We had a band for our Cook’s Party and Pod Cookoff Friday night and they were back again on Saturday; we also had a great silent auction. What a family! Cole stole everyone’s heart. The cookoff committee would like to thank all of the people that helped with both cookoffs. We could not name them all in fear of leaving someone out so you know who you are and we could not do it without you. A Big Thank You to All. Also, thank you to the cooks for coming out to cook with us. So mark your calendar for next year’s cookoff and come join the fun. cookoffs the, TALL IN TEXAS POD COOKOFF benefiting the Mavericks Girls andBoys Club on Friday night and the TRI-STATE OPEN CHILI CHAMPIONSHIP onSaturday benefiting the Make-A-Wish Foundation. They were both a success with 68cooks for the Pod cookoff and 131 for the Open. We had cooks from Oklahoma, NewMexico, and from several places in Texas. We had a band for our Cook’s Party andPod Cookoff Friday night and they were back again on Saturday; we also had a greatsilent auction. What a family! Cole stole everyone’s heart. Reflections from the ED This month, I would like to focus on the role our Regional Referees play in the CASIorganization. The CASI rules state that all cookoffs seeking CASI sanctioning must haveon site a CASI Regional Referee, CASI Area Referee, CASI Great Pepper, CASI official,or an authorized CASI Representative. A Regional Referee is responsible for all cookoffs in their assigned region; this is why itis the responsibility of the cookoff chairman to contact the CASI Regional Refereeresponsible for the location in which the cookoff is held. A list of Regional Referees can befound on the CASI website. The Regional Referee will assign themself, an area referee, orwork with the CASI Executive Director to find a CASI representative to serve as thereferee for a cookoff. If the cookoff is in a region where there is not a CASI RegionalReferee assigned, then the CASI Executive Director can appoint a CASI representative forthe cookoff.

The cookoff referee plays a critical part in the cookoff being sanctioned and the cooks getting their points.Referees are a consultant to the cookoff chairman and head judge and are there to observe the different functions(cooks meeting, registration, chili turn in, chili judging, tallying, marking cups, announcements, etc.) and maintain theintegrity of the CASI rules at the cookoff. Some cookoff chairmen think it is the responsibility of the CASIReferee to run the cookoff, but if this was the case it would be hard for a Referee to observe and be impartial inany necessary rulings. It is the referee’s duty to observe and report in writing to CASI any and all infractions infollowing all CASI rules. After the cookoff, the Referee becomes the cookoff official that is the liaison with the CASI Tally Master toinsure that the cooks get their deserved points for their cooking efforts. The referee must sign the official CASIResults sheet after winners are determined. They must in a timely fashion mail or fulfill the entry on the CASIwebsite of the results sheet, cook and showmanship entry list, and appropriate sanctioning fees. So the next time yousee a referee at a cookoff, shake their hand and thank them for their volunteer service to the CASI cooks and theCASI organization. I invite all CASI members to attend the Winter Meeting of the CASI Board of Directors which will consist of aboard workshop on Saturday, Feb 16, and a board meeting on Sunday, Feb 17. The meeting will be held at theIrving Elks Lodge, Irving, Texas. In closing, I would like to wish everyone a Happy Valentines Day and to leave a tip for anyone in New Orleansduring the Mardi Gras: If you’re standing watching a parade next to a bunch of old grandmothers dressed in highheels and playboy outfits, do not think your chances of picking up beads thrown from a Mardi Gras float are anybetter. They may be old, but they have fast feet…and the spikes on those heels….Ouch!!!!!

Chili, Charity, Fun and Chattering Teeth. It is winter and acting like it in many parts ofthe country. That makes it a great time to cook a bowl of red.

When you are in the store shopping for your cookoff items, think about the Casa Fiestafund raising program. Buy a few cans of beans and other items in the Casa Fiesta line. Wecan eat our way to providing scholarships to even more high school graduates deserving ofa chance to get ahead in life.

