Peach, mint and elderflower granita Preparation time: 15 mins plus overnight freezing Cooking time: 10 mins Serves 8

7 whole fresh peaches 1¾ cups caster sugar1½ cups water ¼ cup elderflower cordial¼ cup mint leaves, plus extra

to serve

1 Put 6 whole peaches, sugar and water in a medium saucepan set over a medium heat. Cook for 8-10 minutes or until peaches have softened. Peel and discard skin. Remove stones and discard. Put peach flesh, cooking liquid, cordial and mint leaves in a food processor and blend for 1-2 minutes or until smooth.

2 Transfer peach mixture to a deep stainless-steel container and freeze overnight or until firm.3 Slice remaining peach into 8 wedges. Scrape out granita with a fork into 8 serving glasses. Top each with a peach slice and extra mint, to serve.

Coconut and coriander prawns with lemon mayonnaise Preparation time: 30 mins plus 20 mins chillingCooking time: 20 minsServes 6

½ cup plain flour1½ cups fresh breadcrumbs1 cup moist coconut flakes1kg green Aussie banana prawns,

peeled, deveined, tails intact2 eggs, lightly beaten

½ cup vegetable oil½ cup whole-egg mayonnaise2 Tbsp chopped coriander,

plus extra leaves to serve Finely grated zest and juice of

1 lemon, plus cheeks to serve

1 Put flour on a plate, and season. Combine breadcrumbs and coconut on a separate plate. Dust prawns in flour; shake off excess. Dip prawns into egg, 1 at a time, then toss in breadcrumb mix; press firmly to coat. Refrigerate for 20 minutes.

2 Heat a little oil in a large frying pan over a medium heat. Cook prawns, in batches, adding more oil when required, for 2-3 minutes each side or until golden brown. Transfer to a plate lined with paper towel, to drain. 3 Put mayonnaise in a small bowl. Add coriander and lemon zest and juice, and stir to combine. Serve prawns with lemon mayo, extra coriander and lemon cheeks.

Chilli jam glazed hamPreparation time: 30 mins Cooking time: 2 hours 5 mins Serves 20-25

¹⁄³ cup chilli jam paste 2 cups Bundaberg ginger

beer ¾ cup brown sugar Juice of 1 lemon8kg full leg ham Fresh bay leaves and

rosemary sprigs, to decorate

Pearl barley and feta salad (from deli counter)

1 Preheat oven to 170°C. Line a large roasting pan with foil. Put chilli jam paste, ginger beer, sugar and lemon juice in a small saucepan set over a medium heat. Cook, stirring occasionally, for 5 minutes or until slightly thickened.2 Cut rind from around shank of ham, 10cm from knuckle. Using your fingers and starting at base, carefully remove skin. 3 Put ham in prepared pan and brush with glaze. Bake for 2 hours, brushing with glaze every 30 minutes, until golden. 4 Slice ham. Wrap shank in muslin and secure with a ribbon. Tuck a bunch of bay leaves and rosemary under ribbon. Serve with pearl barley salad.


Rolled roast turkey breast with cream cheese, bacon and basil stuffing Preparation time: 25 minsCooking time: 1 hour 10 mins Serves 8

1-1.5kg turkey breast1 Tbsp olive oil 1 onion, diced2 cloves garlic, crushed150g bacon, rind trimmed,

chopped 125g cream cheese 2 Tbsp roasted pine nuts¼ cup basil leavesGravox gravy, to serve 100g mixed salad leaves Ocean Spray cranberry

sauce, to serve Mexican bean salad, to

serve (from deli counter)

STEP 1 Preheat oven to 180°C. Butterfly breast through centre, without cutting all the way through. Open out. STEP 2 Lay out breast, skin-side down, between 2 sheets

of baking paper. Using a rolling pin, bash breast until flattened and surface is even. STEP 3 Heat oil in a frying pan over a medium heat. Add onion and garlic, and cook for 5-6 minutes or until soft. Add bacon and cook for a further 5 minutes. Remove from heat; transfer to a bowl. Add cream cheese and pine nuts, season and stir to combine. STEP 4 Lay stuffing mix down centre of breast. Top with basil. STEP 5,6 Starting from 1 long side, roll up breast, tucking in sides as you go. Secure with kitchen string. STEP 7 Put turkey on an oven tray lined with baking paper. Roast for 55-60 minutes or until cooked through. Make gravy following packet instructions. Slice turkey and serve with salad leaves, cranberry sauce, gravy and bean salad.

