduced Patrick to the idea oftriple conjunctions. These occur whenJupiter and Saturn align in the constellationof Pisces, creating a light that would havelooked like a bright star.

    The magi (or wise men) who followedthis star may have even realised thesignificance of this rare event, as Jupiterrepresents the king of the gods, Saturnsignifies the land of Palestine and Pisces isthe sign of the zodiac which representsthe Jews.

    Combine this with the fact that one ofthese triple conjunctions took place in7BC and that scientists have worked outthat Jesus was born between 8 and 6BC,and this fits Patricks theory.

    Of course, it sounds silly to say Jesuswas born in 7BC, but does it matter? I justlook at 25 December as Jesuss officialbirthday, a bit like the queen, says Patrick.

    Christmas before Christianity So why do we celebrate Christmas on 25 December? Those who think our customs are allcentred around Christianity may be surprised.

    The 25th is the most important day for a competing religion called Mithraism, says Patrick. Ifyou believe in the teachings of Mithras, your god is the sun and what I find interesting is that the25th is just after the shortest day. If you believe god is in the sun, you get a bit upset because yourgod isnt getting out of bed very early but as soon as it starts rising again, it means god is still there.So followers of Mithras may very well have looked out the window and said Our sun is risen!

    Roman Emperor Constantine followed Mithraism before converting to Christianity, but thedate and many other Christmas customs were carried over from other religious festivals. TheRomans would celebrate the god Saturn with a festival called Saturnalia from 17 to 24 December,a time of overeating (saturnus means plenty) and general boisterousness as well as a time forvisiting friends and exchanging presents.

    Santa, drugs and St Nicholass goldOver the years Santa Claus, Father Christmas and St Nicholas have all combined to create onebig fat figure in a red and white suit who delivers presents to children.

    When the Dutch immigrants landed in New York (originally New Amsterdam) in the 17thcentury, they brought Sinter Claes (or Sinterklaas) with them.

    The idea of Father Christmas started in Germany with the Norse god Odin, who wouldride an eight-legged horse through the sky and fill childrens boots with treats. And then therewas 4th century figure, Saint Nicholas, who originated in Turkey. Theres a story about a friendof St Nicholas who couldnt afford his three daughters weddings, explains Patrick. So, StNicholas throws a bag of gold through each daughters window. However, the youngest daughterhas her wedding in the winter. She shuts her window, so he climbs up onto the roof and dropsthe final bag of gold down the chimney.

    Lapland has also played a huge part. Tribes who made their living off reindeer in NorthernLapland would live in yurts with small openings to let in visitors and let out smoke. Whenpeople were ill, witch doctors would enter through these chimney-like entrances and delivergifts of healing. Patrick also explains why our modern day Santa is represented as merry.

    In Lapland you cant easily make alcohol because of the low temperatures, explainsPatrick. But they realised that the red and white mushroom is hallucinogenic and if you take it,you get the feeling that you are leaving your body and flying through the air ho, ho, ho!

    This may very well have triggered the colour scheme of todays Santa suit. Coca-Colacemented the image with a Santa wearing a red and white to match their logo.

  • Just like the ones I used to knowAs we move away from the nativity story and the meaning of Christmas and its customschanges generation by generation, are we losing sight of what its all about?

    I always say to people, Christmas never stays the same but I think thats why it has beenso successful, says Patrick. Even if we are not Christian we can celebrate it.

    Patricks years of research have done nothing to take the magic out of his familysChristmases. If anything, it has helped him not to take this often stressful time too seriously.

    My kids have left now. It is important to me and my wife as a family time, but if either ofour children wants to go to their prospective boyfriends or girlfriends families forChristmas, it doesnt bother us because one of the sad things I find aboutChristmas now is the arguments and the ill feeling that goes on.

    It shouldnt be like that, it should be a time when people relax andenjoy themselves, eat a bit too much, and drink a bit too much, so wetry to be laid back about it.

    So what is the true meaning of Christmas for Patrick?Christmas is a time when the difference between the

    haves and the haves not is very obvious. I think it is atime when one should reflect on the number ofpeople, especially up north, who are in need offood banks.

    Ive dedicated this book to my father-in-law,Jack Binney, who was every bit as generous asFather Christmas, and there are a lot of otherpeople who are generous and who give. Thething about St Nicholas is he gave withoutmaking a fuss about it. The daughters in the storydidnt know where the gold had come from.

