Classic Holiday MealA popular American St. Patrick’s Day tradition is a

They substituted corned beef for their nativedish of Irish bacon and added cabbage since bothingredients were readily available and much cheaper.

Exploring aCharming Emblem

No symbol representsSt. Patrick’s Day more than thecheerful green shamrock. Sowhat is a shamrock, exactly? Is itsimply a three-leaf clover? Theanswer is a bit more complex.

The word “shamrock” comesfrom the Irish Gaelic wordseamrog, which means “littleclover.” However, there arehundreds of varieties of clover,and similar-looking plants, suchas wood sorrel and blackmedick, have been labeledshamrocks through the years.After the first references to theplant appeared in the16th century, botanists havetried to identify the true speciesof this seasonal sprig.

In the late 1800s, amateurbotanist Nathaniel Colgan askedpeople in counties across Irelandto send him samples of whatthey regarded as real shamrocks.Among all the specimensreceived, the two most popularversions of shamrock were whiteclover and yellow clover. Nearly100 years later, the study wasduplicated with similar results,again showing there is no oneplant species that can be called atrue shamrock.

Welcome SpringThe first day of spring is Sunday, March 20. The day marks the spring

equinox, when the sun shines directly on the Earth’s equator, and the length ofnight and day are nearly equal.

Wild World: Green Sea TurtleThe green sea turtle is named for the color of its skin, rather than the hue of

its heart-shaped shell, which is brown or olive-toned. After hatching, baby greensea turtles are only 2 inches long, but they can grow up to 5 feet and weighmore than 700 pounds! Young turtles feed on crabs, jellyfish and other seacreatures, but the adults live up to their name by maintaining a vegetarian diet ofsea grasses and algae. This endangered turtle is found in all warm tropical andsubtropical waters around the world, and it is the only sea turtle species knownto regularly come ashore to bask in the sun. Like all sea turtles, green sea turtlescannot retract their head or limbs into their shell.

Refinement on the RailsIn the mid-1800s, railroads made

traveling faster, but there was still alack of refinement in the new mode ofpassenger transportation. ThenGeorge Pullman came on board, andsoon his name became synonymouswith traveling in comfort and style.

Pullman was an entrepreneur inChicago, and after reportedly sufferingthrough an unpleasant overnight trainride, he came up with the idea to buildcomfortable sleeping cars for railroadsand started his venture in 1859.

There were a variety of Pullmanpassenger cars, but all were luxuriousand lavishly outfitted with carpeting,hand-carved woodwork anddecorative fixtures. Plush seatingconverted into sleeping berths withfine sheets and pillows. Some carsincluded private suites with sittingareas, bedrooms and bathrooms.The company’s dining cars rivaledthe best restaurants of the day. Toenhance the travel experience evenmore, Pullman also provided first-rateservice with porters who attended topassengers’ needs.

During its height in the mid-1920s,Pullman leased a fleet of nearly10,000 passenger rail cars. Thecompany’s legend of luxury endedwhen the last Pullman sleeper carcame off the Illinois manufacturingline in 1981.