Cranberry, apricot and dark chocolate biscotti Preparation time: 30 mins, plus 20 mins chillingCooking time: 45 minsMakes about 60

1 cup caster sugar2¾ cups plain flour,

plus extra to dust½ cup flaked almonds 1 tsp baking powder1 cup whole cranberries1 cup chopped dried apricots ½ cup dark chocolate

chips4 eggs2 tsp vanilla extractFinely grated zest

of 1 lemon

1 Preheat oven to 180°C. Line 2 oven trays with baking paper. Put all ingredients in a bowl and, using a wooden spoon, stir to combine. (You may need to use your hands to bring everything together.) Turn out dough onto a lightly floured surface. Roll out and shape into three 25 x 5cm logs. Wrap in plastic wrap and refrigerate for 20 minutes.2 Remove logs from fridge. Remove plastic wrap. Put on 1 prepared tray and bake for 25-30 minutes or until golden

brown. Remove from oven and allow to cool completely.3 Reduce oven to 170°C. Using a serrated knife, slice logs into 1cm-thick slices. Lay slices flat on trays and bake for a further 10-12 minutes, swapping trays halfway through cooking. Cool biscotti on wire racks. Serve.

Fruit mince pie and caramel ice pops Preparation time: 10 mins, plus overnight freezingCooking time: nil Makes 6

2 x fruit mince pies, chopped 1L salted caramel ice-cream,

softened 125ml espresso coffee

1 Put mince pies, ice-cream and coffee in a large bowl; stir to combine. Pour into plastic ice-cream moulds and freeze for 1 hour. Insert a paddle-pop stick into centre of each ice pop. Return ice pops to freezer and freeze overnight.2 Run outside of each plastic mould under hot water and gently pull on stick to release ice pop. Serve on a bed of ice.


Tropical vanilla triflePreparation time: 30 mins, plus 4 hours chillingCooking time: nil Serves 8

1 x 85g pack orange Aeroplane jelly

1 x 450g Madeira cake, cut into 1cm slices

Icing sugar mixture, to dust

1 cup coconut yoghurt Pulp of 4 passionfruit ¼ cup Cointreau 2 mangoes, sliced 2 cups vanilla yoghurt 1 whole fresh coconut,

broken and shaved50g vanilla mini meringues

1 Make jelly following packet instructions. Pour into the base of a 2.5L trifle bowl. Refrigerate for 4 hours or until set. 2 Using a 5cm star cutter, cut shapes from cake slices; reserve offcuts. Dust stars with icing sugar. Spoon coconut yoghurt over jelly. Top with offcuts. 3 Combine pulp and Cointreau. Drizzle half over cake. Top with half the mango, vanilla yoghurt, remaining mango, stars, coconut and meringues. Drizzle with remaining pulp mixture to serve.

1½ cups plain flour¹⁄³ cup panela sugarFinely grated zest

of 1 lemon100g cold butter,

chopped1-2 Tbsp iced water2 large nectarines, seeded,

sliced into wedges¼ cup icing sugar, plus extra

to serve¼ cup almond meal1 vanilla bean, seeds scrapedMaple syrup, to serve1 Tbsp chopped rosemary Vanilla ice-cream, to serve

1 Put flour, panela sugar and zest in the bowl of a food processor. Add butter and pulse in short bursts until mixture resembles breadcrumbs. Add water and pulse until mixture just comes together to form a dough.2 Turn out dough onto a sheet of baking paper. Gather into a ball. Roll out to a rough 40cm circle. Put on an oven tray. Refrigerate for 20 minutes. 3 Preheat oven to 180°C. Put nectarine, icing sugar, almonds and vanilla in a large bowl; toss to combine. Pile into centre of pastry. Fold pastry over filling, closing any gaps where filling can leak out. 4 Bake for 35-40 minutes or until set and golden brown. Drizzle with maple syrup, sprinkle with rosemary and serve with ice-cream.

