carpe Diem is the carlton international life style magazine

editoforty years or so ago, early on in my professional life,

in bermuda, i had a lesson in communications from

a “wizard” in public relations. a promotion later, in

new York, i had lessons from a “demon” salesman

and finally, wisdom and guidance from a “knight”,

our vice president, marketing. armed with my new

found knowledge and limited experience, i felt the

confidence which goes with youthful unawareness

and the presence of mind to offer my services to take

over the marketing Direction of what was at the time,

one of the most important hotel groups in the world.

a certain recognition over the time i held that post,

led me to believe that, if i could do it for someone

else, i could surely do it for myself.

some years later, and with the relative success of

my endeavours, i decided to quit the london grey

and cold, for the french riviera to begin again, my

head bursting with potential business ventures. in the

process of developing the promotional plan for one

such idea, i discovered the magic word nobody in my

marketing career had taught me before… neW!

i was told to emblazon my documents, my advertising,

my p.r. campaign with the word neW. i followed the

instructions to the letter and reaped the benefit. in

reality, in business, very little is ever “new”. it is more

often just the rethinking of “old”.

nonetheless, i am using this editorial opportunity

of following the advice, received in france, by

announcing what’s new.

So what’s new?This is a new CARPE DIEM magazine, better we

hope than the last. not available for purchase, not

distributed to hotels, airports, waiting rooms and the

like, this magazine is intended for you, one of 5 000

recipients who, according to our statistics pass it on to

10 other readers on average.

which will mature in the coming months… your

2010 is an eventful year for the

journalists. in a few months

time, three successive events will

provide a feast for broadcasting

and the press: the Winter

olympic Games in vancouver,

the World cup in south africa,

and the film festival in cannes,

an event which, despite its annual

gathering, has nothing to envy

the other two in terms of media

coverage. each major event draws

over 4 500 special correspondents

representing 1000 newspapers

and journals, 300 tv channels,

around the world, occasionally giving voice to those who would otherwise

have none and recognition to the successful.the cannes film festival is a

truly great moment of freedom for the expression of the 7th art!

a missed opportunity

this spirit of tolerance and openness is deeply rooted in the embodiment

of the festival. it is seen as an event for everybody. it was in 1938 during

troubled times when part of europe lived under tyrannical rule, that the

venice film festival was undoubtedly the largest in the world.

benito mussolini and his followers took a keen interest in these awards

ceremonies. in a bid to please the italian dictator on this occasion, the jury

awarded prizes for a series of productions close to the heart of “il Duce”.

awards were given for “luciano serra, pilot”, a fascist propaganda film,

supervised by the Duce’s son, and “olympia”, one of the many eulogies of

nazism produced by leni riefenstahl, a powerful cultural figure during

the hitler regime.

this was too much for the democrats who readied themselves for action,

including philippe erlanger, a man of letters, art critic and senior official

in the ministry of education and fine arts. Disgusted, like so many

others by the venice awards ceremonies, he foresaw an alternative to the

venice festival; a republican equivalent: the cannes film festival.

things began to happen very quickly and a meeting was arranged for

the following year on the 1st september 1939. louis lumiere, father of

200 news agencies and 150 radio

stations. the 64th festival will be

no exception and for twelve days

from the 12th to 23rd of may, the

eyes of the world will be focused

on “la croisette”.

so what is the justification for

all this attention? the event

is in itself the spectacle! it’s all

around; imposing, glamorous,

spectacular, a red carpet upon

which the daily ceremony is

played out. international stars are

everywhere, dressed in the finest

designer gowns, tailor-made to fit

the celebrated bodies they cover

and wearing jewelry a maharajah

would envy.

it is the epitome of luxury, beauty

and fantasy. nonetheless, our

voyeurism should not allow us to

forget what cannes is all about: it

is more than just a celebration or a

fairy tale. it offers a unique window

of opportunity for artists from

cinema, graciously accepted the

role of president of the event

“to encourage the development

of cinematographic art in all its

forms and to create a spirit of

collaboration between all film

producing countries.”

the first official selection was

finalized and “the Wizard of

oz”, by victor fleming was

among the films scheduled. the

month of august saw a host of

american stars preparing to

leave for cannes. tyrone power,

Gary cooper, annabella, norma

shearer and even George raft,

together with various heads

of metro Goldwyn mayer, all

embarked on a transatlantic liner

bound for europe. upon their

arrival, however, on the official

opening day, they were forced

to turn back. in the early hours of

the morning, German troops had

invaded poland. the festival was

dead before it had begun.

