Spice-Rubbed Bacon withFried Eggs and Toast "Soldiers"

DirectionsAh...the smells of breakfast! If the smell of coffee and bacon doesn't wake your family and friends from a deep sleep and send them straight to the kitchen, I don't know what will!

Ingredients1 tbsp cayenne pepper 1 tbsp garlic powder2 tbsp dark brown sugar1/2 tsp black pepper1/2 tsp curry powder6 slices thick cut bacon1/2 loaf sourdough bread cut into 24 (2-inch long and 1-inch) thick rectangles or "soldiers"4 eggsSea saltPreheat the oven to 220º F.In a small bowl, add the cayenne, garlic powder, dark brown sugar, black pepper and curry powder and stir to blend. Spread the spice mix on a baking sheet and put it in the oven for 2 minutes. Meanwhile, separate the bacon

slices. Remove the pan from the oven and put the bacon slices, in a single layer, on the spice mix. Turn them over to lightly coat both sides of each slice

with the spice mix.Arrange the bacon in 2 large skillets and cook over medium heat until golden brown. Note: because of the brown sugar, the bacon is more prone to burning, especially if cooked too quickly over high heat. As the bacon is cooked, use a slotted spoon or spatula to transfer the strips to a paper towel to drain. Drain off any excess grease from the skillets but leave a small layer in each pan.Raise the temperature of the oven to 350 degrees F.Arrange the bread on a baking sheet and put it in the center of the oven. When the bread is toasted, remove from the oven and set aside.Return the skillets to the stove over medium-low heat and crack 2 eggs into each skillet. Do not overcrowd. Season them lightly with salt. Cook until desired doneness. Transfer the eggs to a platter and arrange the bacon and the toast around the eggs. Serve immediately.

The U.S. Poverty statistics for 2010 show that 22% of our children in America are now hungry and poor. Delaware’s poverty rate is about 1 in 8 people. Our food c l o s e t s a r e c o n s t a n t l y b e i n g emptied. Please plan to walk, if you can, or support someone who is walking! Registration is at Noon, and the walk starts at 1p.m. from New Castle U. Methodist Church. HOWTO carve a pumpkin by hammering cookie-cutters into itPlace a cookie cutter on the pumpkin and tap firmly with a rubber mallet until at least half of the cutter has pierced the pumpkin's shell. (If the pumpkin shell is thin, the cutter may be pounded all the way through the shell.)Remove the cookie cutter, using a needle-nose pliers if needed.With a small serrated knife (or the serrated saw from a pumpkin carving kit), follow the pattern made from the cookie cutter to cut out the image, making sure to cut all the way through the shell.

Preservation Delaware and the City of New Castle are pleased to offer a slide-illustrated lecture by Richard O. Byrne, one of America's leading architectural conservators.  Mr. Byrne will recount the common pathologies that affect a building's well-being which if left unattended, can lead to avoidable damage.  Having inspected the Donald C. Banks Memorial Building. Mr. Byrne will illustrate how this building has suffered over the years and what will be necessary to return it to good health and thus make it once again a usable building in New Castle.Free and open to the public, but there is limited seating. To ensure seating, please call Preservation Delaware at (302) 322-7100.

SHALLOTSShallots are often thought to be another variety of onion, but they are actually a species of their own. They grow in clusters, where separate bulbs are attached at the base and by loose skins. The shallot has a tapered shape and a fine-textured, coppery skin, which differentiates it from onions. Shallots were first introduced to Europeans during the 12th Century. Crusaders brought them home as “valuable treasure” from the ancient Palestinian city of Ascalon.
