TOFU TACOS WITH AVOCADO LIME CREME
INGREDIENTS
Lay out tofu on sheet pan, cover with another pan and place a heavy pan on top to squeeze out excess moisture, let sit for one hour
Make cabbage mixture, combine cabbage, olive oil, lime juice, lime zest and cilantro, season lightly with salt and pepper, keep cool for service
Combine avocado, garlic, yogurt and lime juice in food processor or blender, blend until smooth, adjust seasoning, keep cool for service
Dice tofu after excess water has been removed, place into bowl and toss gently with taco seasoning
In fry pan, heat oil, add tofu cubes and sauté quickly till lightly crisp and browned
Warm tortilla in pan or in microwave, spoon pan seared tofu in center of warmed tortilla, top with ½ oz. of shredded cheese, ½ oz. of Cole slaw mix and top with avocado crème and garnish with sliced scallion
TACOS 8 each flour tortillas, 8” 1 tbl olive oil 12 oz firm tofu, cut into ½” cubes 2 tbl taco seasoning 4 oz Pepperjack Cheese, shredded 1 each scallion, sliced thin
COLE SLAW MIX 2 oz Red cabbage, shredded 2 oz green cabbage shredded 2 tbl Olive oil, 2 each Lime juice, zest 1 tbl Cilantro, fresh chopped

AVOCADO CREME 1 each Avocado 2 oz Greek Yogurt 1 tsp Garlic, minced 1 each Lime, juiced