times changethis turned out to be only a brief

interruption and in 1946, from

the 20th september to the 5th

october, the croisette finally

played host to its film festival.

this premier event went well

and although it didn’t quite make

headline news in the major

newspapers, its participants were

seduced by the good nature and

ambience of the occasion and

made a date for the following

year. this time for certain, a star

would be born!

a meeting place for film producers and distributors. attended by 10,000

people, this wealth of feature films, (more than 1000 films screened

in just 12 days) represents twenty percent of the global film industry

turnover.

something eternal

cannes still retains its magic. a magic some say it owes to its spectacular

side. but more than that. if cannes still evokes so many dreams today,

it is thanks to its reputation, such good times, sometimes stormy, more

often peaceful, which enchant the collective memory. eternal images…

cannes, is the young brigitte bardot posing for her first pictures and

Grace Kelly leaving the carlton hotel to meet he who was to become

her prince charming. cannes was the “new Wave”, lead by Jean luc

Godard and francois truffaut who in may 1968, succeeded in canceling

the festival in protest of the removal, by the culture minister, of henri

langois, an extremely popular and respected figure in french cinema,

from his position as head of the cinematheque francaise.

more than 60 years on, the world

of cinema still comes together in

cannes. the ambience now has

changed somewhat. actors can no

longer stroll quietly and unseen

along the croisette. instead,

they are chauffeured around in

limousines or accompanied by

bodyguards. the ‘wannabees’, the

rising starlets have deserted the

beaches of the croisette in the

hope of being discovered by some

film producer. the thousands of

festival goers who throng the

palais des festivals and the luxury

hotels no longer speak only of

art. they also discuss business in

the aisles of the film market, a

trade show established in 1959 as

it was a young austrian body builder, flexing his muscles on the sandy

beaches of the croisette in front of the photographers who, several years

later was to become the world famous actor arnold schwarzeneger and

eventually Governor of california.

it was french star isabelle adjani in dispute with photographers, who in

1983 turned their backs on her, as she climbed the red carpeted steps of

the festival hall, to protest her refusal to submit to their photo calls.

it’s an entire theatre whistling at maurice pialat, winner of the palme

d’or in 1987 for his controversial film, sous le soleil de satan. it was

the strap of sophie marceau’s dress, gently sliding from her shoulder,

revealing to all, the breast that should not have been seen. cannes is

sharon stone, for whom the steps of the palace coincided with the

screening of basic instinct and the enthusiastic acclaim it received taking

her from unknown to Queen of hollywood overnight. only the cannes

festival could recount such a fairy tale.

Eternal icon in the fashion world, the

incomparable “Coco” Chanel invented

her famous “N° 5” in 1921. A totally

original perfume, reflecting the

unparalleled genius of this designer

who liberated women and their

looks. She gave them a perfume

which is still the biggest seller in

the world and revolutionised both

the saga of the perfume industry

and the history of seduction. And

it was from the town of Grasse

that this legend deployed its

wafting fragrance to all four

corners of the world.

Chanel’s “N° 5” has bewitched

several generations of women.

With its unchanged formula

and a bottle of pure design, this

divine perfume has survived

many wars, outlived many fads,

subjugated many rivals and sailed

through many world crises. It’s

the perfume of the century, a real

legend which has never lost its

youth. Like all leading perfumes,

Chanel’s N° 5 is based on

ingredients of outstanding quality.

Though some have become rare

and costly, the firm has never

made any compromise to alter

its composition. Chanel thus

continues to use jasmine which

chanel n°5: jasmine in a state of «Grasse»

only comes from Grasse, the same that was used when

it was created in 1921. This flower so typical of the

Côte d’Azur has an olfactory value unique throughout

the world: it is one of the most expensive plants to

cultivate of all those used in perfume-making. To

avoid its probable disappearance and maintain its

cultivation so essential for N° 5, Chanel became

directly involved in Grasse’s jasmine production.

In 1987, a contract for exclusivity was set up

with the Mul family, a producer going back five

generations in the world capital of perfumes.

