Apple Chicken Quesadillaoriginal recipe makes 12 triangles4 Flour tortillas (approx. 8-inches wide)1 cup cooked, shredded or chopped, chicken meat1/4 lb cheddar or Monterey jack cheese sliced or grated1 apple, sliced1/4 cup salsa

Heat a large skillet on medium high heat. Place one tortilla in the skillet. Flip it a couple of times with a spatula, then let it sit in the pan heating up until air pockets form and parts of the tortilla begin to puff up. Flip it again. Place cheese slices on half of the tortilla, at least 1/2-inch from the edge of the tortilla. Add chicken pieces on top of the cheese. Fold the tortilla over like an omelette, and press down on the folded tortilla with the spatula. Lower the heat to medium. At this point, if you have enough room in your skillet, you can add a sec-ond tortilla to the pan to begin to heat it up. When the cheese inside the quesadilla has melted, remove the quesadilla to a cutting board. Open it wide and layer on apple slices and salsa. Fold the tortilla back again, and cut it into 3 triangles, as if you were cutting a pie. Repeat with the remaining tortillas.

1 16-ounce loaf of Italian bread or French bread1/2 cup (1 stick) unsalted butter, softened2 large cloves of garlic, smashed and minced1 heaping tablespoon of freshly chopped parsley1/4 cup freshly grated Parmesan cheese (optional)

Method 1 - ToastedPreheat oven to 350°F. Cut the bread in half, horizontally. Mix the butter, garlic, and parsley together in a small bowl. Spread butter mixture over the the two bread halves. Place on a sturdy baking pan (one that can handle high temperatures, not a cookie sheet) and heat in the oven for 10 minutes. Remove pan from oven. Sprinkle Parmesan cheese over bread if you want. Return to oven on the highest rack. Broil on high heat for 2-3 minutes until the edges of the bread begin to toast and the cheese (if you are using cheese) bubbles. Watch very carefully while broiling. The bread can easily go from un-toasted to burnt. Remove from oven, let cool a minute. Remove from pan and make 1-inch thick slices. Serve immediately.Method 2 - SoftPreheat oven to 350°F. Make the butter, garlic, parsley mixture as above. Make 1-inch thick slices into the bread, but do not go all the way through, just to the bottom crust. Put a teaspoon or two of the but-ter mixture between each slice. Wrap the bread in aluminum foil and heat for 15 minutes in the oven.

Garlic Bread

Bread Pudding1 loaf French bread, at least a day old, cut into 1-inch squares (about 6-7 cups)1 qt milk3 eggs2 cups sugar2 Tbsp vanilla extract1 cup raisins (soaked an hour or 2 in 1/4 cup bourbon)1/4 teaspoon allspice1/4 to 1/2 teaspoon cinnamon3 Tbsp unsalted butter, meltedBourbon Sauce:1/2 cup (1 stick) butter, melted1 cup sugar1 egg1 cup Kentucky bourbon whiskey

Preheat oven to 350°F. Place milk in a large mixing bowl and add the bread that has been cut into squares. Press the bread into the milk with your hands until all of the milk is absorbed. In a separate bowl, whisk the eggs, then whisk in the sugar, vanilla, allspice and cinnamon. Pour over the bread and milk mixture. Add the bourbon soaked raisins and gently stir to combine. Pour the melted butter into the bottom of a 9x13 inch baking pan. Coat the bottom and the sides of the pan well with the butter. Pour the bread milk and egg mixture into the baking pan. Bake at 350°F for 35-45 minutes, until the liquid has set. The pudding is done when the edges start getting a bit brown and pull away from the edge of the pan. Can also make in individual ramekins. While the bread pudding is cooking, make the bourbon sauce. Melt the butter in a medium saucepan on low heat. Add the sugar and egg and whisk to blend well. Slowly cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, then remove from heat. Do not al-low the mixture to simmer! (Or the sauce will curdle. By the way, if your sauce curdles, just take it off the heat and blend it smooth in a blender.) Whisk in bourbon to taste. Whisk again before serving. The sauce should be soft, creamy, and smooth. Serve the bread pud-ding with bourbon whiskey sauce on the side; pour on to taste. Best fresh and eaten the day it is made.

Your feelings are intrinsically connected with the central purpose in your life and you can impact others deeply now as long as you stay true to yourself. How-ever, people won’t necessarily agree with your position even if you’re willing to discuss your differences. In fact, you could be so in tune with your intentions today that there’s no need to talk about it any further once you share your per-spective. Your disclosure is like planting a seed that requires time to germinate without additional interference. Water your garden and watch it grow.