Melted butter, to grease1½ cups gluten-free

plain flour, plus extra to dust

1 cup coconut flour ½ cup pure icing sugar160g chilled butter,

chopped3 eggs, 1 whole,

2 eggwhites1 cup caster sugar½ cup water 1 cup gluten-free

lemon curd½ cup cherry jam

1 Preheat oven to 160°C. Grease a 12-hole ¹⁄³-cup-capacity muffin tin. Put flours and icing sugar in the bowl of a food processor. Add butter and pulse in short bursts until mixture resembles breadcrumbs.2 Add whole egg and pulse to combine. Immediately turn out dough onto a lightly floured surface. Flatten slightly, then roll out to 3mm thick. Using a 9.5cm round cutter, cut

out 12 rounds and use to line holes of prepared tin. Prick base of each pastry case a couple of times with a fork. Chill for 20 minutes. 3 Bake for 10-12 minutes or until pastry is golden brown. Cool for 5 minutes in tin, then turn out tart cases and cool completely on a wire rack.4 Put sugar and water in a small saucepan over a medium-high heat. Cook for 5-6 minutes until mixture is thick and syrupy. Fill each tart case with 1 Tbsp lemon curd, then top each with ½ tsp cherry jam. 5 Put eggwhites in the bowl of an electric mixer and beat to soft peaks. Pour in sugar syrup and beat for 4-5 minutes until meringue is thick and glossy; spoon onto each tart. Singe with a chef’s blowtorch for 10-15 seconds until golden brown. Serve.

hulled, quartered250g mascarpone cheese2 Tbsp brown sugar2 Tbsp Tia Maria liqueur600ml thickened cream Chocolate curls, to serveIcing sugar, to dust

STEP 1 Make jelly following packet instructions. Pour into the base of a 2.5L trifle bowl. Refrigerate for 1 hour or until just set.STEP 2 Preheat oven to 180°C. Grease and line a 20cm round springform tin with baking paper. To make brownie, put butter and chocolate in a saucepan. Stir over a low heat until melted; cool. STEP 3 Stir sugar into chocolate mixture. Add eggs, 1 at a time, beating with a spatula after each addition until just combined. Stir in 1 tsp vanilla. Add flour and stir until just combined. Spread batter evenly in prepared tin. Bake for 35-40 minutes. Cool in pan on a wire rack.STEP 4 Top jelly layer with three-quarters of the berries. Refrigerate for a further hour. STEP 5 Put mascarpone, brown sugar, remaining vanilla and liqueur in a medium bowl and stir until smooth. Add half the cream and gently stir to combine. Spoon mascarpone onto set jelly and smooth surface.

Spoon into a piping bag and pipe dollops onto brownie layer. Top with remaining berries and chocolate curls. Dust with icing sugar, and serve.

STEP 1 Begin by choosing your lights – check your local Woolworths for a great range. Remove lights from box, unravel and lay out on floor. Turn on lights to test all bulbs are working. Starting at top of tree, evenly position lights around tree. STEP 2 Remove garland from box. Unravel, then starting from top of tree, evenly position garland around tree. Hang your largest decos in place. To create depth, hang some decos further in on branches. STEP 3 Hang an even spread of feature ornaments, using them to fill gaps.STEP 4 Hang small decos in remaining gaps. Step back from the tree to check decos are well balanced. Adjust if necessary. Turn on lights, stack up the pressies and wait for Chrissie morning!