Their fields of jasmine and roses are thus

exclusively cultivated by the famous fashion

and fragrance house, and ploughed by two

draught horses which achieve what no

tractor could ever do in their place. The

“rose de mai” which also forms part of N° 5’s

composition grows on rosebushes without

worn by the world’s most beautiful womenany thorns. Picking is a race against time and has to be done early in the

morning as by noon the rose has already lost half of its olfactory power.

As in the case of jasmine, Chanel controls its production in Grasse,

directly and exclusively.

This same control is then exercised at each stage in production, right up

to the final phase of sealed packaging for N° 5 extracts, a tradition that

Chanel is the very last perfumer to perpetuate. As for the N° 5 bottle, it

has become a symbol of refinement and femininity. In 1959, it made its

entrance into the Metropolitan Museum of New York and, in the ’sixties,

Andy Warhol, who appropriated cult objects and figures of the time in

the interest of art, made it the star of one of his series of works. Chanel

N° 5 was again innovative in being adopted by the world’s most beautiful

women: Candice Bergen, Susy Parker, Ali MacGraw, Lauren Hutton,

Catherine Deneuve, Carole Bouquet and Estella Warren. And no-one has

forgotten Marylin Monroe’s answer to a journalist who asked her in 1954

what she wore in bed: “Just a few drops of Chanel N° 5”!

Queen of the markets in Richerens, Carpentras or Aups, diva of the soil

of Provence: the truffle, which the famous Italian composer Gioacchino

Rossini described as “The Mozart of Mushrooms”, offers no alternative,

you either love or hate the heady woody aroma it exudes as you might

expect or find it, according to its detractors, “overpowering”.

But no sacrifice will deter those who adore it. The Kings of France, for

example, had them delivered to Paris by stagecoach. A custom which

began with Francois the 1st who, having tasted this mushroom in Spain,

when he was a prisoner of Charles V, commanded that it be kept in the

royal kitchens on his return to France. Henry IV on his part, aware of its

aphrodisiac qualities, served it to his favorite ladies at dinner.

Prophet in his country France is fiercely Republican, yet the truffle, some types of which are

considered a dish fit only for a king, are traded for thousands of dollars

kingdom of their own in Provence:

Lorgues is a small, vineyard lined

town situated in the eastern Var.

It was here, thirty years ago that

a young country boy set up his

kitchen. Virtually unknown in

his little piece of countryside on

the outskirts of town, Clement

Bruno struggled for years to make

a living. Then, twenty years

ago he found his true vocation,

putting his talents and hardwork

into the service of the truffles

that he loves so much. “It comes

from my youth,” he confides. “In a

modest home with my mother and

grandmother, we lived a simple

life. Often in winter, as we had

chickens and knew where to dig

up some mushrooms, we used to

flavour our scrambled eggs with

truffles. It was all quite normal.

I even ate the leftovers for lunch

on a slice of warm bread. And

yet at that time, believe it or not,

the only thing I used to dream

about was biting into a piece of

chocolate!“

The wheel has turned full circle

for Mr. Bruno. Today, with the

help of Samuel, his eldest son, he

presides over a star rated restaurant

and six beautiful bed and breakfast

establishments, nestled in a quiet

Eden. This paradise, adorned with

numerous sculptures from Tosello,

De Lucchi and many others,

welcomes not only, stars, kings,

billionaires or ministers. All come

to share this quasi-religious event,

a cult of gourmets to whom Bruno

plays host with a rare devotion.

The house of the prophet knows

no ecumenism. Here, there is

only one god: the tuber. It reigns

supreme, an enlightened despot on

all menus, foie gras, crayfish and

steaks ,used uniquely to make it

The truffle in all its formsEach year, Clement Bruno and his staff cook five tons of truffles. A world

record without doubt! The tuber melanosporum, pride of Provence,

accounts for 80% of French production. Praised in Antiquity by Pliny and

Theophrastus the 4th century philosopher, the tubercle, which is harvested

between November and March, is named the “black diamond”, not for its

high price but for the shapes on its surface when cleaned. The restaurant

in Lorgues also offers the magnatum tuber, better known as “white Alba” or

“Piemont”.

Extremely rare, it is highly appreciated for its delicate garlic flavour. But

the chef from the Var doesn’t just work with these two jewels. He also

treats his customers to a selected variation on the theme. His admirers can’t

resist asking that quintessential question “How?”

