It uses 75 percent less energy and lasts about 10 timeslonger than an incandescent bulb.

Flourless Chocolate Cake4 ounces fine-quality bittersweet chocolate (not unsweetened)1/2 c unsalted butter3/4 c sugar3 large eggs1/2 c unsweetened cocoa powder plus additional for sprinkling

Preheat oven to 375 degrees. Butter and line bottom of an 8-inchround baking pan with wax paper. Chop chocolate into small pieces. Ina double boiler or metal bowl set over a saucepan of barely simmeringwater melt chocolate with butter, stirring until smooth. Remove top ofdouble boiler or bowl from heat and whisk sugar into chocolatemixture. Add eggs and whisk well. Sift 1/2 c cocoa powder overchocolate mixture and whisk until just combined. Pour batter into panand bake in middle of oven 25 minutes, or until top has formed a thincrust. Cool cake in pan on a rack 5 minutes and invert onto a servingplate. Dust cake with additional cocoa powder.