You’re quite animated today, but people may not fully understand your intensity. In your eagerness to make your point you could oversimplify your presenta-tion, which can create problems if oth-ers take your words at face value. Be careful, since a small misunderstand-ing about a missing fact might turn a simple discussion upside down. Let the conversation flow organically and don’t try to push the process. It’s much easier to prevent the conflict beforehand than to untangle it once it begins.

In theory, you should be unbeatable today when your words align with your intentions. However, conversations grow complicated if your message is garbled as interactive Mercury disap-pears into the Sun’s intense radiance. You could be thinking clearly, but your thoughts are highly subjective now that the Moon is activating your sign. It’s ad-mirable to have faith in your convictions but don’t try to use logic to convince anyone else of the validity of your point of view. Focus on your creative pursuits and let others draw their own conclu-sions when they’re ready.

You are swimming in deeper waters these days and possess an opportu-nity to enrich your relationships if you have the courage to sink into the emo-tional depths. Paradoxically, your life might feel one dimensional now as the retrograde Mercury-Sun conjunction grinds your thoughts to a temporary standstill. It’s futile to rely on your brain to figure out the dynamics of passion. Your friends may want to drag you into their dramas; however, the call is yours. Don’t join in unless you think you can make a positive difference.

You’re still trying to find a comfortable middle ground before you make a dif-ficult decision, but it’s tough if there are important emotional issues at stake. Your brain overflows with sensible ideas while the Sun aligns with cer-ebral Mercury today, prompting you to initiate action immediately. Trust your logic instead of waiting to receive ap-proval from anyone else. Sometimes your head knows what your heart has yet to learn.

You may be fantasizing about an exotic adventure that will take you far from the mundane world. Pulling out all the stops in your imagination enables you to dream about your future without holding back. Visualize buying an airline ticket and heading off into the great wide open with a carefree heart. It might be chal-lenging to transform your thoughts into reality now, but anything is possible as long as you keep the faith and take your journey one step at a time.

Push past your tendency to keep eve-rything light and easy. Creative juices are flowing in your imagination today, yet you must be willing to embark on a quest to get the rewards. You want to do what’s right, but you might be challenged to figure out exactly what that means. Although it’s fine to discuss your plans with someone you trust, say-ing too much now could disperse the energy prematurely. Share your ideas but only on a need to know basis; this time around less turns out to be better than more.

You might catch glimpses of the mys-teries that are usually unreachable and unknowable while the doors to other dimensions are unlocked today. How-ever, it’s likely that someone will ruffle your feathers by attempting to pull you into the mundane world. Fortunately, you are the captain of your own ship. Stand up for your rights, but don’t back yourself into a corner in the process. Start from the assumption that others have your best interests at heart and work for a swift resolution. Don’t waste time with trivial pursuits when you hold the keys to the cosmos.

It’s back to the daily grind for you today. You may prefer daydreaming about an upcoming trip, escaping into an adven-ture novel or getting lost in a good mov-ie, but there are important things that you must do, instead. Unfortunately, your work prevents you from broaden-ing your horizons and moving beyond your immediate obligations now. But don’t just chain yourself to the desk; as a compromise, step outside and get some fresh air if you need to clear your head first.

Someone may be trying to emotionally manipulate you, but it’s nearly impos-sible to tell who is behind this alleged plot. Thankfully, you might find a reward that you weren’t even looking for now if you’re willing to let go of control and just paddle along with the flow. The pleasant surprise for everyone is what happens when you become more spon-taneous in your behavior. Don’t bother looking for instructions today; just listen to your inner voice and do what comes naturally.

You could be called upon to perform some kind of care taking duties for someone close to you. Perhaps a family member or an elderly neighbor is in need of your support. Don’t shut anyone out even if you think you are incapable of offering assistance today. Keep the communication channels wide open so everyone still feels con-nected. Explore both the personal and humanitarian aspects of your life to re-store a healthy balance to your world.

Previous uncertainty transforms into a practical vision of how you want your future to play out, and you are ready to make a serious effort to manifest it ac-cording to your plan. But the signs of change could pass unnoticed if you’re not paying close attention. Unfortunately, your desire to reach your destination may not be enough to guarantee suc-cess. Consider relaxing your timetable or revising your itinerary. Flexibility is your secret weapon; don’t be afraid to use it.