“How” is my secret! All I can say is that it is alchemy. Indeed, like a

parfumier who combines different scents, I make my recipes with eight

different species of truffle. Truffles such as Tuber brumale, Tuber aestivum

(called the summer truffle), or Tuber borchii (also known as “Bianchetta”).

“And the result is simply delicious, the simplest dishes taste fabulous. In

the inimitable style which has made Restaurant Bruno famous: take half a

potato cooked in its jacket, coat generously with truffle cream, add a few

shavings of truffle. The taste is out of this world!”

The “rosés” of Provence are the

character and the accent of the

South. And they make you rosy

with pleasure!

Courgettes, aubergines, tomatoes, black olive-paste, red-mullet and

Mediterranean sea-bass, supions, sea-urchins, violet clams: a market in

Provence is worthy of a still-life, painted by an Impressionist master.

Colours, savours and smells transform it into a gourmet feast. The soil of

Provence is bountiful and its wines are perfect accomplices for this natural

cuisine. The most popular colour? Rosé: it alone accounts for 80% of all

wine production in Provence.

Rosé wine is one of the oldest in the world. It’s also the most difficult to

succeed, because it needs careful attention, like milk on the hob… Rosé is

made with red grapes. When the fruit is pressed, the skin soaks in the juice.

But rosé only takes a few hours to obtain its colour, structure and aroma.

Vigilance, rigor and subtle sensitivity are the watchwords which guarantee

quality.

To each his methodAh, rosé! A total paradox… A wine that is simple and pleasant to drink, but

complex and delicate to produce. For, contrary to general thinking, it’s not

a blend of white and red. That would be too easy! And, what’s more, illegal!

Unlike many of its European neighbours, France in fact outlaws this type of

procedure. Except for pink champagne, to which a few drops of red wine

are added to give it a romantic hue, all rosé wines in France therefore rely

on two different techniques, more and more highly developed: “saignée”

(bleeding) and “pressurage” (pressing).

While elsewhere in France, each region favours one of these two methods,

Provence makes use of both. Each one has its fans, depending on the

character one wants to give the wine. The “saignée” method gives wine

of intense colour and distinct aromas. As for red wine, the grapes are first

pressed and destalked: the stalk (the linear part of a bunch of grapes) is

separated from the grape, whose

skin is then burst open. Then

the grapes are placed in the vat,

during which time the solid

matter (“marc” or grape-pomace)

remains in contact with the

juice. This maceration allows the

liquid (grape-must) to absorb the

substances which partly determine

its taste and colour. By halting

this operation when the “robe”

becomes perfectly rose-coloured

(24 hours maximum after it was

placed in the vat), one prevents the

colour from evolving further. It’s

then said that the vintner bleeds

the vat, meaning that he recovers

part of the grape-must. Perfectly

filtered, it begins its fermentation

(transformation of the sugar in

alcohol) without undergoing any

further change in colour.

The second wine-making

technique is pressing. It suits the

most strongly coloured grapes.

The idea is to treat the red grapes

as one would the white. White

wine is in fact made without

maceration. Once harvested, the

crop is pressed quickly so that the

grape-must, expunged of any traces

of marc or impurities, commences

its fermentation immediately. This

technique produces pale wines

with delicate aromas, perfect for

aperitifs.

The winning colourWhether it is obtained via

“saignée“ or “pressurage”, Provençal

rosé is a joy for its producers.

On the wings of its popularity,

the Southern vineyards are doing

extremely well. The three regional

“appellations” or controlled labels

- Côtes de Provence, Coteaux

d’Aix-en-Provence and Coteaux

Varois en Provence - cover more

than 67,500 acres of land in

the Bouches-du-Rhône, the Var

and, to a much lesser extent,

the Alpes-Maritimes. As much

as the vineyards of Burgundy!

As a result, the vine-growing

and wine-producing industry in

Provence represents a significant

share of the region’s economy:

580 professionals produce almost

160 million bottles of wine, giving

turnover of over 500 million euros.