Also, when you and your Pod are choosing a charity for your next cookoff, think aboutthe CASI Scholarship Program. We have 70 Pods in CASI and if each one raised just $500each year at a cookoff, we could add $35,000 more into the Program. The Houston AreaPods have hosted cookoffs and contributed $5,000 in recent years. During the last 4 years,

the Program has received $6,000 as the beneficiary of the Canyon Lake BBQ & Chili Cookoff. Let’s challengeourselves to support on own charitable cause during our fund raising choices. Between Bruce Foods and yoursupport, this would be a great year to raise enough money to not only increase the number of scholarships but toconsider increasing the amount to each student. The amount has stayed the same since inception of the programand yet the cost of college has about doubled.

You are CASI! YOU can make things happen. Let’s put our focus in 2013 on making CASI a bigger and moreimportantly better organization.

In the months that immediately follow TICC each yearthere is a time for visiting CASI sponsors and surveyingthem on information to help us better perform. Aschairman of the sponsorship group, CASI sponsors aremy clients. It is my job to represent their interests andpromote our support. We have a highly diverse group ofsponsors. Many have products that fit nicely intoeveryday CASI routine and others are just there for usfinancially. Many have support services instead of aproduct that they put at our disposal. CASI members arealso sponsors. Obviously, you are not compensated foryour time. You only have the satisfaction of participatingin our success. No member should ever think that the

smallest act for CASI is not appreciated. We cannot impact our sponsors if we alldo not push for their brands and services. Remember that when you see them andone of our events and give them a sincere “thanks” for believing in us. And please,accept a sincere “thanks” from me for what each of you does for CASI.

The initial feedback I get from the 46th Terlingua International ChiliChampionship is that it was a tremendous success. We had the highestparticipation of sponsor representatives in our history. Banners, product samples,personal appearances and financial underwriting were evident at every activity onthe grounds. Local officials, businesses, and citizens describe have told me thatthey were very pleased with the event.

There are some areas of concern as befits any activity of this size. Theprimary purpose of the CASI Winter Workshop is to review the pros and cons,and set a course for the next year. Financials are presented and issues arediscussed while they are still fresh on the mind. The workshop is casual. It is anopen opportunity for the membership to give their input to the Board and CASI inan informal setting. Duties are allocated for the year and the quest for TICC 47

begins. The workshop is an opportunity for members and directors to bondtogether for the common good of the organization. There is never enough timeduring the year to adequately do this, so we need to make the most of our time. Iurge you to consider this opportunity to participate at ground level. Consideryourself a leader and jump in. There is a great deal of satisfaction in moving usforward. Every member has the ability to put their mark in our history book.

Cooking With CASIGreetings!

Once again I would like to personally thank all of youinvolved in organizing and conducting CASI sanctionedcookoffs. Your hard work and dedication is greatlyappreciated and because of you CASI continues to bring onnew promoters, judges, cooks, and members.

We continue getting positive feedback regarding thewww.CASICHILI.net website and calendar. You can viewscheduled cookoffs and even click on a map directing you tothe location. If you have not yet been to the website, goonline and check it out.

If you have a Cookoff you would like to schedule forApril 2013 your cookoff must be submitted for approval no

later than February 15th. Thanks to all of you for planning early and getting yourcookoffs submitted. Also, if you are emailing information regarding an upcomingcookoff, the email address is [email protected]

According to CASI Rules all CASI cookoffs must be advertised in the TerlinguaTrails before the cookoff takes place in order to be sanctioned. You run a risk of notbeing sanctioned if you submit your cookoff for approval during the month before yourcookoff if it is after the 15th of the month.

And as we discussed in last month’s Trails, more and more Pods are printing theirown forms which is a convenience for you and saves CASI postage. A majority of theGreat Peppers took cup tickets for the year with them at the Great Peppers Meeting.Once again, thanks to all of you who already have your cup tickets.

For those folks who do not have tickets and are expecting a packet the packets aremailed out the first week of the previous month. This is due to an increasing number of“lost packets” and duplicate requests. So do not be alarmed if you have submitted acookoff but have not received a packet. March Packets will be mailed the first week ofFebruary, and so on. If you have an exception and need your tickets earlier feel free toemail a special request and we will get your packet in the mail earlier.

It is truly an honor and a privilege to serve as one of your Directors and bestwishes for a successful cookoff!