    So dont be a humbug this Christmas. Bask inone of our many festive traditions and embrace yourinner Father Christmas. Whateverpart or version of the Christmasstory you choose to follow andhowever many years have goneby, the message remains thesame; celebrate in style and giveas much as you can to others.

    What a prosperous yearChesterfield has had andour employment figuresbear this out. For the firsttime since records beganthe towns job seekers allowance claimantfigures fell below the national average inAugust.

    I think that this year has been a turningpoint for the town, with so manydevelopments in the pipeline equating to morethan 1billion of investment taking placewithin the borough over the next 10 years.Much of this investment is already underwaywith contractors on site at ChesterfieldWaterside and Markham Vale. Following thecompetition of the first phase of housing atChesterfield Waterside, 2016 will see work onthe exciting second phase begin and work isexpected to begin on site at Peak in spring.

    The marketing and hard work during 2015is paying off, as I believe that Markham ValeBusiness Park has become the go-todestination for national and internationalinvestors relocating here and creatinghundreds of jobs, with more set for next year. Ipersonally find this very exciting for

    If you are entertaining friends and familythis Christmas here are some fabulousrecipes from Cocina, the award-winningSpanish themed restaurant inChesterfields Casa Hotel, to geteveryone in a party mood.

    With so many heavy meals to be eaten atthis time of year, its a relief to find a tastyalternative and be offered something light anddelicious especially when it proves to be theperfect accompaniment for a glass ofsomething sparkling. This is what makesSpanish-style tapas the perfect party food.

    Head chef Andy Wilson says: Tapas dishes,are in my opinion, the perfect food for acelebration, a cocktail party and especially aChristmas party. This is due to the nature oftapas, the main amount of work is done beforeyour guests arrive so you can also enjoy yourevening socialising with guests, rather thanbeing stuck in the kitchen all night.

    Due to the nature of their Spanish origin,tapas dishes can be served throughout theevening in either individual portions or in themore Spanish traditional of sharing platters sothat everyone can just help themselves. Thisencourages a laid back, relaxed feel to theevening, which everyone can enjoy includingthe host with the added bonus of less potsto wash at the end of the evening.

    Most Tapas dishes are very simple tocreate, but full of flavour. Dishes such as Pancon Tomate and Pimientos de Padron areincredibly quick and easy but both are sureparty favourites.

    Albondigas con tomate

    Albondigas con tomateServes 4IngredientsFor the albondigas (meatballs):Olive oil, for cooking226g (8oz) minced pork or beef50g fresh breadcrumbs3 cloves finely chopped garlic50g finely grated manchego cheese2 sprigs fresh thyme, picked and finelychopped15g hot paprikaSalt and pepper, to season1 beaten egg

    For the sauce:Olive oil, for cooking1 onion, peeled and finely diced1 stick celery, peeled and finely diced2 cloves peeled and chopped garlic1 medium-hot red chilli, deseeded andfinely chopped1 bay leaf100ml red wine2 x 400g tins chopped tomatoes

    Method1. Start with the sauce: in a saucepan, add asplash of olive oil followed by the onion,celery, garlic, chilli and bay leaf and sweat offuntil soft. Add the wine and reduce till thepan is nearly dry. Add the chopped tomatoesand simmer for 20-30 minutes.

    2. In a large bowl, add all the meatballingredients and mix either with a spoon orwith clean hands until the ingredients arecombined completely.

    3. Season to taste (Tip: fry a little of themeatball mix to check the seasoning andadjust to taste).

    4. Shape into 16-20 balls and place in thefridge for 20 minutes to firm up. When firm,put a pan onto the heat either use a pan bigenough to fit all of the meatballs in, or dothem in smaller batches. Add a little olive oiland fry the meatballs for a few minutes untilthey are nicely browned.

    5. Add the meatballs to your sauce, whichshould have started to thicken by now, andsimmer for roughly 20 minutes or until themeatballs are cooked through.

    6. Taste, and season accordingly. Serve eitherwith or without crusty bread.

    Pimientos de PadrnServes 4Ingredients400g pimientos de Padrn, rinsed in water60ml olive oil50g Maldon salt flakes

    Method1. This is an incredibly simple dish but alsoone of the more commonly available andtraditional tapas. Roughly one in ten of thepeppers are incredibly hot which makes this agreat dish to share with friends, as whensomeone eats one of the spicy peppers thereaction is normally quite hilarious.

