Hurricane Sandy re-minded us that we needto be prepared for poweroutages. The loss of pow-er could jeopardize thesafety of frozen food. Tokeep food safe, keep thedoor closed and controlthe temperature.
Penn State ExtensionFood Scientists say thata full freezer of food willprobably remain frozenfor about two days if thedoor is kept closed. Ahalf-full freezer can onlybe expected to keep foodfrozen for a maximum of24 hours. Check withthe utility company tosee how long it will taketo restore power. If it willbe more than one day,consider moving yourfrozen food to a freezerthat is working. Youmight have a friend orneighbor with extraspace in his or her freez-er. When your freezer isnot full, keep items closetogether — this helps thefood stay cold longer.Freezing water in milkcartons is an easymethod of filling space inthe freezer.
If another freezer is notavailable, use dry ice tokeep your food frozen.Find out ahead of timewhere you can purchaseblocks of dry ice; don’twait until the emergencyto know if dry ice is evenavailable in your com-munity. A 50-poundblock of dry ice will keepthe contents of a full 20cubic foot freezer frozenfor 3 to 4 days. Whenyou buy dry ice, have itcut into small enoughsizes to use. Regular icemay help but is not ascold as dry ice. Be sureto handle dry ice withgloves and keep the areawell ventilated.
What should you do ifthe food is thawed?Some thawed food canbe re-frozen, but the tex-ture will not be as good.Other foods may need tobe thrown away. Tem-perature is the key tosafety. Generally, foodsthat stay at 40°F or be-low can be safely re-frozen if the color andodor are good and thepackages show no signsof spoilage. Examineeach item separately. Aninstant read food ther-mometer can measurethe temperature of a food
if you are not sure that itis cold enough. Discardany packages that havebeen or are above 40°Fas they could be unsafe.Generally, if the pack-ages of meat or poultryhave ice crystals remain-ing, it is safe to refreezethem. Discard any pack-ages if juices fromthawed meat or poultrydrip on them. Refreezevegetables only if icecrystals are still present.Fruits may be refrozen ifthey show no signs ofspoilage. Thawed fruitsmay be used in cookingor making jellies andjams. If ice cream is par-tially thawed, throw itout because the textureof ice cream is not ac-ceptable after thawingand refreezing. Refreezecreamed foods, puddingand cream pies only ifthey were always at 40°For below. Breads, nuts,doughnuts, cookies andcakes can be refrozen ifthey show no signs ofmold growth.
Never taste food to de-termine its safety. Somefoods may look and smellfine but may containbacteria that can causefood borne illnesses.Dispose of spoiled foodsby sealing them in aplastic garbage bag orburying the food. And re-member, food that is notsafe for you is not safefor your pet.
If you anticipate apower outage, it’s a goodidea to run the freezerbetween minus 10°F andminus 20°F. The colderthe food, the more slowlyit thaws.
Here’s a test to deter-mine if the freezer is offwhile you are on vaca-tion and you don’t knowabout it. Put a few icecubes in a sealed plasticfreezer container. If youreturn and discover thatthe ice cubes have melt-ed and refrozen as a flatmass in the bottom ofthe container, you willknow that the power wasoff for an extended peri-od of time, that the foodhas refrozen, and that itmay not be safe to use.

