  • Pumpkin BreadIngredients: 2 cups all-purpose fl our, spooned into measuring cup and leveled-off , plus more for greasing the pan ½ tsp of salt ½ tsp of baking powder 1 tsp of baking soda 1 tsp of ground cloves 1 tsp cinnamon 1 tsp of ground nutmeg 2 cups of sugar 1½ sticks (¾ cup) of unsalted butter, softened, plus more for greasing the pan 2 large eggs 1 15-ounce can 100% pure pumpkin

Directions: 1. Preheat oven to 325° F. Generously grease two 8½” x 4½” loaf pans with butter and dust with fl our (or use a baking spray with fl our). 2. Combine fl our, salt, baking powder, baking soda and spices in a bowl; use a whisk to mix well and set aside. 3. In a large bowl of an electric mixer, at medium speed, beat butter and sugar until just blended. Add eggs one at a time, beating well after each addition. Continue beating until very light and fl uff y, a few minutes. Beat in pumpkin. The mixture might look grainy and curdled at this point - that’s okay. 4. At low speed, beat in fl our mixture until well combined. 5. Turn batter into prepared pans, divide evenly and bake for 65-75 minutes or until cake tester inserted comes out clean. Let loaves cool in pan about 10 minutes, then turn out on wire rack to cool completely. (If the loaves stick, run a plastic knife around the edges of the pan to loosen them.) 6. Fresh out of the oven, the loaves have a deliciously crisp crust. If they last beyond a day, you can toast individual slives to get the same fresh-baked eff ect.