    2. You want a good heavy-based saut pan. Getthe pan on your burner as high as it will go,and when the pan is hot, add the oil andstraight away add the peppers and the majorityof the salt. You want the pepper skins to blisterand colour to an even golden brown.

    3. As soon as the peppers are tender afterabout 3 minutes transfer them to yourserving dish and scatter with the remainingsalt. They are ideal with cold beer, as this is atrue bar tapas.

    Pan con tomateServes 4Ingredients4 slices crusty bread or baguette (slightlystale is fine)1 clove peeled garlic2 very ripe vine or plum tomatoes, at roomtemperatureExtra virgin olive oil, to serveSalt, to season

    Method1. Slice and toast the bread not too thinly and rub generously with the raw garlic.

    2. Cut your tomatoes (which should be atroom temperature to improve the flavour) inhalf and rub the cut side across your toastedbread, squashing and rubbing in the tomato asyou do so.

    3. Drizzle with olive oil, season with a littlesalt and serve.

    Cajun calamariSeves 4Ingredients2 crushed garlic cloves100ml good quality mayonnaise20g chopped parsley 12.5g baking powder25g Cajun seasoning150g cornflour (100g for thebatter, 50g for coating the squid)400ml ice cold soda water500g baby squid, cleaned andsliced into rings 1 lemon, cut into quarters

    You will also need:A deep-fat fryerRapeseed oil, for cooking enough to fill the fryer

    Method1. Mix the garlic, mayonnaise and chopped parsleytogether and put into 4 small ramekins. In a bowl,add your baking powder, Cajun seasoning and 200gof cornflour. Pre-heat your fryer to 180C

    2. At the last minute, add the soda water to thecornflour mix and whisk until it has reached aconsistency similar to single cream. Dont overworkthe batter a few lumps are fine.

    3. Dust the squid with the remaining cornflour this will allow the batter to stick to the squid itself.Dip in the batter, remove it and allow any excessbatter to fall off the squid. Lower the squid gentlyinto the oil. Keep it moving at all times whilst in theoil, otherwise it will clump together and not becrisp. Fry the squid in small batches or the oil willcool down and make the squid soggy.

    4. Serve on plates with a lemon wedge and thedipping dish of garlic mayonnaise.

    Brotherly loves all very well buttheres nothing like a little siblingrivalry to get the competitivejuices flowing.So when you are taking your firststeps in the restaurant trade and big brotheralready runs a highly regarded restaurant, youcan be sure the stakes are that little bithigher.

    And sure enough, Habib Rahman, one ofthe team behind The Nawabs Brasserie, inDronfield, will admit to wanting to beatbrother Mizan, at his own game.

    Mizan runs Prithi Raj on Ecclesall Road,Sheffield, which has twice been named bestIndian in the restaurant awards run bySouthsides sister magazine, Westside.

    Its a friendly rivalry the brothers eachencourage customers to try the othersestablishment but theres no doubt thatNawabs is out to pinch a bit of the Prithi Rajglory.

    And the early signs are good. This timelast year, Nawabs was a somewhat jadedeatery housed in a former pub. But a classymakeover during the summer has given it anew lease of life. The red-carpeted entranceleads to a welcoming and comfortable barand the dining room feels luxurious, withbright fabrics and shining white table linencreating an up-market ambience thats a longway from your stereotypical post-pub curryhouse.

    And the menus been brushed up toowith some more familiar northern Indiandishes added to chef Neepur Alis repertoryof southern Indian specials, featuring theregions characteristically more astringenttastes. The downside of being Britains

    favourite foreign cuisine means it is unusualto find something truly unusual on Indianrestaurant menus, but Nawabs manages itwith some intriguing dishes and flavourcombinations on offer.

    We started traditionally enough withsome satisfyingly crispy poppodoms and animpressive pickle tray red chilli mangosauce and deliciously sticky, sweet raisinsauce were new ones on me.

    A luxuriously rich prawn puree, flavouredwith coconut, came inside a giant bowl ofdelicate pastry while my starter of subtly-spiced fish tikka got the meal off to a trulysizzling start.

    Despite the macho temptation and in theinterests of self-preservation, I side-steppedthe ze zaal chicken or lamb cooked withnaga chillies the worlds hottest and optedfor another unfamiliar dish, chicken shatkora,featuring a spicy combination of fresh chillies,ginger, tomato sauce and wild Bangladeshicitrus, which provided a real lemony zing.