So, you think Sharon Springs sole claim to
fame is its five different mineral water
springs? While it appears the mineral springs
baths are now mentioned only as “the good
old days,” the newest claim to fame is
“ghost.”
That’s right, “ghost.” This past week a
rather large group of ghost chasers invaded
Sharon Springs, visiting buildings, homes and
old hotels to hear goblin or ghost stories. Not
being a ghost believer, I do have to wonder if
the stink blamed on sulfur water is true or is
created by the living dead.
Have you ever pondered about what some
are willing to believe? As a point to ponder,
millions if not zillions of past and present
intelligent and maybe not-so-intelligent
people believe that certain houses are
inhabited by a ghost. Even a rocking chair sit-
ting next to an open window, with the wind
blowing, rocking all by itself could be proof
that Casper the friendly ghost or one of his
buddies is relaxing in that moving chair.
If some of those Sharon Springs ghost
hunters could be reached, maybe we could sell
them the old Canajoharie-Mohawk River
bridge.
If you are hunting for an opportunity to join
a “Believe if you can” group, turn your sights
towards Russia.
Back a few years ago Russian scientists,
members of the world-renowned Soviet
Academy of Sciences, presented a most-
shocking theory. They contended that the
moon, that is our moon — the one with the
man on it — may actually be a hollowed out
planetoid fashioned by some unknown alien
intelligence into a kind of space craft. They
suggest the space craft was steered into
orbit around the Earth and may have been
caught by gravitational force.
The Russian scientists claim that studies
indicate the moon may be hollow with an inner
shell of metal more than 20 miles thick, which
is really the hull of a huge space ship.
In 1976 American professor Dr. Jean
Solomon of MIT stated the moon might be
hollow. He declared that is a “frightening
aspect” because astronomers agree that a
satellite cannot naturally be hollow.
Dog admirers believe dogs are smarter than
cats. Yet sometimes we are given an
opportunity to wonder. In Fort Plain this past
Friday as I was driving around the village
commons, a lady was walking her little dog.
Properly tethered to a leash, I assume, so the
dog could be kept under her control. About 10
feet ahead, a cat was leading the way. The
cat would pause for a minute, look back to
make sure the leashed dog and mistress were
coming along. It appeared the little kitty was
the up-front, unleashed scout in the hunting
party. Chalk one up for cat lovers. My wife, a
cat lover, claims cats do not have masters.
They have servants.
A family member from Texas who has been
visiting for the past few days said, “Now I
commence to begin.” I wonder when he is
nearly finished, does he commence to stop? I
would never — or almost never — say Texans
are odd. They merely commence to do or say
something in an odd Texas way. Do you think
they direct their horse to commence? What’s
wrong with a good old-fashioned Northern
giddy-up? Maybe they commence to “whoa.”
Just think what an opportunity Texas
missed. If Texas had remained as an
independent country, we could have
purchased their oil products and paid
them twice as much as we do from other
countries.
I guess I will never understand why President
Obama is against, or at least was against,
building the oil pipeline from Canada to the
refineries in Texas. Does he actually believe
purchasing oil from halfway around the world,
transporting it by ships, makes more sense?
From what I read, between Canada, which is
part of the American continent, and our own
ability to drill for oil – offshore and on federal
lands, we could actually sell and export oil all
over the world.
Borrowing money from other countries —
to buy oil from other countries — is better
than having our own right here in the good old
U.S.A.? I never went to kindergarten or
Harvard. Maybe I missed out on some
advanced form of pondering.
In the summer of 1948, the Gallup poll
showed that Thomas E. Dewey was going to
win the Presidential Election. Harry S. Truman
won.
If you turn on your T.V. to any so-called news
program, you will certainly hear about a so-
called poll that shows either Mr. Obama or Mr.
Romney is winning. I think we should reject
their findings and have the weather people
offer a report on the Presidential election. On
any given day, they will report it will either rain
today or not. We could draw our own
conclusion and call it right. See — they would
report today’s poll indicates that Obama will
win or won’t win and to be fair to the
Republicans, they would say Romney will
either win or lose.
I believe I have figured out why the large
yesteryear sizes of gaggles of Canadian
geese are not flying over New York State.
They read a sign on the Canadian/New York
State border which reads, “Welcome to the
Second Largest Socialist Government in the
Western Hemisphere. You will be furnished
with most of your needs by the government in
Albany.” However, in smaller print it does say,
“You will be expected to pay property tax,
village tax, school tax, city tax, sales tax,
excise tax, gas tax, and several other taxes,
water and sewage fees, and if you fly over the
Thomas E. Dewey Thruway, watch out. They
may demand one of your drumsticks.”
We who believe in our Heavenly Father share
in a comforting dialogue. Regardless who wins,
he — our Heavenly Father – will still hold his
office. He is in charge of the entire world and
not just this country.
Remember to

friends, and
stranger with a
howdy and a smile.
That combination
brings happiness
wherever it goes.