Of course, the region also

produces some excellent reds and

superb whites. But more than ever

the winning colour is rose. Already

accounting for close on 10% of

worldwide production and over

40% of that in France, production

from the three Provençal AOCs

has shown regular progression over

the past ten years. A development

which is not surprising given the

expertise of local vintners. For, if

there’s a region in which rosé has

been able to flourish, to the point where it has become a real art of living;

it’s definitely that of the Mediterranean coast. To such an extent that the

South of France does not produce rosé, but rosés. It’s all to do with nuance;

from a wine tasted for enjoyment, really chilled beneath the bower at

the height of summer, to a wine accompanying high gastronomy, well-

structured, full-bodied, with strong aromas and flavoursome in the mouth.

A wide palette of tastes, now enabling rosés of Provence to take their place

proudly on tables the world over!

Out to conquer the world

The trend for rosé is winning over more and more countries. This wine

is in fact meeting with huge success on European markets, in the United

States, Canada, Brazil and on Asian markets including Japan, China

and Taiwan. Rosé is the wine that best complements Asian cuisine.

Furthermore, this ability to adapt now gives it further strength on its

traditional markets, starting with France itself. Since the rosé lends itself to

different accords with “exotic” tastes, it is benefiting more and more from

Westerners’ enthusiasm for “world cuisine”.

Development forecasts are therefore optimistic, especially as rosé,

the forefather of all wines, has never been as modern as today. If it’s

appreciated so highly, it’s because it bears aloft the values of our day:

naturalness, simplicity, lightness, conviviality. It offers its consumer

immediate, authentic enjoyment, liberated from the traditional codes and

rituals of wine. We’re now going back to the philosophy of Antiquity

regarding the pleasures offered by wine. A sort of glance back to the age of

Dionysus! A well-justified comeback… For the history of rosé in Provence

dates back to the Age of Antiquity. When the Greeks founded Marseille

2600 years ago, they brought to France a marvellous plant… the vine.

up with a passion for horses.

greatest conquest of man. Corinne

Schuler will not say otherwise.

The famous horsewoman continues

to live her love for this noble

animal but above all, it is her love

of horseriding that fascinates this

German industrialist’s daughter.

A severe allergy to horsehair

forced her to give up her passion

for several years, however, she

never gave up her dream and

began a lengthy medical treatment

for a total desensitization.

Eventually, she was back in the

saddle. It was during a random

walk when her riding teacher

made her “hit the ball” that she

discovered Polo. One tap and

very soon she was hooked on this

Babylonians and resurrected by the British, who founded the

first club at Silchar, in the Tibetan Himalayas in 1859.

Two teams of four play within a grassy area 275 metres long, with a ball,

mallets – bamboo mostly – with which to hit the ball and two goals

7.50 metres wide. They play for periods of 4, 6 or 8 “Chukas” (a period

of 7 minutes 30). And in this sport, Corinne Schuller has no equal.

What is it about polo that she likes so much? The team spirit,

tactics, humility, but more especially the partnership formed with

the horse. A quasi-fusion which ensures that the lady becomes

totally immersed in the sport. She trained relentlessly, endless

practice, participating in all the major tournaments and in 2004,

she became the first french women’s polo champion.

As well as her sporting achievements, Corinne Schuler has fulfilled

another dream: the establishment of her own polo club, in Saint-Tropez,

where she’s been improving her mallet swing for the past twelve years.

Today, the Saint-Tropez Polo Club is one of the most active clubs in Europe

I want, so much, to see Syracuse... The town bears the name of the most eastern provinces of Sicily and remains

a striking example of a tourist destination. founded in the eighth century

by Greek colonists from Corinth, it was declared by Cicero to be “The most

beautiful city in the world.”

Beautiful but rebellious, Syracuse waged war against Athens and won but

was forced to bend under the yoke of Carthage. Devastated by the terrible

earthquake of 1693, it was partly rebuilt, and since 2005, its old city centre

was written into the List of World Heritage of Humanity by uNESCO. Its

most famous citizen is of course Archimedes and the story goes that here he

dreamed of giant mirrors reflecting the sun’s rays and setting alight, the sails

of the invading enemies. Syracuse the seductress is now separated in two parts:

Neapolis with its Archaeological Park and the island of Ortigia. The ruins of the

temple of Apollo are the only visible remains of antiquity in Ortigia. Legend

says that its name, meaning “quail” in Greek, comes from hundreds of these

birds which fell from the sky thanks to Santa Lucia, in 1646. The Saint thus

saved the local residents from starvation.