    Across the table, Grill fangash came witha bowl of deep-red tamarind sauce addingsweet and sour tartness to slices of Bay ofBengal fish delicately flavoured with herbsand spices.

    Garlic naan and pilau rice were perfectaccompaniments and, demonstrating thekitchens preparedness to go off-menu ifnecessary, Habib recommended a special sidedish of thinly-sliced spiced potato as a sidedish.

    Its early days for the new-look NawabsBrasserie and theres a bit of catching up todo in the awards department, but I doubt itllbe long before theres a plaque or twoadorning the walls its got my vote already.

  • After blazing a Latin trail in the earlynoughties, Cubana are now firmlyestablished as one of the top partyvenues in the city.

    It was 15 years ago that Cubana burst onto the Sheffield nightlifescene, offering a burst of joyousHavana sunshine on a sleepy backstreet a short shimmy away from the city centre.Looking at all the multicultural restaurants, bars and music venuesin Sheffield, it is easy to take the wide variety of food, drink andsounds from around the world for granted.

    But it hasnt always been such a hotbed of diversity, and Cubana wasone of the trailblazers that helped breathe new life into Sheffield.Nowthe salsa venue is celebrating a landmark anniversary and it is as freshand vibrant as ever.

    First unleashed on an unsuspecting public in November 2000, Latinmusic, salsa dancing, spicy tapas food and colourful cocktails all blended,bringing people together in a fun and friendly setting.

    Now based in Leopold Square, the Latin beat pulses stronger than ever.

  • First StepsCo-owner Adrian Bagnolifirst got into Latin musicwhilst visiting a popularBrazilian nightclub calledthe Maracan in Florence,Italy. Adrian was amazedby the lively atmosphere

    and was convinced that this was exactly the kind of night outSheffield needed.

    Back then, the only type of dancing youd find couplesdoing would be the slow, smoochy style at the end of the night,in a cheesy nightclub, explains Adrian. The only Latin musicpeople knew was The Gipsy Kings and La Bamba. We decidedthe time was ripe to introduce a bit more culture to Sheffield.

    Adrian and friends Toni Dente and Gian Bohan started bylaunching a Viva Salsa night at local nightclub Club Uropa(formerly Isabellas), booking Brazilian DJ Marcus Vinicius and alive Brazilian band called Viramundo for the opening night.

    An astounding 700 people attended the first event in June1996, making Sheffields first salsa club night an undeniablesuccess.

    This really paved the way for us, says Adrian. CalendarNews came to cover it and the atmosphere was incredible. Itgave us lots of confidence and we started booking touringbands from Cuba and Latin-American bands based in Londonand Manchester.

    The final Viva Salsa took place in May 2000 and it was thenthat Adrian joined forces with Brad Charlesworth and KitoMorales to open Cubana on Trippet Lane.

    Cubana Mk. I Trippet Lane Getting the look of the venue right was just as important as creatingthe authentic tapas dishes and cocktails, so Adrian employed talentedarchitect and close friend Paul Brady, to capture a true Latin vibe.

    We offered something different people felt like theyddiscovered something great tucked away on this backstreet in the citycentre, says Adrian. There wasnt another tapas bar in Sheffield atthe time.

    Wed already built up contacts with the Latino community fromthe Viva Salsa night, so they were on board as soon as they discoveredwed be offering live music.

    Cubana had fast become a popular venue for couples, as well as agreat place for singletons to mingle. Many long-term couplescomment on how they first met or how they had their first datesthere proof that music is the food of love.

    Cubana LiveOne of Cubanas proudestmoments was hosting a nightat Music In The GardensFestival 2010 in the BotanicalGardens. Cubana Liveattracted a sell-out crowd ofover 3,500 people and helpedraise thousands of pounds for local charities.

    The extravaganza offered some of the most popular Latin artists,including Omar Puente and his band. The group arrived in chauffeur-driven 1957 Chevrolet convertibles and pulled up in front of thestage, before delivering an amazing performance.

    Special GuestsOver the years, Cubana have been honoured to welcome manymemorable guests. A visit from legendary Cuban band the Buena Vista

    Social Club in 2007 was certainly ahighlight and Adrian wasoverwhelmed when the bandreturned after their second SheffieldCity Hall gig in 2008.