Clinic provides hair-cuts and services to thecommunity, while help-ing students gain expe-rience
HERKIMER — At theHerkimer-Fulton-Hamil-ton-Otsego BOCES Cos-metology Clinic, makingan appointment for ahaircut at a discountedprice means that a localstudent will gain experi-ence with cutting hair.
Likewise, making anappointment for a pedi-cure means that a stu-dent will get more prac-tice giving pedicures.
Talk about a win-winsituation.
Senior students in thecosmetology program atHerkimer BOCES providea variety of services to thecommunity at the Cosme-tology Clinic such ashaircuts, manicures,pedicures, waxing, facialsand hair coloring usingspecial techniques suchas foiling.
Heather Logue, a seniorBOCES student from theDolgeville Central SchoolDistrict, said she appreci-ates the opportunity thatthe clinic provides her.
“This is a great way tolearn skills before even
going out in the work-place,” she said.
The clinic is open to allmembers of the localcommunity — by ap-pointment only. To makean appointment with theclinic, call 315-867-2043.The clinic is located atHerkimer BOCES at 352Gros Blvd. in Herkimer.
There is a range ofcosts for services such as$5 for nail art, $5 for oilmanicures, $7 for hair-cuts with styling and $15for foil hair coloring. Pro-ceeds from the clinic areused to help offset thecost of supplies used dur-ing the clinic.
Some of the servicesare complimentary forcurrent students in the12 Herkimer BOCEScomponent school dis-tricts.
All services are super-vised by Herkimer BO-CES cosmetology instruc-tors MaryBeth Napolitanoand Holly Rotundo.
The clinic includes a re-
cently renovated spaarea, where services suchas pedicure spas, facialsand facial waxing are per-formed.
New OPI Pure LacquerNail Apps and GelColorby OPI are now offered atthe clinic, which recentlygot in all the latest OPInail colors.
Recently, Herkimer BO-CES student MichaylaMower, a senior fromOwen D. Young, provideda pedicure for her moth-er, Jordanville residentStephanie Mower. Mean-while, BOCES student
Alyssa Lawrence, a seniorfrom the Ilion CentralSchool District, provideda pedicure for MichaylaMower’s sister, WasaylaMower.
“This is the first timeI’ve ever had a pedicure,”Stephanie Mower said.“It’s nice.”
Wasayla Mower added:“It’s relaxing.”
The treatment mightnot have been as relaxingfor Michayla Mower andLawrence, but the stu-dents said they were hap-py to have a spa to learntheir craft in.
“I think it’s very niceequipment to be using asa student,” MichaylaMower said.
Not far from the spa,Alyssa Volkmer, a seniorfrom the Herkimer Cen-tral School District, pro-vided a haircut for hergrandmother, Herkimerresident Jacki Smith.
Smith said the haircut
was her first visit to theCosmetology Clinic.
“I think it’s very nice,”Smith said.
Volkmer welcomed theopportunity as well.
“I think it’s good experi-ence to know what we’redoing before we go out toget a job,” she said.

week, and someone claimed that the tortilla chips wewere eating counted as a “whole-grain” food. I findthat hard to believe. Is that right?
A: It could be. To determine whether a food is“whole grain,” take a look at the ingredients on thefood label. You’ll find that many types of tortilla chipsand other corn-based snack chips list “whole-graincorn” as the primary ingredient. Whole-grain corn,like whole wheat or other whole grains, is indeed,well, a whole grain.
While this could mean the chips are a better choicethan a snack made entirely of refined grains, don’ttake that as permission to down a family-size pack-age. While the U.S. Dietary Guidelines recommendthat at least half the grains we eat should be wholegrains, most Americans eat a lot more grain-basedfoods than we need, period — often more than dou-ble what’s recommended.
So while it’s a good idea to replace the refinedgrains we eat with whole grains, it’s just as impor-tant to remember to keep total grain consumption incheck in the first place.
And it’s also important to take into considerationother factors that affect the overall healthfulness of afood: the amount of saturated fat, sodium and addedsugars, for example, as well as the number of calo-ries per serving.
Whole grains are preferred over refined grains for asimple reason: Calorie for calorie, they offer morenutrition. Whole grains include the entire grain ker-nel, which provides nutrients including iron, magne-sium, selenium, B vitamins and often dietary fiber.Refined grains, on the other hand, have been milledto remove the bran and germ from the grain — thisincreases their shelf-life and gives the grain a finertexture, but also strips them of most of their nutri-ents. Most refined grains are enriched with B vita-mins and iron to replace some of what was lost in therefining process, but enrichment can’t replace every-thing.
To eat more whole grains, choose:• Foods with the primary ingredient listed as a
“whole” grain, such as wheat or corn.• Whole-wheat bread, or bread that contains a
good portion of whole grain indicated by being at ornear the top of the ingredients list.
• Whole-wheat pasta.• Brown rice instead of white.• Oatmeal, rolled oats or whole oats.Terms such as “multigrain” or “stoneground” do

