RESTAURANT WINE LIST Autumn 2021 As you’ve no doubt noticed, we have a lot of wine. With over 1800 different bottles currently represented, we offer an ever-changing line-up of established stars and emerging talent, from £8.50 up to £4000 per bottle. We hope you are excited to explore the wonder of the world of wine here at Define. We have curated the following menu to include a range of great wines by the glass, as well as bottles, so that you can hopefully try something new or a bit different. The wines in this list already include the £12.50 corkage applied to our retail shelf price. You’re very welcome, nay encouraged, to wander around the shop and pick a bottle off the shelf to sup at your table; this same corkage fee will be applied per 75cl bottle. From experience, we’re aware some people find this charge excessive, but rest assured, this is far below standard restaurant pricing. If the wine you choose from the shelf needs chilling, please allow around 10 minutes for us to do so. We proudly have an abundance of talent here at Define. Jon has been in the wine trade all of his working life (long enough!), and has built Define’s reputation as one of the leading independent wine merchants in the country over the past 21 years. Having tasted over 50,000 wines in his time, he’s been around the block, and the world! He is ably supported by our wine manager, Andreas, a former 2 Michelin starred Food and Beverage manager, with both a WSET Diploma and an Advanced Diploma from the Court of Master Sommeliers up his sleeve. Anselme’s parents carried out their first vinification in 1964. Ten years later Anselme was given the keys to the domain. He thus began his professional career with what would become a lifelong process of

observation, trial and error and contemplation in regards to his viticultural methods and practices. This empirical approach to viticulture and vinification is perhaps his most remarkable trait as a winegrower.

From 1990 to 1996 the principles of agro-biology were applied in the vineyards, from 1996 his focus turned to bio-dynamics. But for the last twenty years, the Selosse family has developed its own system of viticulture which is an approach that follows no set method, but rather permanently adapts itself to the circumstances confronted throughout the growing season in the various vineyard plots. In order to explain their philosophy pertaining to the vines, Anselme and Guillaume often make references to

“gatherers”, those who venture out into nature to reap the harvest and collect the fruit found there:

« “Primum non nocere”. First, do no harm…The Hippocratic Oath…“It is man whoperturbs nature the most thus one must refrain from intervening as often as possible

As the time draws near to pass the keys to the next generation at Domaine Jacques Selosse, Anselme and Corinne’s son, Guillaume, has, since 2012, been preparing to follow in his father’s footsteps. During the

time spent working side by side with his father, he has naturally been developing his own viticultural skills and inclinations which will most certainly lend a unique identity to the wines in the future.

As you can see, we stock a lot of wine. Nearly all of them are from family domains, many with rich, proud histories involving generations of dedication, talent and hope. It’s a privilege to be able to provide a stage for these visionary growers (and even more thrilling to drink their wines!), but out of all of the estates that

we deal with, there is one that stands alone.

Massaya, Lebanon.

A partnership between the Ghosn family from Lebanon, with the Brunier brothers from the acclaimed Chateauneuf estate, Vieux Telegraphe. The Ghosn brothers, Sami and Ramzi, left Beirut for a brighter future, but both returned to their beloved homeland. Sami slept on the roof of the family home for 2 months with an AK47 until squatters understood he was there to stay. This is where the winery now

stands.

Lebanon has been tormented by decades of sectarian tension, ravaged by war. A land of mythical beauty, culture and once a bastion of hope in a troubled region has seen its economy reach the brink of collapse

through corrupt governance and nefarious intervention from neighbouring states. We’ve supported Massaya for over 15 years, and our families have formed a deep friendship over this time, with Sami (travel permitting!) hosting an annual Massaya dinner at Define for the past decade. His tales are too

numerous to share here, but the full story is available on request!

Their wines miraculously improve each year as their backdrop crumbles. A bottle of Massaya will not only transport you to the fragrant beauty of the Beqaa valley, it will provide essential moral and financial

support for an inspirational family who offer a glimmer of hope and a shining example for a Lebanese resurrection..

This beautiful winery is located in the picturesque village of Fumane. The name origins from the 18th century, when the winery was the only lit up house on the hill. The villagers' below would tell their

children that if they were not kind, the magicians from the house (Ca dei Maghi) would come and take them. Great parenting!! The current magician who works his magic today is Paolo Creazzi, who took over

in 2011. He was trained by the legendary Roberto Ferrarini (Quintarelli), who inspired him to take the winery to new hights.

What also makes his wines stand out from the rest is the location of his 3 vineyards, which are found on the steep hillsides surrounding the winery. It has a marked cooler microclimate from the rest of

Valpolicella, giving his wines a wonderful freshness that is rare to find nowadays in the region. While i would be more than happy to drink all of his wines, a shout out is well deserved for his white and the Ripasso, which gives you the best of both worlds - flavours of an Amarone, with the drinkability of a

Valpolicella.

The Marco family has been involved in the wine business since at least the fifteenth century when they decided to settle down in the small village of Porrera. It was a trade that was passed down for generations

and lasted for 4 centuries before the devastating Phylloxera arrived and destroyed all the vineyards. It would take decades for Ramon Marco Abella to rebuild what would become his legacy, which is now in

the good hands of his grandson David Marco.

The estate has today several vineyards around Porrera, in the south-eastern part of Priorat. It's 1 of 2 wine regions in Spain that have achieved Denominació d'Origen Qualificada (DOQ) status, the highest possible for quality wines. So what makes this region so special? It's all about the soil, that famous brown-slate known locally as "llicorella". It has the wonderful quality of storing heat that it absorbs during the day, which is then slowly released during the night when it's much cooler. It gives that extra boost to the

ripeness of the grapes, which allows the region to produce some of Spain's most powerful and concentrated red wines.

As for grape varieties, the flamboyant Grenache is usually the star of the show, with the support of the more broad shouldered carignan.