    Not least, because the highlightof their second visit was whenBuena Vistas pianist Rolando Lunatook up the offer of playing theclassic Latin favouriteGuantamanera alongside the houseband on a piano specially hired in

    for the occasion. It was just incredible, the place

    erupted and the atmosphere waselectric it was a very special night,confirms Adrian.

    Once at their new premises atLeopold Square, Cubana was given the ultimate seal of approval whenDr Aleida Guevara, daughter of famous Latin American revolutionaryChe Guevara, visited for dinner and posed for a picture underneaththe portrait of her father.

    Other notable guestsinclude Panamanian boxerRoberto Duran, onceconsidered to be the bestpound-for-pound fighter ofall time, who visited in 2003and the cast of Lady Salsafollowing a performance atthe Lyceum Theatre.

  • Cubana Mk. II Leopold Square After 14 years building up a reputation as the most vibrantindependent Cuban bar in Sheffield, it was time to saygoodbye to Trippet Lane.

    Adrian discovered the two-level venue, formerly Platillosin Leopold Square, had become available. After a discussion

    with business partner Brad, they decided the time was rightto move. Adrian and his team enlisted the help of local artistPaul Staveley and Paul Brady once again to recreate Cubanastrademark style.

    Just four days after closing the Trippet Lane venue, thenew Cubana was opened.

    The final Saturday night at the old Cubana felt like aNew Years Eve party; people were looking forward to apotentially exciting future, Adrian recalls. We opened with a

    big party on Thursday 24 July. Over 400 people turned up and it was an incredible atmosphere.We knew right then, from everyones reaction that it was going to work.

    Now offering two floors for two different nights out, diners can enjoy the cosy upstairsarea or party downstairs. Cubana turn over around 300 diners on a Saturday night, many ofwhich stay all night.

    You could walk in at 7pm and end up staying until we close at 2am, says Adrian. Theresgreat flavoursome food, courtesy of Chilean head chef Fabrian Cruz who has been in charge ofkitchen affairs since day one, exotic cocktails, friendly customer service, chilled-out live musicand vibrant music to dance to all under one roof.

    Cubanas Salsa In The Square has also been a huge success. Since Cubana has taken overhosting the Bank Holiday Sunday extravaganza, attendance numbers have doubled and Adrianlooks forward to offering a live Cuban salsa band, salsa lessons, dance demos and more in May2016.

    So, after 14 years brightening up Trippet Lane and a successful first year adding a vibrantmix of Cuban flavour to Leopold Square, how will Adrian and his team be celebrating theirsuccess?

    Of course, there will be a big party, but Brad and I are going over to Cuba in January too,says Adrian. Its such a great place and well get loads of inspiration. Well be treating that asour 15th birthday present.

    Residence Nil Rate Band Clarifying the newinheritance tax rulechangesNick Rhodes, Associate Solicitor in the PrivateClient Team at Blacks Solicitors LLP guides us inupcoming changes to inheritance tax rules andwhat they will actually mean to you and me.

    Following the Tory election victoryin May, Chancellor GeorgeOsborne announced his intentionto introduce changes to theinheritance tax rules. Currently,each person can leave 325,000 which is freeof inheritance tax (the nil-rate band) andtherefore, a married couple (or civil partners)can pass on a total of650,000 betweenthem, free of inheritance tax.

    The Chancellor has announced that, witheffect from April 2017, a new residence nilrate band will also be available for whensomeone leaves their home to theirdirectdescendants (children and stepchildren, butnot nephews or nieces).In such cases, therewould be an additional tax-free allowance foreach person; initially set at 100,000, andrising up to 175,000 by 2020.

    This means there will be the potential formarried couples (or civil partners) to pass ona 1million estate, free of inheritance tax.

    However, when examined closely itbecomes clear that this residence nil rateband benefit will only be available to thosewith direct descendants, who have an estate

    (including a qualifying property) with a totalvalue above the inheritance tax threshold.

    Indeed the headline of1million free ofinheritance tax should be treated withskepticism, and is a change that is likely tolead to confusion and uncertainty.

    For example, if a property is sold during apersons lifetime in order to pay for theircare fees, many people will be questioning ifthe residence nil rate band will still beavailable. Also, people with discretionarytrusts in wills should check that these wouldstill be suitable under this new system.