Some of the most com-mon “after-disaster”scams involve damagedone to trees. Seems sim-ple enough however it’simportant to considerBetter Business Bureautips for homeowners whosuffered tree damage inthe wake of the storm:
• Check with your in-surance company aboutpolicy coverage and spe-cific filing requirements.
• Check the BBB Ac-credited Business Direc-tory to find a businessyou can trust. Not onlyare these businessescommitted to honest andethical practices, butBBB has checked licens-ing requirements andshould something gowrong, these businesseshave committed to re-spond to your concerns.
• Take time to shoparound and get three es-timates. For large proj-ects, ask the tree servicehow many projects likeyours they have complet-ed in the last year. Ask forseveral local referencesthat are at least one year-old and follow through onchecking them.
• Verify with your localcity or town municipalityto determine if tree re-moval businesses are re-quired to be licensed/reg-istered to do work in yourarea.
• Check to see whetherthe business in questionis a member of any rep-
utable trade association,such as the NYS Ar-borists.
• Ask if certified ar-borists, who have profes-sional training and certi-fications, are on staff. Anexperienced arborist isparticularly important onprojects involving largetrees or removal of sub-stantial branches on es-tablished trees.
• Make sure each treeservice you are consider-ing has current liabilityinsurance and workerscompensation insurance.All certificates of insur-ance should be sent fromthe tree service’s insur-ance agency directly toyou. Otherwise, it couldbe a fraudulent certifi-cate.
• Require a written con-tract agreement with any-one you hire. Be suretheir name, address, li-cense number, if applica-ble, and phone numberare included in the con-tract. Read and under-stand the contract in itsentirety and don’t sign ablank contract. A copy ofthe signed contract is tobe given to you at time ofsignature. Do not assumethat tree stump removalis included in the con-tract if it is not specified.
• Once you have pickeda tree service you feelcomfortable with, neverpay for a tree removal ortree trimming project ofany kind until you are
100 percent satisfied withthe work. Pay by creditcard only when the job iscomplete. Paying by cred-it card provides some re-course should the job notbe completed as stated inthe contract.
• Although you may beanxious to get thingsback to normal, avoid let-ting your emotions getthe better of you. Don’t bepressured into making animmediate decision. Bewary of door-to-door so-licitations and check tosee if your community re-quires them to have solic-itation permits.
Ask how the job will bedone, and if they will per-form the work accordingto industry standards. Ifthey mention “topping atree,” “lion’s-tailing” or“using climbing spikes toprune a tree” the compa-ny does not follow indus-try standards. “Topping”is drastically cutting backthe major limbs of a treeto reduce its size. “Lion’stailing” is an extremestripping out of most ofthe interior branches of atree. Such practices caninjure or kill your tree.
Some techniques willbe presented as a way tosave money by removingmore of the tree at onetime. However a treepruned by one of thesemethods usually requiresmore expensive restora-tion work in the future inorder to save it.
Beware of a tree serviceif they:
• Don’t have printedmaterials, letterhead, bidforms, etc.
• Are vague about for-mal credentials as an ar-borist.
• Offer an unusuallylow price . . . at first.
• Only accepts cashpayments, and/or asksfor payment up front.
• Pressures you for animmediate decision.
• Offers you a discountto find other customers.

BBB encouragesconsumers to check withthe New York Departmentof Environmental Conser-vation for information onwhere debris may bestored. Remember, yourmain goal is to regainyour sense of normalcywhile doing so within theguidelines set by ourstate and federal agency.

The ceremony took placein the chapel at FoltsHomes with Peggy Cool,R.N., CNAinstructor/trainer, as facil-itator of the program. Theinvocation and benedictionwere offered by ReverendRoger Klossner. Welcomingand congratulatory re-marks to the students andtheir families were madeby Administrator FredScerbo and Director ofNursing Sherry Nagle, R.N.
Diplomas were present-ed to the following CNAclass graduates: Saman-tha Cristman, StephanieDolly, Tamra Doxtader,Brittany Makohen, JessicaMorra and June Trask.
The graduates were ad-dressed by Sherry Nagle,R.N., Folts Director ofNursing, who spoke aboutthe importance of “beingbrave” as a healthcareworker to make the rightchoice for the people theywill touch, speak to andwork with. She empha-sized the importance of
providing a peaceful envi-ronment for the residentsand how to continuouslybuild on their nursingknowledge to advance in

When many Americansthink of Thanksgiving,their thoughts turn to de-licious food. Turkey,stuffing, pumpkin pieand many other dishesmake Thanksgiving spe-cial but also can lead tofoodborne illness if notprepared, served andstored with food safety inmind.
Londa Nwadike, theUniversity of Vermont Ex-tension food safety spe-cialist, offers these tipsfor Thanksgiving foodsafety:
TurkeyBe sure to buy your
turkey from a reputablesource. Frozen turkeymust be thawed in the re-frigerator or in cold water,not on the kitchen count-er! In the refrigerator al-low 24 hours of thawingtime for every five poundsof turkey. In cold waterallow about 30 minutesthawing time per poundof turkey. Change the wa-ter every 30 minutes toensure that the outer lay-er of turkey will not getwarm enough to supportmicrobial growth.
Turkey and othermeats should NOT berinsed before cooking asthat will only spreadthose germs around thesink that can cross-con-taminate other foods. Anybacteria that might berinsed off the surfacewould be easily killed bycooking in the oven.
The turkey should becooked in a preheatedoven set at 325°F. Whencooking an unstuffedbird, you should plan ona range of approximatelythree hours for an eightto 12-pound turkey to ap-proximately five hours for
a 20- to 24-pound turkey.For a stuffed bird, planon an additional 15 to 30minutes of cooking time.
To determine if theturkey is safely cooked,use a food thermometerto check that the inner-most part of the thighand wing and the thickestpart of the breast hasreached a minimum tem-perature of at least165°F.
StuffingMany people love to eat
stuffing, but unfortunate-ly, microorganisms loveto grow in it as well.Cooking the stuffing out-side of the bird is thesafest method, but if youdo choose to stuff yourturkey, stuff it looselyjust prior to cooking andmake sure that the stuff-ing is moist. The stuffingalso should reach at least165°F.
Pumpkin piePies and any other
baked goods with fillingsmade of eggs and milk,including custard piesand cheesecake, must bebaked to a safe internaltemperature of at least160°F. Always refrigerateafter baking or purchase.
Egg dishesAny dishes containing
eggs, such as scallopedcorn, should be cooked toreach an internal temper-ature of 160°F.
Raw produceUse separate cutting
boards for chopping foodsthat will be eaten raw,not the same one thatyou use for meats. If pro-duce is not pre-rinsed,rinse carefully and scruboff any visible soil with aproduce brush.
LeftoversRefrigerate the stuffing
and turkey (with the meatremoved from the car-cass) separately in shal-low containers within twohours of cooking. Leftoverturkey will keep in the re-frigerator for three to fourdays, gravy and stuffingonly one or two days.Turkey can be frozen for
up to one month with noloss of flavor or safety.
Reheat leftovers until165°F or hot and steam-ing.
“If you are doing turkeytake-out, know your ven-dor,” Nwadike said.“Bring your purchasehome immediately and
refrigerate. When you re-heat, make sure the tem-perature of the cookedmeat reaches 165°F.”

Make your Thanksgiving a food-safe holiday
by Martha FilipicQ: I know I should eat breakfast, but I rarely do. Can
you explain why it’s so important? I’m always lookingfor ways to try to lose some extra pounds, and it seemslike a good idea to not eat when I’m not hungry, whichis typically in the morning.
A: On the surface, your habits make some sense.Nutritionists regularly encourage people to becomemore attuned to their inner hunger and appetite sig-nals, and not eating (or stopping eating) when yourhunger is satisfied is doing just that.
But this raises the question: Why aren’t you hungryin the morning? The whole reason the meal is called“breakfast” is because by eating it, you’re breaking thefast you’ve experienced overnight. Do you typically eata heavy dinner or have a high-calorie snack at night?Cutting back later in the day might be more effectiveat helping you lose those extra pounds than skippingbreakfast.
A new study sheds some light on why this might be.The British study, recently presented at the Neuro-science 2012 conference, focused on the differences inpeople’s brain activity when they skip breakfast andhow that affects their calorie intake later in the day.
For the study, researchers asked participants tocome in for two MRIs (magnetic resonance images, orbrain scans) before they had anything to eat that day.On one of their visits, they were given breakfast beforethe MRI; on the other visit, they weren’t. All were giv-en lunch after the tests.
The researchers found that when the fasting partic-ipants were shown pictures of high-calorie foods dur-ing the MRIs, the pleasure-seeking portion of the brainwas activated more strongly than when they had eat-en breakfast. The breakfast-skippers also ate more atlunch.
This finding supports other research that showsthat eating breakfast can reduce overall food intakefor the rest of the day.
In fact, an expert panel at the Institute of FoodTechnologists conference earlier this year reported
that studies of young people show that those whodon’t eat breakfast consume 40 percent more sweets,55 percent more soft drinks, 45 percent fewer vegeta-bles and 30 percent less fruit than those who do.
Breakfasts higher in protein, including yogurt, anegg (including egg in waffles or French toast) or evenhummus, for example, seem to have a stronger effect.
So, see if you can change your morning routine toincorporate a breakfast that includes some protein. Itjust might make a difference in helping you lose thoseextra pounds.
